I am a subscriber to the Market Bulletin. It has done the farming class of people more good than all the other stuff the Government has ever put out. I see you score the men some time. How about the Women's Department. It seems to me there is need for scoring these also. If you would give us a raking down some of us would be more careful how we treated others.
I have ordered flowers from several different ladies. Some came packed nicely in damp moss or other suitable packing material and they always arrive in good shape. Others come with papers plastered to them, and the flowers merely dropped in a box, and when they stay in the mail several days they are completely dried up. You may write the latter shippers all you want about such packing, and they won't answer at all.

Standing Reward
In the great volume of offerings handled by this office, some dishonest people have defrauded our citizens. Sometimes the dishonest person has imposed on us by advertising his offerings. As soon as we learn of their fraudulent methods, they are denied any further use of the Bulletin. Then they watch the offerings in the Market Bulletin and write direct to the owner and thus consummate their fraud.
Therefore, we have decided to offer a standing reward of two hundred dollars for the criminal conviction of any person wherein the transaction grew out of the use of the Market Bulletin in any manner.
If you feel that you have been defrauded as above described, submit your evidence to an attorney, and if he thinks a fraud has been committed, cither State or Federal, ask him to proceed with the prosecution. This reward will amply take care of all fees and expenses.

SEVEN FARM ADVANTAGES TO CONSIDER
To sum up, then, let us repeat that any per son who really has a gift for some other special occupation should go straightway to the oc cupation where his heart is. At the same time before deciding against the farm, these seven advantages which it manifestly offers should have frank and candid consideration:--
1. Farming is free from extremes of wealth and poverty. There are in cities many vastly richer people than there are on the farm, but there are also millions in direr distress than we ever find in the country. On the farm you are at least never "out of a job" nor need you go without a good living.
2. Farming is an independent life. You are your own boss. You can live your own life and humble yourself to no master.
3. Farming offers an opportunity for creative work. You can see the results of your labors and find happiness in making land, livestock, crops, and home each year a little better than the year before.
4. Farming is a many-sided occupation in which one may exercise all his faculties of body, mind, and spirit. It is at once an in dustry, a business, and a profession.
5. Farm life is not only most wholesome physically, most wholesome mentally, but most wholesome morally. Home life is happiest there. The wholesome influences of religion are strongest there. It is the best place in which to rear children; and certainly no wealth man can acquire can equal the riches he finds in healthy, honorable industrious sons and daughters.
6. "The ownership of land is a patent of nobility," as Dr. Seaman A. Knapp used to say, and those who own and should be loath to give up this distinction, while farm workers now without land may still acquire it by thrift and industry and thus give to their sons and daughters a distinction which the landless, propertyless element in town, even though ear ning larger daily wages, do not enjoy.
7. On the farm there is thus an opportunity not only "to make a little nook of God's creation a little better, fairer, and more worthy of God" while one lives, but to bequeath from generation to generation a homestead em bodying the results of one's life and labors -- an ancestral homestead with which the in creasing worth and dignity of a family name may be handed down from sire to son through decades and through centuries. The prayer of Moses, "the man of God," in the wonderful 96th Psalm may be realized on the farm as almost nowhere else: "And establish Thou the work of our hands upon us, yea, the work of our hands, establish Thou it."

SUMMER CARE OF HENS
There arc many different ideas as to care and feeding of hens during the long hot sum mer months. Some arc good, some are poor, but there arc some principles that must be ob served in caring for and feeding hens during summer.
The laying stock must be kept as com fortable during the summer as possible and, to do this, the poultry raisers must feed the proper feeds in the proper proportions and provide the hens with plenty of clean, fresh water, and shade.
Do Not Starve Broody Hen The broody hen should never be starved while in the broody coop. While hens are being broken up from sitting they should have the same feed as they had while laying. This is so that when the broody spell is over the hen will immediately start back to laying and her system will not have to be built back-up for 'egg production. Be slow to change from a ration that is get ting results and never allow your feed to give out, because any little change in feeding will upset the hens and make a decrease in egg production.

