1973 was an eventful year for the American Egg Industry marked by high food prices, economic phasing, and un-phasing, and in the final months, a strengthening and stabilizing market situation. These closing months of the year helped egg producers see the light at the end of a long tunnel of a depressed industry. Hopefully, 1974 will continue to bring relief and profit to the egg producers of Georgia.
In 1973, Georgia egg producers received record return on their

newspapers, and point of purchase were all used to bring the story of the versatility of the Georgia Eggs to the consumers. All these promotion efforts were funded entirely by the egg industry itself.
Research continued, sponsored by the producers, at the University of Georgia into projects such as shell egg quality and other important areas to producers and consumers alike. More such programs to provide the consumers with the finest egg possible will be funded in 1974.
In order to bring consumer attention to the egg industry and its importance to the state's economy, Governor Jimmy Carter has declared February to be "Georgia Egg Month". Many consumers do not realize that Georgia produced more than four-and-one-half billion eggs last year, thereby maintaining its position as number two in egg production in the nation.
Thousands of persons are gainfully employed by the industry in the state ranging from farmer producers and processors, to allied industry, and retailers.
The well-known nutrition and versatility of eggs are matched by a price-per-pound cost that makes them the most economical source of protein and other nutrients that money can buy. It has been said that if all the nutrients in eggs were compacted into pill form that one pill would cost $23. Is it any wonder then that the egg is recognized as the basic source and symbol of life?

Happy Birthday The Flowering Dogwood To Ag Department Requires Lillle Effort

The Georgia Department of Agriculture is 100 years old this month and is the oldest legally constituted department of agriculture in the United States.
To commemorate the occasion, the Market Bulletin will publish a special edition next week. Look for the "old look" in next weeks' issue. Also: reprints of ads and articles in Bulletins of days gone by. Congratulatory letters from across the country. Old Fashioned recipes. And more. Coming next week, Feb. 13.
Beware Miracles! They're Expensive, Often Ineffective
Commissioner of Agriculture Tommy Irvin warned Georgia farmers this week to use care in purchasing unusual or unfamiliar fertilizer materials and particularly those advertised as "miracle" fertilizers.
"The tight plant food situation offers a fertile field for 'miracle workers. The department is uncovering some fertilizer purchases by farmers that are completely ridiculous insofar as price goes," he added.
As an example, one south Georgia farmer purchased 500 gallons of a liquid 9-18-9 fertilizer at a cost of $1,375.00. Figuring 500 gallons of the liquid fertilizer the equivalent of about two and one half tons of

One of the most widely planted ornamental trees in Georgia is the flowering dogwood (Cornus Florida) and can be grown with a minimum of effort. Dogwoods are adaptable to several types of soil. However, they grow best in a moist, fertile loam high in organic matter. Their primary demands are good soil
drainage and protection from drought. The most trouble-free results will
be obtained when dogwoods are planted in association with other trees that provide moderate shade. Georgia's favorite flowering tree is found most often as an understory tree in forests of hardwoods and pines. Growth problems are more likely in hot, dry exposures. Don't plant dogwood in dense shade, since poor flowering is likely to result.
Inadequate soil preparation results in slower growth of many young dogwoods. Dig a hole at least 18 inches deep and three feet across,

No Termite Hazard In Mulching Materials

The United Professional Horsemen's Association held it's annual convention in Atlanta recently. During the convention, the Southeast Charity Horseshow was voted the number two show in the nation. The National Bark Producers Association have announced that the U. S. Forest Service report on pine
bark as a mulch has determined that termites are not a major problem in bark mulches and cannot maintain themselves on pine bark alone.
The Weights and Measures Division of the Georgia Department of Agriculture now has a section that checks all mulching materials sold in Georgia for advertised quantities.

PICKLED BEANS
Select beans that are very full. In fact, if half of them shell out they are much better. Trim ends; remove any strings, cut or break into pieces. Cook in boiling water just until the bean in the hull begins to get tender. Remove from heat then drain and wash. Add one heaping teaspoon of salt to each quart of beans as you pour the beans into a churn. Pour a quart of beans and a teaspoon of salt until the churn is filled. Pour cold water over them and press down with a heavy cloth and lay a weight on them. Be sure to keep water over the beans while they are souring so mold will not form on top of the beans. Set in a cool place for 7 days. After 7 days pour them into a pot and heat to a boil. Can hot beans quickly in sterilized jars and seal. You may also boil tender corn on the cob. Then cut if off the cob and mix with the beans. Use half beans and half corn then pickle together.

CHILI SAUCE

1 gal. ripe tomatoes

2/3 cup chopped onions

(peel and core before 11/2 cups white sugar

measuring) or 1 gal. 1 tsp. grated nutmeg

canned tomatoes

3/4 tsp. tabasco sauce

1/2 tsp. curry pow-

or cayenne pepper

der

2 cups vinegar

5 tsps. salt

2 tsps. ginger

1 tsp. cinnamon

1 tsp. mustard

Put tomatoes and onions through food chopper. Six and 1/4

Ibs. will equal about 1 gallon. Add other ingredients and boil

two hours or until thick. Stir frequently to prevent burning.

When sauce is desired consistency, pour into sterilized jars

and seal at once.

