Dear Editor: I feel like everyone should be required to furnish their \
name and address if they want to sell something in the; MARKET BULLETIN. If someone is going to sell large items' such as plants, vegetables or whatever, you always have to i get the address anyway to go pick it up. I am sure a lot more of the farm items would be sold if people would give their j address. Most of us senior citizens can't make long distance calls because folks keep you on the line forever | giving you directions to come see the items they have for; sale. I would like to encourage all advertisers to make the! extra effort to include a complete name and address when t placing items for sale in the paper.

Georgia Cooks for Christmas
Make your Christmas dinner "extra special" this year by utilizing Georgiaproduced commodities. An encore presentation of recipes which have appeared in the MARKET BULLETIN in years past are featured below. All recipes have been tested for accuracy by the Georgia Department of
Agriculture Home Economist.
FROZEN FRUIT SALAD 1 16 ounce can sliced peaches 1 8 1/2 ounce can pear halves 1 3 ounce package strawberry flavor gelatin 1 cup boiling water 1 6 ounce can frozen concentrated lemonade 3 cups thawed whipped topping
Drain and chop fruits. Dissolve gelatin in boiling water. Add concentrate and stir until melted. Chill until slightly thickened. Blend in whipped topping and fold in fruit. Pour into 9" x 5" loaf pan. Freeze until firm, about 4 hours. Remove from mold and slice. Garnish, if desired. Makes 12 servings.

GREEN BEAN-SOUR CREAM CASSEROLE 2 Tablespoons margarine 1/4 teaspoon salt 3/4 cup milk 1 (17 oz.) can French-style green beans, drained Toasted bread crumbs 2 Tablespoons flour 1/8 teaspoon pepper 2 Tablespoons chopped onion 'A cup sour cream Vi cup Swiss Cheese, shredded
Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat and stir in milk. Return to heat and stir until thick and smooth. Remove from heat and stir in sour cream and onion. Place green beans in 1 1/2 quart casserole and pour sauce over them, stirring to mix well. Top with Swiss Cheese, then bread crumbs. Bake 20 to 25 minutes at 325 degrees F.

SWEET POTATO SOUFFLE CRUNCH 3 cups cooked, mashed sweet potatoes 1 cup sugar Vz teaspoon salt 2 eggs, slightly beaten 2 1A tablespoons butter or margarine, melted Vi cup milk 1 teaspoon vanilla
Mix all ingredients together and pour into a greased baking dish. Cover with crunch topping. Bake at 350 for 35 minutes.
CRUNCH TOPPING Melt 2 1/2 tablespoons of margarine. Add 1 cup brown sugar, Vs cup all purpose flour and 1 cup chopped pecans. Serves 6-8.

SWEET POTATO BISCUITS 2 cups self-rising flour 1/8 teaspoon salt 1/3 cup shortening 1 cup baked mashed sweet potatoes 1/3 cup sweet milk
Preheat oven to 400 degrees. Grease cookie sheet. Sprinkle salt on potatoes. Sift flour. Cut shortening and potatoes into flour. Add milk gradually (more or less according to potatoes). Mix well and roll out. Cut with biscuit cutter or shape with hands. Bake on greased pan for 12 to 15 minutes in preheated oven. Butter and serve hot. The dough hook on your mixer works real well in mixing this dough.
SCALLOPED EGGPLANT 1 medium eggplant, cubed 2 teaspoons salt 1 teaspoon salt 1 1/4 cup milk Pepper 1/2 cup chopped onion 1 1/2 cups crumbled soda crackers
(more if desired) 6 Tablespoons melted butter
Preheat oven to 375 degrees. Boil cubed eggplant with onions and salt in small amount of boiling water. Boil about 5 minutes, should be tender but not mushy. Drain. Spread half of crumbs in greased baking dish. Put eggplant and onions in dish and sprinkle with salt and pepper. Top with rest of crumbs. Pour milk into corners of baking dish to cover bottom. Pour butter on top. Bake uncovered for 45 minutes. Yields about 4 servings.

TURKEY-WILD RICE CASSEROLE 1 Vz cups cooked wild rice (regular rice may be
substituted) 1 cup celery, chopped 1 cup chopped onion 3 cups turkey pieces 1 can cream of chicken soup 1 can cream of mushroom soup 1 can water chestnuts, drained 1 3 ounce can mushroom stem and pieces 3 tablespoons soysauce V4 teaspoon pepper 2 tablespoons margarine 1/2 cup dry bread crumbs
Cook rice according to package directions. Saute the celery and onions; combine all ingredients and spread bread crumbs and margarine on top. Bake at 350 until it bubbles and is fully warmed, approx imately 30 minutes. Serves 6-8.

Dip chicken in flour seasoned with salt and pep per; brown in hot fat. Combine bread cubes, salt, pepper, sage, onion, butter and 1/2 cup of soup. Drain chicken and arrange around sides of dutch oven. Pile dressing uncovered in center. Make gravy of pan drippings. Combine 2 tablespoons flour, rest of soup, and enough water to equal 2 cups. Pour over chicken and cover closely. Bake in moderate oven (350 degrees) for one hour.

