Poultry Does It
All For You
Georgia leads the nation in total poultry and poultry product income. Poultry and poultry products are the top producer of income for Georgia farmers and the biggest bargain for consumers everywhere in terms of almost every criteria for judging food products - at the market and on the table.

the consumers of that industry's products.
Since 1957, Georgia has led all other states in total poultry income. Her cash receipts from all chickens and eggs totaled some $717,197,000 in 1976. This represented a margin of some $52,671,000 over Arkansas, and some $193,468,000 over thirdranked California.
It also represented a 103 percent increase in total poultry income for Georgia over the last decade-up from $352,639,000 hi total Georgia farm-level poultry income in 1967.
In terms of product volumes, approximately one out of every five chickens and one out of every dozen eggs consumed hi our nation is produced hi Georgia. Our average daily poultry production is 5,100,000 pounds of chicken, 13,850,000 eggs and 30 tons of turkey. With Georgia broiler production having passed the two-million-birds-per-day mark for the first time ever earlier this summer, at least one of these totals seems certain to increase soon.
Georgia poultry has led the parade in Georgia farm product income since 1955; its earnings now

Cash receipts from farm marketings and Govennent payments rose five percent in 1976 according to the Georgia Crop Reporting Service. Cash receipts equaled $2.3 billion for the first time. Georgia now ranks 15th among the states hi cash farm receipts. Commercial broilers continue the
reign begun hi 1956 as the leading source of farm income.

For Peanuts

The Environmental Protection Agency has approved Commissioner of Agriculture Tommy Irvin's request for an emergency exemption which would permit the use of LORSBAN 4E on peanuts in Georgia.

LORSBAN 4E is manufactured by

the Dow Chemical Company and con-

tains four pounds per gallon chlor-

pyrifos. It is currently registered for

use on cotton and peaches. Irvin said

tests conducted in Georgia show this

product to be effective against

several insect pests which are

currently threatening Georgia's

peanut crop.

Under the approved exemption,

up to 50,000 gallons of LORSBAN 4E,

EPA Reg. No. 464-448 may be used

for control of Armyworms, Fall Ar-

myworms, Cutworms and Mites on

peanuts in Georgia at the following

rates:

One application is expected to

give control in most cases. However,

a maximum of two applications at a

must not be applied within 14 days of

harvest. Treated foliage must not be

grazed or used for feeding. Dosages

and timing must be followed closely

so that residues shall not exceed .5

parts per million in the nut meat or

1.0 parts per million in the hulls.

This exemption will expire Oc-

tober 15, 1977, and the product may

not be legally used for peanuts after

this date.

The Yellow Daisy Festival will be held at Stone Mountain Park September 9 through 11. Approximately 200 craftsmen are expected to exhibit at the show. The show will be open Friday, noon to 9 p.m.; Saturday, 10 a.m. - 9 p.m.; Sunday, noon to 7 p.m.
The unusual 2 1/2-foot tall daisies are found only on granite outcroppings within 30 miles surrounding Stone Mountain, according to Harold Cox, Stone Mountain Park horticulturist.

Dear Editor In April of this year the Georgia Department of Agri-
culture wrote me that the recipe I had submitted to the National Chicken Cooking Contest was to be a state contender in Plains on May 12. The cook-off was held at the Experiment Station and was co-sponsored by the Georgia Department of Agriculture, the Georgia Poultry Federation and the Georgia Poultry Processors, with the support of business and industry all over Georgia.
When Mr. Billy Carter announced my dish as having won first place I was surprised and delighted and prepared to go all out to try to win the national competition in Jackson, Mississippi, in July. This event was co-sponsored by the National Broiler Council, the makers of Mazola Com Oil and the makers of Ac'cent flavor enhancer. All the state winners won an expense paid trip to Jackson, one hundred dollars and a silver trophy, plus a year's supply of the sponsors' products, and from beginning to end it was a memorable experience. We were continually entertained at teas, receptions and banquets, and the Mississippi Poultry Association, as hosts, did everything to make us feel welcome.
The cook-off was held in the Jackson Coliseum and was so well organized it was a privilege to be a part of it. Absolutely nothing was left to chance under the the expert direction of Ms. Anne Nesbitt of the National Broiler Council. Individual kitchens for each state and the District of Columbia were set up with White-Westinghouse Electric Ranges and Refrigerators. Wearever Silverstone cookware [which contestants were allowed to keep] was provided, as well as ingredients for the dish to be prepared. Each contestant marched to the cooking station with a military escort carrying the flag of his or her state, and after a short ceremony the cooking began. Food Editors from all over the country were the first to stop by and question us, then the general public was allowed on the floor of the coliseum to get a close look at the activities and ask any question they had.
The judges were not allowed on the floor of the coliseum but were in a room well away from where we were cooking. They received the prepared dishes which were on identical disposable platters, ungarnished, and identified only by a number drawn at random earlier. [Mine was No. 13!] This was to give each contestant an equal chance and to remove temptation for any judge to vote for a dish for any reason other than the four things they were to consider: Appearance, Simplicity, Flavor and Interest, with a maximum of twenty five points for each.
There were eleven judges and they worked in teams, giving each dish a numerical rating based on the above mentioned points. The highest rated twelve dishes were then judged again by all eleven judges the same way, from which the top five were selected by secret ballot, with the most points going for first place, the next for second, etc.
Important business men and women and statemen, including Commissioner In/in and Senator Talmadge, and many friends have honored me by sending congratulations. One honest soul even wrote [unsigned] to say the recipe sounded terrible!
I would urge anyone to enter this contest and I hope I am the first of many Georgia first place winners.

