SHRIMP & GRITS FESTIVAL: THE WILD GEORGIA SHRIMP FESTIVAL
A SHRIMPTASTIC GOOD TIME SET ON THE PRISTINE GEORGIA COAST

Located directly on the Georgia coast, Jekyll Island is a shrimpers haven. To celebrate this local treasure, guests are invited to the 8th annual Shrimp & Grits: The Wild Georgia Shrimp Festival, held Sept. 20 to 22. This spirited three-day event is the only festival dedicated to the prime local product, Wild Georgia Shrimp, and its Southern cuisine counterpart, grits.
Chefs and foodies from across the Southeast flock at the food-centric festival, either to try their hand to create the event's best shrimp and grits recipe, or to eat their way through the plethora of dishes available. Set under the cover of live oaks in the Jekyll Island Historic Landmark District, Shrimp & Grits: The Wild Georgia Shrimp Festival provides a laid-back, relaxed Southern atmosphere for savoring delicious coastal cuisine and great entertainment. Throughout the weekend festival, the theme is simple: taste, sip, enjoy, repeat!
New this year, Southern Living magazine has joined in the fun and will present the intimate Southern Living Presents: Songwriter in the Round concert on the Jekyll Island wharf. This free event will feature a plugged-in performance from Rob Crosby at the "Rah" Bar on the Jekyll Island Wharf.
An American country music artist, Crosby has charted eight singles and six albums, and co-wrote several hit singles, including Martina McBride's "Concrete Angel." Guests will be

Parking Information: The Jekyll Island Historic District will be closed to vehicular traffic beginning at 3 p.m. Friday September 20, and remaining closed during the weekend. Only vehicles with approved festival parking permits will be allowed access to the Historic District. Golf carts and electric carts will not be allowed without approved festival parking permits. Access points will be monitored at Shell Road and Beachview Drive, Capt. Wylly and Riverview Road, and Old Plantation and Riverview Road.

Handicap parking will be located at the Jekyll Island Museum. General public parking will be available at the Jekyll Island Airport, with the festival accessible by complimentary shuttle buses. No pets are allowed on the shuttles. Guests with pets are invited to park at the Jekyll Island Convention Center and bike or walk to the festival using the bike trail adjacent to Great Dunes Golf Course and the mini-golf course. Volunteers, festival vendors, VIP pass holders and individuals with assigned festival parking permits should park in the lots designated for them. With the success of the event last year, the Craft Brew Fest will be back for this years' celebrations. Guests at the Craft Brew Tasting, held in the airconditioned Morgan Center, will have access to a sampling of the best brews in the Southern Eagle Distributing hops and malt line-up. The tasting selection is $10 for 10 tastes.
Looking for some dining music to

pair with that shrimp? A number of performances are lined up throughout the festival, with several regional favorites set to play on the outdoor
stage in the Historic District. More than a hundred acclaimed arts and craft purveyors will also have tents set up throughout the weekend.
Flocking to Jekyll Island from across the nation, these talented artisans will sell their wares throughout the festival grounds. Included on this years' list of artisans are Copper Tree Pottery, Vitello

Sandal Factory, Dominey Metal Art, the Golden Isles Bracelet Company, and stone jewelry artist Gabriela Baumgartner.
To kick-off the weekend, Opening Night Plate Samples will be offered on Friday, Sept. 20, with plates priced at $3 each. On Saturday and Sunday, the festival will host an amateur Cooking Competition and the Professional Chef Cooking Competition, plus cooking demonstrations with celebrity chefs.
At the outdoor festival, Wild Georgia Shrimp Festival attendees can opt for dish-by-dish sampling and sipping, or treat themselves to the ultimate VIP package. VIP guests will receive up-close parking, passes for $3 dish samples, passes for lunch and dinner both Saturday and Sunday, a festival

Chef Abigail Hutchinson has seen Jekyll Island's Shrimp & Grits: Wild Georgia Shrimp Festival from just about every aspect of its now eight-year run. She saw the idea conceptualized, come to fruition, then not only grow, but flourish, into the grand three-day experience it has now become.

