Man Who Wanted
Two Christmases
Christmas has not always been storybook and starshine in Georgia. But even the tragic ones have brought out the love and loyalty of family and friends, which is what Christmas is all about anyhow.
It was December in 1778, just at the Christmas season, when the British took Savannah, during the Revolution. It was just before Christmas in 1865 when there was a trail of smoking chimneys and rui-
ned crops in the wake of Sherman. But possibly the saddest Christmas
was in 1 889 when the best beloved

Georgian died "loving a nation into peace."
He was Henry Grady, editor of the Atlanta Constitution. He always loved Christmas and insisted that his family have two one in July! He would buy gifts, wrap them right in the middle of the summer, and take them to his dear Julia and their two children, when he finished getting out his paper and went home. Then in December, they all had another one.
At the real Christmas, he and a member of his staff, Joel Chandler Harris, of the Uncle Remus stories, made the rounds of the stores collecting things for those who couldn't buy them for themselves. One was a proud old man, bereft of his riches and his position. He had liked gourmet food. Grady and Harris collected delicacies for him and tactfully made his Christmas happier.
Grady promoted Expositions after the Civil War, to show the world how the South could come back from its hurts and despairs. He lured thousands here to see. He went to the North, too, to make speeches of peace and brotherhood.
He caught cold on one trip in December, 1889, after speaking to an important group of wealthy men who could invest in the South. General Sherman was in his

Georgians Plan Ole Fashioned Christmas
The Best Tree
What is the best Christmas tree for you and your family, your church, your school? Horticulturists and gardeners will emphatically recommend a fresh tree. Some will go further and insist the best tree is a living tree. This recommendation certainly has merit in these times of so much plastics, foils, and other synthetics in Christmas.
A living tree properly handled not only brings joy and beauty at Christmas but also for many years to come. School grounds in many areas have become tree shaded as a result of living Christmas trees utilized by the children and then planted out as school closes for the holidays. The key to their success is planting prior to the closing of the schools for the holiday period.
Homeowners can have a beautiful
Energy and Ecology, on everyone's mind these days, may produce one good thing a change in Christmas decorating and celebrating. Perhaps, a return to some of the "good old fashioned customs". For many, the old will be new, a change, and fun.
Somehow Christmas customs of days gone by, when time, love and imagination were more a part of decorating than plastic and flashing lights, seem more appealing. The time honored may be better than that invented by the department store over the week-end.
STATE CAPITOL
This year the tree in the State Capitol rotunda will be decorated in the same custom as the first one to be placed in the 80 year old building in 1890. The previous year the capitol was not decorated as the state was in mourning over the deaths of Confederate President Jefferson Davis and Henry Grady. (See guest column.)
Many of the decorations will be made by school children from all over Georgia. Children were asked to begin making and contributing these decorations in early November and so far, the response has been excellent. All of these ornaments are replicas of those used during I 890.

Nomination meetings will be held to give producers an opportunity to make nominations to fill expired terms on cotton, peanut and tobacco commodity commissions.
Peanut meeting will be held on December 12, 2 PM, Georgia Farm Bureau Office, Dawson; 7 PM, Farm Bureau Office, Cordele. On December 13, a meeting will be held in Moultrie, 2 PM, at the Georgia Farm Bureau Office; and at 7:30 PM, Farm Bureau Office, Douglas.
Cotton nomination meetings will be held December 10, 2 PM, in the Gold Room of the Civic Center, Cartersville; at 7 PM, Farm Bureau Office in Elberton. On December 12, a meeting will be held at 7:30 PM, at the Farm Bureau Office in Cordele.
Tobacco meetings will be held on December 13, at 2:30 PM, Farm Bureau Office, Moultrie; also, at 7 PM, Farm Bureau Office, Douglas.

Here's a partial list - Deodar Cedar; White, Slash, Loblolly, Scotch, and Black Pine; various forms of American Holly; Magnolia and even deciduous trees such as Crabapple, Dogwood, Maples. Of course the deciduous trees may not have the typical pyramidal form.
Dobbins Honored
Dr. Charles N. Dobbins, Jr., head of the University of Georgia Cooperative Extension Service veterinary science department, was chosen Veterinarian of the Year by the National Cooperative Extension Service at the recent annual meeting in Philadelphia. Dr. Dobbins was honored "for exemplary service to the public and the veterinary profession."

