Strengthens Ga.
Agribusiness in Georgia has a tremendous impact on our total economy. This is largely due to the wide diversification of food and fiber production, processing, manufacturing, packaging, wholesaling, retailing and delivery of products to the markets.
When one segment of our agricultural economy declines, others
hold or rally to keep the total industry viable providing jobs, opportunities and profits for our citizens.
It is a value-adding industry, with each "segment of the market channel, adding value to the products on the way to the ultimate consumer. Agribusiness begins with the producer of farm products - the farmer. But in the marketing process, it

involves almost every segment of our society.
It is predicted that world population will double in approximately 25 years with six to seven billion mouths to feed.
Feeding and clothing the people of the world must be the concern of everyone. We have an obligation to help feed not only ourselves, but others of the world in undeveloped or underdeveloped countries.
We currently hear about a food surplus in our nation. In reality, if farm production suddenly ceased, we would have a 26-day reserve to fall back on, the shortest safety fuse of food supply in the history of man. Hence, the need for increased production of ag products.
Georgia is a leader in the production of vegetables, legumes, poultry, livestock, milk and grain. We have the backup agribusiness

News Service Grows To Meet Farmer Needs
The grain market news service, published each week in the MARKET BULLETIN, has expanded its reporting. The Commodity News Service, will list futures market prices on live hogs, live cattle, broilers and cotton in addition to the grain prices paid at Georgia elevators.

Accurate Measurement Saves Consumers, Protects Everyone

Anytime you buy merchandise by weight or measurement you are utilizing the services of the weights and measures division of the Department of Agriculture. The third person involved in sales between consumers and vendors is the weights and measures inspector, a silent partner who assures the accuracy of measurement.

Deadline Approaches Peanut Farmers

For Farmland Ads

Vote on Increase

The Spring Farmland Edition is coming March 21. The deadline for ads received in the MARKET BULLETIN office is March 7. Please remember that no realtors, brokers or dealers are allowed to advertise in this edition. Only individual farm owners wishing to sell their personal property for their own use may use this medium. A 30 word limit will be enforced. All farms should consist of five or more acres unless there is a farm operation currently existing there such as chicken houses or hog parlors. No subdivision property will be allowed. All ads must include the county where the land is located and-only one ad per person per section will be allowed.

A 30-day balloting period from March 2 - March 31, has been set for the Georgia Peanut Commission referendum. The proposed new measure would increase the assessment on Georgia produced peanuts
by $1 per ton and was strongly endorsed at a recent public hearing of the peanut farmers.
Ballots for the referendum will be mailed to more than 16,000 allotment holders in Georgia at the beginning of the 30-day period. Any allotment holder who fails to receive a ballot may obtain one by contact-
ing the Commodities Division, Georgia Department of Agriculture, 326 Agriculture Building, Atlanta, 30334 by mail, or by calling 404/656-3678.

The expanded reporting will help farmers decide when is the best time to market their livestock and other commodities to get the best possible price.
As Georgia's involvement in world agriculture increases, farmers need to be on top of the changing and fluxuating prices. Prices published in the BULLETIN are for the time period indicated. Daily reports are available by calling the toll free line 1-800-282-5944 for grain market news and commodities futures.
Our farmers need all the information they can get if they are to make agriculture a profession and career. Providing current market prices is one way the Department of Agriculture can help them know the best time to take their commodities to market and get the best dollar available.

Hearing Set For
Wheat Program
A public hearing will be held March 6 in Atlanta to discuss a proposed research and nutrition education program for wheat and wheat foods. The hearing sponsored by the U.S. Department of Agriculture will be held at the Federal Executive Building, Room 556, 275 Peachtree St., NE, Atlanta.

The Georgia Department of Agricultural maintains a portable milking parlor at all times for use hi emergency
situations such as the one suffered by the J. Ralph-Davis Dairy in Ringgold which burned Jan. 11. The portable unit was built and developed from Agriculture Commodity

Commission for Milk [ACCM] funds and is also used for milk and dairy products promotion. The ACCM is pre-
sently in the process of building a much larger unit which will milk 16 cows at a tune.

Baked Chicken Breasts Supreme

6 whole (12 oz.) size broiler

2 cups dairy sour cream

fryer breasts

1 /4 cup lemon juice

4 teaspoons Worcestershire sauce 4 teaspoons celery salt

2 tsp. paprika

4 tsp. garlic salt

1 /2 tsp. pepper

1 3/4 cups dry bread crumbs

1/2 cup butter or margarine

1/2 cup shortening

Cut breasts in half, wipe with damp paper towels. In

large bowl combine sour cream with lemon juice, Wor-

cestershire, celery salt, paprika, garlic salt and pepper.

