FIRST FERTILIZER Peruvian guano was the first commercial fertilizer to gain widespread popularity in the United States. It came into public notice when John S. Skinner discussed it in the "American Farmer" magazine. It was introduced commercially in 1843 when the first shipload arrived in Baltimore.
SWEET POTATO SALAD
2 large sweet
1/2 teaspoon grated
potatoes or
orange rind
(3 mod. size)
1 cup brown sugar
1 cup raisins
1 tablespoon flour
(dark or light)
1/2 stick margarine
1 cup miniature
1 teaspoon allspice
marshmallows
1/2 cup pecans
1/2 cup orange
juice (fresh)
Boil sweet potatoes until tender, drain, and cut in cubes.
Melt brown sugar and margarine, then add flour. Gradually
add orange juice, rind, and allspice.
Mix thoroughly with sweet potatoe cubes and then add
pecans, raisins and marshmallows.
Place serving on crisp lettuce leaf.

MAPLE-PECAN CHIFFON PIE

sugar 1 cup heavy or
whipping cream 1 tsp. vanilla
extract 1/2 cup chopped
pecans
Day before: In ice-cube tray with sections, freeze cold milk overnight. Make, bake and cool pie shell.
Early on day of serving: In electric blender container, combine water and next 4 ingredients; cover; blend, on high speed, 40 seconds. Add sugar; cover, blend 2 seconds. Now add 1/2 cup heavy cream, vanilla and frozen milk cubes, a few at a time, blending 30 seconds in all; mixture will be thick. Fold in chopped pecans; then pour into pie shell. Refrigerate pie till serving time.
Just before serving: Whip 1/2 cup cream; garnish top of pie. Makes 8 servings.
LIME MIST PIE
1 large can evaporated milk
1 pkg. lime gelatin-(3 oz.)
1 cup hot water green cake coloring,
6-8 drops
1/2 cup sugar 1 tsp. vanilla
flavoring juice of 2 lemons graham cracker
or thin chocolate wafer crumbs
First, put 1 large can evaporated milk in the ice tray until very cold, and crystals form around the edge. Mix 1 package lime gelatin in 1 cup hot water and place in refrigerator until slightly jelled. Whip jello, whip cream, separately. Add juice of 2 lemons to cream. Add 1/2 cup sugar and 1 teaspoon vanilla. Whip jello and cream together, add green cake coloring. Place in a graham cracker crust or thin chocolate wafer crust. Yields 2 pies, each 10 inches.
CHOCOLATE FONDUE
2 (6 oz.) pkgs. semisweet chocolate morsels
1/2 c. sugar 2 tbsps. butter
1 c. eggnog or light cream
1 tsp. vanilla extract
In top of double boiler, over gently simmering water, melt semisweet chocolate morsels, sugar and butter. Slowly stir in eggnog (or light cream) and vanilla extract. Heat 3 to 4 minutes longer, stirring well to blend chocolate and eggnog. Transfer to fondue pot keeping fondue warm over alcohol flame or candle. Makes 3 cups.
To prepare fruit to dip in fondue: Peel and section 2 oranges. Peel 2 bananas and cut into 1 inch chunks. Wash core and section 2 pears and 2 apples. Brush banana, pear and apple slices lightly with lemon juice to prevent darkening. Arrange on a large platter. Provide fondue forks for dipping fruit into chocolate fondue.
SCALLOP-BACON NIBBLERS
1/2 Ib. bacon slices
1 Ib. fresh or thawed frozen scallops
coarse ground black pepper (optional)
Italian seasoning (optional)
Early on the day: With toothpicks, secure half a bacon slice around each scallop; refrigerate.
Just before serving: Broil bacon-wrapped scallops, on rack in broiler pan, in broiler till they are crisp - about 10 minutes, turning once. (Or use a portable electric broiler.) Then sprinkle with coarse ground black pepper, or Italian seasoning, if desired. Serve on heated platter as appetizer, with grape-juice cocktail. Makes 24.
MASHED POTATOES SOUBISE
2 Bermuda onions, peeled
2 tbsp. butter or margarine
salt
enough packaged instant mashed potatoes for eight servings
curry powder
About 1/2 hour before serving: Slice onions about 1/2 inch thick. Saute slfces in butter, in uncovered skillet, until brown on one side. Then turn them, and brown on other side; sprinkle with salt. Keep warm. Prepare instant mashed potatoes as package label directs; spoon into shallow serving dishr arrange onion slices on top as a border. Sprinkle with a little curry powder over center of the potatoes. Serves 8.

minced onion 1 tbsp. dried
parsley flakes 1/2 tsp. salt
Heat oven to 350 (moderate). Sprinkle a little cheese and bacon into each tart shell. (Leave shells in foil baking pans) Blend eggs, milk, onion, parsley and salt in a medium size bowl. Fill each shell 3/4 full with mixture, then bake 25-30 minutes or until a knife inserted near the center comes out clean. Serve immediately.
PRALINES
2 cups granulated sugar
1 tsp. baking soda
1 cup buttermilk pinch of salt
Place these ingredients in a 4 quart pan, or larger, since this mixture foams up. Cook over medium high heat briskly for 5 minutes or until candy thermometer registers 210.
Add - 2 Tbsp. butter, 2 cups pecan meats (broken if desired) Stir continuously for 5 minutes or until thermometer reads 230. Remove from heat and let cool a minute or two. Beat mixture until it begins to thicken and becomes creamy.
Drop by teaspoon onto waxed paper.

