To Work For You
In 1994, consumers were presented
with the Food and Drug
Administration's revised food label,
which came about as a result of the
public's desire to know both the nutri
ent content of food and what is in the
foods we eat. Its design is intended to
clear up confusion and provide more
complete, useful and accurate informa
tion that is up-to-date with today's
health concerns.
If you are still unsure how to use
these labels, don't worry. With time and
practice, it will become a famihar and
valuable tool. The major components of
the food label you need to be aware of
are the Nutrition Facts panel and %
Daily Value, nutrition claims and the
ingredient list.
The Nutrition Facts panel provides a
wealth of information about the foods
we purchase. You'll notice the serving
size is still the basis for measuring a
food's nutrient content, however the
new serving sizes are closer to amounts
people really eat. Remember, if you eat
more or less than the serving size on the
label, you'll need to adjust the amounts
of nutrients accordingly.
The list of nutrients provided reflect
the health concerns of most Americans.
Added to the list of nutrients is saturat
ed fat, cholesterol, dietary fiber and
sugars. The listing of polyunsaturated
and monounsaturated fat is still volun
tary unless a claim is made about them.
The amount of fat in foods is listed in
grams. Since most of us measure the fat
we eat in terms of teaspoons, it is useful
to know that 1 teaspoon of fat is equal
to 5 grams.
Sugar content also is listed in grams.

Unfortunately for rookie Henneberg, just minutes after this * photograph was taken on the 12.3-mile, 25-obstacle cross-country course, she fell off after her horse crashed into a difficult water obstacle jump called Olde Town Conyers, as she tried a more difficult but faster route against the advice of her coach and teammates. Garden Pesticides Should Be Stored Carefully
Some Georgians use home pesticides as tools for protecting themselves and their property against unwanted insect pests and plants.
However, since pesticides are haz ardous by nature and require the highest standards of careful handling, when you purchase a pesticide, you assume respon sibility for its safe storage, use and ulti mate disposal.
Careful storage protects people and animals from accidental exposure, safe guards the environment, keeps pesticides from being stolen or damaged by weath er, and reduces your chance of hability.
The following tips are provided by the Georgia Extension Service for use in handhng and storing pesticides:
* Store pesticides out of the weather and securely locked up out of reach of ani mals and children. The best place to store them is in garages, utility buildings or sim ilar areas removedfrom your living space.
* Don't store human or animal food or medications near pesticides.
* Keep pesticides from freezing or overheating since extreme temperatures ruin certain chemicals and can make con tainers leak or explode.
* Where possible, store pesticide con tainers on nonporous surfaces such as metal or plastic shelving or sealed con crete floors,
* If your storage area is damp, double pack metal, cardboard or paper containers in heavy-duty plastic wastebaskets with lids. Keep a fire extinguisher nearby.

tainers. Never store pesticides in old food containers.
If an original container becomes dam aged:
-- Immediately use up the pesticide on a labeled site.
-- Transfer the pesticide into another labeled container that originally held the same pesticide.
-- Transfer the pesticide into another sound container that can be tightly closed, and attach the pesticide label to the substitute container. Or, if the label was ruined, write at least the product name on the substitute container.
Georgia Field Peas:
A Southern Specialty
This vegetable, also known as field peas, is commonly grown in the southern United States, and is considered a staple in the diets of people in that area. Southern peas make an excellent side dish for a wide variety of meals and are an important ingredient in many favorite recipes.
Southern peas are low-fat, choles terol-free and an excellent source of fiber. A 1/2-cup serving contains 90 calories.
Southern peas grow well in most Georgia soils, but are primarily grown in the central and southern parts of the state. In Georgia, southern peas are harvested from June through November, with the heaviest volume concentrated from late June through mid-August.

Your Part of the Pond
Nothing much is more refreshing than a clear, fresh glass of water -- or as disgusting as fouled, smelly water.
It may be too easy to point the finger at big business, agriculture and industries as the ones mucking up the water with wastes, chemicals, pesticides and other pollutants.
Bill Segars, a water quality specialist with the University of Georgia Extension Service, said giant water problems can come from any source, including -- and sometimes especially -- the homeowner.
You can protect or pollute your own little comer of the pond.
"One quart of used motor oil will foul the taste of 250,000 gallons of water," Segars said. "Things like gaso line, batteries, old paint, household chem icals and cleaners also can contaminate water resources."
You can protect the ground water below your property and nearby surface water by handling household chemicals correctly:
* Always read the label. Follow all use and disposal instructions.
* Buy only the amount you need. Volume discounts and lower per-unit prices for buying large amounts may be false economy in the long mn, leaving you with storage and disposal problems.

Identify Tree Pests
The Southern Forest Insect Work Conference, a group of forest entomolo gists, has put 200 full-color images of forest insects and damage on two CDROM disks.
They added a full-color booklet which includes:
* thumbnail photos of the images. * scientific and common names. * descriptions of the images. * the photographers' names and affili ations. The two-volume set is entitled "Forest Insects and Their Damage." Keith Douce, a University of Georgia Extension Service entomologist, coordi nated the 18-month project, working with Extension computer specialist B.T. Watson and forester David Moorhead. The project was supported by the confer ence and the U.S. Department of Agriculture Forest Service, Forest Health Unit, in Atlanta. Entomologists how have a quick, accurate resource to help identify insects.