GREEN BEANS PAPRIKA 2 quarts water 2 teaspoons salt 1 Ib. green beans 4 tablespoons butter or margarine 3A cup finely chopped onion 1 tablespoon paprika 2 tablespoons flour 1 cup sour cream
In a three quart sauce pan, bring water and salt to a boil, drop beans in by hands full, cover and reduce heat. Cook until tender; drain. Melt margarine in skillet, add onions and saute until onions are translucent. Remove from heat and stir in paprika until onions are well coated. With a wire whisk, combine flour and sour cream; stir into onions. Sim mer on low heat for 4-5 minutes until sauce is smooth and creamy. Gently stir in beans; simmer for 5 minutes or until thoroughly heated. Serves 6-8.

APPLE BUTTER PUMPKIN PIE 1 cup mashed cooked pumpkin 1 cup apple butter 3/4 cup brown sugar 1/z teaspoon salt 1/2 teaspoon ground cinnamon 3 slightly beaten eggs 2A cups evaporated milk '/ cup milk 1-9 inch pastry shell
In large mixing bowl thoroughly combine pump kin, apple butter, brown sugar, salt and cinnamon. Blend in eggs, evaporated milk, and milk. Turn into baked pastry shell. Bake in 400 degree oven for 45-50 minutes or until knife inserted in center comes out clean.

During the yuletide season we sing of "chestnuts roasting on an open fire," but we may be quite sure how to go about it.
Before roasting chestnuts, they should first be cured to enhance the flavor. Put them in a can that has two i small nail holes on opposite' sides (one inch from the top); then, place a lid on the can and refrigerate for two weeks. Make a one-half inch cut through the shell (near the base of the nut) to keep them from exploding while roasting.
Rather than roasting the nuts in the fireplace, you can use your conventional oven. Place the nuts in a pan and roast in a preheated oven at 350 degrees for 20 to 25 minutes. Remove the nuts and place in a towel while cooling. After they have cooled, remove the shell and the brown skin with a small knife.
Brazil nuts will be easier to crack if you first place them in the freezer for 24 hours. This causes the shells to become brittle.
To make a festive, inexpen sive holiday decoration, mix a small amount of water with a cupful of soap. Beat with an electric mixer until the mixture is the consistency of thick meringue. Use the mixture to "paint" pictures or messages on mirrors or drift it like snow over your Christmas tree or wreath. You also can spoon the mixture into a pastry tube and squeeze out for more con trol of your designs.

If you are interested in establishing a Christmas tree plantation, Virginia pine makes a good Christmas tree in most areas of the state and is ac cepted on the markets throughout the state. If not used for Christmas trees, Virginia pines should only be planted in extreme north Georgia to obtain optimum growth.
Virginia pine is hardier than most pines and suitable for planting in poor dry sites. However, its optimum growth is reached on moderate to welldrained clay, loam, or san dy soils. It is generally short lived and slow grow ing seldom reaching more than 40 to 60 feet in height or 12 to 20 inches in diameter. Virginia pine is used as firewood, occa sionally as lumber in rough construction and is rapidly becoming an important source of pulpwood.

Winter is an Anglo-Saxon term meaning "to make wet" and is generally the season when the most precipitation falls in the temperate areas of the world.
Low humidity is a problem for houseplants during the winter months. It may cause spotted or scorched leaves and blossoms and leaves to drop. Remedy the problem by setting plants on a brick or in verted pot over a large pan of water.
Your holiday tree need not be discarded after the holiday season. Use the branches from the tree to cover and protect your perennial beds. You can shred the tree or cut into small pieces and add it to your compost pile. In addition, you can create a special place for your feathered friends by placing the tree in a corner of the yard and hanging treats from the branches (pinecones covered with peanut butter and roll ed in corn meal is a favorite of birds).

Department of Agriculture is tapping every resource in monitoring and con trolling the spread of an uncommon strain of equine herpes found recently in animals located in a Cobb County stable.
A state veterinary epidemiologist began an investigation last week to determine the source of the virus, which produces neurological symp toms not usually associated with equine herpes. Horses with the herpes virus usual ly have symptoms of upper respiratory infection and abortion in mares. This different strain causes neurological symptoms such as loss of coordination, paralysis and sometimes death.
There is no treatment for the disease other than supportive treatments such as increasing fluids, giving vitamins and administering antibiotics to ward off secondary in fection. Some veterinarians also prescribe cortico-steroids.

"At the first indication that this virus was an 'exotic,' or different strain, we ordered the quarantine, and began diagnostic tests to com pletely evaluate this disease," Irvin said. "We believe this strain is isolated at the one stable, but we urge any equine owners who suspect their animals may have the disease to contact us immediately."
