An Investment
The importance of agriculture is becoming more and more apparent to the people of Georgia and the nation. Almost daily, Agriculture is front page news, and for good reason: Our livelihoods indeed, our very lives depend upon the success of agriculture. And agricultural research is an investment for the future our future.
This investment has paid off substantially in the past: It has
been estimated that each agricultural research dollar has yielded a return of 50 percent per year. Agricultural scientists have found ways to _._ _ improve the quality of the environment, the nutritional value of foods, and to reduce the costs of producing food and fiber. New equipment, varieties, and innovations have improved the

quality of agriculture in this, the world's outstanding agricultural nation.
We in Georgia are especially fortunate to have leaders who are foresighted enough to make this important investment. Our state legislature has appropriated funds to support a strong agricultural research program; the University System Board of Regents has provided funds to build additional facilities to meet the needs of the future; and our agriculturists themselves, through the state's agricultural commodity commissions, have provided valuable help with support for research projects.
At the University of Georgia College of Agriculture, our program is far reaching, involving research in ag economics, ag engineering, agronomy, animal science, dairy science, entomology, food science, horticulture, plant pathology, and poultry science.
Some of the research of scientists in the School of Home Economics, School of Forest Resources, and College of Veterinary Medicine is related to agriculture and is funded through the Agricultural Experiment Stations.
On August 1, we made an administrative shift in the Agricultural Experiment Stations which will help to coordinate research in specific areas of the state in a unified effort to serve the people of Georgia. Dr. E. Broadus Browne, formerly

Manager Retires
Sam Steele, manager of the Atlanta State Farmers' Market for over 28 years, retired on July 31.
Mr. Steele began his career
with the Department of Agriculture in 1942. He was involved in the planning and moving of the old Farmers' Market in downtown Atlanta to its present site in Forest Park. During his te-
rm as Market Manager, Mr. Steele has received many honors including being named "Market Manager Of The Year" by the National Association of Produce Market Managers.
Mr. Steele has served under three

The gypsy moth, a foreign pest introduced into this country more than 100 years ago, is a threat to the state's trees in its feeding habits or caterpillar stage. Each two-inch caterpillar can eat one square foot of leaves every 24 hours. In heavily infested areas large trees are quickly stripped of their foliage. One defoliation can kill conifers such as pines and repeated defoliations will kill many types of hardwoods.

Your note on cantaloupes is interesting. I had always heard the name came from a town near Rome, Cantalupo, where a sort of muskmelon was grown. As for other places, as far as I know, there are great number of sorts grown in the Near East, most of them quite different from ours. Those in Persia and Afghanistan are virtually all equal to
our best. They differ from ours in not separating from the stem when ripe and some grow to watermelon size.
There are a few sorts with such thick sweet flesh that it is dried! They are always grown under irrigation since it doesn't rain in these places in the summer.
Watermelons are also found in great variety. The afghans have a sort about like the one you send north usually with every superior quality and nearly seedless. A melon would have about a tablespoon of seed. Watermelons are also grown under irrigation, except that in a few places a seed is put into the root of a locoweed and the plant grows
without other water. In India there is found the same diversity of melons but
the quality is poor. Melons are grown here chiefly in the dry season (winter) except that in Kashmir fine-looking examples are grown on mud rafts anchored in the great lake.

CREAMY STUFFED POTATOES
6 White Potatoes
1 tsp. Finely Chopped
13 Oz. Pkg. Cream
Onion
Cheese
2 Eggs
1/2 tsp. Pepper
1/4 Cup Milk
1 tsp. Salt
2 Tbsp. Butter
Bake potatoes in a 425 degrees oven for 50 to 60 minutes.
Slit the top and scoop out center, placing it in large mixing
bowl. Mash with electric beater or potato masher. Add other
ingredients and beat until fluffy. Pile into potato shells and
bake at 400 degrees for about 20 minutes, until brown on top.

4 Slices Bacon,
1/3 Cup Vinegar
Cut Up
1 or 2 Tbsp. Salad
1 1/4 Cup Chopped Onion
Dressing
1 Qt. Cooked Green Beans
Brown bacon in a skillet with onion. Add beans and vinegar.
Simmer, stirring frequently, to blend mixture. Stir in salad
dressing just before serving. Makes about four servings.

I am just a curious individual. I have read so many notices in the Bulletin inquiring about the man that makes old wooden bread trays. The tray really must be some item. Could you give us a little run down in your column as to what it is that makes it so much in demand?

We have had several inquiries about the wooden bread trays in the Bulletin and why they are so popular. Obviously, it is due to their rarity that makes them so expensive in antique shops, plus the return of the popularity of making one's own bread. The shape of the tray is perfect for shaping the loaves, kneading, letting the bread rise, etc. They are also useful and ornamental as fruit bowls, table decorations and conversation pieces.

Indigo
One of the most successful transplants from the Old World was indigo. Indigo's fermented leaves had long made blue textiles highly valuable in Europe. Consequently when it was planted in the colonies and not only survived but flourished, it became one of our leading exports to Europe. In fact, until rice and cotton proved more profitable, indigo was one of Georgia's major crops. We supplied England with almost a million pounds of dye per year with the result that the most common color in colonial America was BLUE.
indigo is a delicate-appearing shrub and member of the Legume or Pea family. The tiny reddishyellow flowers appear on long spikes rising from oval leaflets.
The dye itself is produced when leaf-bearing branches are cut from the plant, soaked in water during the fermentation period and ths paste which settles to the bottom made into cakes to later be ground for dye.

Another important source of blue dye is woad (Isatis tinctoria). The plant is chiefly from the Mediterranean area and little effort was made to cultivate it in America because indigo grew so easily. Woad is often found in biennial gardens because of its attractive yellow flowers.

tightly to keep out air. If stored this way, hard cheeses will keep for several months.
Cooking and Salad Oils -- Keep small quantities at room temperature and use before flavor changes. For long storage, keep oils in the refrigerator. Some oils may cloud and solidify in the refrigerator but are not harmful. These will clear up again when warmed to room temperature.
Dried Eggs -- Keep in refrigerator. After a package is opened, store unused portion in an airtight container with a tight-fitting lid. Dried eggs will keep good flavor for about one year if stored properly.
Butter, fat drippings and margarine Store tightly wrapped or covered in the refrigerator. These products are best used within two weeks.
Dried Fruits Keep in tightly closed containers. Store at room temperatures, except in warm, humid weather; then refrigerate.
Honey and Syrups -- Store at room temperature until opened. After their containers are opened, honey and syrups are better protected from mold in the refrigerator. If crystals form, dissolve them by placing container of honey or syrup in hot water.
Hydrogenated shortenings and lard Most of the firm vegetable shortenings and lard have been stabilized by hydrogenation or antioxidants. These shortenings can be held at room temperature without damage of flavor. Lard that is not stabilized should be refrigerated. Always keep these products tightly refrigerated._______________

rye, farmers should buy seed carefully and as early as possible from a known seed dealer or a personally known source.
If recommended varieties of rye cannot be found use oats, wheat, ryegrass or ryegrass in combination with one of the small grains.
Another possibility is to plant part of the acreage in rye and the remaining with ryegrass and one of the other small grains.
Rye gives early grazing but goes out early in the spring. Oats and ryegrass or wheat and ryegrass or ryegrass alone extends much later into the spring. Anything is better than unknowingly buying a mislabled or non-adapted variety of rye.
Remember, it is no bargain or good deal if you buy mislabeled rye and it does not produce enough to pay for the cost of the land use and seed.
