Thanksgiving
Thanksgiving 1973 a good time to reflect on Thanksgiving 1619, the first Thanksgiving in this country.
Americans today are concerned. Concerned about crime, about
the economy, about the Mideast and the world affairs, and concerned about our energy crisis.
It is a time in our history to consider the first Thanksgiving which was observed in December of 1619 on the James River in Virginia. Thirty nine colonists, all that were left of the hundreds who had come to the New World, gathered to say their thanks for life and to pledge to stay and build the New World they had hoped to find. Four years later, in New England the settlers at Plymouth Rock held a different Thanksgiving. Still beset with many of the hardships that
Elagued their Virginia cousins, they ad overcome many problems, lived out the winter and held a three day celebration of thanks in July of 1623.
They, too, pledged themselves to work together, to overcome hardships and to build a New World . . . America.
Today, most of us have enjoyed the benefits of their labors. Our forefathers were not soft. They were not lazy. They knew how to face a challenge. They accepted the challenge of freedom, of responsibility, of sacrifice.
This Thanksgiving let us reflect on these two earlier times in our history and the people who were there. Let's reflect and then, let's accept their challenge to work together, to overcome hardships and to build a better America.
America has overcome much in her history. America is still great. We have our problems and our challenge for Thanksgiving 1973. We will meet them and we will overcome them.
We can because we are Americans.

Special Christmas Issue

Fuel Allocations Threaten
Georgia Farm Production
Commissioner of Agriculture Tommy Irvin today branded the government's fuel allocation program as a "threat to every farmer in the country unless some sort of priority is established for his protection."
Horse Owners To Discuss EIA
The Cooperative Extension Service and the College of Veterinary Medicine, University of Georgia, will co-sponsor a lecture and panel discussion on Equine Infectious Anemia on Wednesday night, November 28th at 7:30 p.m. in Building No. 10 of the College of Veterinary Medicine. Dr. Paul E. Hoffman, Professor of Equine Medicine and Surgery will be the featured speaker.
Under terms of the middle distillate allocation program, covering diesel fuels, kerosene, jet fuel, heater oil and related fuels, wholesale and consumer purchases will be limited to the amount bought in the corresponding month of 1972.
Irvin pointed out that this virtually eliminates anyone who started farming this year, and works a hardship on anyone who has increased his planted acreage, added motorized equipment, or who for any number of reasons may have need for more fuel next year.

Combating Shortage Of Lime, Fertilizer
1. Soil testing is the key to wise use of the short supply of lime and fertilizer. Soil tests results will pinpoint the farm fields which have the greatest need for lime and fertilizer.
2. Use lime where there is the greatest need. This can be determined by soil testing. Lime fields that have a pH of below 5.5 first.
3. Use a fertilizer that contains a low percent phosphate on soil testing high in phosphorous.
4. Fall and winter application of phosphate and potash for spring planting crops will help ease the fertilizer shortage. Do not use this practice on deep sandy soil.
5. A soil test will determine those farm fields which have the greatest and the least need for lime and fertilizer. It will help you to use the lime and fertilizer that is available to the best advantage.
livestock Expo '73
An expected 2,500 visitors from seven Southeastern states will gather at the Rural Development Center in Tifton, November 28-29 for the Livestock Expo '73 for Swine.
It will be the second swine exposition to be held at the RDC.
The Passing Art Of Making Sorghum
Here in the valleys and hollows of the North Georgia mountains, where the production of quality sorghum syrup has always been as much a matter of pride as the product of a more notorious liquid made of corn, progress and technology are taking a
toll. No longer does the reliable old
mule make his day-long circle in the sun around the gears of an old time cane grinder. Today electricity or tractors furnish the power to run the grinding gears and mash the juice from _the long green stalks.
And no longer are yellow jackets and honey bees drawn to nearly every small farm by the sweet smell
of cane juice stored in vats or barrels or the more subtle scent of cooking juice carried on the clouds of steam
that used to rise from a number of small farm syrup making operations.
Even the method of cooking the sweet cane juice, the boiling out of the water to produce a thick, heavy dark golden liquid, has changed. The
State law requires that syrup labeled SORGHUM must be 100% pure sorghum syrup with no additives or other sweetners.
To help protect this fading industry and insure the continued availability of this old time product the Georgia Department of Agriculture is working closely with sorghum syrup makers to improve their farm cooking operations and insure a quality product produced under the best possible sanitary conditions.

The yellow jackets and honey bees are still here but their search for the nector of the sorghum cane is limited by the decline in syrup mills. The making of sorghum syrup, a family farm operation of the past, has given way to larger, more efficient and more modern operations handled by a few who make syrup for themselves, and for others in return for a percentage of the final product produced.