ROASTED WILD TURKEY

1/4 cup butter or margarine
Sprinkle turkey inside and out with salt and pepper. Combine bread, celery, walnuts and seasonings. Cook onion in butter or margarine until tender, but not brown; pour over bread mixture. Add the water and toss lightly. Spoon stuffing lightly into body cavity. Put remaining dressing in a greased casserole. Cover and bake in oven with turkey during last 30 minutes of roasting time. Truss bird. Cover breast with bacon slices and cheesecloth soaked in melted bacon fat. Place turkey, breast up, on rack on roasting pan. Roast at 325 degrees for 20 to 25 minutes per pound or until tender, basting frequently with bacon fat and drippings in pan. Remove cheesecloth, skewers and string. Serves 8 to 10.
ROAST DUCK
Prepare duck as any fowl; rub with salt and pepper. Take two tablespoons of ground ginger and rub inside and out. Place on inside one small onion which has been cut across the top; into this stick four cloves. Melt 1/2 cup of butter, add 1 cup hot water, pour over duck and roast, basting often. When nearly done sprinkle with flour and baste often with the gravy. If more water is needed, add. Never have a great quantity at one time. Roast in 325 to 350 degree oven for 2 1/2 to 3 hours for a 4 to 5 pound duckling.
CRUMB-TOPPED COUNTRY-CURED HAM

1/2 cup light molasses

Soak ham overnight in a large quantity of water. Scrub the
ham with a brush and rinse well to remove the pepper
coating. Place ham in a part large enough to hold it and
cover with cold water. Heat water to simmering, but do not
boil. Simmer ham, turning every 2 hours for 6 hours, or until a
meat thermometer inserted into the thickest part of the ham
reaches 160 degrees. Remove ham from water; cool.
Refrigerate until ready to prepare. Place ham in a shallow
roasting pan; remove rind; trim fat; score remaining fat.
Brush with part of the molasses. Bake at 350 degrees for 30
minutes. Brush ham with remaining molasses and pat bread
crumbs onto ham. Bake 30 minutes longer, or until crumbs
are golden. Cut ham into thin slices, holding the carving
knife almost parallel to the bone, starting at the shank end.
COUNTRY FRIED QUAIL

Cut quail in half; salt and -pepper. Make batter of milk and
eggs. Dip quail in batter, then in flour. Fry in hot oil until
golden brown. Serve hot. Yield: 8 servings.
MINCEMEAT
PLUM PUDDING

Cut citron and almonds. Mix spices, baking powder and soda
with flour and dredge fruit. Cream butter and sugar, add
eggs, molasses and other liquid. Mix in fruit thoroughly. Fill
well greased 1 pound coffee cans half full and steam for 3
hours. Place cans on rack or trivet while boiling. Keep the
water 3/4 the depth of the cans while cooking. *lf suet is
used, add 1 teaspoon salt.
YULETIDE LOAF
1 pkg. active dry yeast
4 to 4 1/2 cups sifted
1 1/2 cups milk
all-purpose flour
1/3 cup shortening
1/4 cup sugar
2 tsps. salt 1 cup rolled oats
1 egg 1 cup candied mixed fruits
1/2 cup chopped pecans
In large mixing bowl, combine yeast and 2 1/4 cups flour.
Heat milk, shortening, sugar and salt just till warm, stirring
occasionally to melt shortening. Add to dry mixture in mixing
bowl; add egg. Beat at low speed with electric mixer for 1/2
minute, scraping sides of bowl constantly. Beat 3 minutes at
high speed. By hand, stir in rolled oats, fruits and nuts. Add
enough remaining flour to make a soft dough. Turn out on
lightly floured surface and knead till satiny, about 10
minutes. Place dough in greased bowl, turning once to
grease surface. Cover and let rise in warm place till doubled,
about 1 3/4 hours. Punch down; cover and let rest 10
minutes. Shape dough into 2 round loaves; place on greased
baking sheets. Cover and let rise till dough is doubled, about
1 hour. Bake in 375 degree oven 30 minutes. Cool. Frost with
Confectioners' Icing. Trim with red and green cherries and
nuts.
GINGERBREAD MEN
2 3/4 cups sifted
1/4 cup brown sugar,
all-purpose flour
firmly packed
1/2 tsp. soda
3/4 cup light molasses
1 tsp. ginger
1 egg, beaten
1/2 tsp. cinnamon
1/2 tsp. grated lemon rind
1/2 tsp. salt
1 tsp. hot water
1/2 cup shortening
1 tsp. vinegar
Sift the flour with the soda, spices and salt. Cream the shor-
tening and add sugar in two or three portions, creaming after
each addition. Add molasses and egg and beat until smooth.
Fold in the sifted dry ingredients gradually, then add lemon
rind, water and vinegar and blend thoroughly. Cover dough
and chill. Roll out small portions^of the chilled dough at a
time on lightly floured board to 1/4 inch thickness. Using a
cookie cutter or a cardboard pattern cut Christmas shapes.
Place carefully on a greased cookie sheet and bake at 350
degrees for about 20 minutes. Cool. Decorate with con-
fectioners sugar icing, raisins, candies, nuts, etc. Makes 12
gingerbread men. For Christmas tree decorations make a
hole in the top of the cookie before baking.

