Dairy Month Salutes Georgia Producers
This month, 638 Georgia dairy armers, of which I am one, are :elebrating the 53rd annual recoglition of June Dairy Month.
The annual celebration is a time to recognize our state's dairy industry for providing consumers with an abundant supply of nutritious milk and milk products. This year our theme is "Love Them With

gallons. The average production was 11,835 pounds of milk per cow or 1,376 gallons. In order to reach that production, we fed 328,000 tons of purchased feed or 6,010 pounds per cow, at an annual value of $48 million.
With the milk produced, Georgia's 16 fluid milk processing plants and 11 manufacturing plants not only processed millions of gallons of milk, they also produced 19,563,000 gallons of frozen desserts, including 9,577,000 gallons of ice cream.
The processing, manufacture and distribution of milk and milk products generated 3,778 jobs within the state at an annual payroll of $77,135,984. It is estimated that the total dairy industry generates $1,165,000 worth of economic activity within Georgia.
With these impressive figures it is easy to forget the personal touch that's involved in dairy farming. My fellow dairymen and I provide the personal touch as we milk our cows twice a day - ensuring that when consumers reach in that dairy case they'll receive a product that is fresh and delicious.

Advanced technology and changes in the regulations currently governing the processing of chicken may lead to a new market product: poultry breakfast strips. The poultry strips would provide a low-fat alternative, or accompaniment, to bacon or beef breakfast strips.

Safety Technology Available For Producing Poultry Strips

How about a couple slices of chicken to accompany those eggs and toast? Partially cooked, cured breakfast strips made from poultry may soon be produced if a new U.S. Department of Agriculture proposal which sets processing and labeling requirements to assure consumer safety is approved.
"Some consumers may be interested in this type of product as a lower fat alternative to traditional bacon, or because of religious or

dietary reason," said Dr. Lester M. Crawford, administrator of USDA's Food Safety and Inspection Service (FSIS).
George Schuler, an Extension food scientist at the University of Georgia agreed. "Much less fat is the advantage (of a poultry breakfast strip)," said Schuler, who has done poultry research at UGA similar to the USDA tests.

Residues of Acephate Found On Cabbage Samples in Worth

Routine samples, pulled from two cabbage fields in Worth County, have tested positive for residues of acephate, an insecticide which is not registered for use on cabbage. Initial samples pulled revealed residue levels of 1.05 parts per million and .93 parts per million (ppm.)
The total of 25 acres of cabbage, grown by Earl Varnadoe of Doerun, was immediately placed under "withhold sale" by Georgia Commissioner of Agriculture Tommy Irvin. Varnadoe has been asked to voluntarily destroy the remaining cabbage in his fields.
Some 272 cases of the cabbage were shipped from the Worth County vegetable farm before the residue was confirmed. Of these,

212 cases have been placed under "withhold sale," and efforts are underway to locate the remaining 60 cases. This cabbage will remain under "withhold" and dealers will be asked to voluntarily destroy the contaminated product.
"Although acephate is approved for use on some food crops, it has not been registered for use on cabbage." said Irvin. "This is not an issue of safety since a tolerance of up to 10 ppm is approved on celery, for example but a matter of illegal application of a pesticide."
Acephate, sold under the trade name Orthene, is a pesticide primarily used for insect control on a variety of plants and crops.

Co-op in Quitman Fined $10,0(10 For Fraudulent Weight Practices
A farm service center, Coastal Plains Farmers Co-op Inc. of Quitman, has been fined $10,000 by Georgia Commissioner of Agriculture Tommy Irwin. The fine was issued after an investigation revealed that employees of the co-op fraudulently prepared weight tickets misrepresenting the quantity of corn sold to a Brooks County farmer over a three-month period.
Coastal Plains charged the farmer for more than 12 tons of corn he never received. The co-op purchased the corn from an area grain supplier and delivered it directly to the farmer's cattle operation. The violation was brought to the attention of the Georgia Department of Agriculture after the farmer reported his suspicion to a department field inspector and the Georgia Bureau of Investigation.
The fine paid by Coastal Plains Farmers Co-op Inc. was collected in accordance with the Georgia Weights and Measures Act. The farm service company was in direct violation of the law by charging the farmer for more corn than was delivered, fraudulently preparing weight tickets and never weighing the commodity.
Besides the $10,000 fine, Coastal Plains was ordered to credit the farmer's account in the amount of $1,515.29 as reimbursement for the corn he did not receive. The department also placed the co-op on probation for one year.
Coastal Plains also agreed to correct commercial feed registration and labeling for soybean meal, also sold at the operation, to reflect the proper protein guarantee.
"Our weights and measures laws were designed to insure fair and honest standards in the marketing of agricultural commodities," said Irvin. "Our department is charged with maintaining these standards since buyers and sellers are not always able to verify the accuracy of weights and measures themselves."

