Food Science is the science that deals with improving quality, quanti ty and safety of food to include ac tivities such as:
To increase the ratio of food value consumed to food costs. Improve the health aspects of food. Reduce the energy costs of food production, processing and delivery. Enhance food
acceptability and nutritive composi tion.

Identify chemical composition and changes in food that take place under various holding and process ing procedures.
Today a consumer has a choice of over 9000 food items when shopping in a large retail grocery store, but what force in the food industry made all of the choices possible?
The farmer produces the products, but food processing firms change the raw product to many individual food items. Food processing and marketing add approximately four times the value of food products compared to the amount paid to the farmer.
Food scientists, through research, teaching and service, supply a ma jority of the knowledge that makes it possible for all of us to have a greater variety of food with better nutrition at a lower cost.
Many food items available at the retail store are manufactured food items, that is, they may contain com ponents of many raw materials, pro cessed in a fashion to become a new product. A good example of this is the large variety of new chip and dip crackers that now appear in the retail store.

Courses Highlight
Wetland Ecology
Georgia State University is offer ing two courses for those interested in wetland ecology. A group will visit Georgia's famous Sag Ponds, a sinkhole formation on June 19. On June 26, the Alcovy River swamp forest near Covington will be the destination.
Both courses will begin at the Atlanta Botanical Garden at 9 a.m. There is a $12 fee for the courses. For additional information call the GSU Division of Continuing Educa tion at 658-3456.
Horse Edition
The special horse edition of the Market Bulletin is coming July 7. This issue will include notices for horse shows scheduled for July, August and September as well as at stud notices, boar ding facilities and miscellaneous equine equip ment.
If your organization has a show scheduled for July, August or September, submit your announcement, not to exceed 30 words, by June 23. If possible, include rain dates and a phone number for additional information.

I have noticed that some eggs have two dates. What do they mean?
R. L. Vienna Eggs carry two dates that should be checked before purchase. The expiration date on eggs, denoted by "EXP", is the last day of legal sale; however, the packing date also is shown on some eggs and this allows them to be sold for 31 days after this date.

Pig Trade Show

Game Bird Meeting

Garden
"Can I grow peach trees from peach seed?" asks a MARKET BULLETIN reader.
While some folks plant peach seed in the fall to produce seedlings which can be transplanted the following summer, it is not recom mended. Usually, when seed from apples, peaches and other fruit are planted, you do not get a quality crop once the tree reaches maturity. In ad dition, germination of these seed is often difficult. This is why nurserymen have to bud or graft fruit trees to produce desirable seedlings.
Your annuals will do best if they are fertilized regularly during the growing season. Spread about one pound of a general purpose fertilizer, such as 6-12-12, per 100 square feet once a month during the growing season. Make sure to spread it evenly over the beds and water it thoroughly into the soil.

The Food Science Division
at the University of Georgia is
composed of three units, a
teaching and reseach unit in
Athens, an Extension group in
Athens, and a research group
at Experiment, Georgia.
The 28 professional faculty
teach food science courses,
counsels students, performs
research and works with the
food industries throughout
Georgia. Their main function
is to put research findings to
work for the consumer and in
dustry.

foods, food sanitation.
Flavor and sensory
evaluations.
Improving quality of
pecans, peanuts, blueberries
and peaches.
Improve functional pro
perties -soybeans, peanuts,
cowpeas.

sweet potato chips, concen
trate peach drink.
Improve meat product for
mulations and extend shelf
life of fresh and cured meats.
Research on human milk.
Fermentation

agriculture products to pro
duce ethanol.
Research on reducing li
quid oxidation to increase shelf life and acceptability.
Research on fresh fruits and vegetables to develop varieties for the fresh and pro cessed markets.
A total food science pro gram is made available to the food industries and con sumers in Georgia through the Cooperative Extension Ser vice.
Undergraduate and graduate students are taught the fundamentals of food science and have access to laboratories to perform research.
The Food Science Division in Georgia is considered to be one of the top two or three divisions in the United States. Students graduating from Food Science normally have a choice of four or five job op portunities.
There is a great demand from industry and academia for well qualified food science graduates.