minutes in boiling-water bath. Yields about 6 quarts.
CRANBERRY MOLD
1 pkg. (3 oz.) cherry
1 cup boiling water

Dissolve gelatin in boiling water. Add pineapple juice and
cranberries. Chill until slightly thickened. Stir in remaining
ingredients. Pour into 4-cup mold or individual molds. Chill
until firm. Makes 3 1/3 cups.
AMBROSIA
6 large oranges
1 cup pecans, chopped
1 large coconut
Sugar
Remove the brown skin and put the coconut through the
food chopper or grate. Remove the orange sections from the
skin, being careful to remove all the skin. Mix orange,
coconut, nuts and enough sugar to suit your taste. Put in a
cool place for one hour, and serve.
GRANDMA CHARLSIE'S OLDTIME FRUITCAKE
Batter:
1/2 Ib. butter or a

1 Tbsp. lemon flavoring
Mix in a large pan enough flour to make a stiff batter. Mix
well and pour over fruit mixture. Mix together well. Bake in
any size pan. Will make 2 good size cakes.

2 quarts English walnuts

and pecans mixed
1 pint preserves
1 box or can of coconut
1 pkg. mince meat
1 can marmalade
1 cup light corn syrup
Juice of 2 oranges
Candied cherries if desired
Mix the fruit ingredients and combine with the batter. Mix
well. Bake at about 250 degrees for 2 1/2 hours or until done.

An Ole Fashioned C
Gift Apron
Cut 6 1/2" diameter circle from cardboard. Cut 1 1/2" diameter circle in middle of cardboard and join edges to form cone. Staple. Cut burlap or other fabric according to cardboard instructions and glue to cone for skirt.
Cut 2 1/2" square from cloth for apron and small triangle for kerchief. With a few running stitches, gather apron and stitch to skirt.
Insert inverted pine cone in skirt hole leaving 1" exposed for top of doll and glue. Glue kerchief triangle to nut. Glue head to top of cone. If desired draw face on doll.
For arms, curve pipe cleaner in semicircle and brush middle of curve with glue. Slip pipe cleaner under pine cone scales just above skirt and shape ends to hold sprig of holly, a small pine branch or dried flowers.
Pine Cone Flower Wreath
1. Fabric Choose any material that is sturdy and washable.
2. Decoration Choose any number of designs that you like. This may include contrasting fabrics, rick rack, lace, yarn, fringe, buttons, bows, etc.
3. Material for ties Use twill, ribbon or fabric. 4. Thread
Cut a pattern out of newspaper just like the one that is illustrated or in other simple styles of your own choice. With right sides together pin ties in place then sew apron around all edges leaving an opening at the bottom. Turn the apron right side out, press, and finish with hand stitching at the opening.
Decorations can be applied to the front side of the apron prior to sewing it together. Put applique such as this flower in bright contrasting colors to make a beautiful apron. If you enjoy embroidery try your hand at embroidering a design on an apron. Sew on other decoration such as a little girl made from cloth cutouts, yarn for hair, buttons for eyes, etc. For a very practical apron just sew on a big pocket or two.
Com Husk Doll
Pine cone flowers are "slices" of pine cones, painted and varnished and wired for use on wreath. They can also be used on the Christmas tree or in other holiday decorations.
Cut pine cones into slices, each three rows of scales deep, using wire cutter, pruning shears or small saw. Paint slices different colors and when dry, varnish. After flower has dried thoroughly, wire each flower and attach to wreath of evergreens.
Pineapple And Fruit Centerpiece
Select one perfect pineapple and surround with lemons, oranges and apples. Secure to stvrofoam base with toothpicks and stick sprigs of boxwood, holly pine bows etc. between fruit.

