ABAC Responsive To Ga. Agriculture
Abraham Baldwin Agricultural College is well known throughout the state as simply ABAC. But the college is much more than simply ABAC. During the last few months, I have reflected many times upon the college and its programs.
Abraham Baldwin Agricultural College is well known throughout the state and the southeast for its agriculturally-related programs.
Our guest columnist this week is Dr. Harold J. Loyd, president, Abraham Baldwin Agricultural College, P.O. Box 310, ABAC Station, Tifton, GA 31794-2693.
Yet few people realize that only 500 of the 2,100 students enrolled this fall at ABAC are actually majoring in one of these programs. Agricultural enrollment has slipped across the nation. Fortunately at ABAC, and at most other institutions, an aggressive marketing and communications effort is underway to make more people aware of the shortage of agricultural graduates. It was recently estimated that 3.3 jobs exist for every agricultural graduate. The great majority of these positions are not in production agriculture but are ag-related in agri-business and a wide variety of other off-farm positions.
ABAC has and is continuing to revise its offerings of agricultural programs to meet the demands of employers. The college implemented an associate degree option in Horticulture called Golf Club Management. This complements existing associate degree programs in Turfgrass Management and Turfgrass Equipment Management. The college will soon propose a new option in Livestock Health, leading to a two-year associate degree. Other new programs are being studied Urban Forestry and Hospitality Management. All educational institutions must face the fact that we are preparing graduates for the year 2000 and beyond, and we do not have the luxury of returning to the good old days of the 1950s and 1960s. All colleges and universities with significant agricultural programs must review the programs offered in light of the job market.

SCS Provides Help to Farmers and Other Landowners
Q: How often should I check the stovepipe of my wood-burning heater for creosote buildup? I have heard that it is dangerous if the buildup gets too thick.
A: Removing creosote regularly is very important for several reasons. Large deposits can block the flue and make the heater smoke. Creosote also can reduce heating efficiency by acting as an insulator. Creosote is highly flammable and can cause a chimney fire if the buildup gets too thick.
Check the stovepipe every 3-4 weeks when it is newly installed to determine the buildup rate. For safety's sake, it should be cleaned when one-quarter inch of creosote accumulates, which may be no more often than once a year. If you use a lot of green wood or pine, this substance will build up faster and the heater will need checking and cleaning more often.

SCS began its conservation work during the Depression after a series of dust storms ravaged the nation's farmlands and carried away millions of tons of topsoil. Since that disaster, SCS has been trying to make Americans more aware of the need to protect our natural resources, especially soil and water.
The agency provides free conservation planning assistance through programs available to all land users through soil and water conservation districts. These districts are local units of government, guided by a governing board made up of local farmers, ranchers, other land users and community leaders.
SCS directs much of its conservation efforts to small farmers, showing them how erosion robs fertilizers, seeds and pesticides as well as soil from farms; how present and future yields are hurt by erosion; and how some conservation measures can improve yields at little or no cost.

Farm Children at Risk During Holiday Season
Holidays can be hazardous times for farm children. Simply by being home from school for days at a time, or with other young relatives at family gatherings, children run a greater risk of accidents at this time of year.
Visiting children often volunteer
The sweet potato is one of Georgia's oldest crops and it still ranks among the state's top moneymaking vegetables. Georgia's commercial sweet potato production is centered in south Georgia where workers like these were busy harvesting the tubers this fall.
In 1988, approximately 5200 acres of sweet potatoes were harvested in Georgia, yielding about 83 million pounds of the crop.
to help with farm chores. Unless the assignment is within the child's ability and he or she is properly trained and supervised, serious injuries could result.
Even if not helping with work, farm children often play around animals, watering tanks or electrical equipment. They like to watch and, if allowed to, ride along with adults. But parents are advised to keep children away from farm machinery. News stories this time of year all too often deal with children being seriously hurt or killed by falling from, or being run over by, farm equipment. Only licensed drivers should operate tractors or other farm machines on public roads. Keys removed from farm machines will keep children from starting them up.
While a ride in the back of a pickup truck might sound like fun, it also could be fatal. Several hundred people, mostly juveniles, are killed or injured each year while riding in the cargo area of pickups, according to the National Transportation Safety Board. Rural children also are much more likely to be killed or injured in a highway accident; yet they are much less likely than city children to be wear-