When the festival first launched eight years ago, it started as smallerscale production, but over the years, has grown into its own, becoming a favorite event not only for locals, but for guests from across the country.

Since its infancy, Chef Hutchinson has been there, lending her talented hands and discerning palate any way she can.
She's filled the role of expert tasting judge. She's whipped up a share of her recipes for guests to sample. She's planned and mapped and planned some more. And she's not even part of the festival staff.
"I just love this event," said Hutchinson, head chef at the Jekyll Island Club Hotel. "It's so much more than a weekend of food. It truly showcases the charm, history and magical atmosphere that is Jekyll Island. Sure, it's a lot of work, but it is a real labor of love."
Pointing to her passion for the event is Hutchinson's tried-and-true Shrimp & Grits Binder. This three-ringed wonder of details is thick with recipes, lists, layout plans, schedules, and other tracked details of the fest. Within the packed binder rests the secrets to making the fest tick, the tricks that have earned her and her team praise year after at the Jekyll Island Club Hotel tent, as well as copious notes on other co-vendors, new and old.
"This thing has it all," Hutchinson said, her hand patting the trusted

What was once an understated weekend dedicated to showing off the coast's Wild Georgia Shrimp supply, has since morphed into a weekend packed with food, music, arts, craft beer tastings, shrimp eating competitions, chef showdowns and more. Along the way, though, Hutchinson has seen one key trait remain the same. No matter how large the event becomes, or how many guests flock here each year, the fest has held tight to its genuine Jekyll Island, family-friendly character.
That same gentle demeanor can be seen beyond the confines of the dining arena and shopping venues, and extends into the competition fields, as well. True, chefs are pinned against each other vying for titles like fan favorite and judge's choice. But even though they are going head-to-head, stock pot to stock pot, the whole showdown is really just about enjoying one another and learning from fellow cooks, Hutchison admits.
"The energy throughout the weekend is just indescribable," she said. "Everyone is happy to be there, interacting with guests and fellow chefs. It's like Christmas comes in September. Every year, whether you're competing for an award, eating your way through the weekend or walking

around looking at the vendors goods, it's a great time for everyone involved."

Chef Abigail Hutchinson has crafted a multistep, award-winning shrimp & grits recipe sure to please any palette. Here, she shares her (not so) secret recipe. Make your own batch at home, then be sure to sample her masterpiece at the Shrimp & Grits: Wild Georgia Shrimp Festival, September 20 to 22!

Shrimp Butter 1 stick unsalted butter (4 oz.) 3 tbsp bacon fat 1 tbsp minced garlic tsp paprika tsp chopped thyme tsp chopped parsley tsp chopped oregano

Shrimp Gravy Shrimp Butter 1 bundle green onion, diced 1/2 lb. Andouille sausage diced 1 lb. GA White shrimp 1 tbsp Flour 3 oz. White wine 1 juice of lemon cup Heavy Cream Old Bay seasoning to taste Salt and pepper to taste

Cheese Grits 1 cups stone ground grits 5-6 cups chicken broth 1 cups grated sharp cheddar cheese stick unsalted butter Salt and white pepper to taste
Bring broth to a boil and add grits, turn heat down and cook slowly for about 40 minutes, stirring often. Add cheese and butter and adjust seasonings with salt and white pepper. Top with Shrimp Gravy and enjoy.

