Agriculture Trends
As of April 1, the nation's farmers planned to boost acreages going for feed grains while holding about the same soybeans. Cattle numbers stood at 111 million head on January 1, showing the first increase since 1975, and indicating the start of a new cattle cycle. Hog numbers this winter and spring have been at or near record levels, but spring and summer farrowing intentions indicate expansion may have stopped.
Just how many acres actually went into production this season and
how many livestock are on hand? A nationwide survey in late May and early June will develop estimates to guide farmers in their future marketings, staying ahead in farming means making the right decisions. Concerns about sluggish crop prices, soaring interest rates, tight credit, and rising energy costs are

weighing heavily on farmers' plans this year. These uncertainties highlight the need for acreage and livestock information on which producers can rely. Farmer cooperation is the key to developing dependable estimates.
Four main types of probability surveys are utilized by the Georgia Crop Reporting Service.
List Frame Sampling utilizes specialized lists of agricultural operations. These lists are stratified by size of operation (number of livestock, number of workers, etc.) to enhance their usefulness. If the lists are relatively complete, lists are the most useful and satisfactory type; they may be supplemented by other sampling methods.
Area Frame Sampling is useful in surveying permanent or semi-permanent crops.
Multiple Frame Sampling combines two or more types of frames into one sampling scheme. In Georgia we estimate hogs, cattle and white corn from list .of producers. These figures make estimates on both

No Additional Fees At State Markets
The House Agriculture Committee in a special called meeting last week passed a resolution supporting Commissioner of Agriculture Tommy Irvin's proposal to limit the imposition of fees on three of Georgia's Farmers' Markets: Thomasville, Cordele and Moultrie.
Historically, fees have not been assessed on these markets but were being considered effective June 1 in order to comply with stipulations in the 1981 appropriations bill.
The House Agriculture Committee stated in its resolution that there was no apparent intent of the Georgia General Assembly to require the imposition of any new fees at State Farmers' Markets and, therefore, supported the recommendation of the Agriculture Commissioner that the Department not be required to

R. C. Macon Curry is not derived from a single plant, but is a blend of various spices such as cardamom, cayenne, cloves, coriander, cumin, dill fenugreek, ginger, mace, pepper and tumeric. Because there is no standard recipe for curry, the flavor varies with the manufacturer. This variation also explains the differences in curry dishes from other lands.

The 1980 Georgia Chicken Cooking contest is history and the winner is Georgia Dotson of Savannah. Her prize-winning "Cucumber-Stuffed Chicken Breasts" captured the top prize and qualifies her to compete in the National cook-off later this year.

The annual contest is sponsored by the National Broiler Council. At the state level, the competition is coordinated by the Georgia Poultry Federation, the Georgia Poultry Processors Association and the Georgia Department of Agriculture.
In celebration of June Dairy Month, the Putnam County Dairy Festival is scheduled for June 7 in Eatonton. A mini "Dairy Expo" is planned featuring new products and dairy equipment, a bar-b-que and a speaker's program featuring agricultural leaders from Georgia.

Vidalia Onion Pie Supreme (Prize winner at the 1978 Vidalia Onion Festival)
3 cups Vidalia Onions, thinly sliced 3 Tablespoons melted butter
1/2 cup milk
1 1/2 cup sour cream
1 teaspoon salt
2 eggs, beaten
3 Tablespoons flour
4 bacon strips, fried crisp,
deep dish pie shell, baked
crumbled
Cook onion in butter until lightly browned. Spoon in-
to pastry shell. Combine milk, sour cream, salt, eggs and
flour. Mix well and pour over onion mixture. Garnish with
bacon. Bake at 325 degrees F. for 30 minutes or until firm
in the center. Serves 6-8.

