Perhaps it is appropriate that Farm-City Week should come during the Thanksgiving season. Whether you live on the farm or in the city, we all have a lot to be thankful for.
As we pause to give thanks for the many blessings we enjoy, we might
i include the inter|dependence of farm and city people for helping us all enjoy a better life.
Certainly, our ! cities large or ! small, could not house, feed and provide work opportunities for their large populations if it were not for the relatively small percentage of the population residing on the farm. The reverse is also true to a great extent. Our farmers and their families and the people who depend directly upon agricultural production could not enjoy the many blessings they enjoy today if it were not for the goods and services that are produced by urban populations. Simply put, life in America as we know it today would not be possible without the strong interdependence of urban and rural populations. This is something that we don't think of as often as we should but certainly a factor for which we can be thankful during this Holiday Season. Anything that any of us in agriculture can do to help urban populations understand and appreciate our problems will also help to strengthen this interdependence. Likewise, anything that urban residents can do to help their rural counterparts better understand their ' problems strengthens this relationship which is so important to the welfare of all. . In this regard, I would like to reprint here a "Farmer's Prayer"

The most current threat of Exotic
Newcastle to Georgia and the U. S. has been eliminated, according to officials of the Georgia Department of Agriculture and USDA.
Information from both agencies indicates that the source of the disease has been located and successfully eradicated.
Forty-five states were affected, encompassing 550 locations. The cost of eliminating the problem was set at 2.8 million dollars, with 30,000 caged exotic birds destroyed.
USDA estimates that Exotic Newcastle disease, left unchecked, would cost the poultry industry more

Georgia, the number one producer of pecans in the nation, is headed for a good year if USDA crop estimates are realized. The projected production figure for 1980 is 100 million pounds according to USDA. This compares to 65 million pounds in 1979 and 1978's record crop of 135 million pounds.

This year's pecans again will add millions of dollars to the state's agricultural economy marking one of the few highlights in the 1980 crop year. In 1979, the value of production was $44 million.
Despite the expected increase in production, costs in bringing the nut to market also have escalated absorbing any savings consumers might hope to realize by the bumper crop.

Noncompliance Nets Fine An alternate energy system which produces low-cost fuel gas from green
wood chips is expected to save a Georgia hospital a quarter-million dollars annually in fuel costs.
The largest operational wood gasification system in the United States, and the first ever to be installed at a major state institution, is
heating, cooling and providing energy for laundry services at Northwest Regional Hospital in Rome.

The gasification project at Northwest Regional Hospital in Rome cost less than $400,000 and is expected to save hundreds of thousands of dollars annually in fuel costs. This is the first gasification system in the nation which uses green wood chips as a fuel source.
For Livestock Dealer
A Georgia livestock dealer has been fined $5,000 and put under probation for 12 months following the sale in Georgia of cattle imported from a quarantined area in Florida.
Commissioner of Agriculture Tommy Irvin says James E. Wimpey of Duluth also was required to pay $5,000 as restitution to the individual who bought the cattle.
"Our investigation reveals that Mr. Wimpey, doing business as Southland Cattle Company, purchased 53 cattle from a non-approved stockyard in a brucellosis infected county, imported them illegally into Georgia and sold at the Gainesville, Ga. livestock market," Irvin said.
The Commissioner said the animals were not accompanied by an official health certificate from Florida and were not tested for brucellosis before being offered for sale in Gainesville.
According to the Commissioner, the $5,000 fine levied against Wimpey was suspended in lieu of paying $5,000 restitution to the individual who bought the cattle, but his license as a livestock dealer will continue under probation for 12 months.

Dear Editor: The Garden Club of Georgia has received a grant for
$25,000 from the Georgia Department of Natural Resources for the purpose of restoring the gardens at the LeConte Plantation in Liberty County. We must, however, raise matching funds.
Fortunately, a sympathetic nurseryman has arranged for us to offer for sale sample boxes of ten azaleas from her collection of 500 rare and exotic azaleas. These azaleas will be shipped in the spring if orders are received now.
The price is $20, including shipping. Five dollars of the price is tax deductible toward the restoration of an 1810 garden owned by the Garden Club of Georgia, Inc. Admittedly, such a ride would probably be fun for the child and might make the grandparent feel loved; but the risk of injury to the child is too great. A sudden start, stop, bump or sway could cause the child to fall and then he might be struck or crushed by the tractor or a towed implement. Dear Editor: I would like to hear from anyone having a "Silent"
sewing machine. I have my mother's and she bought it secondhand so it is at least 100 years old.
It's a treadle type machine in real good working condition but I need a needle for it and don't know what kind or size it uses. I lost the one in it.
If anyone knows where and what company to write I'd be ever so grateful. I would like to restore my machine and just keep it and sew on it. It used to sew real good.