Notice to Shippers of Parcel Post Packages
Many users of the Market Bulletin and shippers of plants and other goods by Parcel Post seem unaware of the fact that for an additional penny a receipt for every Parcel Post shipment can be had.
In view of the fact that occasionally we have complaints of Parcel Post shipment not being received we urge that every one adopt the method of obtaining a receipt, in order that in the adjustment such complaints your receipt will be conclusive evidence of your having made shipment. On the other hand your failure to obtain receipt will prevent your being able to prove shipment.

As the Georgia Department of Agriculture celebrates its cen-
tennial anniversary as the oldest legally constituted State Depart-
ment of Agriculture in the United States, we have received letters
from agricultural leaders throughout the nation as well as
dignitaries and statesmen from our own state.
We would like to share a few quotations from the many
salutations we received:
Our esteemed senior Senator Herman Eugene Talmadge whose father served as Commissioner of Agriculture wrote "...Certainly the Department has made a significant difference in the quality and quantity of the supply of food and fiber at both the National and State level, while transforming agriculture from an arduous home craft to a science of finely sophisticated proportions. . . Obviously, none of this great work could have been done without the leadership of excellent Commissioners of Agriculture from the first Commissioners, Mr. Janes and Mr. Nesbitt, to Phil Campbell and yourself. I am proud that my father also served in this post with distinction . . ."
The nation's youngest Senator Sam Nunn congratulated the
nation's oldest Department of Agriculture "...Since its begin-
ning in 1874, the Department has developed a commitment
to the people of Georgia ... As the oldest in the United
States, the Georgia Department of Agriculture has worked
carefully through the years to maintain the delicate balance
between the earth's natural environment and the people
who work with and live on it . . ."
Governor Jimmy Carter wrote, "I congratulate you and each of your employees as the Department of Agriculture celebrates its 100th anniversary because of responsive and capable leadership throughout the years the Department has expanded services vital to Georgia farmers and agribusinessmen, thus assuring the continued success of Georgia's number one industry . . ."
Lieutenant Governor Lester Maddox said ". . .Certainly Our state has moved forward rapidly in growth and prosperity and much of this is due to our state's leading industry, agriculture ... At this particular time in the history of our country, we will need to continue supporting our state departments of agriculture, our farmers and the millions of related businesses in order to assure the people of Georgia and America an ample supply of food and agricultural products . . . One thing that is always evident in the Georgia Department of Agriculture is the willingness of employees to be of assistance, whether called upon by citizens or public officials . . ."

