The future of the Georgia cattle industry is bright. In the next decade
the growth of the cattle business will astound even those producers and investors who have remained steadfastly optimistic in the face (of one of the most severe economic disasters ever encountered. Up until 1973, Georgia's cow-calf producers sold their weaning calves to the giant western feedlots, producing more cattle each year to

meet the soaring consumer demand for more and better beef. Everybody jumped on the "beef bonanza" the city investor who didn't know a Charolais from a Chevrolet, the Wall Street Wranglers, and "condominum cowboys" who bid higher and higher for the chance to own cattle and many, many genuine cattlemen.
Consumer incomes were on the rise and the cattle industry enjoyed cheap grain, energy and money.
Then, boom turned to gloom. The "good old days" were gone. During 1974, cattle prices dropped from one-half to two-thirds. At the same time, Georgia's farmer-cattlemen were hit with the highest production costs in history. The price of feed, seed, fertilizer, fuel, farm machinery, barb wire, baling twine and labor increased from two to six times over 1973.
The oversupply of beef, the costprice squeeze, the grain drain the energy crisis, and 'stagflation' ... a hammer blow that shocked and bewildered beef producers ... and opened their eyes to an opportunity.
An opportunity that has long existed in Georgia and the Southeast: Finishing cattle on forage!
The South is the nation's greatest natural feedlot with the land, the rainfall, the forages, and the technology to produce two to three times the current beef output. Lean,

"Apple Poof" Pie Wins

Bulletin Recipe Contest

Mrs. Williams From Blakely

The apple recipe contest sponsored by the FARMERS AND CONSUMERS MARKET BULLETIN and the Agricultural Commodity Commission for Apples had over seven hundred entries. A tough job for our judges!
But after cooking and tasting (the most fun) for several weeks, the $25 cash prize and bushel of apples went to Mrs. W. T. (Nelle) Williams of Blakely, Georgia, for her very different and delicious "Apple Poof" pie.
Mrs. Williams, a native of Early County, has done a great deal of cooking in her life for her family and "three adorable granddaughters."
An active member of the Sowhatchee Baptist Church, Mrs. Williams used to make the bread for communion services there. She still cooks some for the church suppers, but now works outside of the home and doesn't have as much time for her culinary skills as she did when her daughter, Mrs. Norman Johnson, was at home. Second Place

Second place winner in the apple recipe contest is Mrs. Malbea Ann Heilman of Chamblee for her "Apple 'n Graham Cracker Bar" recipe. Her tasty and easy to fix no-cook recipe wins a bushel of Georgia apples. (Recipe on page 8.)

Mrs. John R. Guest of Tifton is third place winner and receives a bushel of fresh Georgia apples for apple salad recipe. This recipe is unique due to its unusual and tasty dressing. (Recipe on page 5.)

Botanical Gardens Serve Multi Purposes

In 1969 the University of Georgia set aside approximately 293 acres of land along the Middle Oconee river for development of a major botanical garden and arboretum. The property, originally assigned to the Agricultural Experiment Station, was found unsuitable for agricultural research for the very reasons which make it an ideal site for a botanical garden.
The terrain is mostly rugged but is variable, with hills, steep bluffs, ravines, and some low level areas including marshes and swamps. The many different micro-climates found in the area make it especially suitable for certain long range ecological and horticultural studies. And so this property became a botanical garden for the University of Georgia.
A modern botanical garden is a combination living plant library and plant materials laboratory. It is a place where plants can be systematically observed and studied over long periods of time and in

progressive stages of development and under varying ecological situations. It fills a "across the board" need that is not usually possible to fill in problem and crops oriented agricultural experiment stations. Yet it provides a reservoir of basic information necessary for much agricultural research.
The major functions of a botanical garden are: [1] to provide opportunities for long range observations and fundamental research with mature plants and plants in ecological and bioclimatical situations not provided in standard plant laboratories and field plots; [2] to maintain hi a regulated and concentrated form an outdoor plant materials laboratory for formal and extension types of instruction about plants; [3] to provide standard and characteristic specimens of plants for use of plant scientists, nurserymen, landscape architects and gardeners; [4] to conserve and exhibit rare and unusual plants; and [5] to provide a
haven of beauty, quietness, and solitude for contemplation, and enjoyment of plant lovers of all

kinds. The botanical garden is a natural
center for activities of groups having to do with gardening, landscape improvement, highway beautification, conservation, ecology, and the relation of people to outdoor environments. It is a natural show place of a campus and tends to spill its beauty onto all parts of a campus.
A botanical garden becomes more valuable and useful as it ages. It will also become much more important to the University as adjacent open spaces diminish under the pressure of population expansion.
At the University of Georgia, all departments that work with living plants have a need of a major botanical garden facility. The principal departments involved are
Agronomy, Botany, Institute of Ecology, Forestry, Horticulture, Landscape Architecture, and Pharmacy. Others such as Veterinary Medicine, Vocational Agriculture, and Zoology can be expected to participate to a lesser degree.

