Prepare Garden Threat of Nitrate Poisoning

Farm and City
Interdependent
This year, Georgia's Farm-City Week observance will exceed the 1982 participation level. It is estimated that activities will be held in 120 counties to observe this na-
tional celebration. Many counties have been making plans for months and some programs have already been held.
Farm - City Week is a national program sponsored by the Na-
tional Farm-City Week Council to bring' about a better understanding and appreciation of both the rural and urban segments of our society. The program puts into practice a good neighbor policy and encourages cooperation. Georgia's 19 percent growth in population over the past decade is but one example of why both sectors must work closer together. Much of this growth has occurred in the rural areas.
(Our guest columnist this week is Dr. Horace Hudson, State Farm-City Week Chairman, Cooperative Extension Service, University of Georgia, Athens 30602).
Agriculture is Georgia's largest industry and the state's economy is dependent upon agriculture remaining a viable industry. One goal of Farm-City Week is to spread the word that city and suburban people have as much, or more to gain from a prosperous agriculture as do farmers themselves.
Millions of city jobs are created by farmers who buy the products and (Services offered by city people. One out of every five jobs in private enterprise is tied to agriculture. Agriculture requires the services of many to store, transport, process and merchandise the output of the farm.
Farm-City Week in Georgia is considered by many to be one of the best Farm-City Week programs in the nation. This year Georgia will be featured throughout the nation on radio public service announcements sponsored by the National Associa-

Edition
The handicraft edition of the MARKET BULLETIN will be published on December 7. Deadline for notices is November 23.
All notices should include an affidavit stating that the item was made by the individual advertiser and not purchased for resale.

A farm management program will be presented November 30 at the Rural Development Center in Tifton. Registration for the meeting, sponsored by ABAC, the Coastal Plain Experiment Station, the Cooperative Extension Service and other agencies, will begin at 9 a.m.
Topics for the program will include marketing and management, computers, policy and outlook. A $3 fee covers registration and a refreshment break. For further information or a free program, contact the Office
of Continuing Education, ABAC Station Box 12, Tifton 31793-4401 or call 912-386-3267.

millet, sorghum-sudangrass or heavily fertilized grasses harvested during the hot, dry conditions this summer.
Excess nitrate levels develop in plants when they are stressed during the growing season, causing the conversion of nitrate to protein to be inhibited. The nitrate then remains in the plant, sometimes at lethal levels.
Symptoms of extreme nitrate poisoning include staggering, labored breathing, diarrhea, convulsions and abortions. Reduced milk production, apprehensiveness and weight loss may indicate low level nitrate poisoning.
Producers who suspect nitrate poisoning should contact a

veterinarian as soon as possible.

Dairy production is the science which deals with the management of dairy cattle and production of food products. The bachelor of science degree in dairy production, given through the University of Georgia College of Agriculture, offers students three options to pursue: the management, science, or the agribusiness.

With a degree in dairy production and a concentration in management, students are prepared to work directly in the feeding, milking, and reproduction phases of milk production. This enables graduates to return to the farm and become directly involved in milk production.
The science program prepaTes graduates to enter veterinary or graduate school. Students study chemistry, advanced biology, microbiology, and other physical sciences.
Graduates choosing the agribusiness option receive intensive training in economics, accounting, business management, farm management, and agricultural marketing.

Dear Editor: After reading a recent article about chimney cleaning in
the MARKET BULLETIN, I noticed some discrepancies. I would Just like to remind your readers that a fireplace, insert or .wood stove can be hazardous if mistreated or neglected. As a chimney sweep, I see less adherence to building codes in regard to installations and construction of solid fuel appliances as many folks convert to heating with wood.
I am a founding member of the Georgia Chimney Sweep Guild. Myself and other members are chartered to educate and provide an honest service. If you have doubts or questions regarding the safety of your chimney, contact a professional chimney sweep.

Dear Editor Through advertising in
the MARKET BULLETIN, I have received numerous orders for my crocheted items that I would not have otherwise received. It has provided a supplement to my income by allowing me to advertise for a few cents each week. In addition, I have made special friends through the BULLETIN; some of these have become lasting ones who have helped me through many hours of loneliness. Thank you so much for all you have done.

