Stripling's General Store Carries on Tradition with Georgia Grown
With the recent opening of its fourth location in Georgia, Stripling's General Store has come a long way from its early days as a small meat market known as "The Sausage Kitchen" on the family farm. Today that sausage recipe is a treasured legacy that has supported three generations of a South Georgia family.
"In 1978 we had a decision to make to carry on the Stripling tradition or continue farming the family land," says Ricky Hardin, whose mother's brother, James Stripling, started the sausage business in 1964. "My father, Jack Hardin, and I decided to buy the Sausage Kitchen. We had very little knowledge, little cash and a lot of farming debt."

special blend of seasonings. The Stripling process uses the five prime cuts--ham, tenderloin, belly, picnic shoulder and butt--natural casings and hickory smoke to make the fresh and smoked sausages, seasoned largely with sage, salt, and red and black pepper.
The real secret, Hardin says, is making the sausage within a few hours after the hog has been slaughtered, before the meat is chilled, so the seasonings are drawn into the meat. This unique process, also known as "hot hog sausage," means that it's

Celebrate a Georgia Grown Christmas
With a Tree from a Choose-and Cut Farm
The approaching Thanksgiving holiday signals the beginning of the Christmas tree sales season, and Georgia Christmas tree farms are busily preparing for the arrival of consumers ready to choose and cut their own Christmas trees.
"Selecting and cutting your own Christmas tree is the way to be sure you are getting the freshest tree possible," said Georgia Agriculture Commissioner Gary Black. "I encourage all Georgians to support our state's Christmas tree growers and visit one of the choose-and-cut farms throughout the state this holiday season. For those who do not want to cut their own
tree, many of these farms have freshly cut trees ready for you to take home and enjoy."
When visiting a choose-and-cut farm, remember to respect the owner's property and adhere to posted signs or verbal instructions from the farm staff to ensure a safe and enjoyable experience. Also, particularly if you are carrying your children or grandchildren, be sure to take along a camera. Helping family members in selecting and cutting the family Christmas tree is an experience you may want to record and keep for years to come.

Intercropping Provides Option for Some Farmers
To Maximize Profits and Fully Utilize Resources
Double cropping is a practice that has been around for some time, enabling farmers to be good stewards of the soil and, hopefully, providing them the opportunity to obtain some additional income from the second crop.
But now a new practice, known as intercropping, is providing an even greater opportunity for farmers of at least some crops.
In 2010, Tift County Cooperative Extension Coordinator Brian Tankersley was approached by some growers who had heard about the possibility of planting cotton into cantaloupes to maximize profits. Tankersley began working with the growers, including Steve Sumner of Omega, Ga., to find out how to intercrop successfully and evaluate its profitability.
Normally cantaloupe farmers would plant transplants on slightly raised 24-inch plastic-covered beds and irrigate with drip tubing installed under the plastic. After harvest around mid-July, they would pull up the plastic, till the soil, and plant a program crop, such as grain sorghum or late corn. However, the profitability of planting the grain crops after cantaloupes proved to be marginal.
Sumner, who farms 2,988 acres, mainly in Cook County, has had better success than anticipated with intercropping cotton
with cantaloupes. "When you plant the cotton, you can pretty much forget about it until the cantaloupe is harvested," Sumner said. "The cotton benefits from the water and nutrients that have been supplied to the cantaloupe." He noted that after the cantaloupe is harvested, the plants are
sprayed with round up and "you can then really see the cotton." He found that his yields were at least as good, if not better in some cases, than double cropping or growing cantaloupe alone.