Mrs. Katie Johnson, Marietta, says she has found a way to salvage walnuts that had practically dried up on her pantry shelf. "Soak the walnuts in a mixture of half water, half milk for eight hours. Let them dry and they will be as sweet and meaty as before."
Japanese beetles will soon be in vading. Several ingenius methods
to trap and destroy the pest have been developed but one of the best is to lure them to a pail of water.
Take a pail with a handle and wire a small can through the holes so it will be suspended over water. Fill the can about three-quarters' full of grape juice. You can use any really ripe fruit such as peaches, cherries, etc. Fill the pail with water up to the bottom of the can. The beetles will come in droves to the smell of fresh, ripe fruit, lose their balance and fall into the pail of water. If you still haven't solved your slug problem, try this idea from Mr. K. E. Johnson. "Mix about three tablespoons Epsom salts to one gallon of water and pour it on the ground where you are having trouble with slugs." Soon it will be tune to fill the free zer with beans, squash and other vegetables from the garden. Maggie Miller, Thomasville, reports that if you place a plastic bag inside a milk carton and fill it with vegetables and freeze it in the square shape, you will be able to get more in your freezer. You can either leave the contents in the carton or slip the carton off when frozen solid. The vegetables will keep their stackable shape. Another use for those milk cartons comes from Bill Williams who uses the cartons to freeze his fish. "Place your cleaned fish in the carton, fill with water and freeze until ready to use."
TALL PLANTS
In the vegetable garden, put tall crops such as corn or okra on the north side. Then they won't shade the shorter plants.
Chicken Cooking Contest
Cucumber-stuffed Chicken Breasts
2 whole broiler-fryer chicken
2 teaspoons dill seeds
breasts, halved, skinned
1/4 teaspoon basil leaves
1/2 teaspoon salt, divided
3/4 cup chicken broth
3 tablespoons butter
1 1/2 cups chopped plus 12 slices
3/4 cup cornflake crumbs, divided cucumber, divided
2 tablespoons diced onion
3/4 cup dry bread crumbs
Cut each chicken breast down center lengthwise to the bone, leaving about 1/2 inch uncut at top and bottom. Then lift breast meat off bones about 1 inch on each side of the cut and push meat back and up to form a ridge around the cavity thus formed. Sprinkle breast cavities with 1/4 teaspoon of the salt. In small saucepan, place butter and melt over medium heat. Brush chicken pieces lightly with part of the butter; sprinkle with 1 1/2 tablespoons of the cornflake crumbs. Set aside. Saute onion in remaining melted butter about 5 minutes or until transparent. In large bowl, make stuffing by mixing together bread crumbs, remaining cornflake crumbs, dill seeds, basil and remaining 1/4 teaspoon salt. Add sauteed onion, chicken broth and 1 1/2 cups chopped cucumber; toss gently to mix. Mound stuffing into cavity of each chicken breast. Place chicken, stuffing-side up, in single layer in large shallow baking pan. Cover and bake in 400 degrees F. oven for 25 minutes. Uncover and place 3 cucumber slices atop each chicken breast. Bake about 10 minutes longer or until fork can be inserted in chicken with ease. Makes 4 servings.

magnitude and proportion possible. Objective Yield Surveys are the
fourth major type of probability survey. Cooperating farmers permit trained field personnel to make plant counts and fruit measurements on several hundred small plots in Georgia. They provide an indication for yield and production forecasts and estimates of corn and soybeans. These plots are laid out on a given number of rows and paces into the field irregardless of the condition of the field or crop.
The purpose of these procedures is to assure that human bias does not affect the sample and collectively the estimate. Any one plot is not necessarily representative of the crop, but the collection of all plots represents the sample and ultimately the State.
Representatives from the Georgia Crop Reporting Service will interview a cross-section of farmers and mail questionnaires to others to gather data for the estimates. Similar surveys will be carried on in all states.
Final national and state estimates will be published by USDA'S Crop Reporting Board. A report on 1980 spring planting acres will be available on June 27, followed on July 11 with estimates of yield and production for major crops. Estimates of hog and pig numbers will be reported on June 20, and cattle numbers on July 28.

At that time Commissioner Irvin will propose that no fees be charged Georia farmers on any of the State's Farmers' Markets.
The special meeting of the House Agriculture Committee was called by Chairman Henry Reaves due to the urgency of the neccesity to charge these fees during this current marketing season in order for the Department of Agriculture to have sufficient funding to operate the markets. Passing of this resolution supported by Legislative Budget Officer, Pete Hackney, enables the Department to operate the markets without additional fees.
Commissioner Irvin expressed his appreciation to the committee for clarifying this question.
COOKING UTENSILS
Heavy aluminum or iron cooking utensils should be started on medium heat and turned to the lowest setting to finish, according to Cooperative Extension Service specialists. They say heavy pots and pans are slower to heat, but hold heat longer than lighter utensils. Most stainless steel should be started on a medium setting to prevent uneven heating.