Mrs. A. E. Riley 3430 Rushing Road Augusta, Georgia 30906

Dear Editor: Ein herzliches Gruess Gott! That means greetings in
Austrian. Having grown up in a little village in Austria, I always truly appreciate my weekly MARKET BULLETIN as it reminds me of a weekly paper we used to get in Austria.
As we are about to approach the beautiful celebration of Thanksgiving, this Austrian mother would like to appeal to all of your dear people in Georgia to remember our Armed Forced Personnel and their families overseas. This is a very difficult time for many, being so far away from their loved ones. Believe me, for many it is a great hardship. Do not let this Thanksgiving go by without writing someone a little note telling them that you appreciate them.
I really appreciate the many sacrifices our Armed Forces Personnel endure. As I am able to enjoy the beautiful autumn in Georgia and the privilege of living in this truly blessed country, part of my heart will always stay with our dedicated Armed Forced Personnel overseas. I pray that each of you might take a minute and reflect how truly fortunate we all are to live in a free country where we can sit down daily to an abundant table of delicious food thanks to the dedicated and hardworking farmers in this country.
God bless you all for taking your responsibilities serious and for instilling in your children the joy of caring and gratitude and this world will be a more loving and caring place.

Dear Editor. Once again, we would like to offer the readers of the
MARKET BULLETIN free firewood, kindling and hardwood strips. These strips are a by-product of our manufacturing company and with fuel prices climbing, we feel that people who heat with wood can save money on their fuel bill.
There is no charge for the wood which is bundled in two foot by 12 foot lots but our insurance company requires that the wood be loaded by our fork lift operator due to the weight, so there is a $5 fee for any size truckload.

I TOFU Tofu is made from one of Georgia's major commodities

soybeans. The delicately flavored, custard-like white cheese,

made from soy milk, is becoming increasingly popular.

Tofu is an excellent source of high quality protein. In addi- A

tion, it is economical, low in saturated fats, cholesterol free ;

and easily digested. A three and one half ounce serving of

tofu provides the diet with large amounts of protein and

calcium and only contains 72 calories. Because of its protein
content, tofu is a great substitute for cheese, meat and fish. The recipe below features tofu.

SOUTHERN CORNBREAD DRESSING

8 cups cornbread crumbs

4 cups day old biscuit crumbs

5 cups chicken or turkey broth (more if needed) g 2 cups milk g

t

6 eggs, slightly beaten g

1 cup chopped onions g 2 ten ounce packages silken tofu* 1 can mushroom soup
Crumble and measure the bread crumbs. Beat tofu, eggs, i and milk to blend well. Add tofu mixture to crumbs and let set for a few minutes. Then add the other ingredients and mix well. Bake in a well greased pan for about 30 to 40 minutes at 425. Refrigerate leftovers promptly. NOTE: This
I same recipe is delicious made with beef broth. Silken tofu has a softer, smoother consistency than other types of tofu.

Merchandising Vital In
Home Business
Are you the owner of a home business? If so, how do you merchandise your product, service or idea?
Merchandising is more than selling a product, service or idea. It includes advertising, pricing, selling, display and quality. Each of these five parts relate to and affect the other part. For example, advertising is a major cost to be considered in pricing. How you display your product affects sales. Quality affects price and sales.
For a beginning home business, word of mouth is one of the most effective methods of advertising. As your business grows the use of flyers, local newspaper and local radio stations will most likely serve your advertising needs. Advertising in trade magazines or mail order catalogues are effective without over extending your proposed advertising cost.
For most home business owners, pricing presents a problem. If there is not a product involved, only a service or idea, then the value you place on your time becomes the basis for pricing. Operational expenses, however, must also be included. These are utilities, equipment, supplies, insurance, rent, etc. If you sell a product, the cost of the materials is in addition to time and operating expenses. This is known as cost pricing.
Demand pricing is another method used by home business owners. What is the public's demand for your product at this time? How much is the customer willing to pay? What are your competitors charging for an equivalent product? Is your product superior to those produced by your competition? Balancing what the public will pay and what you want to sell your products for is a challenge that you as a home business manager must face and solve for your own products.
This is the third of a four-part series about establishing and operating a home business.
Have you ever considered yourself to be a salesperson? Many home business owners feel they are producers but fail to realize they or someone they hire must sell the final product, service or idea.
A salesperson is a professional manager of service, time, planning, profits, and training. He or she is a highly motivated communicator.
Most prospective customers want to know only two things before they buy your product, service or idea. First, "what is it?" and second, "what will it do for me?"
This means you, the salesperson, must hold the customer's interest by telling him how your service, product or idea will benefit him. Convince him he is justified in buying, create a desire for him to own what you are selling, and then get a decision from him in favor of buying.
Contrary to belief, salespeople are not born. Selling is an art that every home business owner can and should develop.
Why do you want to display the merchandise you have produced? First, it places your products where they can be seen. Second, it gives your customers a choice. They can choose among size, colors, shapes, textures, etc. This will result in greater customer satisfaction.
A display will help make selling easier because the customer can create his own desire for your product. He can do this through touch, smell, taste and/or sight. The effectiveness of a display depends on answers to where, when, what, and how the products are exhibited.
The fifth segment of merchandising is quality. A major expense of industries and large businesses is quality control. Is there any type of quality control built into your home business production? Begin your quality control by asking yourself: Would I buy it? Would I pay that price for it? What is it? What does it have? Can I improve its construction? How does it compare to similar products? Is it durable and safe? Is it functional and/or aesthetic?
Merchandising: advertising, pricing, selling, display and quality is a major part of all successful home businesses. If you would like more information on merchandising your product, service or idea, contact your County Extension Agent.