anniversary of the founding of the Georgia State Department of Agriculture is a source of pride and inspiration for those who believe in keeping government close to the people and particularly for those who were privileged to share closely in the work of the department. It is a great satisfaction to me that Georgia not only led the Nation in the establishment by law of this important institution but has maintained its leadership in the field throughout the years..."
The National Association of Slate Departments of Agriculture
said, "... The people of Georgia have been blessed with an agency which has carefully determined its goals and objectives and has moved with constructive aggressiveness to achieve these goals. The benefactors have not only been the citizens of Georgia but, in a real sense, the agricultural community of this nation . . ."
Former Commissioner and long time friend of many Georgians Tom Under reminisced, "As a former Commissioner of Agriculture meeting with the commissioners of other states over a period of years, I was very much impressed with the fact that the most able representatives of the farmers of the United States invaribly came from the 13 original
states. Georgia is one of a very few states that has a Department of Agriculture constituted by the people themselves in an amendment to the state constitution . . ."
Our able Georgia Agricultural Committee chairman Sam McGill of the Georgia Senate and Dorsey Matthews of the Georgia House added their congratulations, respectively ". . . Georgia may well be proud of the strides made in the field of agriculture during the past one hundred years, and it is a matter of personal pride that Georgia leads the nation in the production of several major crops, including tobacco, peanuts, soybeans, livestock and wood products to name a few . . .";
"...Truly, February 14 will be a Red Letter Day for all the people of Georgia and will be something for the nation and the world to look at, when we consider the needs that it has provided for all the people . . ."
From Dr. Charles Ellington, Director of the Georgia
Cooperative Extension Service, "... One hundred years of
achievement! What a wonderful record of service to Georgia's agriculture and to the people of our state both producers and consumers . . ."
Dean Henry W. Garren, University of Georgia College of Agriculture, wrote "... our College of Agriculture has benefitted greatly from the support rendered by you and your staff . . ."
We have also heard from many other stale departments of
agriculture, from as far away as Alaska and Hawaii "... We wish to extend to you and your department an invitation to help Alaska's Division of Agriculture celebrate our onehundredth anniversary in 2048." "As the youngest state in the Union, may we of the Hawaii State Department of Agriculture extend our congratulations to one of the proud "Silver Greys" . . ."
The Stale of Maine Department of Agriculture commented, " .
. . A continued growth in agriculture over the past century in your great State reflects upon the determination and dedication of its farmers and on the ability of your Department to assist, promote and administrate an industry which today exceeds well over one billion dollars..."
From the midwest, we received congratulations from Iowa,and
Minnesota, respectively, "... We are only half as old as the Georgia Department of Agriculture, but I feel that we look to your Department for guidance, counsel and cooperation through the national organizations . . ." "Indeed, may this be a 'peach' of an observance, commensurate with the distinguished reputation your Department has earned in its century of service to agriculture and the consumers of Georgia's many find food products . . ."
California writes, "... Your Department may be very proud of its work in developing and safeguarding Georgia's great agricultural belt. Your record production of peanut crops and your accomplishments in the poultry and livestock industries should bring continued prosperity to your agricultural industry, while contributing significantly to our protein supply . . ."
From the northwest, the Stale of Oregon salutes us, "... Both
our states know a great diversity in crops, a product of the varied character of our land and soils ... I tip my hat to you and your . . . state upon the event of your centennial . . ."
Texas sends congratulations, "... I know how proud you
must be in looking back from this centennial vantage point to the great progress that your outstanding agency has helped to realize for Georgia and her people . . . Certainly Georgia has cause to commemorate this centennial both with pride and gratitude. We salute you and we look with you confidently toward your second century of service to Georgia, the South and the nation . . ."

SPOON BREAD
Stir 1 cup corn meal very slowly into 2 cups boiling water, the mixture should not stop boiling. Add 1/2 teaspoon salt and stir the mush over moderate heat for a minute. Remove the pan from the heat and beat in 2 tablespoons butter, 1 tablespoon finely minched chives, and 1 teaspoon minced chervil. Add 3 eggs beaten with 1 cup cold milk and beat well again. Pour the batter into a hot generously buttered baking dish, and bake the spoon bread in a very hot oven (450 degrees F.) for 25 minutes, or until it is well puffed and richly browned. Spoon at once onto plates along side ham or other meat, and top each portion with a pat of butter.

BREAD FROM MILK YEAST
At noon the day before baking, take half a cup of corn meal and pour over it enough sweet milk boiling hot to make it the thickness of batter-cakes. In the winter place it where it will keep warm. The next morning before breakfast pour into a pitcher two cups of boiling water; add one teaspoonful of soda and one of salt. When cool enough so that it will not scald the flour, add enough to make a stiff batter; then add the cup of meal set the day before. This will be full of little bubbles. Then place the pitcher in a kettle of warm water, cover the top with a folded towel and put it where it will keep warm, and you will be surprised to find how soon the yeast will be at the top of the pitcher. Then pour the yeast into a bread-pan; add three cups of warm water, or half water and half milk, and flour enough to knead into loaves. Knead but little harder than for biscuit and bake as soon as it rises to the top of the tin. This recipe makes five large loaves. Do not allow it to get too light before baking, for it will make the bread dry and crumbling. A cup of this milk yeast is excellent
to raise buckwheat cakes.
OLD FASHIONED SOUTHERN TEACAKES
21/4 cups sifted flour 1 cup sugar
1/4 tsp. salt
2 eggs beaten
2 tsps. baking powder 1/2 tsp. vanilla
1/2 cup butter
1 Tbsp. milk
Sift flour, salt and baking powder together. Cream butter,
sugar, and eggs. Add vanilla, milk and dry ingredients. Blend
well. Place dough on a lightly floured board, sprinkle little
flour over the dough and roll to about 1/2 inch thick. Cut with
cookie cutter. Place on cookie sheet and bake in a moderate
oven 350 or 375 degrees for about 12 to 15 minutes or until
lightly browned on top.