Georgia Cooking
The Georgia winner of the National Chicken Cooking Contest in Hershey, PA., is Mary Louise Lever of Rome. Her recipe for chicken with Blue Cheese Pecan Sauce is fea tured in this week's Geor gia Cooking column.
Chicken with Blue Cheese Pecan Sauce 4 broiler-fryer chicken breast halves, boned, skinned 1/2 cup flour 1/2 teaspoon salt 1/4 cup olive oil Blue Cheese Pecan Sauce: recipe follows 1 tablespoon chopped fresh parsley 1/8 teaspoon freshly ground white pepper parsley sprigs
In small shallow bowl, mix flour and salt. On hard surface with meat mallet or similar flattening utensil, pound chicken to 1/4-inch thickness. Dredge chicken, one piece at a time, in flour mixture, coating evenly. In large frypan, place oil and heat over medium temperature. Add chicken and saute about 6 minutes or until light brown on each side and fork can be inserted with ease. Remove chicken to platter and keep warm. Spoon 2 tablespoons of Blue Cheese Sauce over each chicken breast and sprinkle with 1/4 teaspoon reserved crumbled blue cheese. Top with chopped parsley and white pepper and garnish with parsley sprigs. Serve remaining sauce in a sauceboat. Makes 4 servings. Blue Cheese Pecan Sauce: In saucepan, place 3 tablespoons margarine and melt over medium heat; add 3 tablespoorjs flour and stir until smooth. Stirring constantly, add 1 1/2 cups milk, 1 teaspoon dry sherry, 1/4 teaspoon minced garlic and 1/2 cup chopped pecans, cook until sauce thickens. From 4 oz. package blue cheese, reserve 2 teaspoons for topping on chicken. Add remaining cheese to sauce and remove from heat.
STUFFED TURKEY BREAST 6-ounce package seasoned stuffing mix 1/4 cup butter or margarine, divided 1/2 cup chopped celery 1/4 cup chopped onion 3-pound boneless turkey breast, skinned 2 tablespoons honey
Prepare stuffing mix according to package directions. Saute celery and onion in 2 tablespoons butter or margarine until celery is tender and onion is transparent. Mix celery and onion with stuffing mix.
Lay turkey breast flat on wax paper, skin side down. Remove any tendons, skin or fat. Pound the breast to flatten and form a more even thickness.
Spoon stuffing mixture into center of turkey breast leaving a 2-inch border at sides. Starting at bottom, fold in sides of turkey breast over filling.
Tie turkey breast roll securely in several places with string. Place, seam side down, on a rack in a roasting pan. Mix honey and remaining butter or margarine together. Pour 1/2 of honey mixture over roll. Insert meat thermometer making sure bulb rests in meat of turkey. Bake, covered, at 325 for 30 minutes. Uncover and continue baking for 1Va hours or until meat thermometer registers 185. Transfer turkey to cutting board; remove string and let stand 10 minutes before slicing. Makes 8 servings; each serving contains approximately 371 calories.

"Eggcellent" Ornaments
Empty the contents of an egg by poking a hole in each tip with a large needle and gently blowing on one end. Rinse the inside of the empty shell and allow to dry. Paint desired designs on your egg with acrylic paint, let dry and cover with clear varnish. Poke a pipe cleaner through the bottom hole and out of the top of the shell. Bend the lower end to hold the egg and shape the top to form a loop to hang on the tree.