Dear Editor: May I suggest to string quilt makers to save your
cotton material such as sheets, pillow cases and others. You can starch these and cut the desired pattern. Sew the strings on them as you would on paper. After completing the square there is no bother to have to tear any paper off and it gives another ply of material. At the same time you will be taking care of material you would perhaps otherwise throw away.

Turkey The Ail-American Bird
For many Georgia families, Thanksgiving day is also turkey day.
Turkeys were an important source of food for the American indian. They were domesticated long before the arrival of the early settlers and were taken back to Europe in 1519 by the Spa nish conquistadores.
Today's turkeys differ greatly from their rather lean and tough ancestors. Selective breeding and scientific feeding programs have produced a bird that is bigger, meatier and more tender.
When buying turkeys 12 pounds and under, allow 3/4 to 1 pound per serving. For turkeys weighing over 12 pounds allow 1 /2 to 3/4 pound per serving. A serving is about 31/2 ounces or the size of a cooked quarter pound hamburger. Use this as a guide but be sure to allow for hearty appetites. Remember too that in most cases, large turkeys are more economical and excellent for use in future meals.
The meat of a thoroughly cooked turkey still may appear to have a tinge of pale pink. This pink color often is found in meats cooked slowly with moist heat, such as in a covered roaster or foil wrap. It also may be intensified by the seasonings used.
Times given for roasting turkeys are only ap proximations. To be sure the bird is thoroughly cooked, place a meat thermometer in the inner thigh. When done, the thermometer will register 180 degrees - 185 degrees F. Allow one minute per pound "standing time" for easier carving after removal from the oven.
Here is an excellent way to use leftover holiday turkey.
Turkey Or Chicken Divine
1/3 stick butter or margarine
2 cups chopped, cooked turkey or chicken
1 tsp. lemon juice 3/4 cup shredded
cheddar cheese
2 pkgs. frozen chopped broccoli
2 cans cream of chicken soup
1 cup mayonnaise 1 tsp. curry powder 1 cup soft bread
crumbs
Cook broccoli and drain. Place butter in 8x12 in ch baking dish and let melt in the oven. Put broc coli in dish. Top with layer of chicken or turkey. Combine soup, mayonnaise, lemon juice and curry powder. Pour over meat. Top with shredded cheese and bread crumbs. Bake at 350 degrees for 25-30 minutes. Can be made ahead and reheated. Serves about six.

Dang Good Pie
3/4 stick butter or
3 eggs
margarine
3 Tablespoons all
11/2 cup sugar
purpose flour
1 cup crushed
1 cup coconut flakes
pineapple
9" unbaked pie shell
Melt butter and mix with remaining ingredients.
Pour filling into unbaked pie shell and bake 1 hour
at 350 degrees F or until set and brown.

Cheesy Sausage Biscuits
1 pound pork sausage 1 small onion, finely
1-11 ounce can
chopped
cheddarcheese 1/2 cup water
soup
3 cups biscuit mix
Crumble sausage in large skillet and add onion.
Cook over medium heat until sausage is browned,
drain. Combine all ingredients, stirring until dry in
gredients are moistened. Drop batter by heaping
tablespoons full about 2 inches apart on greased
baking sheet. Bake at 425 degrees for 15 minutes
or until lightly browned. Made very small, these
make good appetizers. They could be cooked
ahead of time and reheated.

Coconut Cream Pie
1 9-inch pie shell, baked
1 /4 cup corn starch 2/3 cup sugar 1/2 tsp. salt
21/2 cups milk 3 eggs separated 1 tsp. vanilla 1 cup coconut 6 Tbls. sugar
Mix cornstarch, sugar and salt in the top of a double boiler. Slowly stir in milk. Cook over boiling water, stirring constantly until thick enough to mound slightly when dropped from a spoon on to a dish. Cover and cook i 0 minutes longer stirring occasionally. Stir a little of the hot mixture into beaten egg yolks, then stir yolks into remaining hot mixture. Cook two minutes stirring constantly. Remove from boiling water and stir in vanilla and 3/4 cup coconut. Turn into a 9 inch baked pie shell. Beat egg whites until foamy. Add sugar one tablespoon at a time beating well after each addi tion. Beat until firm peaks form. Spread on hot fill ing being sure to seal to edges. Sprinkle with re maining coconut. Bake in 425 degree oven for six minutes or until brown. Cool before serving.

Almond Fruit Punch
This punch is based on flavored gelatin which allows you to choose the color to blend with party decorations. In large quantities, additions of food coloring may be necessary to have a bright color. Freeze some of the punch in ice cubes or a ring mold with pieces of fruit and mint for decoration. This pun ch also can serve as a starter for adding many additional flavors such as sherbert. Add gingerale just before serving. For a less sweet taste substitute some or all club soda. May be made the day before serving. Double as desired.

1 pkg. flavored gelatin, any flavor
1 46 oz. can pineapple juice
1 46 oz. can grapefruit juice
1 12 smi. bottle almond extract
2 cups sugar 3 cups water 1 bottle ginger ale
Make gelatin as directed on package. Add rest of ingredients except gingerale and mix thorough ly. Add gingerale just before serving. Sherbert may also be added when ready to serve.