Clean your child's favorite stuffed toy with cornstarch. Rub the cornstarch in, let it stand a while, then brush out.
Wrap hot fried chicken in aluminum foil if you do not plan to enjoy it right away. Punch holes in the foil to allow steam to escape; this will help keep the chicken from becoming soggy.
You can brighten your discolored aluminum pots and pans by boiling apple peelings in them.
Clean your brass accessories and candlesticks with a solution of lemon juice and salt. You can prevent tarnishing after you polish by spraying them with a coat of silicone shoe spray.
Rather than giving your dog a bath, rub baking soda into his coat and brush it out to deodorize and clean.
Clean your artificial plastic flowers by placing them in a large paper bag with table salt and shaking.

tain other virus strains and eggs may only be shipped in new cases.
Inspection of live fowl in Georgia is limited primarily to persons who own game cocks and exhibit prize poultry, and Irvin urged those persons to be especially cautious and careful about movement of fowl into and out of Georgia.
"The experts presume that the disease in Pennsylvania was introduced by migrating water fowl then mutated to the form it is in now," Irvin explained. "We believe we have the normal channels of fowl movement covered to keep this disease away from our flocks, but we need the cooperation of those others who have fowl to keep this virus out of Georgia."
Federal officials expect 80 flocks will have been infected by the time the virus, commonly called "Fowl Plague," is brought under control in Pennsylvania. Thirty flocks are known to be infected now with the mutant virus, with 75 percent of them laying flocks and 25 percent broilers. Quarantines have been placed on all Pennsylvania counties with infected flocks.
There is no cure for the highly virulent disease and the infected flocks must be destroyed. The use of an autogenous vaccine to combat the virus has been unproven and very likely would be of no value, according to poultry experts.
Secretary of Agriculture John Block has declared the situation "an extraordinary" emergency and approximately $12.5 million has been allocated to compensate producers for depopulation of their flocks.

LIME NOW Lime should be applied according to soil test recommendations. Fall is the preferred time of application because winter rainfall helps activate the lime in the soil. However, lime can be applied at any time.

The Gordon County Artists and Craftsmen will present their 18th annual art and handicraft festival November 19-20 in Calhoun. These needlework items, along with many other handmade crafts, will be featured at the event.

Grandpa's Garden
If you placed your geraniums outdoors for the summer, you need to make preparations to preserve them for next year's enjoyment. One alternative is to dig them and place them in a sunny window. Or, some folks overwinter geraniums by digging the plant, gently removing the soil from the roots once it dries, and simply hanging it upside down in a basement or attic where the temperatures will not fall below freezing. You also can place the roots of the plant in a bag filled with damp peat or vermiculite and allow the tops to dry until spring planting.
Be sure and harvest your green tomatoes before the first frost. You can place them in the windowsill to ripen or wrap them in newspaper and pack in a cardboard box until they are ready to eat.
You may prefer pulling up the entire tomato vine prior to the first frost, shaking off the excess soil, and hanging the plants upside down indoors until the fruit ripens.
Shelling walnuts is a dreaded task, but here are a few hints to make the job a little easier. The greenishblack husk must first be removed. The easiest way to do this is to pour the nuts on the ground and drive over them with a car until the husks are knocked off or you can place the nuts in a burlap bag since the husks will stain the concrete.
Gather the husked walnuts into a tub and cover with water. Stir the nuts around and change the water two or three times over several days. The bad nuts (those with dried nut meats) will float to the surface and can be discarded.
Now place the clean walnuts in a burlap bag and hang in a sunny area to dry. This will take about a week.
Crack the walnut shells with a hammer and place the cracked nuts in a paper bag. The next day the nut meats will have shrunk enough to fall out of the shells. Shake the bag well and separate the nuts meat from the shell.