Dear Editor: Camp Isidor Alterman (formerly Ajecomce) is a day camp
operating under the Atlanta Jewish Community Center, a nonprofit organization. One of our objectives is to teach the campers a respectful attitude towards the environment and its preservation. In this program we include a small animal farm where the campers are taught how to feed and care for the animals. In order to run this animal farm, we need two chickens, some rabbits, a rooster, two goats and two sheep. We will provide the food, care and shelter that the animals need. Camp is in session June 16-Aug. 11 and any help your readers can offer would be appreciated.

Dear Editor: The recent Georgia General Assembly passed Bill 49,
which mandates all automobile insurance companies in the state to give motorists an appropriate discount provided they have had an approved driver improvement course. The American Association of Retired Persons (AARP) is offering a "55 Alive/Mature Driving" program for those interested in taking it. EDITOR'S NOTE: We get letters here by the hundreds. It's obvious that we can't print them all in this column. Recently, however, we received a letter that was touching enough to share with the Market Bulletin family, concerning last year's "Remember Special People" list.
Dear Editor, Just a note to the Market Bulletin for
printing the list of special people. My mother, Mrs. Pennie Butler, was one of those listed.
She received about 100 cards and letters. She was so happy and excited every day when the postman came. They made her Christmas a very happy one.
On Feb. 21, she carried her garbage out to the street. It was raining, and she slipped, fell and broke her hip. She was operated on and died, all within a few hours.
I especially wanted all the school classes and boys and girls who sent her cards to know that she appreciated every one. She read them each many times. Pennie Butler was such a sweet, sweet lady. We really miss her. Thank you all.

Q: How do you get the rank taste out of homemade lard?
A: We have been told by some people who make their own lard that frying several potatoes in the lard until crisp will get rid of the rank taste. The potatoes will absorb this taste from the lard and make it suitable for use. While rank lard is not fit for consumption, you might want to try making soap out of it if you cannot remove the substance.
Q: Are ultrasonic dog collars effective against fleas and ticks?

Take Someone Special Fishing And Build a Lifelong Memory

Whether it's your child, a niece or nephew or some other young friend or relative, there's someone you should introduce to the special joys of fishing as soon as school is out and you have some free time.
Commissioner of the Department of Natural Resources, J. Leonard Ledbetter, has designated June 9-11 as "free fishing days," during which residents of Georgia may fish with out obtaining a sport fishing li cense. The free fishing days fall within National Fishing Week, cele brated June 5-11.
What child ever forgets that first exciting tug on the line that signals a fish has grabbed the bait dangling from the end of their pole? Little eyes are sure to wander from their vigil over bright red corks bobbing with the ripples of a pond, creek or river, but that is part of the fun of this sport. You can have no luck at all with the fish, and still have lots of fun.
As a chunky tomboy spending summers on my grandfather's farm in Appling County, I brought more than a few grins to "Uncle Ray" and Granddaddy as I piled in the boat right along next to them for fishing in Big Creek, the Altamaha River, ponds, the Big and Little Satilla rivers, and mullet holes along the coast and on golf courses on Jekyll and St. Simons islands. And when I didn't catch a thing all

day -- I still had fun (Granddaddy told me the fish could smell me and that I smelled too sweet for them to bite!)
How lucky that Georgians can enjoy both freshwater and saltwater fishing -- from the sandy backroads of South Georgia, where cane poles baited with red wigglers dangle thick over catfish holes, to the roll ing boat rides destined for artificial reefs off Sapelo Island, to the click of rods and reels spinning bass and trout lures over the smooth open lakes up-state, there is something for everyone here.
All that's needed is a fishing license for fresh water fishing. No license is required for salt water fishing, nor is a license required by those under the age of 16 or over the age of 65, according to DNR.
A regular, resident fishing li cense is good from April 1 to March 31 of the following year. A license is $7.50 a year and is available from most bait shops, marinas or other fishing locations. All that is re quired, besides the fee, is a photo I.D. with an address on it (like a driver's license) which shows that you are a Georgia resident.
So load the boat, rent one when you get there or fish from the shore and join more than 1.5 million Georgians who already know the joys of fishing -- oh yeah, and take a young friend along!