Steam sausages in 1/2 inch water in covered skillet for 20

minutes. Tiny party sausages are usually fully cooked so

eliminate the steaming. In a sauce pan mix the jelly and

mustard and heat slowly until it boils. Put well drained

sausages in baking dish and pour glaze over all. Keep hot in

oven until ready to serve.

1. Predominant ingredient of recipe must be broiler-fryer (2 to 3 1/2 Ibs.) chicken (whole, cut-up, or parts). Recipe must also include at least 1 teaspoon of Ac'cent and 1/4 cup Mazola corn oil. Recipe must give amounts of ingredients and full instructions. If cooked chicken is ingredient, directions for cooking chicken must be given. Please underline required ingredients. 2. Name, address, birth date and telephone number must be written on front page of each recipe. All entries must be postmarked by April 1, 1974 and received by April 8, 1974. None will be acknowledged or returned, OFFICIAL ENTRY FORM IS NOT REQUIRED. 3. Contestant must be at least 18 years of age by July 25, 1974, and a resident of the United States. Members of immediate families of employees and directors of National Broiler Council and immediate families of employees of makers of Ac'cent and Mazola Corn Oil are not eligible. 4. One finalist from each state and D. C. will be selected through local cook-off or recipe judging and testing procedures. Finalist must be resident of state he is representing at time of national cook-off. Recipe must be prepared exactly as submitted by the person who submitted it for final evaluation at the national cook-off in Winston-Salem, North Carolina on July 25, 1974. 5. Judging will be on the basis of appeal, suitability, appearance, flavor and clarity. 6. Cost of transportation from contestant's home airport to the national cookoff and return will be paid. Room and meals at the national cook-off will be provided. 7. Recipes become the property of the National Chicken Cooking Contest with rights to adjust and edit. Decision of the judges is final. Humor 'Round The Ban
Soon after our sow had a litter of pigs, our two granddaughters came to visit. We told them they could pick their favorite and give it a name. Seven year old Janice chose a white one with a black spot on his right hip and she named him Brutus. She told her Grandpa that he had better not sell Brutus. Grandpa sold him anyway and had only solid white pigs left. Before Janice arrived on the next visit, Grandpa rushed out with the black shoe polish and painted a black spot on the right hip of one of the solid white pigs. And you know what? He got away with it!

I once bought some Buff Orphington baby chicks and raised them to be layers. When they started laying they were dropping the eggs all over the yard. I had an old rooster that knew what they were supposed to do, so one day I looked out of the window and he was sitting in one of the nests with the pullets all gathered around. He sat there a little while and then got out and did a pretty good job at trying to cackle. After that, they all layed their eggs in the nest.

In addition farmers are urged to have soil tests made and follow soil test recommendations for specific crops.

Five Ga. 4-H'ers National Winners
Five 4-H members from Georgia claimed $3,400 in scholarships at the 52nd National 4-H Congress held in Chicago. Each of the five was named a national winner in programs arranged by the National 4-H Service Committee and supervised by the University of Georgia Cooperative Extension Service.
Selected for their accomplishments in 4-H projects and activities, leadership development and growth in personal, community and civic responsibilities, 268 national winners shared $186,300 in educational grants.
The winners were: Greg Culverhouse, Paula Whitehead, Connie Cole, Janie Swanson, and Fred Gurley.

Horse Auctions

Closed By Dept.

Two horse auction companies have been ordered by the State Department of Agriculture to cease operations for failure to meet requirements of the Georgia Equine Act of 1969.
The Marietta Horse Auction Company in Cobb County and the Panola Road Sale Barn in Lithonia were closed for lack of a state license as required by law, and deplorable sanitary conditions.
Two other facilities in the state were recently closed for similar violations.

of the young tree. Container-grown plants can be
planted anytime if they're watered carefully. Ball and burlap trees and bare-root trees should be planted when they are without leaves (November-March).
Planting too deeply is a major reason for many dogwood growth difficulties. Ball and burlap trees should be placed in the hole so that the top of the soil ball is even with the surrounding ground. Firm the soil below the ball of earth to be planted and plant so the top of the burlap is visible.
Damage to the trunk of dogwoods by bumping with lawn mowers invites invasion by dogwood borers. Larvae of this insect feed on the area underneath the bark. This feeding kills many dogwoods in Georgia each year. Protect the trunk from lawn mower damage by driving stakes into the ground about six inches from the trunk. It is also a good practice to wrap the trunks of young trees at planting time with commercial tree trunk wrapping paper. If the tree is more than four feet tall, stake and tie it so it's held firmly in place until the roots are established.
Plan to water recently planted dogwoods. Adequate water during the first two growing seasons determines whether dogwood trees live or die. They should get a heavy watering once a week during dry periods. Watering too frequently saturates the soil and may rot the roots.
Dogwoods respo'nd to fertilization. Any general purpose fertilizer, such as analysis 8-8-8 or 1010-10, can be used.
Some homeowners become concerned when their young trees do not produce flowers. All dogwoods are potential flower producers. Trees from seed vary in the age at which they flower. Very fast growers will usually be delayed in beginning the flowering cycle. Those which produce an abundance of flowers and follow up with a heavy berry crop will likely produce a small number of flowers the next year. Planting in heavy shade will reduce flower production.
