The ancient, tried and true law of
supply and demand has given con-
sumers chicken and eggs at lower
prices in 1972 than in 1952, cheaper
in 1973 than in 1953, less when the
price freeze was implemented than
when the Bureau of Labor Statistics
first reported poultry prices.

the cycle has continued American
consumers have been assured of an adequate supply of quality poultry products at remarkable price levels - better bargains than anywhere else in the world.
In contrast, when price freezes interrupt the cycle and remove the profit incentive the only result can be shortages, higher prices, or both. Higher prices will come as a result of the production cuts during the price freeze.
It's great for the industry and for consumers over the long term to have poultry moved from the freezer to the refrigerator. However, the multi-unit pipeline that provides a daily supply of chicken, eggs, and
turkey, functions best on the open table of private enterprise, with con-
sumers the ultimate beneficiaries. The record proves it. We appreciate this step which was needed badly. We hope it will be followed with one that will remove all controls from poultry at all levels and allow
it to continue its phenomenal record for consumers without subsidies or controls.
While we take special pride in the
poultry story, we also like to take note of the fact that all food has been a remarkable bargain in this country.
This may be demonstrated in several ways: Consumers spend less of their income for food than any
other nation - 16.5% in the United States compared to 22 to 30% in Western Europe, 40 to 50% in Eastern Europe and 60% in some countries.
Over the past 20 years while food was increasing 46%, housing went
up 63%, machinery and equipment 100%, labor 141%, and taxes 297%.

Short Crop Seen

After One Week
Georgia tobacco markets in their first three days of operation last week sold 21,461,397 pounds of Type 14 flue cured Georgia tobacco. Average price received for Georgia tobacco iwas $85.04 per hundred weight during the three day week.
Total sales were approximately five million pounds less than during the first week of the 1972 season. Last year's first week of sales amounted to 26,493,008 pounds of Georgia tobacco with an average price of $82.73 cwt received.
These comparative figures indicate a short crop of Georgia tobacco this year.
Commissioner of Agriculture Tommy Irvin expressed concern that prices were not higher during the first week's sale. The Commissioner felt that prices should have been higher in view of increased production costs and the short leaf supply due to the weather conditions.
1973 MILK DROP
For all of 1973, milk production is expected to total a little lower than 1972's 120.3 billion pounds, according to the USDA. The decline reflects high feed prices and poor quantity of roughage in several key areas.

The large number of Rocky Mountain spotted fever cases reported already this year can be linked to the wet weather the state has had.
The fever, which killed two people in Clarke County last year,
is transmitted by the American dog tick which likes to reproduce in heavy vegetation. The wet weather has caused a lot of growth and the

(VEE). All three diseases are caused
by different viruses which are tran-
smitted by mosquitos.
Outward signs of all three en-
cephalitis diseases include
depression, lack of appetite and
drowsiness. Animals may frequently
grind their teeth and stagger when
moving. The fatality rate is nearly 70
per cent with damage to the nervous
system usually occurring in horses
that survive.

Long Eared, Stubborn Friend Honored
Event: Beauty contest. Points of beauty to be judged: small dainty feet, big belly, long neck, a nonsagging back, curved ' legs, small waist and shoulders, narrow hips and shining well groomed hair.
Contestants: not Georgia peaches, not chicks, but Georgia's long and faithful friend the mule!
Much of Georgia's history, prosperity and heritage is entwined around this hard working quadruped. The prosperity resulting from the millions in gold mined from the hills of North Georgia could never have been attained without this stubborn creature; and yet for this he has hardly been given a nod of thanks.
Lately, however, a few Georgia towns have begun to pay homage to our four-legged, long-eared friend. And now, in Dahlonega on August 18 a whole date of "Tribute to the Mule" will be held at Gold Hills.
A mule is a stubborn animal, but rightly so. He held a prominent place in Georgia history. In ex-
change for his room and board, this hard-working quadruped performed the power for building roads; he pulled heavy equipment over steep mountains; he supplied power to operate all types of mills (stamp, corn and sugarcane); he plowed the
fields and pulled the family carriage
to church on Sunday. Some families named him after their children.
Mules are bred of a donkey and a horse, this union producing either a horse mule or a mare mule. Two mules cannot reproduce due to an inbalance of genes. A mule has a big belly and a long neck. His ears are long and pointed much like those of the donkey and are very sensitive to touch. H*is feet are small for surefootedness on the rough mountain terrain. He is an ugly beast compared to the horse, but he has much more stamina. He will work as long as it is required by his master.
The highlight of Mule Day will be a mule pulling contest. Most people probably do not know the rules of such a contest. A load, usually 100 pound sand bags on a sled, is harnessed to the mule. The first mule to pull the heaviest load 26 feet in a designated time, usually 20 seconds, wins that part of the contest. This