Keeping Up With Poison Ivy And Its ' Cousin' Poison Oak

The severity of the reaction var ies greatly among individuals. Some have a lot of swelling and a maddening itch; others have only a mild reddening of the skin. The reaction is also determined by the area of exposure and the amount of plant resin. Poison ivy and oak reactions seem to be more intense in adults than children.
Dressings of ice water and cotton cloth provide relief during the acute stage. Lotions to stop itching, such
as calamine, or topical steriods, are widely used and have proven to be helpful. Those containing antihistamines, local anesthetics or metal salts should be avoided, however. In case of severe skin reactions, con sult your doctor.
Glyphosate is the recommended herbicide for control of this plant. Several products contain this chem ical, such as "Round-up." It should not be sprayed on any desirable vegetation, because it will probably

kill it. As with all such products, be sure to read and follow all label directions carefully.

'Dove in the Window' Is A Charming Quilt Pattern

What a special sight it would be to awaken to a dove sitting in the bedroom window. That must have been what the creator of this charming pattern had in mind when they designed the "Dove In The Window." Though an intricate block to piece, this pattern is unusual and worth the effort. It finishes about 14 inches square, suitable size for a patchwork pillow. If used for a whole quilt, set the 25 blocks together with 3-inch strips of pieced sand and white with 3-inch squares of sand color or tiny pieced nine-patches at all intersections.
Trace the pattern above on the wrong side of the cloth, then cut a seam larger sewing back to the line. The quilt sets together 5 blocks wide by 5 blocks long, with strips 3 inches wide by 14 inches long joined with the squares at the end of these strips. These strips are cut I'/s
inches, two of sand and one of white to go between

them. With seams off from sewing them together, they appear between blocks 3 inches wide. A 3-inch border all around the pieced center may be of the sand color with binding of rose or blue. Twenty-five pieced blocks, 40 pieced strips and 16 three-inch squares will finish about 82 inches square.
Material Estimate: 1V2 yards of rose; !J/2 yards of blue; 2 yards of sand and 4Mj yards of white. (For a total of 9V2 yards.)

Field tests are underway on a new type of cotton plant which could be internally protected from pests like boll worm, tobacco bud worm and army worm, according to the U.S. Department of Agriculture.
The USDA issued a permit to a Wisconsin company to begin field testing the genetically engineered cotton plant in Starkville, Miss. If the variety performs as hoped, U.S. cotton producers could save millions of dollars. The USDA estimates that these pests cost cotton pro ducers $120 million in 1988 for controls and yield losses.
To produce the genetically engi neered cotton plants, scientists in serted a gene into cotton from a
common soil bacterium called Bacil lus thuringiensis. The gene pro duces a protein that is toxic to caterpillar-type insects, but not to humans, other mammals, or most
insects. "These test have been thoroughly
reviewed by our agency and...are well designed and environmentally safe," said James W. Glosser, ad ministrator of USDA's Animal and Plant Health Inspection Service. "Engineering pest protection into the cotton crop could significantly reduce the need for chemical con trol, and that would be a positive development from both economic and environmental viewpoints."

Take care of your roses and they'll take care of you. Keep them fed, watered and free of diseases and pests. Use a complete granular fertilizer and water well. Keep up your spraying schedule: two-week intervals with a combination fungi cide and insecticide. Keep rose plants clear of yellowed leaves and fading blooms.
Most flowering annuals, perenni als and ornamentals benefit from a maintenance program. Example: dead-heading. Keep the old and fad ing flowers picked or pruned off the plants, so that they can use all the energy that they would have put toward seed production into more flower production. Remember: dead heading, fertilization and irrigation equals blooms.
Tomatoes aren't the only plant that can suffer from blossom-end rot. So can peppers and waterme lons, among others. There are two probable causes: lack of calcium (caused by not adding sufficient lime to the soil) and lack of mois ture. Both are correctible. Spray plants at the first sign of fruit-set with calcium chloride, according to label directions, once a week for three weeks. Keep watering. Toma toes can also experience blossomdrop, which causes premature fruit that doesn't develop properly. There's not a lot that can be done about it, as it is caused by excessive cold or excessive heat, or too much nitrogen.
You can force early tomatoes by using a shovel to cut the roots 6-10 inches around the base of the plant. It will shock the plant into ripening its fruit 5-10 days earlier than your neighbor. Try it with only one plant, one that is full of large tomatoes, as it might not recover.
You can make a simple butterfly dish that will have the colorful critters coming. Take several (as many as a dozen) of those orange plastic pot scrubbers that are sold in the grocery store. Put them in a round dish and soak them in sugar water. Butterflies love it. They also like decaying fruit. Many species will snack on bananas peeled and left in a dish in the garden. If you're interested in butterflies and how to attract them, write the Education Department, Callaway Gardens, Pine Mountain, 31822.
Prune spring-flowering shrubs during June. Azaleas, spireas and quince benefit from a good pruning after their blooms are spent.