MY GREAT GRANDMOTHER'S GINGERBREAD (Recipe over 100 years old)
1/2 cup fettered
1 cup sugar
cooking oil
11/2 tsps. baking soda
1 tsp. cinnamon
1 tsp. powdered sugar
1 tsp. powdered ginger 2 eggs
1 cup dark molasses
21/2 cups plain flour,
syrup
sifted well
1/2 tsp. cloves
1/2 tsp. salt
1 cup hot water
Grease pan with cold Crisco, sift flour in it and beat it out
and it will never stick. Cream cooking oil and sugar. Add
beaten eggs, molasses, then dry ingredients which have
been sifted together. Add hot water last and beat until
smooth. Bake in greased square pan, 2 inches deep and 9 in-
ches long 40 to 45 minutes in moderate oven 350 degrees.

APPLE BUTTER
First prepare a fire and a stand for the kettle to sit on or hang from. Peel, core and quarter raw apples. Put into kettle and cover with water or apple cider or a mixture of the two. Cook and stir constantly until the apples are soft and cooked up well. Add sugar and spices. For each gallon of apples, add 1/2 as much sugar (if you prefer a dark color, use part brown sugar). Use 1 teaspoon cinnamon per gallon of apples. If preferred, add 1/2 teaspoon ginger and 1/2 teaspoon allspice for each gallon of applebutter. Cook until sugar dissolves
and mixture begins to pop and reaches desired thickness. (It will be thicker when it cools). Carefully ladle the hot butter into jars, leaving 1/2-inch headspace. Adjust lids.
OLD-FASHIONED MOLASSES TAFFY
1/2 cup butter
11/2 cups water
2 cups sugar
1/4 cup light corn syrup
1 cup molasses
Combine all ingredients in a large saucepan and cook over
high heat, stirring, until sugar is dissolved. Cook rapidly until
mixture thickens. Lower heat slightly and cook until the hard
ball stage. Pour onto greased plate. When cool enough to
handle, butter hands lightly and pull candy until it is light in
color and hard to pull. Stretch out into long rope about 1/2
inch thick then cut into 1 inch pieces. Wrap in wax paper.

'Round The Barn
When we were children living on the farm, one of the five boys in the family (who was about five years old at the time) was absolutely unpredictable as far as knowing how he would answer a question. One Sunday we all went to a camp meeting and an aunt was questioning him about the "washhole". This was the hole down at the creek where all the boys went swimming, only in their birthday suits, and the girls couldn't go. When she asked him how deep it was, he studied for a while and came up with an answer we never heard of: "It comes up to where my legs stop!"

As a young boy on a farm, my father used to take several eggs from the hen house now and then and trade them for candy at the local store. All went undiscovered until one day his mom gathered the eggs before he got to them. Not to be undone, he took his eggs from the basket on the kitchen table and went for his candy. He may have gotten away with his egg-swappin' for some time, except for one thing ... the eggs from the basket were soon discovered by the store owner to be boiled!