Add chicken to sour cream mixture coating each piece

well. Let stand covered in refrigerator over night. Next

day, preheat oven to 350 degrees. Remove chicken from

sour cream mixture. Roll in bread crumbs, coating evenly.

Arrange in single layer in large shallow pan. Melt butter

and shortening in small sauce pan, spoon half over

chicken. Bake chicken uncovered 45 minutes. Spoon rest

of butter mixture over chicken. Bake 10 to 15 minutes

longer or until chicken is tender and nicely browned.

Italian Eggplant

1 medium eggplant 1 egg, beaten 2 Tbsp. water 1/2 tsp. salt

1/4 Ib. Mozzaralla cheese 1/4 cup onions, minced 1 cup tomato sauce 1/4 tsp. oregano

1/3 cup oil Peel and cup eggplant into 1/4-inch crosswise slices.

Combine egg, water and salt. Dip each slice of eggplant in

egg mixture. Saute slowly in oil until browned on both

sides. Place slices of eggplant in casserole with a slice of

cheese between and on top. Add onion and oregano to

tomato sauce and heat; pour around eggplant. Bake at

375 degrees, until cheese is melted and browned. Makes

4 servings.

Quick And Easy Cobbler

1 stick margarine, 1/2 c.

1 c. sweet milk

1 c. self-rising flour

1 c. sugar

4 c. fresh fruit, sweetened to taste (canned, or frozen fruit may be

substituted)

Melt margarine in an average size dish, 2-2 1/2 quart.

Mix thoroughly milk, flour and sugar. Add to melted

margarine. Add fruit. Do not stir. Bake at 375 for about 40

minutes or until brown.

Fry bacon and crumble. Mix cheeses and bacon and put

in bottom of pie shell. Mix flour, salt, nutmeg, and milk -

Pour over. Brown butter and pour over. Bake at 375

degrees for 20 minutes or until silver knife inserted in cen-

ter comes out clean.

Sausage Rice Casserole

1 cup wild rice

1/2 pound pork sausage

1 medium onion, chopped

1 medium bell pepper, chopped

1/2 cup celery, chopped

1 2 ounce can mushrooms

1 can cream of mushroom soup . 1 can cream of chicken soup

Cook rice as directed on package until tender. Rinse and

drain. Brown sausage; add onion, pepper and celery. Cook

vegetables until limp. Add rice, mushrooms and soups.

Pour in greased 3 quart casserole, cover and bake for 1

hour at 325 degrees.

I bought a quart of milk to use in baking. After I measured it, I found that I had only 27 ounces instead of 32. Can the dairy do this?

No, they can't. A quart is supposed to contain 32 ounces. An inspector has your complaint and is checking*th*e*a*mounts in that brand of milk.
I bought 200 pounds of corn seed for planting and was charged sales tax. I told the owner that I'm a farmer and that I buy these seeds to grow produce to sell and he still charged me sales tax. Is this right?

When you are planning your ve-

getable garden include a few flow-

ers. Flowers and herbs attract bees

which are needed for pollination

and vegetable production. Many

complaints about non-producing

plants are simply because the

blooms on squash, okra, etc. were

not pollinated.

Some gardeners also claim that

certain flowers or herbs planted

near vegetables will discourage cer-

tain pests. For example, french

marigolds supposedly secrete a sub-

stance from their roots which deters

soil nematodes. If the marigolds are

planted between tomato plants, it is

reported that the plants do better.

Marigolds are also supposed to be

useful in repelling the Mexican bean

beetle.

Nasturtiums are said to repel

squash bugs, white flies and cucum-

ber beetles. You may want to plant

the climbing variety and run them

up the same pole as your green

beans since they are also supposed

to be a 'trap plant' for aphids.

Mrs. Alfred Henny, Coffee Coun-

ty, reports that she planted castor

beans near her patio last year and

had very few mosquitos. We had

read of this but never heard of any-

body trying it

apparently it

works.

If you have had problems remov-

ing rust from old farm chains, Mr.

Ira Johnson, Hawkinsville, may have

the answer for you. "Drag the chain

behind a vehicle across the dirt."

