Cattle Industry
On The Increase
In less than a generation, Georgia's cattle industry has grown from insignificance to the third largest source of farm cash income, with a $172 Million dollar annual value. Georgia's beef cow numbers of 935,000 head stands ei-
ghteenth in the nation. Georgia, along with other southern states, has the greatest potential for increased beef production to fulfill the needs of the nation's expanding population. Cattle raising in Georgia has depended on and been accompanied by establishment of improved pastures. This pasture development has added tremendously to the aesthetic value of our countryside.

Perhaps the younger generation cannot fully visualize the changes in our landscape that have taken place in our lifetime, a change from gullied, eroding fields and hillsides associated with the predominantly cotton-corn soil depleting system of years gone by, to a mantel of green, protecting and soil improving grass that furnishes sustenance to our cattle and meat to our people.

Beware: The Lethal Mower
The coming of spring means hauling the power mower out of storage and getting it ready for this year's crop of grass. It also means the
beginning of another season when hundreds of Georgians will suffer serious injuries from potentially lethal grass cutting machines.

Timber Expo To Be In Tillon
Timber experts, equipment displays and harvesting demonstrations will draw Southeastern foresters, loggers and forest owners to the Timber Harvesting Exposition in Tifton, April 25-26.
The expo will begin at the Rural Development Center (RDC) at 2 p.m. April 25.
Dairy Show Coming To Athens
Dairy breeders across the state will have a chance to show off their best animals April 26-27 at the University of Georgia Livestock Pavilion, in Athens.
The eleventh annual Spring Dairy Show starts Friday, April 26. The event, which gets under way at 9 a.m., is for registered females of the Guernsey, Brown Swiss, Holstein and Jersey breeds.

4. Mow back and forth rather than up and down on slopes. Be sure of your* footing. Avoid pulling the mower back toward your feet.
5. Store fuel in a plainly-marked, spill-proof safety can.
6. Allow the engine to cool before adding fuel. Never add fuel with the engine operating.
7. Electric mowers should never be operated on wet ground.
ABAC Announces
New Vet Program
Abraham Baldwin Agricultural College, a two year junior college in Tifton has announced a new Animal Technician Program.
The Animal Technician Program provides training for young men and women who desire to become veterinary assistants. Upon the completion of the prescribed two-year course of study, the student will be awarded the Associate in Animal Health Degree and will be eligible for registration as an animal technician.
The joint program of ABAC and the College of Veterinary Science at the University of Georgia will require students to study five quarters at ABAC in Tifton and one quarter of practical experience at the University of Ge6rgia College of Veterinary Science.

Peach Crop
May Be Worst
In 17 Years
Georgia's 1974 peach crop appears to be in the worst shape growers have faced for the past 17 years, according to reports received by Commissioner Tommy Irvin.
Commissioner Irvin said his staff has been checking the peach situation throughout the state, primarily in the Fort Valley, Griffin, Woodbury and Barney areas, and the story is the same - 60 to 75 percent of the trees still have not put out foliage or peaches.
Generally at this time of year, peaches should be on the trees and have reached the size of a quarter to half dollar. While many Georgians were applauding the unusually warm winter, peach growers were worrying since most of Georgia's peach varieties require 800 or more chilling hours.
"It certainly seems at this point that their worries were more than justified," Irvin said. "Growers and

On The Decline
The average life expectancy of peach trees has diminished from 12 to 8 years during the past 100 years.
Horticulturists warn that peach tree short life has reached the crisis point in certain peach producing areas in Georgia, South Carolina, North Carolina, and Alabama. In Georgia, only 23 percent of peach trees in commercial orchards in 1973 were 10 years or older; 25 percent were 5 to 9 years old, and 52 percent were under 4 years old. Many trees only 2 to 3 years of age were dying.

Swine producers in the United States lose approximately 25% of their pigs within 48 hours after birth. A great portion of this death loss is the result of chilling, which in addition to causing death of the individual pig, indirectly, also results in a weakened sluggish pig subject to crushing. The newborn pig is extremely susceptible to cold stress. At birth the pig is suddenly ejected from

birth is only one percent fat content. In the wild pig it is four to five percent. This gives the wild piglet two advantages: He has a nice warm coat of fur and a fuel supply four times
greater than the domestic pig. The wild pig is also born with hair ap-
proximately one inch long.
Experiments are being done at the College of Veterinary Medicine, University of Georgia, under the direction of Dr. Charles W. Foley, Professor of Physiology, crossbreeding European wild swine
with domestic swine.
One experiment being conducted simultaneously with the wild pig research has already established
some benefits by feeding fat to sows prior to farrowing. The feeding of corn oil to sows for five days before farrowinp resulted in a higher percentage of pigs surviving at three weeks of age than piglets from dams which were not given the corn oil. Sows fed the corn oil had pigs with more total fat in their carcass at birth.