Sorrel dates back to 3000 B.C. It -grows wild in Asia, Europe and North America and is known by many names in different countries around the world.
In Europe and northern Asia, sour dock is mentioned by botanists as early as 1597. Although it has been eaten as a vegetable, Europeans preferred to combine it with other foods as an extender for bread in times of scarcity.
French sorrel, widely cultivated in France, is much used in salads. Northern Europeans eat the leaves with milk or mixed with meal and baked.
Patience dock, found in southern Europe and the Orient, is referred to as an excellent and wholesome potherb. The name "patience" seems to have originated in the monastery gardens.
Garden sorrel is the most acid and sour of the sorrels and is found throughout Europe and the Orient. Garden catalogs of early America refer to this variety of sorrel as an excellent source of salad greens.
All sorrels are perennial; all have an acid, sour taste and are for the most part not too popular to today's tastebuds. They can, however, be eaten raw, in salads, cooked as a vegetable (prepared the same way as spinach) or added to dishes such as soup and cooked cabbage for flavor.
The flavor of sorrel is similar to dill, not exactly pleasing but tolerable. Sorrel's high content of vitamins A and C, however, make it a valuable herb and also a little more tolerable.

Receive Flowers For Christmas?
Proper Treatment Preserves Life
Many people will receive either a Christmas cactus or a poinsettia for Christmas. These flowers, beautiful when they arrive, require a little care to continue
growing properly.
Stems of Christmas cactus arch gracefully from a hanging basket. Its pendulous branches will bear colorful fruits if the flowers are cross-pollinated with those of another clone.
Christmas Cactus
Christmas cactus produces many flat-stemmed fleshy branches that serve as leaves. Billiant pink pendant flowers grow from the edges of the younger parts of the plant. Christmas cactus often fails to bloom because of nighttime exposure to high temperatures or artificial light.
Pot in humus soil. Keep the soil moist in winter, spring, and summer; allow it to dry moderately between waterings in fall. Grow in full sunlight, cool temperatures, and
medium humidity. Beginning September 1, keep the
plant in total darkness with no artificial light for at least 12 hours a night. Maintain a night temperature of no more than 70. During summer, grow the plant in a cool, shaded
area. Propagate Christmas cactus from
pieces of branches two or three segments long.
Poinsettias at Christmas are most decorative and with proper care may be induced to flower again.
Ga. Peach Growers
Have Referendum
Georgia peach growers will vote Jan. 10 through 24, 1975, on whether to continue the federal marketing order regulating the interstate shipment of Georgia-grown peaches.
Officials of USDA's Agricultural Marketing Service said that provisions of the marketing order, originally effective in 1942, require that a referendum be held every two years. All Georgia growers who produced peaches for market in 1974 are eligible to vote.
Georgia growers will receive ballots by mail before the opening date of the referendum. Completed ballots must be postmarked no later than January 24.
Any grower who does not receive a ballot may obtain one from the county extension agent.
Hog Conference
The National Hampshire Winter Meat Hog Conference will be held at the University Coliseum January 9-11, Athens.
The conference will include shows of boars, gilts and barrows of the '*- ""shire breed.
Poinsettia Poinsettia needs a cool room, full sunlight, and moist soil. If the plant is in good condition when you get it, it should keep its colored bracts for 3 weeks at a room temperature of 70. If the temperature is kept between 55 and 60 , red poinsettias will stay colored for 4 to 6 weeks and white poinsettias for 2 months. If you want to keep a plant after the bracts fall, place it in a cool, light location and water sparingly. The plant will become dormant. In April or May, cut the plant back to within 6 inches of the pot. Repot the plant in regular soil mixture and resume watering often enough to keep the soil moist. Take cuttings of the new vegetative growth. When the cuttings root, pot them in regular soil mixture. Before the first frost, move the plants, both old and new, into a sunny window. Beginning about October 1, keep the plants in a night temperature of 60 and protect them from artificial light at night. The plants should be well colored for Christmas.

Leftovers also need to be treated with care. Remove the leftover stuffing from the turkey and place it separately N in the refrigerator or freezer. Don't let it sit out longer than necessary after the meal, in any case not more than two hours total at room temperature.
Generally, stuffing will be loose when re-served. So you can reheat it to 140 degrees F. before re-serving, for safety's sake. The turkey also should be re-heated to that temperature.
But if you are confident you haven't let bacteria get started, you can slice and eat the turkey cold.

Cold Protection
May Not Help
Shrubs given temporary cold protection before a severe freeze are usually damaged anyway.
Temporary protection seldom reduces plant or flower damage when the temperature drops below 15 degrees.
Temporary protection, refers to covering shrubs such as camellias with boxes, quilts, sheets or plastic bags.
Icing over the shrubs by spraying water on the plants after the temperature drops below 32 degrees in another procedure that is good in theory, but usually is not successful in practice.
There's a better alternative. Select cold hardy varieties and plant them in protected areas. Filtered shade through pines will offer considerable cold protection to shrubs.

Six Georgia Cooperative Extension Service County Agents have been selected to attend the Annual Beltwide Cotton Production-Mechanization Conference in New Orleans, La., Jan. 6-9.
The Georgia agents selected include Alien Fulford, Dooly County; Vernon Alligood, Crawford County; John Parks, Bleckley County; James Whatley, Pulaski County; and Mack Sloan, Clay County.
The six agents were chosen because of their excellent County Extension programs.