A "Receet" for washing clothes that a Missouri grandmother gave a new bride: 1. Build a fire in back yard to heet kettle of rainwater. 2. Set tubs so smoke won't blow in eyes if wind is pert. 3. Shave one hole cake of lye soap in bilin' water. 4. Sort things. Make three piles-one pile white, one pile
cullard, one pile work britches and rags. 5. Stir flour in water, smooth, then thin down with bilin'
water to make starch. 6. Rub dirty spots on board, scrub hard, then bile. Rub
cullard, but don't bile, just rench in starch. 7. Take white things out of kettle with old broom stick
handle, then rench, blew (blue) and starch. 8. Spread tee towels on grass. 9. Hang old rags on fence. 10. Pour rench water on flour beds. 11. Scrub porch with hot soapy water. 12. Turn tubs upside down. 13. Go put on clean dress, smooth hair with side combs,
brew a cup of tee. Set and rest or rock a spell and count your blessings.

Age Should Mean
Wisdom, Progress
Americans are prone to generalize. Everyone seems to envy the young just because of the youth. Or to revyre the old only because of its age.
Young can mean energetic, beautiful, innocent and bright, but
if the energies are misdirected, the beauty is distorted, and the brightness is blinded, there is no cause for envy. Accordingly, age can mean progress, experience, wisdom and maturity. But, if there has been no progress, experience is wasted, and senility has replaced wisdom and maturity, then there is no cause for reverence. It is with these thoughts that I point with pride to the I OOth birthday of the Georgia Department of Agriculture. As the first active Department of Agriculture in the United States, this Department has experienced some real growing pains. There was opposition to the Department from the start. But the energies of its youth or the brightness of its ideal were not misdirected or squelched. Quite the contrary, it was young and energetic and therefore able to overcome its opposition by proving its merit.
It became a necessity as the problems that beset the farmers of the 1800's were growing increasingly complex and of too great a scope to be dealt with individually.
The Georgia Department of Agriculture has continued from those early days in the late 1800's to progress, to lead and to fill the needs of those it serves.
Many of its innovations have been copied by the other Departments of Agriculture and have even served as guidelines for the United States Department of Agriculture.
It has grown not just bigger, but better. Through experience, its services have not only expanded but have improved. The wisdom of its years has helped Georgia farmers through the turbulance of the boll weevil, depression and war into diversity and mechanization. The Department through its history has fostered competition, honesty and progress.
And yet, it has maintained much of its youthful energies and has not grown stodgy but remained receptive to . new ways and ideas.

I am most honored and humbled to be the 14th man to serve as Commissioner of this great, old Department. Valentine's day is a time when we all are looking for a unique way to express feelings of affection. As the Georgia Department of Agriculture approaches its 1OOth anniversary it is perhaps appropriate for us to recall how messages of love were sent a century ago.
Flowers have always been symbolic of love and friendship but for centuries they have had other meanings as well. In times when emotions were inhibited by social mores, to speak of love and affection was unthinkable. Consequently a complicated system of floral symbols was contrived to convey the stirrings of the heart.
The "alphabet of angels" offered a unique language of unspoken words, which if written would probably have shocked .the petals off the vine. In our day of less restraint with feelings and emotions, such a system is unnecessary and burdensome but a certain amount of genteel affection can be rekindled by giving the right flower to the right person.

(The color of the rose is also important: red - passionate love; yellow- filial love; whiteworshipful love.) Narcissus ... "You are conceited and in love with yourself." Iris ... "You are the treasure at the end of the rainbow." Lily ... "Pure and flawless beauty." Lilac ... "Do you still love me?" Anemone ... "Go away." Geranium ... "You are childish." Poppy ... "My dreams are of you." Camellia ... "I shall love you always."

A proclamation by Gov. Jimmy Carter and a resolution by Chairman of the House Agriculture Committee Dorsey Matthews will be presented at a joint session of the General Assembly to mark observance of the centennial.
Following the joint session of the Senate and House the program will be concluded with hoop-skirted beauties serving cake and punch in the Capitol rotunda to an anticipated crowd of 1,000.
