All The Time
From the day of the Pilgrims, turkey has been one of America's finest food delicacies. Without doubt the meat is the bargain of the meat counter. The medical profession overwhelmingly endorses its desirability as a nutritional food. The bird converts feed to meat in a ratio of 2.8, exceeded only by broilers.

void the skin pigmentation that was characteristic of bronze feathers. The confirmation of the carcass that gives the broad breast and short legs is so extreme that the commercial breed can no longer propagate itself by natural mating.
The commercial turkey industry began to manifest itself during the 1930's. The Midwestern states quickly established themselves as the dominant turkey producing section. Minnesota has long been the leading state with 24.4 million being produced today. California is second with 17.5 million production but is fast losing its rank. North Carolina is the dominant Southeastern state with 12 million birds. Virginia is next with 7 million birds. The total U.S. production is 135 million.
It is astounding that Georgia is second in broiler and egg production and has gone undeveloped in the turkey industry. Georgia presently produces about 1.7 million turkeys, all of which are processed in Carolina and Virginia. There is not a turkey processing plant between South Carolina to Miami, west to Texas, nor north to Indiana. Without question the State has missed what

Survey Needs

Thanksgiving

The Georgia Crop Reporting Service working with the U.S. Department of Agriculture will conduct a
survey in late November and early December to put some solid informa-
tion on the line as to how the drought in Georgia affected farmers' plans for fall planting of small grains and cattle and hog inventories. Another report will cover chickens.

Most Georgia farmers are experiencing a difficult year, and our harvest is not bountiful. However our prayer is that God will bless each ofyou and that we will be ever mindful of our blessings and the needs of our fellow man.

These estimates will be based on mail survey responses from some producers and personal interviews
with others. Overall, a representative cross-section of America's agricultural producers will be asked to voluntarily cooperate in the project.

At Legislative Conf.
The annual Agricultural Legislative Conference will be held December 7 at the Marriott Hotel in Atlanta. The event is sponsored by the Georgia Agribusiness Council and will feature Governor George Busbee, Commissioner of Agriculture Tommy Irvin, Senate Agriculture Chairman Sam McGill, House Agriculture Chairman Dorsey Matthews and Agribusiness Council President Olin Ginn.

PYRACANTHA BERRY JELLY

3 1/2 c. washed berries

3 1/2 c. water

Boil berries in water about 20 minutes. Crush with

spoon or potato masher. Drain thru 4-6 thicknesses

cheesecloth. Let juice stand about one hour until fine pulp

settles Use only top clear juice.

2 3/4 c. berry juice

1 c. grapefruit juice-strained

1/3 c. lemon juice-strained

7 c. sugar

1 bottle liquid pectin

In large saucepan bring juices and sugar to hard boil,

stirring to dissolve sugar. Add pectin all at once, return to

rolling boil for one minute. Remove from heat, skim. Pour

into glasses and seal. Makes 8-9 jars, 1 /2 pint size.

JUICY TURKEY Make stuffing of cornbread, celery, onions and poultry seasoning. Crumble bread with finely chopped or grated onions and celery. Mix well and add enough melted butter to make mixture stick together. Wash turkey then rub all over with butter and lightly salt. Sprinkle a little salt inside. Lay turkey on large piece of tinfoil and stuff neck first. Place rest in bottom of roasting pan. Lift turkey and tinfoil together and place on rack, now stuff the other end. Wrap each leg and wing tips, with foil. Now cover entire bird with foil then make a tent over the top. Place in 300 oven overnight. Put about 1 quart of water in pan but not on the bird. Check water every so often but do not take foil off the bird. This makes a juicy well flavored turkey.