DIRECTIONS: 1. Soak the shucks in warm water for about 5
minutes so they will be pliable. 2. Roll a small piece of husk into a ball for the
head and another for the upper part of the body. Pin the two balls together, then place a flat piece of husk over them from front to back. Tie a string between the two balls to form neck; tie at waist. 3. For a female doll, make a skirt of several husks and tie to the body at the waist. Trim the skirt evenly at the hemline. Make arms of narrow strands of husks, tying at the end to indicate wrist. Glue arms to the body in back. Cut a pinafore and slip over the head, and tie at the waist; or drape a wide shawl around the shoulders and tie down at waist. Paint on a face; braid hair of corn silk and glue in place. 4. For a male doll cut overalls of husk and slip over the arms. Fashion a wide-brimmed hat of husks. Add a spade, with a handle of twisted husk and a flat piece of husk for spade. 5. Corn-husk angels may be made by following these directions and using wings instead of arms. Choose light-colored husks. For a halo, twist a length of husk; glue it to the back of body and head, and end it in a circle above the head.

Cut 2 pieces according to pattern for each pillow. Fold corners of top piece as indicated on pattern. Sew top and bottom pieces together, wrong sides together, leaving small opening for stuffing. Stuff and machine-stitch close opening. Stitch 43 pillows in same manner.

This recipe is inedible. It will make several wreaths and cannot be halved or doubled.
4 cups flour 1 cup salt 1/4 cup instant coffee 1 1/2 cup warm water
Combine flour and salt. Dissolve 1/4 cup instant coffee in 1 1/2 cups warm water. Make a well in flour/salt mixture and pour in 1 cup coffee/water. Mix thoroughly, adding more coffee/water if necessary. Dough should be smooth and satiny, neither crumbly or sticky. Form into balls and place in plastic bags to prevent drying out as you make fruit and nut shapes.
Working on aluminum foil, form a 1/4" thick 6" diameter ring with a 3 1/4" diameter centered hole for base of wreath. Make leaves, cutting out shapes with knife, about 1/4" thick. Shape larger fruits first and fill in with smaller fruits and nut shapes. Attach dough pieces to ring by brushing with water and pressing into place. Texture leaves and fruit with sharp point of pencil or knife.
Bake wreath on foil for one hour at 300 or until hard. When cool, peel away foil and apply two coats of shellac, front and back to preserve.
Christmas Boxes
Materials needed: 1. Old boxes of any size or shape. 2. Fabrics 3. Glue or tacks.
Old boxes can be dressed up to make lovely gifts. Fabrics are cut to fit the size of the box by taking the measurements of the box (top, bottom, sides) and adding an inch on the edges to allow you to fold the fabric to make smooth straight edges, (see Step 1 and Step 2). Secure the fabric to the box with glue or tacks. Decorate them as jewelry boxes, letter or stationary boxes, sewing boxes, and the list could go on and on. Just use your imagination. Glue stars and stripes material on a box to give some one who collects coins or stamps. Use an old hat box to make a sewing box with a pin cushion top by glueing a foam rubber pad to the top then covering the box with fabric. Line the inside of boxes such as jewelry boxes with velvet or satin.

Humor 'Round The B*rn
Some years ago a friend of ours, I'll call Uncle John to protect his identity, lived in a nice home down near a creek and a large track of woods. It was good living except something started getting one of his chickens every night.
One night about 2:00 A.M. he heard the familiar cackling from the hen house and knew something was after them. It was very cold with everything covered with a white frost, but he did not hesitate because he wanted to kill the var mint. He lit the lantern, grabbed his double barreled shot gun, cocked both barrels and sneaked out the back door toward the hen house. He was clad only in his regular sleeping "night shirt" which reached about halfway from waist to knees. He wore nothing else over or under the shirt.
As he hunched over trying to see beyond the lantern glow and silently crept toward the hen house, his faithful pointer bird dog silently left his bed and followed closely behind him unknown to his master. He was quietly, "backing" the gunner as a good bird dog will do. As Uncle John, freezing from the cold, leaned forward in the hen house door trying to peer beyond the glaring lantern, his bird dog eased quietly up behind him and held his point.
After a minute of this silence Uncle John was leaning farther and farther forward and hunched lower and lower under the highly held lantern. The dog decided it was a false stalk and no game was to be had. He then, out of boredom, did what comes naturally to all dogs. He rammed his cold nose right up against the bare bottom above him. Uncle John leaped high into the air with a wild shriek, and both barrels of his gun went off killing several of his fine laying hens.