Advertising Guidelines Bulletin Publishes Every Other Week
All advertisements published in the Market Bulletin must relate to the farming/agricultural industry or be a part thereof; any and all item(s) submitted for sale through the BULLETIN must meet at least one of the following criteria: 1) must be produced by the advertiser on his/her own farming operation, 2) must be made by the advertiser from materials on his/her own farming operation, 3) must be owned and used by the advertiser on his/her own farming operation for a period of at least 90 days prior to offering for sale through the BULLETIN. Businesses, corporations, dealerships or other commercial enterprises are not allowed to place classified advertisements in the MARKET BULLETIN. Commercial is defined as intended for mass market; handling large quantities of product for distribution (i.e., more than normal household or farm quantities); supported by advertisement (I.e., advertisement in publications other than the BULLETIN; listed as "business" in telephone directories or "yellow pages", etc.). Other indicators include, but are not limited to, holding business licenses and holding regulatory licenses/permits/registrations. Georgia residents only may advertise in the Market Bulletin with the following exception: out-of-state residents may advertise only in the Out-of-State Wanted category. The editor has the authority to designate the length of ads and the number of ads that may be placed by a family unit in any issue of the BULLETIN. Currently, only one (1) notice may be placed by any family unit in any issue of the BULLETIN. Family unit refers to all individuals sharing the same residence, address or telephone number. Ads must be received no later than designated deadline in order to appear in the following issue. Ads submitted via our website will be scheduled automatically for the next available issue. All equine advertised in the Market Bulletin must have had a negative Coggins test within past 12 months. Negative reports are valid for 12 months from the sample date. A copy of this test report must accompany the ad each time it is submitted or the notice will be returned to the advertiser. For this reason, generalized ads (i.e., many horses, varieties to choose from, others, etc.) cannot be accepted. Buyers are urged to request verification of a negative Coggins test before purchasing any equine. Census of Agriculture
Begins in December
The National Agricultural Statistics Service and the Georgia Agricultural Statistics Service will be begin in December conducting the Census of Agriculture, which is done every five years to collect valuable information at the county, state, and national levels.
Data from the Census are used by all those who serve farmers and rural communities from federal, state, and local governments to agri-businesses and trade associations.
Census forms will be mailed to farmers on Dec. 28, and data collection will continue through spring 2013. Producers also have the option to complete their forms online. Response is required by law and the final data is projected for release in February 2014.

Before making your tree selection, there are some important factors to consider. "When selecting your tree, be sure to pick one that is the right size," advises Chuck Berry, owner and operator of Berry's Christmas Tree Farm in Covington, Ga., and a Silver Member of the Georgia Grown program. Following are some tips to help in selecting the proper size tree for your needs:
Trees in the field look small when you have no reference for height other than the sky. Be sure to measure the ceiling height in the room where the tree will be displayed so you will not buy a tree that is too tall for the space available.
Measure the width of the area of the room where the tree will be displayed.