Dear Editor: I guess my letter will bring a landslide of mail from
your readers but I would like to know the earliest age you or anyone has ever known a pullet to lay.
I bought 25 White Rock Cross, day old biddies, on the 12th of April and three and one half months later one has started laying. She lays every other day and some eggs are double yolks. The other pullets will start laying at any time. They were fed just like they were supposed to except now I have them on laying mash. I've raised many chickens but this is the earliest I have ever known of one to lay. Usually its between 5-6 months.

1 Cup butter milk

Dash of salt

Let margarine soften at room temp., put in small mixing

bowl. Add milk and corn oil to margarine. Beat on low

speed 1 minute then on med. speed for 5 minutes. This

will double in bulk, put in containers and set in freezer, if

4 or 5 green tomatoes Slice tomatoes rather thin, about V*" thick. Drop into pan of salty water, 1 tablespoon salt to a quart of water. Let set 30 minutes or longer, drain and dip in self rising flour. Fry in bacon fat or lard until brown. Drain in paper towel. Have the grease in skillet hot and do not crowd the slices into the fry pan. Have enough grease in the skillet to come up around the slices.

Grind Apples, Peppers, Celery and Onions together.

Add brown sugar and salt to taste. Cover with vinegar and

bring to a good boil. Can in glass jars.

Lettuce

Pecan Halves

Drain pears. In each pear half add one teaspoon

mayonaise and two pecan halves. Top with cherries. Place

on Lettuce. Serve chilled.

APPLE HERB JELLY

4 Cups apple juice

Cup of sugar for each cup

3 T of dried basil or 4 T of fresh

of juice

sweet basil

Place herb in cheese cloth then place in hot water and

bring to boil then simmer 10 minutes; squeeze out. Add to

apple juice to make four cups. Bring to boil add sugar cook

until jelly stage pour in to hot sterilized jars. Seal at once.

Apples

Delicious

Georgia will produce 22 million pounds of apples this season and picking and packing are underway throughout the state. Our early harvest puts Georgia apples on the market before other states start picking their trees. Apples are about 50 percent harvested now and the crop is rated as fair to good.
Apple orchards are becoming a familiar sight to Georgians. More than 225,000 trees dot Georgia with the majority located in Gilmer, Habersham, Meriwether and Peach

Counties.
The primary varieties grown in Georgia include Detroit, Red and
Golden Delicious, Staymen, Winesap and Yates.
After the apples are gathered, th&y are brought to packing houses for sorting, cleaning and packing.
Some go straight into cellophane bags for the grocery shelf while others are hand packed for long distance shipping. Bill and Tim Mer-

In production, "a person with a good background in livestock with practical experience in livestock can always find a job in a production unit," Dr. Lowrey continued. "We have a lot of calls for students with managerial experience along with their academic course work to go as managers of swine, beef and horse production units. During the last three-year period about 30 percent of our graduates have obtained jobs in livestock production units."
The number of animal science graduates has doubled in the last four or five years, increasing the number of graduates to fill job positions in animal science areas. "The number of graduates is keeping up with the demand," Dr. Lowrey said. "We've had some with
a choice of jobs." Salaries for graduating animal
science students are "pretty well competitive, starting at $9-15,000," he said. "We had one student this year who started in sales making
$15,000."