1/2 cup sliced imrschino cherries 1 Irg. con crushed pineapple

1 cup heavy whipping cream 1/3 cup flour

(drained) 1/2 stick butter (or eleo)

4 large tasty apples

3/4 cup sugar 1 cup chopped nuts

Sift flour and sugar together. Stir into the cream (not whip-

ped), add pineapple. Cook in double boiler or heavy aluminum boiler. Remove from heat add butter and cool.

Peel and dice apples, add nuts and cooled dressing. Add

cherries and mix or sprinkle the cherries on top. Salad

dressing can be made a few days in advance and

The tulip tree is one of the largest,

most distinctive and most valuable of

American broad-leaved trees. The

greenish-yellow flowers are heavily

laden with nectar thereby attracting

hordes of bees. Beekeepers con-

sequently regard the tree as valuable

to honey production.

In the winter months, the tulip tree

is easy to recognize by its spicy-

aromatic twigs with big flattened buds

at the tips.

Tulip trees are large trees usually

reaching a height of 100 or more feet

with trunks from 4 to 8 feet in

diameter.

This tree is often called the tulip

poplar, white poplar, whitewood and

yellow poplar. The "Treaty Tree" tulip

poplar, however, is regarded as the

most infamous of the bunch. At the

beginning of the American

Revolution, the patriots of Annapolis

assembled under its branches, and

when the war ended, the citizens

gathered to celebrate the peace.

Besides its aesthetic value, the

tulip tree is also an economically

important tree. The easily worked,

light yellowish-brown wood is widely

used in furniture, musical in-

struments, cabinets and wooden-

A well-known farm magazine said 60 years ago, "We know of no crop which offers better promise for the South generally than soybeans." Georgia farmers apparently believe this. Soybean acreage in this state has climbed from less than 100,000 ten years ago to more than 700,000 today.

"Apple Poof" Pie Wins

"APPLE POOF'
1 cup pineapple juice 24 marshmaDows [or 3 cup miniature] 1 pkg. vanilla wafers 1/2 cup orange juice 1 cup grated Red Delicious apples 1/2 pint whipping cream [whipped] Boil juices 5 minutes. Cut marshmallows in 1/4 pieces and soften in hot juices, stir. Cool until jellied. Add apples and fold in whipped cream. Line dish or individual compotes with vanilla wafers. Pour mixture over wafers. Serves from 4 to 6.

2nd PLACE "APPLFN GRAHAM CRACKER BARS"

1 cup grated apples

1 cup brown sugar 1/2 cup butter 1 cup coconut

Combine and cook until heated and well mixed Set aside to cool.

1 cup graham cracker crumbs

In greased 9 x 13" baking pan, put layer of whole graham crackers on

bottom, then spread above mixture over them. Cover mixture with layer of

whole crackers. Frost this with your favorite vanilla frosting, using spiced

apple slices as a trim topping over the frosting. Refrigerate before serving.

Number of servings depends on size of bar you cut.

Botanical Gardens

The University of Georgia Botanical Garden is in the early stages of development. On October 30, 1975 the UGA Botanical Garden expects to dedicate a fine new administration-educational building constructed with funds provided by the Callaway Foundation Inc. of LaGrange, Ga.
This facility provides offices and laboratories for faculty and staff as well as a general laboratory for students studying in the garden. There is a branch herbarium for preserving specimens of plants in the garden, a branch library, and other instructional facilities.
Approximately half of the building

is intended for public service functions, i.e., short courses, conferences, and meetings of groups having associations and interests allied to the purposes and function of the Garden. This facility has been supported by the Garden Clubs of Georgia, the Georgia Horticultural Society, the Georgia Nurserymen's Association, the Friends of the Garden, the University Student Horticultural Club, the Georgia Botanical Society and other groups. Because it is a "plus" type of facility it will have to depend largely on contributions from other than regularly appropriated University funds for the long range development and maintenance. However, the widespread and generally enthusiastic support of the Garden is most encouraging.