Holiday Recipes
The holidays are a time of joy and celebration. And to help you and your guests get into the holiday spirit this season, the Georgia Department of Agriculture's Commodities Promotion office has prepared a list of "Celebration Recipes" using six ingredients or less. FESTIVE MOCHA MIX
1Vz cups non-dairy powdered creamer 1 cup sugar 1/2 cup instant coffee granules 1/2 cup unsweetened cocoa 1/8 teaspoon salt 1 teaspoon vanilla or almond extract
Combine all ingredients in a large bowl. Store in tightly covered container.
To serve, combine 3 tablespoons of mocha mix with one cup boiling water. Stir to blend. Garnish with whipped cream if desired. Makes about 3 cups of mix. Each serving contains 73 calories.
For a winter warmer, give someone a package of mix in a colorful mug. Don't forget to include a copy of the recipe.
PRALINE CRUNCH
1 cup sugar 2 tablespoons butter or margarine 1 cup chopped pecans non-stick vegetable spray
Cover a baking sheet with foil. Lightly spray foil with vegetable spray. In a large heavy skillet combine sugar and butter or margarine. Cook over medium-high heat, stirring constantly until sugar is dissolved and turning golden. Add pecans; stir until pecans are toasted and coated with sugar mixture. Quickly spread mixture over prepared cookie sheet. Cool completely. Break into bite-sizes pieces for a delicious holiday treat. Store in tightly covered container. Makes about two cups; each tablespoon-sized serving contains 110 calories.
COUNTRY HAM SOUFFLE
6 tablespoons butter or margarine 6 tablespoons flour 1Vz cups milk 1/8 teaspoon paprika 1 tablespoon lemon juice 1 1/z cups thinly sliced ham 6 eggs, separated
Melt butter or margarine in heavy saucepan. Stir in flour and cook 2-3 minutes. Add milk and stir until a thick, smooth cream sauce develops. Add paprika, lemon juice and ham. Allow to cool slightly. Add beaten eggs yolks, then fold in beaten egg whites.
Pour into buttered 1 1/2-quart souffle dish and bake at 400 for 40-50 minutes.
Makes 6 (2x4-inch) servings; each serving contains 311 calories.
COLORFUL SPINACH SALAD
10 ounces (8 cups) spinach, torn into bite-sized pieces 1 cup red, seedless grapes 4-ounce can mandarin oranges 1/4 cup lime juice 3 tablespoons honey 2 tablespoons vegetable oil
Toss spinach, grapes and oranges in serving bowl. Cover and refrigerate until time to serve.
Whisk together next three ingredients, cover and refrigerate until ready to toss with salad. Makes 8 (1 1/2 cup) servings; each serving contains 94 calories.

Garden
The winter months are a good time to begin planning for a spring garden. Order seed catalogs and begin making your selections now.
To gauge how much water your garden has absorbed after a shower, set an empty can in the center of the garden when rain appears imminent. An inch of rainwater usually will be sufficient to maintain plants for about a week without the need for additional watering.
Try the following method for storing cabbage for the winter. Dig out the whole plants, roots and all. Place the heads upside down in a cardboard box and cover them with a thick layer of newspapers. Keep the box in a cold, sheltered area, such as in an unheated garage. The cabbages should remain fresh and crisp for several months.
Before bringing herbs indoors for the winter, pot them in advance and leave them outside for a few days in semi-shade so they can recover from the transplant. Mint, however, can be left out until the first light frost before bringing it indoors.

ers of what we have to offer. Advertising and marketing may be dirty words in some circles, but they are essentials of the 1990s in terms of reaching prospective students. The urbanization of Georgia has created situations where prospective students really don't know or appreciate the strength of our agricultural industry and the number of employment opportunities created by that industry. Thus colleges and universities must engage in truthful but forceful presentation of programs and careers available in the various agriculturally-related fields of employment.
Abraham Baldwin is known for more than agriculture. The other 1,600 of our 2,100 students are majoring in a variety of programs ranging from nursing, education, business administration, criminal justice, journalism, public relations, music, art, psychology, mathematics, pre-med, and the list goes on. In a real sense, many of these students also are preparing for agriculturally-related positions. Many of these students obtain associate and bachelor's degrees and then seek employment with agriculturally-related firms or in small towns where the agricultural economy is quite important. This side of the college has been growing rapidly over the past ten years.
My opportunity as I lead ABAC into the 21st century is to develop strategies that will lead to the growth of both the agricultural and the non-agricultural enrollments. In a real sense, this same challenge faces the state; the growth of Georgia depends on both the agricultural and the non-agricultural industries.
SCS Provides Farmers and Other Landowners
Although most SCS assistance is provided to farmers and ranchers, it also is available to solve conservation problems on non-agricultural land, such as homesites, construction sites or public lands.
One of the agency's more valuable services is the publishing of soil surveys for counties throughout the United States. Each soil survey contains detailed maps and descriptions of soils in the counties, as well as interpretations of soil properties such as sand, silt or clay content, organic matter content, flood hazard, depth to water table, drainage, erodibility, acidity or alkalinity and fertility.
Soil surveys help farmers determine the crop production or forage potential of their soils, whether specialized crops will grow well in particular soils, how much soil management is needed for a particular yield, how intensely soils can be used without damage, how to reclaim soils, how much waste soils can absorb and how certain areas could be developed for recreation uses.
Soil surveys also are used to help appraise the income potential of farmland. By listing soils according to their ability to produce given crops, a countywide productivity rating can be established for each soil and the crop productivity of soils on any given farm in the county can be rated.