The initial cost of the equipment and the low average wind velocity in Georgia make windmills impractical to use in most areas. However, it is possible that at some time within the future more efficient windmills will be introduced and the use of wind power will become a welcome alternative to fossil fuels.

Carrots are members of the parsley family which also includes dill, and celery. They are biennial plants that usually require a cool rest period between planting and harvest to complete the life cycle.
Carrots are thought to have originated in middle Asia. When carrots were first brought to England, ladies used the feathery leaves to decorate their hair. In Germany, a substitute for coffee was made from carrots chopped into small pieces and browned. In some parts of Europe, a sugar was made from carrots but its manufacture was too time consuming to be profitable.
Settlers brought carrots with them to this country and it is reported that Indians like carrots so much that they would steal them from the gardens.

Grandpa's Windmill

Won't Work Anymore

With our recent energy crisis, many people have become interested in the use of windpower to replace fossil fuel power. They re-
member that grandpa used a windmill to pump water and think it would be an excellent way to conserve energy in 1977.
Wind is a free and non-polluting source of power, but the equipment to harness it is quite expensive. Even at the present price of electrical energy, a 1/4 horsepower motor is far more efficient at pumping water than a windmill.
Most windmills, in order to
operate, must have a wind velocity of about eight miles an hour. It really takes about a twelve mile an hour wind to do a sufficient amount
of work to be useful. This is one of our problems in the southeastern
part of the United States. Although wind velocity varies
considerably between localities our winds are usually below eight miles
an hour in Georgia. The exception to this is a narrow strip along the Atlantic coast. Also our winds vary throughout the year. In March, wind velocities are high enough that con-
siderable energy is available but in August, except for occasional thunderstorms, the velocity is usually
quite low and a windmill would be

virtually powerless. At the present time, the only
practical use for a windmill is to pump water. Water can be pumped during periods of high wind velocity and stored for use during periods of calm. The water can also be elevated by the windmill to provide pressure in the house. However, requirements for household water have increased since grandpa's day. Dishwashers, washing machines and indoor bathrooms require tremendous amounts of water compared to the old-fashioned alternatives.
Electricity There is considerable interest in the generation of electricity by wind power. This has not proven practical since the electricity must be stored in storage batteries, which are very expensive to buy and maintain. Research is being conducted at several leading institutions on the use of wind power to generate electricity and it is quite likely that some time in the future a breakthrough will be made. The cost of a windmill to pump water varies with the height of the tower and the diameter of the propeller. An average cost would be

representing some $2,000,000 per day for the state at the farm level.
These farm-level figures, however, tell only part of the story. Poultry boosts income, retail sales and tax receipts in every Georgia county.
Over the last 25 years, while the consumer price index was increasing by 103.1 percent, the retail price per pound of frying chicken increased only 2.4 percent, and that of a dozen Grade A Large eggs increased only 4.5 percent.
Georgia poultry ranks high on the food list in taste, elegance, digestibility, and versatility as well as hi the purely economic terms of low initial price and high food yield per unit.
Chicken is higher in protein and lower in calories and fat content than any other leading meat. Eggs are the generally accepted standard by which the protein value of foods is measured.
Many of the attributes of poultry and poultry products are traceable to the efforts of the Georgia Poultry Federation or one of its member associations or councils; the Georgia Poultry Improvement Association, the Georgia Egg Association, the Georgia Turkey Association, the Georgia Poultry Processors' Association, the Georgia Poultry Feed Council and the Georgia Broiler Production Council.
While we have had our own motives for these efforts, they have ultimately resulted in benefits for other segments of the agricultural community and for the consumer.
So, while the Federation primarily serves the poultry industry, we feel that we have earned the right to say to our fellow farmers and consumers: "We do it all for you."

Animal Science Offers

Broad Field For Grads

The field of animal science offers increasing job opportunities, especially in the areas of agricultural sales and livestock production, according to Dr. Robert
S. Lowrey, professor of animal science at the University of Georgia.
Animal science includes the
scientific selection, breeding, feeding, management and marketing of beef cattle, swine and horses.
Animal science students study animal nutrition, livestock judging, genetics, animal breeding, animal physiology, beef cattle production

and swine production. Graduates are qualified to pursue a number of careers and may be employed as farm managers, county Extension agents, feedlot operators, packing company buyers, food processing supervisors, vocational agriculture teachers, researchers of livestock specialists. A "fair number of animal science graduates also enter veterinarian school," Dr. Lowrey
also pointed out. Jobs in livestock production are
expanding somewhat in the Southeast as livestock production
