Ag Department Works to Ensure Safety, Quality of M~lk in Georgia

Tl1e Georgia Department of "Agriculture monitors the state's milk
supply to ensure the milk and dairy products purchased by the state's consumers are safe and of the highest quality possible.
Because of the potential health risks associated with the consumption of improperly handled milk and dairy products, these products historically have been the most highly regulated segment of the food industry. For this reason the department maintains- a ~aboratory specifically designed for analyzing milk and dairy products.
"Our department devotes considerable resources to enSure the safety - and wholesomeness of milk and dairy' products," said Georgia Commissioner of Agriculture Tommy Irvin. "In fact, the department does more sampling and testing of milk and dairy products than for any other single food product."
Sanitarians from the department's Consumer Protection Division take milk samples from dairy fanns; processing facil~ties, including out-of-state processors; tank trucks; and from grocery and other stores that sell milk and milk

products. Milk inspectors pull samples and submit them to the lab for tests on a monthly basis. In addition to. the department's sampling, some milk cooperatives take their own samples weekly to further assure the quality and safety of their raw milk.
The department's dairy laboratory personnel are responsible for the evaluation of aerobic plate counts of both raw and processed milk to detennine if any microorganisms are present in the samples tested. This gives the dairy sanitarians a general idea of the sanitary conditions in effect at both the dairy farm and processing plant, as well as how the milk was handled during the pasteurization process. If'the test results show higher than established limit'l, the laboratory notifies the appropriate consumer protection personnel and sanitarians then work back to de~nnine the source~ of contamination so the problem can be corrected. In the case of an immine,nt health hazard, the department . then moves immediately to close the facility until the problem can be corrected.
The dairy laboratory also conducts coliform counts, ~o determi!1e if .any

coliform bacteria are present in finished product sampls. Such contamination, jf jt exists, usually occurS' during the processing of milk. If coliform bacteria are detected, consumer protection dairy sanitarians return to the plant where the' sample was taken and work with the
In processor to correct the problem. addition, tests are conducted on both raw and processed milk samples to detect the presence of antibiotic residues. Antibiotics sometimes are given to humans and animals to prevent and treat diseases. The presence of residual antibiotics is an important human health concern since antibiotics used to treat cattle can be transferred to humans through the cow's milk.. Any milk found with antibiotics is immediately destroyed.
.The dairy laboratory also tests samples of well water the producers use to wash their dairy cows, tanks, and other equipment, since water can be a'medium for contamination.
Since Georgia is a milk deficit state and must import much of its fluid milk, samples are taken from tanker' trucks coming in from other states. Because of its perishable nature, it is important ,to insure that milk coming into the state from other sources remains fresh and of high quality and will maintain shelf life claims stated on packages of ,nilk.
a Processed milk and milk products also
undergo phosphatase (enzyme) test to determine if they were properly pasteurized. If the pa'lteurization process