Cattle rustling has been going on in the Southeastern United States for a long time, and now I note in the BULLETIN that hog rustling has occurred.
Walking over some land my wife and I purchased at considerable financial hardship I noticed a number of large hickory trees, and picked up quite a few hickory nuts under them. Next day at the office I mentioned having the hickory trees and was cautioned not to publicize the fact the explanation was that people will "rustle" hardwood trees that are scarce and have a unique use. Hickory, I was told, is rustled by people who either supply barbeque restaurants or who own them, and trees like the walnut are rustled by gun buffs interested in wood for gun stocks.
I would be interested in hearing from other landowners about this problem (if it is a problem), and what steps they have taken to prevent "tree rustling."
We live some distance from our land so I can hardly keep a constant watch on my hickory trees and really I shouldn't have to if this is really a law abiding country. In the early days of this country's history thieves were shot on sight, especially if they were known to have stolen something of essential value like cows or horses or other livestock. My trees are not essential to my existence, but they do belong to me, and my feeling is that a person who would attempt to steal one of them runs the risk of a "stray" bullet from my Winchester. Perhaps I should put up a sign on my land stating that I can put five out of six bullets in a dollar bill at 120 yards using iron sights.

2 bananas, sliced
Combine first 5 ingredients; toss lightly. Pour into casserole;
smooth top. Cover; refrigerate for 8 to 12 hours. Serve salad
on lettuce; top with bananas. Makes 6 servings.
HOLIDAY CHEESECAKES
2 8-02. packages cream 1 tsp. vanilla
cheese
24 vanilla wafers
3/4 cup sugar
cranberry glaze
2 eggs
1 Tbsp. lemon juice
Beat cream cheese, sugar, eggs, lemon juice and vanilla until
light and fluffy. Line small muffin tins with 24 paper cups;
place a vanilla wafer in bottom of each. Fill cups 2/3 full with
cheese mixture. Bake at 375 degrees for 15 to 20 minutes or
until set. Top each with 1 tablespoon cranberry glaze. Chill.
Makes 2 dozen cakes.
FRESH CRANBERRY GLAZE
2 cups fresh cranberries 2 Tbsps. cornstarch dis-
3/4 cup sugar
solved in 1 Tbsp. cold
1/2 cup water
red food coloring
Dissolve sugar in water. Add cranberries and boil rapidly un-
til berries pop open (about 5 minutes). Stir in cornstarch. Add
few drops of red food coloring. Makes 1 pint cranberry
sauce.

Lichens are organisms that grow on rocks and tree branches. There are no roots, stems or leaves as we would recognize them. Lichens are considered to be green algae surrounded by colorless fungus (a plant without chlorophyll meaning it can not make its own food). Consequently, it is the green algae in the lichen which manufacturers the food.
Lichens grow throughout the entire world. Many are edible. Historians say that the "manna" of the children of Israel mentioned in the Bible was actually lichen growths blown down from the mountains onto the flat plains where the children camped. They were eaten to stave off starvation.
Lichens attach themselves to rocks mixing with the particles of rocks as they degenerate. In dry weather the lichens shrivel up but when they are wet they swell greatly, an action which aids in breaking small pieces of rocks off from larger ones. This action created the first soil billions of years ago, and the process goes on.
"Reindeer Moss" pr "Old Man's Beard" is a common lichen and probably one of the best known. Dried, it almost can equal dried peat moss in its water-absorbing qualities.
Rock tripe lichen resembles a leathery dark lettuce leaf. About three inches across, it is attached at its center to a rocky surface. Rock tripe can be eaten raw but is more palatable if boiled and used to thicken soups and stews.
Rock tripe is apt to be rather gritty because it is actively involved in the breakdown of rocks to make soil. Wash it as well as possible, preferably soaking in water for several hours to eliminate the bitter taste. The flavor will improve if roasted in a pan before a campfire or partially open oven until it is dry and crisp.
Add the gumbo-like thickness to soups by simmering it slowly for an hour or so. It adds little to the taste but does add nourishment to the soup.
Lichens have long been used as an emergency food sustaining explorers, and outdoorsmen. for months with hardly any change of diet.

considered the sorghum syrup capitol of Georgia there are only 10 sorghum syrup mills producing some 10,000 gallons of syrup each fall from an estimated 125 acres of planted sorghum cane. In neighboring Towns County there are only three mills left to process less than 2,000 gallons of syrup from an estimated 25 acres of harvested cane.
But even with the old mule gone and more and more syrup cooking houses enclosed with lumber and screened wire to fence out the questing yellow jacket and honey bee, there is plenty of nostalgia left for the one time rural resident making a homage back to a cane grinding and syrup cooking operation. And for those who were not fortunate enough to grow up in knowledge of this art there is excitement and interest in learning how farm families of old produced their syrup and sweetening for the coming year.
Though more modern and more sanitary than in days past there is still enough of the old time sights and smells to conjure up pleasant memories of crisp cool days, the rainbow reflections of frosted leaves, the sweet smell of cooking syrup and the taste bud tantalizing desire for a cup of cold cane juice.
And after an hour or so of watching the green stalks being pushed through the grinder., the sticky sweet juice flowing into a holding tank and then down to the cook house, the bubbly fold of the cooking juice as it rides over the wooden baffles in the 16 foot long copper cooking pan and the finished product strained off through a sterile cloth before being sealed in glass jars, one pays little heed to the increase in price forced by increases in the cost of production.
To watch the making of good sorghum syrup is to watch artists at work. And a connoisseur of this table delicacy prizes the finished product almost as much for the memories it provokes as for the delicate, savory taste that continues to hold its own in competition with foods and food products that were undreamed of by the farm families of yesterday who used to make their own little batch of family sweetening in the fall of each year.