Christmas cactus is a common housep'lant which bears scarlet or white blooms around Christmas. Although it is a member of the cactus family, it should not be treated as such. It does not like direct sun as other cactus prefer, nor can it survive for weeks without water. It is not a dry-soul plant and should be treated as you would a coleus with a more porous soil.
The plant has leafless, flat jointed stems, branching considerably.
The trick to make a Christmas cactus bloom is to give it two dry periods per year. The dry period in the fall is the one that insures blooms by Christmas. Start withholding water in the fall for about a month; a little bit each week will be sufficient. Start giving the plant a little more water after the first month and keep the cactus cool at night, about 60 to 65 degrees. After blooms have formed you can start giving it more regular watering.
After the plant has bloomed and before new growth starts, let the plant go through another dry-up dormant period. Water sparingly while growth is dormant.
To propagate your cactus, cut shoots back from tips at second joint and stick cuttings in a moist porous mixture. Water sparingly at first or the succulent will rot. After two to three weeks, water as you would any other cutting.

Outdoor Tree For The Birds
Many people, prompted by kindness, love of nature, and an interest in con-
servation, provide feeding stations and a planting of natural foods for birds
throughout the year. Many extend this idea by providing a special treat for the
birds at Christmas time with a tree or shrub "decorated" especially for the
birds.

Some of the ornaments with which
the 19th century tree was laden in-
clude: wooden cutouts with pictures
pasted on, popcorn strings, gilded
pine cones, gilded nuts, gingerbread
cookies, cornucopias made of con-
struction paper and filled with dried
flowers, nuts, candies, candy canes,
cornshuck dolls, brightly colored
small boxes (which were filled with small gifts in 1890), decorated mirrors (compact or purse mirrors with cutouts of old Christmas card angels, Santas, etc., pasted on), rag dolls, yarn dolls, calico bows, colored paper chains, bean bags, pin cushions, bags of marbles (usually old tobacco sacks in 1890), whittled toys and reed whistles. After Christmas, these gifts were taken from the tree and distributed to the children. Some of these are illustrated on our tree sketch.

PLANT CARE If you're keeping house plants on your window sills this winter, be sure the leaves don't touch the window panes. Leaves that come in contact with cold panes are likely to freeze.
Agricultural Calendar-
grown-ups can enjoy bringing this ancient custom into their homes.
Stale bread cut into various shapes with cookie cutters can be hung on the tree with bits of brightly colored string. Popcorn can be strung on 24 inch heavy duty thread or twine and hung vertically in 12 inch loops. These should be wired to the tree.
Marshmallow sticks may be made by stringing six marshmallows on a small wire. Attach one end of the wire to the tree and tie a red bow on the other.
Doughnuts are a favorite of birds. Loop a ribbon through the doughnut and attach to the tree by wire.
String cranberries on wire strong enough to hold its shape when drawn into a circle. Tie the cranberries into a four inch circle, leaving enough wire for hanging.
Apples coated with peanut butter may be hung at various intervals. Also, peanut butter pine cones are a favorite. Twist florist wire around the pine cone and fasten, leaving a length for hanging. Spread peanut butter on crevices of the pine cones and wire to the tree.
Orange baskets may be made by placing three holes equidistant around the edge of half an orange shell. Pipe cleaners can be tied through the holes and the cup hung. Fill
with nut meats and cranberries. Bird feeders may be made using
a four inch aluminum foil pan,
1/2 inch mesh hardware cloth, 8 1/2 inches by 4 inches, (or a soft, flexible wire) and a pipe cleaner. Make a cylinder of the hardware cloth or wire. Place the cylinder in
the foil pan and push the ends of wire through the bottom. Bend wires
to hold the basket in place. Attach the pipe cleaner for handle and fill the basket with one inch squares of suet and place grain in the pan. To brighten the feeder it may be painted red and a ribbon strung through the hardware cloth or wire.