Make This Year a Georgia Grown Thanksgiving
Thanksgiving is fast approaching as consumers across the state begin to check off those holiday lists of items in preparation for the big day Nov. 22.
"As we remember all we are thankful for on Thanksgiving Day, one of the main focuses of this celebration is the meal we share with our loved ones. This year, why not make it a Georgia Grown Thanksgiving feast?" challenges Commissioner Black. "And while you're preparing and appreciating that meal with your family and friends, always be sure to keep in mind the important food safety tips that help ensure everyone fully enjoys the meal and leftovers."
This year, when heading to a local grocery store or supermarket to purchase all the items that go into a delicious Thanksgiving meal, think for just a moment: Who are the farmers and producers that grew these food items? How was it harvested? Who loaded and delivered it to the store? Commissioner Black encourages consumers to consider the local farmer who picked the apples for that perfect stuffing or dessert; and picture the Georgia producers who grew and picked peas and green beans, turnips and collards, sweet potatoes and pecans all of which offer a healthy, locally produced addition to the Thanksgiving table.
After the items have all been gathered and are ready for preparation, from the side dishes to the main entre, food safety must also remain a priority.
"Remembering basic food safety tips plays a huge role in keeping those around your Thanksgiving table healthy and free from food-borne illness," said Oscar Garrison, Director of Food Safety for the Georgia Department of Agriculture. "Even if you're not actually preparing a Thanksgiving meal and are simply planning to bring along a dessert or side dish as you visit family or friends, there are important food safety tips that everyone needs to keep in mind."
The simplest tip, which people often forget, is to start off by washing hands with soap and hot water; and wash hands again after any raw meats have been touched. Use separate cutting boards when preparing foods, or wash a single cutting
board thoroughly in between food items. Always keep cold foods cold and hot foods hot. The "danger zone" for cold foods is above 40 degrees; for hot foods it is below 135 degrees. Any foods that reach a temperature in the "danger zone" and sit for two hours or more can begin to grow bacteria that cause illness.
Plan enough time to properly thaw a turkey. If the turkey will be stuffed, the stuffing should be moist and not dry, since heat destroys bacteria more rapidly in a moist environment. A stuffed turkey should be placed into a pre-heated oven immediately (or, the stuffing cooked outside the bird in another dish). For a fully thawed turkey in an oven heated to 325 degrees, estimate roughly one hour's cooking time for every 3-5 pounds of meat.
When the internal temperature of the turkey reaches 165 degrees, it is safe to eat. Take three different readings of temperature to ensure the whole turkey has reached the proper temperature; check the
state's land area. That forest land acreage has remained stable for the past five decades, while timber inventory has more than doubled over the same period! That says a lot about the forestry community's dedication to sustainability and efficiency. Private individuals own more than half of the state's forest land, and our agency is proud to support them.
The Georgia Forestry Commission is a dynamic state agency that provides leadership, service and education in the protection and conservation of Georgia's forest resources. Commission professionals furnish a wide variety of services in both rural and suburban settings. Our agency issues burn permits, ensuring that outdoor burning is safe to conduct on any given day (escaped debris burning is Georgia's number one cause of wildfire!) Our highly skilled rangers suppress raging wildfires, conduct fire prevention services, give assistance to rural fire departments and help manage emergency incidents in Georgia and
innermost part of the thigh, innermost part of the wing and the thickest part of the breast. The stuffing should also reach 165 degrees, whether it is cooked inside the bird or in a separate dish. After removing the turkey from the oven, let it stand for 20 minutes before removing stuffing and carving.
Later that night and in the days to come, everyone enjoys Thanksgiving leftovers. Within two hours of cooking your meal, cut any leftover turkey into small pieces and refrigerate the stuffing and turkey separately in shallow containers. around the country. GFC professionals give valuable forest management assistance to landowners and communities and market the state's forest products and capabilities around the world. A commitment to research supports the production of premium quality GFC seedlings that thrive in Georgia soil, be it in a tree farm, city park or backyard lawn.
While it can be difficult to place a value on the pleasure imparted by a forested hillside in autumn, we do know that Georgia's forest industries inject $23.7 billion and 108,112 jobs into the state's economy, making it Georgia's second largest manufacturing employer. In addition, these forest lands provide immense value to citizens throughout the state in the form of essential ecosystem services - clean water, carbon storage, wildlife habitat and aesthetics. A recent report by the UGA Warnell School of Natural Resources found these services are worth an estimated $37 billion
accepted for the Georgia Grown Executive Chef Program, which promotes the Department's Georgia Grown campaign statewide.
Now entering its second year, the program offers participating chefs a mark of honor and distinction, while increasing awareness for both restaurateurs and consumers about which local Georgia products are available for the cooking season.
"After the successes of last year's program, I am excited to see this alliance continue to grow," Black states. "The partnership between Georgia Grown and the Georgia Restaurant Association enables us to further promote and foster connections between Georgia farmers and local chefs. Our state has a great deal of culinary talent we need to use this talent for showcasing our locally grown produce and goods."
The Inaugural Georgia Grown Executive Chefs were: Holly Chute, Executive Chef, Georgia Governor's Mansion; Michael Deihl, CEC CCA AAC, Executive Chef, East Lake Golf Club; Kevin Gillespie, Executive Chef, Woodfire Grill Atlanta; and Hilary White, Executive Chef, The Hil, A Restaurant at Serenbe.
These Chefs, along with representatives from the GRA and Georgia Grown, will help to select the 2013 Georgia Grown Executive Chefs. The application process opened November 1, 2012 and will run through January 11, 2013. Chefs may apply online at www.garestaurants.org/ GeorgiaGrown.