I just wanted to drop you a line to let you know how very much we enjoy our FARMERS AND CONSUMERS MARKET BULLETIN every week. We only started getting it about a year ago as we moved to McRae, Georgia from Lllburn onto 7 acres which we plan to farm. We certainly love the country living, raising our own chickens, ducks, and guineas and our own vegetables, and our neighbors keep us supplied with fresh milk and butter.
I think more and more young people are going back to country living. My husband and myself are very interested in the old-time ways of doing things. In the days of rising costs it is important that we save whenever we can. We younger folks sure could use the knowledge of the older generations to teach us how to do more things for ourselves and our families.
Older folks might think young folks aren't Interested in their ideas and old recipes but we or some of us are. Those of us who are interested in such things find it hard to learn how because even many older persons do not know how to do them. I have talked to many older folks in the nursing homes, hospitals and other places and they don't know how to make soap although they saw their mother do it. I urge your readers who have any ideas and recipes for soapmaking and other arts of baking, cooking, etc. to share them freely with readers of the BULLETIN and those around them. Some of the wisest persons around are those who didn't get much "book-learnin"' but learned through experience.

FISH SOUP WITH POTATOES

chopped carrots 1 tomato, peeled

1/3 cup heavy cream 1 cup finely
chopped onions 2 Tbsps. flour 7 cups water 1/2 tsp. saffron 1/2 tsp. thyme 1 Ib. fish
fillets, cut into half-inch cubes
Melt butter in a kettle or deep saucepan and add onions and celery. Cook five minutes. Sprinkle with flour and stir to coat the vegetable pieces. Add carrots and water stirring. Add tomato, salt and pepper to taste, saffron and thyme. Cook 20 minutes and add the cubed potatoes. Cook 20 minutes and add cubed fish. Simmer 10 minutes and stir in cream. Bring to a boil and serve. Makes 6 to 8 servings.

2 cups sifted all-purpose flour
2 tsps. baking powder 3/4 tsp. soda 1 tsp. salt 1/3 cup firmly
packed brown sugar
11/2 cups quick or old fashioned oats, uncooked
1 cup buttermilk 1/2 cup vegetable oil 2 eggs, beaten 1/2 cup chopped nuts
Sift together flour, baking powder, soda, salt and brown sugar into bowl. Stir in oats. Add remaining ingredients; stir only until dry ingredients are moistened. Pour batter into greased 9x5-inch loaf pan. Bake in preheated moderate oven (350 degrees) for 50 to 55 minutes. Cool on rack about 10 minutes. Remove from pan; cool thoroughly.

Basil supposedly will bring good fortune to those who build their home where it grows and only misfortune will follow one who uproots the herb. This herb is quite ancient and has a rich history in India, Italy and other Mediterranean and Eastern countries.
Basil is a member of the mint family and is hardy to most climates. The aromatic leaves are used to season eggs, cheese, fish, poultry and especially tomato dishes.
Basil even has some medicinal properties attributed to it. 16th and 17th century herbalists claimed that the herb would draw out the poison of snakes and insects.
There are several varieties of basil which are popular to grow. Sweet basil is most commonly grown to season foods. This annual is about 2 feet high with shiny green leaves and small white flowers. For ornamental gardens, bush basil is a favorite herb. Reaching a height of only 6 inches, it can be grown in either the green or purple leafed variety and has characteristic curled leaves.
Basil leaves are most fragrant just before the flowers bloom so they should be harvested at that time.

Peach Crop

With the added expense peach producers have had to face in pesticides, fertilization, labor and energy shortages, the outlook is gloomy. Growers must continue their fertilization, pruning and insecticide program whether they have a crop this year or not, and that is expensive.
The earlier varieties of peaches, primarily the fresh eating varieties require less chilling hours and are in a little better shape. But the canning or later varieties are in very bad condition.
For instance, the Fort Valley area, Georgia's largest peach producing area, shipped about 1200 cars of peaches in 1973 (less than usual) and it looks as if only about 400 cars will be filled this year.
According to Commissioner Irvin, some growers and horticulturists are still hopeful that leaves and peaches will begin to develop within the next two weeks, but this is a very remote possibility.

Desirable characteristics will be identified and combined in a breeding program to produce a superior rootstock. The final selection and actual breeding is expected to be accomplished in a later study.

What place does the Georgia Cattlemen's Association have in all this? The Georgia Cattlemen's Association was organized in 1961 to advance the interests of Georgia and of Georgia cattlemen, by encouraging improved breeding, feeding, management, and marketing practices and by promoting the use of beef and beef products.
Membership has increased rapidly the last few years and a goal of 5000 by this year's end will be met. The merger of the Georgia Livestock Association into the Georgia Cattlemen's Association in January will give the cattle industry a single strong voice in matters affecting them. County livestock associations are urged to affiliate with the Georgia Cattlemen's Association to help attain the full potential of Georgia's cattle industry.
Georgia climate makes possible variation in cattle production. Two great potentials are putting moreweight on calves before selling, and feeding cattle to market finish. The programs are practiced by some cattlemen already, but need to be adopted by many more producers. At present, most Georgia produced calves are shipped to western feed lots for finishing and then the meat is shipped back to Georgia. Beef finishing in Georgia would be encouraged if a recent proposal on a change in beef grading is adopted.
A preferred consumer grade, to consist of the present lower "Choice" and the top "Good" grades, would require less feed to produce and result in less fat beef. This quality of meat can readily be produced in Georgia with only moderate grain feeding along with quality grazing or silage. Both the producer and consumer would benefit and our slaughter-meat packing industry would be greatly enhanced.
The Georgia Cattlemen's Association sponsors progressive state legislation of benefit to members statewide. By affiliation with the American National Cattlemen's Association our members have a voice in and benefit from strong legislative efforts in Congress. Contributions to the National Livestock and Meat Board help in beef promotion programs.
On the local level, some 40 county or area associations have regular meeting programs of value and interest to their members.