To produce every egg we eat, the hen requires about 24-25 hours work along with about 51/2 ounces of food and 10 ounces of water. Food is normally provided to the hens in automated feeders. The feed is scientifically formulated to make sure the hen will provide the best eggs which can be produced.

An average hen will produce about 240 eggs per year, in 13 month laying cycles. As the eggs are layed, they are collected by hand, or in automated houses where they roll gently down a conveyor belt.
The eggs are then transported to the packer. Enroute the eggs are kept under refrigeration at 45 to 55 degrees to protect their quality.
At the packing plant, the eggs are thoroughly washed and then oiled with a light mineral oil coating assuring their freshness for a longer period.
After all impurities have been removed from the outer shell, the egg passes over a high intensity light shining from underneath. This process is know as candling, as originally the eggs were inspected by holding them over a candle in a darkened room. A final check is made by an inspector from the United States Consumer and Marketing Service, who makes certain quality conrol is maintained.
At this point, the egg is graded for both ulterior and exterior quality. A perfectly good egg on the inside can be rejected because of a poor shell appearance. The interior and exterior qualities are graded AA, A, B, or C. All are wholesome and safe for eating, but AA and A are most common.

WILTED LETTUCE SALAD 6 servings

5 slices bacon

1 pound leaf lettuce

3 hard-cooked eggs, sliced

1 medium onion, sliced into rings

1/4 cup cider vinegar

2 tablespoons water

1 tablespoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

Fry bacon until crisp; reserve 2 tablespoons drippings.

Crumble bacon. Tear lettuce into serving bowl in bite-size

pieces. Add sliced onion and sliced hard-cooked eggs.

Combine 2 tablespoons bacon drippings, vinegar, water,

sugar, salt and pepper. Heat just to boiling. Pour over let-

tuce. Toss lightly. Garnish with crumbled bacon and serve

immediately.

FRENCH-FRIED DEVILED EGGS 6 servings

6 hard-cooked eggs

1/2 teaspoon dry mustard

3 tablespoons mayonnaise

1/4 teaspoon salt

1/8 teaspoon pepper

2 egg yolks, beaten

Sifted Plain flour

Fine bread crumbs

Oil

Parmesan Cheese, optional

Cut eggs in half lengthwise. Press yolks through a sieve

or mash finely with a fork. Add mustard, mayonnaise, salt

and pepper to egg yolks. Blend until smooth. Fill egg

whites. After stuffing egg whites, put back together,

securing with toothpicks. Dip in 2 beaten egg yolks, then

sifted plain flour, then into fine bread crumbs. Fry in deep

fat until brown. Drain on paper towels and remove tooth-

picks. Fried eggs can be dusted with grated Parmesan

Cheese if desired.

HEAVENLY ANGEL CAKE 16 servings at 79 calories each

1 cup sifted cake flour

1 cup sugar

10 egg whites (11/4 cups)

1/4 teaspoon salt

1 teaspoon cream of tartar

1/2 teaspoon vanilla

1 1/2 tablespoons liquid sugar

substitute

Sift flour and 1/2 cup of the sugar onto wax paper. In a

large bowl, beat the egg whites with salt and cream of tar-

tar until very foamy and peaks begin to form. Gradually

beat in the remaining 1/2 cup sugar. Continue beating un-

til stiff peaks form. Beat in vanilla and liquid sugar sub-

stitute. Gently fold the flour mixture into the egg whites, a

few tablespoons at a time. Turn into an ungreased 9-inch

spring form pan. Carefully cut through batter with a

spatula to avoid air pockets. Bake in a preheated 350

degree oven for 40 minutes, or until surface of cake is dry

and center springs back when lightly pressed with finger-

tip. Invert cake in pan on wire rack until cold - carefully

loosen cake from side of pan.

MARVELOUS METRIC MEAL-IN-A DISH 4 to 6 servings

Ordinary ingredients combine to give an extraordinary

flavor to this casserole. Make it ahead of time for a super

brunch or special lunch.

227 g (1/2 Ib.) bulk pork sausage 6 slices day-old bread, cubed

250 ml (1 cup) shredded Meunster 6 eggs, slightly beaten

or Monterey Jack cheese (57 g 375 ml (1 1/2 cups) milk

or 4 oz.)

5 mL (1 teaspoon) dry mustard

2 ml (1/2 teaspoon) salt

Watercress, optional

In medium skillet, cook sausage over medium heat until

browned, stirring to crumble, about 8 to 10 minutes.