Keeping Up With Poison Ivy And Its 'Cousin' Poison Oak

Poison ivy and poison oak are both members of the sumac family. Rhus radicans (poison ivy) is more common in the South and grows in many different environments -- be side roads, in gardens and even along the seashore. It is a climbing plant whose pointed green leaves are arranged in groups of three. The leaves turn a bright orange to scar let in the fall, but are still just as poisonous.
Poison oak (Rhus toxicodendron) is a bushy relative of the same family which seldom grows more than two feet tall. Its leaves are arranged in threes also, but the tips are rounded. The poisonous mem bers of the sumac family produce white berries, but the nonpoisonous varieties produce berries that are reddish or bright red. Unripe ber ries of both are green.
The rash from these plants occurs more often in warm weather, be cause more people are active out doors then, although irritations can and do occur during the winter. People also wear less clothing dur ing warm weather, so they are more likely to come in contact with these "wicked weed cousins."
The rash is actually an allergic reaction on the skin or tissues to the resin of the plants. After a person is exposed, it usually takes 12-48 hours before there is a visible reponse. Initially, there is redness and swelling. During the next 24 hours, blisters may develop. The blister fluid does not contain the

poison from the plant and cannot spread the rash to other parts of the body or to other persons.
Itching is a constant and promi nent feature. Crusting and scaling begin in a few days. If there are no complications caused by scratching or inappropriate medication, the dermatitis rarely persists more than 10 days.
Resin from these plants can re main stable for a long time. Garden tools, fishing rods and camping equipment may contain some active resin. Dogs and cats can carry it on their fur. Once on the hands, it can

be spread to other parts of the body. It can also be harmful to inhale the smoke from burning plants, which may carry unburned plant particles.
However, pollen from these plants cannot cause an allergic re action and the honey that is made from the nectar is not poisonous.

"You cure the chicken breast and slice it just like you would pork. It probably produces a smaller than regular stip, but otherwise it would be similar to beef or bacon," ex plained Schuler.
Changes are needed, however, be fore poultry breakfast strips provide a viable alternative to regular pork bacon or beef breakfast strips.
"Current regulations set a re quirement for cooking temperatures for processed poultry products that is too high to successfully process a thin breakfast strip," said Crawford. The regulations require that such products be processed to an internal temperature of 160 degrees or, for cooked, cured products, to 155 degrees.
Under the proposal to change those regulations, the poultry strips would be processed to 140 degrees and cooled rapidly after production. The rapid cooling requirement and the curing process should inhibit the growth of food poisoning bac teria.
Special, specific labeling instruc tions to let consumers know thatthe product must be further cooked be fore eating, along with detailed in structions on the packaging, would tell consumers to cook the product until well done, according to Crawford.

The instructions would also ex plain how to tell when the product is properly cooked. The strips would be so thin that heating during cook ing for consumers would destroy any remaining bacteria.
In addition, the proposal requires the labeling statement: "Partially Cooked; For Safety Cook Until Well Done" and "Keep Frozen" or "Keep Refrigerated" on the packaging. These instructions provide further protection for consumers because refrigeration or freezing prohibits the growth of bacteria.
"We have to continue to develop products from poultry to keep the economic advantage we have in the marketplace today," said Schuler. "By producing new products of in terest to the consumer that the consumer wants, we can do that. With all of the recent concern about health...and lowering fat intake, there will be a market for this product."

The Georgia Department of Natural Resources pro vided the following Georgia fishing facts in celebration of National Fishing Week, June 5-11.
Georgia Fishing Facts
Fishing is the most pop ular of all outdoor sports. There were 750,920 resident fishing licenses purchased last year. Non-residents purchased 48,507 licenses.
Georgians under the age of 16 and those over the age of 65 are not required to have fishing licenses.
There are 1.5 million fishermen in Georgia -- one out of every four people in the state fish.
Georgia has 4,000 miles of trout streams, 12,000 miles of warm-water streams more than 10 feet wide and 509,000 acres of impounded waters.
Georgia anglers boast 6 world records and 28 lineclass world records.
The only official state historic marker to commem orate a world record fish is located near Jacksonville, Ga., where George Perry landed a 22 pound, 4 ounce largemouth bass in 1932.
Fishermen spend about $1 billion in Georgia each year. Fishing produces 27,706 jobs; $2.16 million in income taxes; $35.7 million in sales taxes; and $4.6 mil lion in license revenue.
There are 181 species of freshwater fish in Georgia. Only 20 or so of these are ' sport fish, the most popular of which are largemouth bass, crappie and bream. About 1.3 million catchable trout are stocked each year.
DNR's seven warmwater hatcheries produced 27 million fish last year -- 25 percent of these were stocked in private ponds and lakes.