Sweet Yam Salad
1 Ib. yams, cooked, 1/2 cup diced ceiery
peeied and cubed 1 12 cup broken walnuts
(about 2 cups)
1/2 cup mayonnaise

1 cup cooked, cubed 1 teaspoon grated
ham
orange rind
1 (8 oz) can pineapple
chunks, drained,
reserving liquid
In large bowl combine yams, marshmallows,
ham, pineapple, celery and nuts. In small bowl mix
salad dressing and sour cream; stir in orange
juice, rind and reserved pineapple liquid. Pour over
yam mixture; toss until all ingredients are well
blended. Chill 1 hour to blend flavors. Refrigerate
leftovers.

Milk recipe:
Sweetened Condensed Milk
1 cup instant non-fat 1 /3 boiling water
dry milk powder 3 Tbls. melted butter
2/3 cup powdered sugar
or margarine
Place all ingredients in blender container and blend until smooth. Can be refrigerated up to one week. Makes 11/4 cups which equals a 14 oun ce can.
Chess Cake
Mix a cake mix, 1 /4 cup butter or margarine, and 1 egg. This will be kind of a dough consis tency. Pat out flat in a greased 13x9x 2 inch pan. Then mix 1 box powdered sugar, 8 ounce pack age cream cheese, softened and 3 eggs. Pour on top of other and bake for 45 minutes on 350 degrees. Eaten either plain or with ice cream or

Lemon Pound Cake
1 stick butter 1 12 cup solid shortening 2 cups sugar 3 eggs 3 cups all purpose flour
1/2tsp. soda 1/4 tsp. salt 1 cup buttermilk 1 Tbls. lemon juice 1 Tbls. lemon rind
Cream shortening, butter and sugar. Add eggs. Sift flour, soda and salt together and add alterna tely with buttermilk. Add lemon juice and rind. Bake in greased and floured tube pan at 325 de grees for 1 hour.
Icing
Soften one stick of margarine with one box of confectioner's sugar (about 3 to 4 cups). Add the juice and rind of two lemons. Beat well and put on cooled cake.

Efforts to Clean Up Georgia
This is popcorn's time of the year ... a combination of Thanksgiving, Christmas and football season. It's a time we should pay proper tribute to the puffed stuff remembering it's man's oldest snack.
Ears of popping corn found by ar chaeologists in New Mexico are thought to be about 5,600 years old. Columbus found West Indian natives hawking popcorn in the form of deco rations, and French.explorers along the St. Lawrence River watched Iroquois Indians pop corn in crude pot tery vessels set into heated sand.
Popcorn even graced the first Thanksgiving table at Plymouth when an Indian named Quadequina showed up with a deerskin bag full of popped corn.
Indians taught the colonists to grow the corn which soon made its way to the breakfast table as popped corn with cream and sugar.
However, it was many years before it became a popular snack food. World War II is credited with the up surge in popcorn's popularity when it became a substitute for sugar treats satisfying many a ration-starved sweet tooth.
Popcorn was a favorite in wartime victory gardens and has continued in several sections of the country as a popular home garden delight. How ever,-high humidity and insect probl ems make popcorn difficult to grow in Georgia gardens.
After the war, the pattern contin ued with sales up again during the sharp sugar price increases of the early 70's. Today Americans munch popcorn at the rate of 400 million pounds a year or 33 quarts for every man, woman and child.
The retail value of popcorn sold na tionwide at leisure establishments is calculated at $700 million annually. A third of that is credited to theater sales.
The U.S. Department of Agricul ture suggests popcorn as a low-cal orie (25 to 55 per cup unbuttered), sugarless snack. They recommend it to families because it is inexpensive (3 to 8 cents per quart) and fun to make.
The Indians who discovered pop corn believed an overheated little de mon, imprisoned in the kernels, made the corn pop as they made good their escape. The "demon" in reality is moisture inside the kernels expanding from the heat.

Pecan Crop
The independent organization is composed of veterinarians, private practioneers, industry representatives, state and federal veterinarians and meat inspectors from all states and some foreign countries. The purpose of the association is to recommend rules and regulations to the federal government concerning livestock and disease control.
Mr. Massey's appointment marks the first time the poultry industry has been represented in this capacity and emphasizes the importance of poultry as a vital link in this country's animal health.

While researchers continue to search for an answer to the on-year off-year cycle of pecan production, producers in Georgia and other pecan states/have organized the Pecan Marketing Council to help promote pecans as a year round nut. Traditionally pecans have enjoyed their highest consumption during holiday periods with sales dropping considerably the rest of the year.
Researchers have been successful in developing new techniques for planting, growing and harvesting pecans which help curb the seesaw production. The continuing research and efforts of the marketing group promise to increase production and consumption of pecans and make it an even more valuable crop to Georgia agriculture.