In small bowl, blend cornstarch with soy sauce until smooth. Add sherry, sugar, and ginger. Combine this sauce and meat; marinate for one hour. Strain marinade from meat and reserve marinade. In wok or large heavy skillet, heat olive oil and salt until very hot. Add meat and brown on both sides. Add garlic and mushrooms; stir fry for two minutes. Add marinade and heat through. (If necessary, thicken with a small amount of cornstarch diluted in water.) Delicious served over rice. Yields 4 servings.

This is the second in a series ofarticles about plants selected as Georgia Gold Medal Winnersfor 1996. Thanks to Dr. Jim Midcap, horticulturist and ornamentals specialist, University of Georgia Extension Service, for providing this information.
Hummingbird Clethra is a compact, small-flowering shrub that offers delightful flowers, great foliage and wonderful fra grance.
Introduced by Fred Galle, retired Callaway Gardens horticulturist, the shrub got its name from Hummingbird Lake at Callaway, where it grew.
Hummingbird Clethra provides spicy fragrant white flowers during July and August when color and fragrance from other plants are limited. The fragrance spreads great distances and attract butter flies and bees.
Growing two and a half to three and a half feet tall, the plant spreads three to five feet. Its leaves are shiny, dark green in the summer and turns to tints of yellow and amber in the fall.
White flowers develop from buds of the previous year, and they are visible by mid- to late-June in central Georgia. In July the flowers, which are about a half-inch across, begin opening along four-to six-inch flower stalks and flower from the bottom to the top over the next four to six weeks. When in full flower, the plant has a whitish haze blanketing the lower dark green foliage.
The flowers give way to small brown capsules that ripen from October to November and persist throughout the win ter. They provide dormant season interest and may be removed in early spring before growth begins.
Over time the plant forms suckers from the crown and begins increasing in size as a colony. These suckers can be separated from the parent plant and transplanted to another part of the landscape or cut off at ground level to restrict its size and spread.

Market Watch
Corn Market Update. The summer weather rally in the com market is over. Improved weather and fears concerning the weakened demand base have taken the wind out of the com futures' sails. After reaching a spike high of $3.89 on July 12, December futures have plummet ed to under $3.40, breaking through strong support lines on the charts. Further downside movement is expected before the market finds some stability. The next level of support is near $3.30 and more in the $3.10 area.
Improved weather is the main reason for the decline. As we near the end of the month, the bulk of the crop will be at or near pollination. Temperatures have been moderate in the Midwest and the rains have been timely. The condition of the crop has improved dramatically from the dismal start. Yield projections are inching upward and talk of trend line yields near 127 bushels per acre are now heard. While the crop is not yet made nor in the bin, the outlook has improved and pro ducers must remember that is what the December futures market price represents -- the value today of com yet to be har vested.
While it is now too late to sell at the top of the market, there are still excellent pricing opportunities available to Georgia farmers. Old crop September futures prices remain above the $3.50 level and basis levels are strong. Early harvested com can still bring a price near the $4 level. Strongly consider pricing a good portion of the crop for sale at harvest. While it is possible to see a strong post harvest rally and thus a return to storage, it will take a substantial rally to beat the profitability of current cash price levels.
Cotton Market Taking on a Bearish Tone. The 1996 cotton market is trying to hold under what appears to be growing
optimism about the crop and growing pessimism on the demand side. After large losses in June, December futures are currently trading in a narrow range between 72 and 75 cents per pound. The questions on many persons' minds is whether or not prices are going to break away and recover about 75 cents or if prices will eventually slip below the 70cent mark. At this point, most estimates place the crop at 18 to 19 million bales. The current USDA estimate for 1996 crop exports is not encouraging -- 6.6 million bales compared to 7.8 million bales last year.
Foreign production of cotton is expected to be up about 2 1/2 percent from last year. Although the China crop is expected to be down 13 percent from last year, USDA expects China to actually import 1.4 million bales less than last year. This would be a big blow to U.S. export potential. Imports are not expected to increase in countries that are tradition al major markets for U.S. cotton. The out look is still cautious and uncertain. Crop problems could yet produce another rally. A crop of 18 million bales or less is still possible. The outlook is potentially weak er, however, if a 19-million bale crop materializes and exports are soft.

A Buyer's Guide to Southern Peas Southern peas are most commonly sold in-the-pods at retail. It's best to buy young, tender peas with crisp firm pods. Peas with thick, tough, fibrous pods are over-mature. Avoid buying peas which show any signs of decay, including wilt ed or flabby bean pods or blemishes. Unshelled southern peas should be refrigerated, and will stay fresh for up to one week. To help preserve color and retain nutrients, cook southern peas in a covered pot. Consider having peas shelled at the farmers' market to save preparation time. To freeze, blanch in shell peas for two minutes. in boiling water; seal and freeze. Best Ways to Enjoy Southern Peas Simmer southern peas with a little butter for a side dish that complements any meal. Toss cold, cooked peas with favorite salads. Add southern peas to soups or stews for added flavor and nutrition. For a traditional southern dish, cook peas with pork or bacon. For a fighter version of this dish, substi tute 1/2 teaspoon beef bouillon for meat. Lightly steam peas for a healthy side dish. Include peas in almost any casserole. Season peas with red pepper or onion for an especially flavorful dish. Mix peas with rice for a nutritious, vegetarian entree. Mash peas and mix with spices for a delicious spread or dip. Did You Know... Southern peas originated in Asia or Africa. Southern peas were brought to America with the first slaves from Africa. Southern Peas thrive in warm climates and require long growing seasons to mature. Most southern peas are harvested in the green-shell stage for fresh market, or for canning and freezing.
