Dairy Month
Salutes Farmers
In 1937, the month of June was selected as the proper season to salute the dairy farmers, dairy industry, and the cow for their contributions to the nutrition, health and well being of our na-
tion. It was noted that the Jamestown Colony was on the verge of collapse until milk cows were imported to support the nutrition of our fore bearers.
Over the years, milk has become so basic in the national food structure that it is "taken for granted", and almost forgotten as one of the very best sources of calcium and high quality protein.
For years milk has been accepted as a requirement for adolescents in their development of bones and

teeth, but the slogan "You Never Outgrow Your Need For Milk" is a reminder that adults of all ages require calcium to maintain bone structure and muscle action. Remember the heart is a muscle!
Protein i.s one of the hottest words in food world, and the costs of most 'high-protein foods have been driven up by consumer demand, -- yet, only three normal 8 o/.. glasses of milk will provide over one-half the average daily requirements of protein in the diet.
Behind the combination of Protein. Calcium, and all the other nutrients of nature's most nearly perfect food stands and dairy farmer in his quest of supplying milk for this nation. But, where 1 ,099 Georgia dairy farmers stood in March of 1973 only 984 stand today, a reduction of about 10 percent.
With Financial crunch already forcing dairy farmers out of business, the federal government imports in 1973 totaled (in terms of milk needed to produce them) about 9.3 billion pounds of dairy products.
This year, in spite of the normal ^and usual flush spring supply of domestic milk, the government has temporarily authorized an additional importation of 100 million pounds of cheddar cheese and 150 million pounds of dry milk powder, -- a significantly price depressing amount to farmers.
If there was ever a time to lend a little encouragement of the producers of a basic high-protein food commodity -- it is NOW!!
June, 1974, is certainly an opportune time to salute the surviving stalwart men of the dairy farms.

How far can you spit a watermelon seed? Don't laugh. There is a state and national contest for this talent. Charlie Collins of Atlanta won the local competition sponsored by the Atlanta Produce Dealers Association at the Atlanta Farmers Market on June 11. He is now eligible for the national contest to be held in Texas this year. Charlie can spit a seed 24 feet. Only about 10 feet shy of the world record! Don't forget Watermelon Day coming to the Atlanta Farmers Market on June 30. Collins will be there to challenge some of the city and state's governmental leaders and other dignitaries.
Outdoor Cooking
With Wood Chips
These long, summer evenings are the perfect time for outdoor cookery. With beef in good supply now in food stores, many an indoor chef will be abandoning the kitchen in favor of the uniquely enticing aroma of the barbecue.
To get that tantalizing smoke flavor, add wood chips such as hickory, oak, apple or cherry to the fire. Soak the chips in water at least one hour before using so they will burn slowly. Add chips occasionally to keep your dinner soaking up that good smoke flavor.

Peanut Growers
Vote On Program
During June every Georgia peanut grower will receive a ballot which enables him to vote on whether or not to initiate a stabilization program for Segregation 3 peanuts..
Growers who own, rent, or lease peanut allotments in Georgia are eligible to vote and any grower not receiving a ballot should contact the Peanut Commission office in Tifton.
Each grower will receive a ballot and a postage-paid return envelope. Ballots must be postmarked prior to midnight on July 6, 1974, to be counted.
Approval of the stabilization referendum will require a favorable vote by 51 percent .of all peanut producers representing not less than 5 1 percent of the peanut production.
At a meeting of the Board in
Atlanta last week, reports from the members, representing all of Georgia's tobacco producing areas, indicated that from the standpoint of both quality and yield the 1974 flue cured tobacco crop may be the best in history.
At the June 25 meeting, to be held at the Farm Bureau headquarters in Macon at 10 a.m., Board members will report on the readiness of the Georgia tobacco for marketing and thereby recommend a date for the warehouses to "begin sale."
June 14 was the deadline for farmers to designate the markets on which they plan to sell their tobacco this year in keeping with new sales regulations being imposed by the Industry-wide Flue Cured Tobacco Marketing Committee in cooperation with the U. S. Department of Agriculture.

The Commissioner said changes
in the historical method of selling tobacco will probably see other growing areas such as the Carolinas opening markets at or near the same time as Georgia markets and this will undoubtedly reduce by about half the number of sets of buyers on Georgia markets this year.

Scientists Develop New Poultry Processing System
Scientists have developed a new automated blood collection system for poultry processing plants, a system which prevents almost all collectible blood from getting into the plant effluent.
In current processing methods, the blood usually collects on the floor of the slaughter area until,the end of the work shift. There the serum separates and drains into the massive streams of water necessary to float the waste material out of the processing area.
Water use is estimated at over 10 gallons per bird or 1 million gallons per day in large processing plants. The collectible blood resulting from the processing of 10,000 chickens per hour an average number for most plants is 130 gallons of
blood per hour. These bloody
streams are repugnant; moreover, in
terms of environmental pollution,
they spell trouble.

Russell Center's Environmental
Engineering Laboratory in Athens,
Ga., may have one answer a
mechanical system consisting of
heavy duty vacuum equipment with
lines attached to a 500-gallon collec-
tion tank. Blood is collected by
pneumatic tubes from specially
designed catch basins and tran-
sferred to the collection tank. The tank is equipped to discharge blood through a quick-opening valve operated by an air cylinder. From the collection tank the blood goes directly to the offal truck. Both tank and vacuum lines are "clean-inplace," having a built-in pipe system to flush them out with water. The entire system operates automatically.
This system constitutes a continuous rendering operation; consequently, clean-up labor is reduced. Other obvious advantages are a cleaner, more wholesome work area within the processing plant and savings in water requirements.