Parents are advised to keep an eye on their children and know what they are doing at all times. Children should not be allowed to wander into roads, barns, ponds or machine sheds, and potentially harmful items, such as pesticides, firearms and sharp tools, should be kept locked up and out of reach.
Parents should temper their children's natural curiosity with an appreciation for the serious nature of farm work as well as the potential dangers involved.

Soil surveys also can help homebuyers by ensuring them that the expensive home they are considering is not built on the flood plain of a stream. Soil surveys show the extent of floodprone areas and the hazard of flooding in such areas; they also indicate whether seasonally high water tables can affect basement flooding or septic tanks, whether it is appropriate to build on certain types of clay or organic soils, and whether the soil is shallow over hard rock, which makes basement construction difficult.
Erosion can be a serious problem for homeowners as well as farmers. Even on slightly sloping areas, runin water from higher elevations may deposit sediment in lawns or driveways, wash out shrubs and vegetation, flood basements and cause gulleys. Homeowners who are aware of major soil hazards can take steps to prevent damage rather than incur the likely expense of repairing it.

SCS was assigned new responsibilities under the Conservation Reserve, Sodbuster, Swampbuster, Conservation Compliance, and Conservation Easement provisions of the 1985 Farm Bill.

Q: Can you tell me the best way to thaw frozen water pipes? Mine have frozen in past years when it gets really cold.
A: Always remember these two basic rules when thawing frozen water pipes: 1) open the faucets first and 2) never use a torch or anything that has an open flame. Failure to open faucets can cause the pipes to burst, because the water inside them turns to steam and expands. It is dangerous to thaw pipes by using an open flame, because it can start a fire. Many house fires are caused each year by improper thawing of pipes. You can blow warm air from a hair dryer, or wrap a frozen pipe with rags and pour hot water over the rags.
You can insulate the pipes by wrapping them in layers of news paper and covering it with plastic to keep out moisture. You also can buy insulation made for this pur pose or use heat tape.

Under the bill, in order to remain eligible for several USDA program benefits, producers are required to develop and implement a locally approved conservation plan on highly erodible fields by Jan. 1, 1990, with the plan fully implemented by Jan. 1, 1995. SCS determines if a field is highly erodible land or converted wetland and helps producers prepare conservation plans and install appropriate conservation systems.
As of Oct. 19, 1989, conservation plans had been developed for 98 percent of the nation's highly erodible cropland. Georgia had plans completed on 100 percent of its highly erodible land and systems implemented on 48 percent of those acres.
In Georgia, SCS works through 40 soil and water conservation districts throughout the state, to provide assistance to individuals and groups, including local government officials. Assistance on eligible problems is provided on an equal basis as a free public service.
Employees of SCS serve all Georgians from field offices located in 150 counties. Field offices are supported by area offices in Rome, Elberton, Griffin, Statesboro, Albany and Waycross. State Conservationist Dr. Hershel R. Read directs SCS operations from the state office located in the Stephens Federal Building, 330 Hancock Avenue, Athens, Ga. 30601.