What's ahead for Georgia's forests? One of the greatest opportunities lies with the emerging bioenergy industry, of which Georgia is considered a leader. Georgia's forest resources are capable of providing sizeable amounts of logging residue and low quality timber to supply this burgeoning market, with little impact on existing forest industry production. Thousands of additional jobs within new facilities and forestry operations make this a very exciting prospect.

Intercropping Provides Option

cantaloupes did not result in damage to the young cotton plants, and the intercropping of cotton did not delay the cantaloupe harvest.
After realizing success with growing cotton with cantaloupes, Sumner decided to try watermelons. This is the first year that Sumner has tried growing cotton with watermelons, so he will not know if he will have similar cotton yields until after harvest has been completed.
One down side of intercropping for Sumner is that crop insurers were not willing to cover his cotton crop this year. Since intercropping is a new practice, its long-term success is still unproven. Sumner is hopeful that once this year's harvest is complete, he will have sufficient data to demonstrate that intercropped cotton is a viable crop that should be covered by crop insurance.

The University of Georgia Center for Agribusiness and Economic Development and the Center for Innovation for Agribusiness will sponsor a Farm to Fork Food Processing Workshop Dec. 4 in Toccoa.
The workshop, which will be held from 8 a.m. to 4 p.m. at North Georgia Technical College, Currahee Campus, is designed to help individuals and businesses with developing their food products to increase produce marketability and sales.
Topics include business planning and financing, legal and regulatory issues, quality and food safety concerns, formulation and packaging, food defense plans, and distribution and sales.

Apple - Sausage Dressing
2 tablespoons butter or margarine 1 cup chopped onions cup chopped celery 1 pound hot or mild pork sausage 1 egg, beaten 2 cups chicken flavored stuffing mix 1 medium sized apple cored, unpeeled
and chopped 1 cup chicken broth Salt and pepper to taste Water if needed
Melt butter in a skillet, saut onions and celery until soft. Remove from skillet and place in a large mixing bowl. Add sausage to skillet, brown, crumble and drain. Add to mixing bowl with sauted vegetables. Add egg, stuffing mix, apple, chicken broth, salt and pepper. Stir until well blended. The mixture should be moist; if needed, add a little bit of water to the mixture. Place in a 9 x 13 inch baking dish. Bake at 350 degrees for 30 minutes or until golden brown on top.
Makes 6 servings
Cranberry Salad
1 (12-ounce) package fresh cranberries cup water 1 cups sugar 1 (20-ounce) can crushed pineapple 1 cup mayonnaise 1 cup Georgia pecans, chopped 2 (3-ounce) packages cherry jello 3 cups boiling water
Combine cranberries, water and sugar in large saucepan. Cook over medium heat until berries pop. Remove from heat, mash well. Add remaining ingredients. Mix well. Pour mixture into a 9-x13-inch pan or 4 quart mold. Refrigerate until set.

Testing note: To lighten the salad, omit the mayonnaise. Grated rind of one orange could be added to compliment the cranberry flavor. The salad does not set up to be extremely firm due to the high sugar content. If a firmer salad is desired, dissolve one envelope (Knox) gelatin in cup cold water and add to the mixture.
Cheddar Squash Bake
2 pounds yellow squash (about 6 medium squash), sliced
teaspoon salt 1 cup sour cream 2 egg yolks, beaten 2 tablespoons all-purpose flour 2 egg whites, stiffly beaten 1 cups shredded Cheddar cheese 4 slices bacon, cooked and crumbled 1/3 cup fine dry breadcrumbs 1 tablespoon butter, melted chopped parsley, optional
Preheat oven to 350 degrees. Cook sliced squash in boiling water for 15 minutes or until tender. Drain. Sprinkle with salt. Reserve a few slices for garnish. Set aside. Combine sour cream, flour and egg yolks in large bowl. Gently fold in beaten egg whites. Place half the squash slices in the bottom of a buttered 12x7x2-inch baking dish. Top with half the egg mixture, sprinkle with half the cheese and half the bacon. Repeat layers. Combine breadcrumbs and butter. Sprinkle over top of casserole. Bake, uncovered, for 20 to 25 minutes. Remove from oven and top with reserved squash slices, and chopped parsley, if desired. Yield: 8 servings.