Drain. Alternate layers of bread cubes, sausage and

cheese in greased 2-L (2 qt.) baking dish or casserole.

Blend together eggs, milk and seasonings. Pour over

layered ingredients. Cover qnd refrigerate several hours

or overnight. Bake in preheated 180 degrees Celcius (350

degree Fahrenheit) oven 60 to 70 minutes or until golden

brown. Let stand 5 to 10 minutes before serving. Garnish

with watercress, if desired.

Plants were used frequently in the Bible as symbols and explanations of complex doctrine. A parable or story was much easier to comprehend than a dissertation on theology.
Such was the case with the willow tree. Willows are common in most countries of the world. They grow quickly and produce luxuriant foliage when planted in fertile soil.
Willow cuttings root easily when pushed into river banks. The rapid rooting and quick growth of the willow was used by Isaiah to symbolize the rapid development and growth in spiritual wisdom of a godly person in Isaiah 44:3,4.
The white willow, Salix alba, of Biblical days is native to Europe, northern Africa and western Asia.
Willows grow freely in Georgia. They are most frequently found growing in damp or moist places, especially along stream banks where their roots help hold the soil and check erosion.

We must work to solve the problems of inflation in regard to rising food costs. We must protect farm land and bring about tax relief on land used in agricultural production. We must support efforts for the farmer to get his share of the food dollar. We must use research, scientific approaches to production and processing, and develop better marketing programs. We must direct our young people back toward the agricultural field.
The potential of our agribusiness industry is unlimited - diversification is the answer toward keeping this vital industry strong and expanding. Diversification is Georgia's strength in agribusiness.

If you turned and mulched your garden this past fall and have bought

seed for this year's garden, you're just about half ready. The really suc-

cessful garden requires a good growing site, advance planning, proper

fertilization and proper planting in order to maximize your garden produc-

tion.

If possible, your garden should be planted in full sunlight, but don't forget about a good supply of water when you select the garden site. More often than not, this means planting near your house.
However, don't plant so close that the house, trees, etc., will shade your garden. This only reduces yields.
Plant taller vegetables on the
north or west side of the garden to avoid shading the shorter, smaller plants. Also, allow adequate space between the rows for cultivation and harvesting.
The garden soil should be loose, fertile and well-drained. Vegetables will not grow in wet soils.

A routine soil test will tell you the
soil pH, the amounts of phosphorus, potassium, calcium and magnesium that are available in your garden. Vegetable plants need nutrients for proper growth and development. The soil test will tell you what nutrients are needed and how much of each should be added.
Apply fertilizer before or at planting. Mix it well into the soil and do not use too much near seeds or
young plants. Fertilizer placed too close can cause damage to the root system.
A good planting schedule is also very important. Wait until the soil is dry enough to work. Plant on time, not too early in the season and not too late.

A good rule of thumb for planting

is to plant the seeds at a depth of 1

1/2 times the width of the seed.

Ag Aviation Fuel Cut

Airplanes used hi application of pesticides or other agricultural purposes may run into difficulty securing adequate fuels. As of January 18 aviation fuels were removed from the mandatory allocation program provided for agricultural-use fuels.
This action was taken by the Federal Energy office due to the fact that aviation fuel was in adequate supply and there appeared to be no definite reason to protect its availability. However, since this regulation took effect, changes have occurred in the petroleum world which might adversely affect those aerial applicators trying to secure fuel for their planes.
The Federal Energy office indicated that the January 18 action was not irreversible. Therefore, if you have difficulty securing adequate aviation fuel for agricultural purposes, call the Department of Agriculture fuel office, 656-3605.

"It is our job to see that consumers get what they pay for just as it is our job to protect merchants from giving away their profits through inaccurate measurement. Everyone is entitled to equity in the market place."
Weights and measures inspectors check prepackaged items in stores in addition to verifying the accuracy of weighing and measuring devices at industrial, packaging and retail outlets.
Also, scales hi Georgia that weigh up to 50,000 tons and more are verified by weights and measures personnel for accuracy.
Accurate weights and measures protect consumers and help vendors. The week of March 1 through 7 has been proclaimed, 'Weights and Measures' week by Governor Busbee in acknowledgement of the often forgotten man behind the scenes the weights and measures inspector.
The Georgia Department of Agriculture enforces the regulations for motor fuels, antifreeze, the accuracy of fuel dispensing devices, and motor fuel price advertising. Georgia ranks among the leading states in the nation in the quality of its gasoline.
