What causes rainbow-like colors on meats?
Meat contains iron, fat, and other compounds. When light makes contact with a slice of meat, it splits into colors like a rainbow. There are various pigments in meat compounds that can give it an iridescent or greenish cast when exposed to heat and processing. Wrapping the meat in airtight packages and storing it away from light will help prevent this situation. Iridescence does not mean that the meat has decreased in quality or safety.

The white dried patches indicate freezerbum. When meat and poultry have been frozen for an extended period of time or have not been wrapped and sealed properly, this will occur. The product remains safe to eat, but the areas with freezer burn will be dried out and tasteless. You can simply trim off these areas.

Methyl Bromide Focus of Upcoming Workshop

A workshop entitled, "Methyl Bromide Alternatives for Vegetables and Strawberries," is scheduled Feb. 1, 2005, in Room lof the Rural Development Center (RDC) in Tifton, Ga.
Fumigation is essential for production of many vegetable commodities and strawberries, and methyl bromide has generally been the fumigant of choice due to its excellent control of weeds, insects, and diseases found in Georgia soils. The Montreal Protocol originally dictated that methyl bromide would not be available after 2005; however, critical use exemptions have been granted for many vegetable commodities and strawberries.
This training opportunity will cover the most effective alternatives for methyl bromide as related to both weed and disease control; training will consist of both classroom and field exposure to alternative solutions. In addition, critical use exemptions will be explained in detail.
Specialists from the University of Georgia Cooperative Extension service will address topics including exemptions, strawberry

alternatives, and vegetable alternatives. Land preparation, equipment and drip application also will be discussed. In addition, the workshop includes travel to a field site.
RDC is located just off Interstate 75 in Tifton; take exit 64 and go west on highway 41.

Harris is a strong supporter of youth livestock programs and has served as an adviser to Georgia Junior Livestock shows, the Georgia National Fair, Georgia FFA, and Fort Valley State University. He also has traveled to Poland, Venezuela and Kazakhstan to help develop a market news program in those countries.