In late fall and early winter when the landscape is bleak and colorless, pyracantha comes to the rescue. It is spectacular, cheerful and best of all extremely hardy. Also known as firethorn, pyracantha derives its beauty from thousands of tiny red or orange berries which will stay on the bush usually through Christmas making it a popular decorating material during the holidays.
Pyracantha is hardy wherever the temperature does not slay below 10 degrees in winter. In northern climates, the leaves drop from the bush but in the south it is as much an evergreen as azaleas.
Besides its brilliant display in winter months, pyracantha also produces delicate white blooms in summer. Although they are quite small, they are produced in such abundance that the bush looks like it is covered with snow.
If allowed to spread and take its natural shape, pyracantha produces a multi-stem bush, quite full and graceful. It can be used as a barrier itself or trained to grow on fences and posts. The sturdy thorns produced by the plant are stronger and longer than those of the rose which is a relative.
As if being beautiful were not enough, pyracantha berries are also used to make a bright red tangy jelly. See page 5 for recipe.

Farmer Seminar Oatland Island Seeks

Planned In Dee.
Many Georgia farmers have never experienced a time in which new ideas and solutions to problems will yield higher dividends than now.
On December 13-15 farmers will have the opportunity to participate in a program where ideas will abound from two sources: the eight subject areas included in the Executive Farmer Seminar and from the large group of Georgia's farmers who will be in attendance at the Macon Hilton in Macon.
The subjects to be presented in three-hour sessions are: Machinery Management. Forestry Management and Economics, Peanut Production, Financial Management, Irrigation, Grain and Soybean Marketing, Utilizing Silage in Beef Production, and Soybean Production. Each participant may attend four of the sessions during the two-day period.

Old Farm Buildings
For 19th Century Farm
A small working replica of a 19th century Georgia farm is being assembled at the Oatland Island Education Center in Savannah. The Center is looking for small authentic farm buildings as well as old hand tools and implements to complete the project. The donations are tax-deductible for the non-profit agency which is a part of the SavannahChatham Public School system.
The buildings should be in relatively good shape and as authentic as possible. The Center will dismantle and move buildings within a 100 mile radius of Savannah.

Farm people and city people depend on each other for products and services that are essential to modern business and living. One group can't live without the other. Together they make the best food and fiber team in the world.
This is what Farm-City Week is all about. The purpose is to promote a widespread understanding of the interdependence of these groups and to narrow the gap of understanding that sometimes divides the rural and urban segments of our population.
This is the twenty-third annual observance of Farm-City Week. Last year's observance, according to final reports received at national headquarters, involved the active participation of more than 15,000 communities in the U.S. and Canada. Kiwanis International serves as coordinating agency for Farm-City Week, Nov. 18-24.

Christmas would not be the same without a real, live Christmas tree. In the past, Georgians have purchased most of their trees from out of state but now there are Georgia-grown trees aplenty. Because of our favorable growing season and demand for fresh trees, more and more farmers are turning to Christmas trees as an extra crop or big production. Turner Davis, Assistant Professor and Registered Forester with the Georgia Experiment Station has prepared an article on how to be a Georgia Christmas tree farmer. The article will appear within the next few weeks in the BULLETIN.

could have been a third giant to its poultry industry. The basic resources needed are nearly identical to those employed by the broiler and egg industry. The industry will never develop of size in Georgia until a processing plant is built.
Your State now produces about two thirds of the number of turkeys of which it consumes. This is done by approximately fifty producers working in various arrangements in production and marketing of the product. The primary locations are in the Molena, Lavonia, Watkinsville, Winterville and Rayle, Georgia areas.
The turkey industry now offers and sells its delicacy on a year round basis. Great strides have been made in further processed turkey products. Contrary to the whole baking carcass concept, the bird is now processed where turkey parts are packed separately. These items accomadate Mrs. Consumer from 75 cents per pound for drumsticks to $2.50 per pound for scrumptious breast. Further processed items are pre-cooked, smoked or fresh packed. In addition there are the famous turkey ham, salami, turkey frankfurters, turkey steaks, turkey sausage, and turkey burger. Herein lies the exclamation of the continued increasing rate of per capita consumption that the industry enjoys by approximately three per cent per year.
With the exception of the soybeans, no other agricultural commodity has as much to offer. It is delicious, very economical and most nutritious. Be sure to always include it on your weekly shopping list.
