COLORS IN FOOD.
Federal Food Inspection Decision No. 164 has been amended so as to increase the number of yellow shades permitted for use in food. Therefore, the following list is automatically adopted as a guide in the enforcement of the Georgia Food and Drug law. This is an amendment to the list given on page 71 of Food and Drug Law Bulletin No. 75 of the Georgia Department of Agriculture.

EVAPORATED APPLES.
The following definition and standard for evaporated apples has been adopted as a guide for the federal Department of Agriculture in the enforcement of the Food and Drugs Act, and therefore is automatically adopted as a guide in the enforcement of the Pure Food and Drug Law of Georgia.

Evaporated Apples are evaporated fruit made from peeled,, cored, and sliced apples and contain not more than twenty-four per cent (24%) of moisture as determined by the official method of the Association of Official Agricultural Chemists.
This definition supersedes the former definition and standard given on page 135 of Georgia Department of Agriculture Bull. No. 75. The former standard for moisture given in the above bulletin was 27 per cent.

FOOD CONDEMNATIONS IN GEORGIA
Below is a letter from Mr. P. A. Methvin, Chief Food Inspector of Georgia to Mr. J. J. Brown, Commissioner of Agriculture giving a record of food condemnations made through his office for this year as far as July 31st. The letter speaks for itself.

Dear Mr. Brown:
For your information I beg to submit to you the following data covering in part the activities of your Food Inspector for the past seven months ending July 31st.
You will note by comparison that these extraordinary conditions of bad foods coming into our State requires immediate and drastic action, which would put all violators of the Pure Food Laws on notice that these conditions of affairs must cease, in order that unsuspecting consumers in Georgia may not be subjected to the imposition that is now being put upon them in this connection.

The most conservative estimate that can be placed upon materials that have been condemned will doubtless exceed $50,000.00 and I am of the opinion that if a few prosecutions of people who seem determined to continue the violation of the Pure Pood Laws, would in a great measure relieve the repetition for these frequent recurrences.

You of course understand that this only in part covers the work of your Pood Inspectors, as nothing in the following is shown regarding the Sanitary Work being done under the Food and Drugs Act, and I merely hand you this data on condemnations that you may realize the conditions as we find them to exist in Georgia today.

THE MARKING OP POOD IN PACKAGE FORM.
The information that appears below is taken from the existing opinions of the Bureau of Chemistry as to the marking of food in package form. Therefore, it applies directly to the enforcement of the Net Weight Amendment of the Georgia Laws as set forth on pages 25, 26, 27, 28 and 29 of the P.ood Law Bulletin No. 75 of the Georgia Department of Agriculture.
-The use of standard containers does not obviate the necessity for declaring the quantity of the contents.

GEORGIA DEPARTMENT OF AGRICULTURE
2--The statement of the cubical capacity of a box as 3456 cubic inches, is not a statement of the quantity of the contents.
3--Small containers packed in crates or "flats" need not bear a statement of net contents. The crates or "flats," however, should be marked with the number of containers and the quantity of contents of each.
4--If two or more packages of food, each of which bears a statement of the quantity of the contents on the outside are placed in a box, bag, barrel, crate or similar container for convenience of shipping only, it is not required that the quantity of the contents shall be stated also on such box, bag, barrel, or other container. If, however, the quantity of the contents be stated on any such box, bag, barrel, or container, the statement shall be plain and correct.
5--The amount of food in the package excludes linings, premiums, circulars, etc., but does not exclude brine, syrup, etc., which are a necessary part of the canned goods.
6--In general, the amount of food material in the package is included in the statement of net contents. Sauerkraut is included in this statement when the containers are packed as full as possible of the material and only enough of the brine is used to cover and properly preserve it. There are however exceptions to the above statement as follows:
(a) Pish in brine. (b) Canned oysters, clams, and shrimp. (c) Whole tomatoes in brine. (d) Mushrooms, olives and pickels.
7--The net weight of comb honey is the weight of the comb and the honey exclusive of the wooden sections.

HOW THE PACKAGES SHOULD BE MARKED
1--Net contents of packages containing more than one pint should not be stated in ounces.
2--Net contents of packages containing 16 oz. avoirdupois should not be stated in ounces.
3--Statements by the use of fractional parts of larger units is limited to such common fractions as are in general use.
4--Citrus fruits may be stated in terms of dry measure.
5--Cottonseed Oil should be stated in terms of liquid measure.
6--Catsup may be stated by either weight or measure.
7--Mustard dressing should be stated by weight.
8--The net contents of chow chow and similar relishes may be declared as a whole.
S-Confectionery known as count goods may be marked by count only.
10--The marking of boxes of apples, citrus fruits, and smoaked bloaters by count only is not sufficient. The smoaked bloaters should in addition to the number also have the quantity of the contents in net weight. The citrus fruits should also be marked in size in accordance with the units of size in use in the trade.
THE LABEL ITSELF
1--Misleading trade terms indicating the size of the container must not be printed on the labels; viz. "4 doz. 14 cans."
2--Alternate statements of contents are not permissible.

3.--Statements blown in the bottles must be plain and conspicuous.

4--Statements of net contents perforated in the label are not conspicuous.

5--In the case of canned goods, statements of con-
tents in 8 point bervier letters are not conspicuous.

6--Statements on the neck labels may or may not be conspicuous depending on the proportion to the size of the bottle.

7--Statements of net contents on revenue stamps are not sufficient declaration.

8--Statements on the outside of cartons around extract bottles are permissible.

Bread made from this flour has a fine texture but is rather dark in appearance. It is very good and appetizing. Biscuits made from it are also excellent. The proportions of the ingredients for the bread are: 1.5 lbs flour, 2 oz. salt, 2 oz. yeast. 2 oz.