CHEF HAS KEEN EYE FOR SHRIMP

John Wallace has been shrimping since 1976. He knows area waters well, and he has a deep understanding of what makes the industry tick. "No, no, I'm not new to the game," Wallace laughs. In recent years, Wallace, president of the Wild Georgia Shrimp Association, has become more involved in the game than ever. He has taken his role as a shrimper from the water, to the shore, in an effort to advocate for and educate individuals about Wild Georgia Shrimp.
During his shrimping career, Wallace has seen the industry hit high points, drop to low depths and float through every mark in between. Lately, Wallace said, he has been increasingly encouraged by the growth of the

Georgia shrimp industry. Following a lull in business several years ago, mainly blamed on high gas prices and a customer dependency on farm-raised, imported shrimp, the once-murky waters have cleared.
"In the past few years, we've experienced some very reassuring trends," Wallace said. "The demand for Georgia shrimp has gone up. Customers are looking for it, and shrimpers are invigorated."
Much of the newfound energy boosting the industry can be traced back to diners, food suppliers and restaurant owners being more aware of their food sources. Locally-grown foods are a hot ticket item, and that trend

extends to Georgia shrimp. Across the Southeast, chefs are continually blending Wild Georgia Shrimp into their menu selections, as patrons are demanding foods with few miles under their belts.
Today, more than a hundred restaurants in Georgia serve up Wild Georgia Shrimp. Dozens of retailers supply the

variety. And five key food distributors provide the item to major marketplaces around the region. Clearly, markets in the Southeast are keen on offering the sweet, pink Georgia-based varieties to buyers.
"Sustainable practices are a major trend in the food world right now and that has been great for Georgia shrimp," Wallace said. "A change in thinking has hit the marketplace and people want to know where their food is coming from. Wild Georgia shrimp definitely fits that bill."

Golden Isles Chef Dave Snyder clearly remembers the first time he was introduced to a shrimp and grits dish.
It was 1991, in what is now the Grand Hyatt restaurant in Atlanta.
"I had never heard of this marvel called shrimp and grits, and really wasn't sure about the whole thing. Grits? I thought it was a really gritty polenta," Snyder said.
Fast forward a couple decades. Now, Snyder is the first to admit, shrimp and grits is a recipe he has introduced into his regular cuisine vocabulary. Being from Michigan, he is a self-described Northerner, who was luckily adopted by Southern traditions. Shrimp and grits has become a staple on the menu of his St. Simons restaurant, Halyard's,

as well as a great dish for him and his staff to cook up for the annual Shrimp & Grits Festival.
"It's one of my favorite dishes," said Snyder, who has been active at every Shrimp & Grits: The Wild Georgia Shrimp Festival for the past five years. "It's two very simple ingredients that can be transformed in hundreds of ways. It's amazing."
As a shrimp and grits convert, Snyder had to do a little digging, looking back into the history of the dish. Snyder turned to fellow chef, cookbook author and friend, Natalie Dupree, asking her about the origins of this Southern classic. The answer she revealed wasn't exactly what Snyder expected.
Though shrimp and grits has become

a cream-of-the-crop recipe on menus across the country, it started out with much more humble beginnings.
"Shrimp and grits was originally a poor fisherman's breakfast, with its origins traced back to the Charleston area in the 1800s," Snyder said, as he recalled the background of the dish to us at Beachscape in a recent interview.
The dish was then brought into the culinary limelight several decades ago, most often with credit linked to chef and restaurateur Bill Neal. Neal added it to the menu of his Chapel Hill restaurant, Crook's Corner, where the dish was then reviewed by herald New York Times food critic Craig Claiborne.
"Claiborne put shrimp and grits on the map, taking the dish from a lower-class

breakfast food into a high end dinner meal," Snyder said. "What was once a cheap dish made for fisherman, from their left-over catches, is now a muchloved culinary treasure."
Whether loading the dish with cheese and cream, opting for a tomato-base, or using a bacon-loaded recipe, chefs whip up their unique versions of this timehonored dish for guests' enjoyment.
"It doesn't matter if you're Southern and grew up with shrimp and grits, or if this is the first time you've heard of the dish, this is a recipe is loved by anyone who eats it," Snyder said.
"I can't wait to dig in at the festival this year and see all the ways our area chefs get creative with the ingredient. I'm hungry just thinking about it!"