Designating May 20-25 as "Mailbox Week" is a great idea in my opinion. However, the neighbors on our street who take pride in their mailboxes are hindered by the fact that after 3 p.m. when the students at the elementary school let out a group of boys come down and bend the flags or turn 'around the boxes or bend the doors of the boxes down.
This runs into money trying to replace the boxes every time something is broken off and so it is with shame that you see so many run down looking mail boxes. Some of these folks work and others of us have not been able to identify by name or looks the boys who are doing this. I understand that it is a federal offense to tamper with mail boxes and I don't think these kids realize it.
Just thought I'd let you know that in spite of all we do to keep our mail boxes looking nice and in order what we are up against not only us, but many others.

2 broiler-fryer chickens, cut in serving pieces
1 cup self-rising flour 1-2 tsp. salt 1 tsp. pepper 1 1/2 tsp. paprika 1 1/2 tsp. cinnamon 1 1/2 tsp. ginger 1 1/2 tsp. Ac'cent
1 1/2 tsp. nutmeg ' 1 6-oz. can crushed
pineapple, undrained
1 egg 2 cups shredded
coconut 1/2 cup Mazola Oil 8-02. can pineapple
slices, cut in 1/4
Line two 13x9 baking pans with foil; brush with Mazola oil; wash and drain chicken, sprinkle generously with salt. In mixing bowl, combine flour, salt, pepper, paprika, cinnamon, ginger, Ac'cent, .nutmeg, crushed pineapple and egg; beat until well blended. Dip chicken pieces in batter. Place in pan. Sprinkle with coconut; drizzle with Mazola oil. Bake at 350 degrees for 40 minutes. Remove from oven; top with pineapple quarters. Bake 40 minutes longer. If chicken browns too rapidly, cover with foil. Makes 8 servings.

canned mushrooms 1 11-oz. can Cheddar
Cheese soup 1 no. 303 can
peeled tomatoes
1/4 cup Mazola Corn Oil
1/4 tsp. basil (flakes) 1 tsp. Ac'cent 6-8 chicken breasts Parsley 1/4 cup flour
Pour tomatoes in large bowl and mash with fork. Dice onion and bell pepper in large pieces. Add to tomatoes. Add mushrooms, Ac'cent, basil and soup. Stir. Dust chicken with flour and brown in Mazola using a large skillet. Pour off excess oil and add tomato-cheese mixture. Cover and simmer 45 minutes stirring twice. Place chicken on platter and garnish with parsley. Serves 4 to 6.

Acclaimed as one of the world's oldest herbs, records show that chives were used by the people of Asia and northern Europe centuries before Christ.
Technically, chives are members of the lily family with round, hollow leaves growing in grass-like clumps. Clover-like flowers of rose and purple are produced in profusion and make attractive border plants, as well as container houseplants during the winter.
Chives require full sun and a moist, fairly rich soil. They can reach a height of 2 feet but seldom do since they are clipped often for use in cooking. Leaves should be cut regularly whether you intend to use them or not but do not cut the same plant more than four times a season.
You can use chives the same way you would onions. They add a delicate onion flavor to any dish
and are considered a gourmet addition to any recipe. Chopped chives are especially delicious in salads, cheese and egg dishes, gravies and soups.

Can you tell me how to get rid of tall reeds? They were planted for a hedge and are now twenty feet tall and shooting up across my lawn.

Our Plant and Entomology Division states that the most ef fective control for reeds and bam boo is to cut down all unwanted growth of this type in the early fall and spray the new growth in the spring with either Dalapon or Dowpon. However, let us caution you that both of these herbicides will destroy grasses and other plants with which they come in contact.
Can you publish some information on the cultivation of the money plant?

The money plant, (also called Satin Flower, Moonwort or Honesty), is a herbaceous annual or biannual, (Lunaira annua Linn). The leaves are large, simple, broad, and more or less cordate. The large, showy, purple flowers form a terminal raceme or panicle. The fruit is a large, flat, disk-shaped silicic, with deciduous valves and a thin persistent septum. There are 2 - 4 winged seeds in each compart ment. They may be grown from spring sown seeds. In many cases they will come up in following years without the assistance of man.

Weight Watcher's has a dessert called Weight Watcher's Ice Cream that we have been unable to get in the Atlanta area. I have found this in small places in Georgia. Can you tell me the reason that we have all the other Weight Watcher's products here except their ice cream?

Our Dairy section replies that the Georgia Department of Agriculture maintains standards pertaining to the manufacture of ice cream, ice milk and artificially sweetened frozen desserts. The Weight Watcher's Frozen Dessert does not meet these standards, therefore.we cannot permit the sale of the product in Georgia. We have advised Weight Watcher's In ternational, Inc., on the correct procedure to follow in order to adapt to these standards, but they have not as yet instituted any ac tion.

Blood is collected in catch basins, then transferred by pneumatic tubes to the collection tank. The tank, equipped with a quick-opening valve operated by an air cylinder, discharges collected blood directly to the offal truck. In large capacity plants, the biood would be discharged to an adjacent building for processing into blood meal.