CATFISH STEW
4 Catfish 2 Tbls. Salt 1 Tsp. Black Pepper 3 Cups Chopped Onion 2 Qts. Milk 1 8 Oz. Can Evaporated
Milk
1 Qt. Water (or more if needed)
32 Oz. Hash Brown Potaoes (frozen or the equivalent of chopped Irish Potatoes
1 Stick Margarine
Bring catfish, water, salt and pepper to boil, and boil about 5
minutes or until the meat will come off bone. Remove catfish
from water to let cool. Strain the liquid from the catfish into
large pot, and add potatoes, onion. Boil until vegetables are
tender. Stir often. Remove meat from bone and add to potato-
onion mixture, add milk and butter and heat slowly until but-
ter is melted and stew is hot. More salt and pepper can be
added if desired.

Response: Recently someone queried the Bulletin regarding the poisonous or beneficial character of one of Georgia's finest wild salad greens, poke salad, and was answered that it was poisonous. I would like to refute this toward its use as one of our oldest "tonic" herbs, which many people would not miss eating in the spring of each year. It is the richest of natural sources of iron and phosphorus. Your article advises "draining off water" after thorough boiling. Do not waste the best of the green in this manner. Cook only the tender green leaves and sprouts, making them come-alive with flavor. Use minimum amount of bacon drippings or other fat. Also delicious is the addition of finely cut greens and tender stalks to eggs, a few bread crumbs, milk, salt and pepper for an omelet. Serve as a breakfast dish with fresh lettuce or tomatoes and toast. One of the nation's best canneries, especially true of beans and salads, sells a sixteen ounce can of "poke Salad Greens". Let's not discredit our own good, and often cheaply secured, salad green. It is delicious and better than a whole bottle of expensive vitamin pills. Instead, let's help Georgia produce it, and perhaps avoid a far less valuable head of lettuce for 50 cents a head these days.

In a time when apathy seems to be the rule of the day, we are delighted to hear from our readers occasionally in reference to the various replies made in "Straight Line". Keeps us on our toes! As a result of the above response, our attention was directed to tho fact that a reply made to a previous inquiry was quite vague. Let us make this statement about the poisonous characteristics of the pokeweed plant for clarification. The portions of the pokeweed plant which are poisonous are the older, wilted leaves, the roots of the plant and the berries, the latter two being the most poisonous. As our reader advises, the young, tender leaves are not considered poisonous and are used quite often for salad greens. Nevertheless, we do stand on our statement that in the preparation of the greens, the first water should be drained. * * *

In the Old World, red dye was primarily made from pulverized bodies of the female cochineal, an insect which feeds on cactus. The colonists were usually unable to secure this dye so they were forced to use substitutes, mostly those used by the Indians and produced from native plants.
The rhizomes or roots of the bloodroot (Sanguinaria canadensis) contain a reddish-orange juice which was widly used by the American Indians. They used it for not only a dye but also as a warpaint. To prepare the dye, cut eight ounces of fresh roots into small pieces, soak an hour, then boil 30 minutes. Strain liquid into bath for dye.
Ladies' Bedstraw
Ladies' bedstraw (Galium vernum) produces a beautiful coral red color. It is also known as "Our ady's Bedstraw" because according to medieval legend the plant was used during the Nativity. As a reward, its white blossoms were turned to gold. The member of the Madder family is frequently found along the roadsides, its thick roots spreading out like the spokes of a wheel. For use as a dying agent, chop finely one pound of roots, soak overnight, boil one hour and strain.
Madder
Madder (Rubia tinctorum) gives the best and most enduring red dye of any plant. The secret of the red dye produced from the Madder plant was a secret of the Middle East and Orient for centuries as it was used in dying the beautiful Oriental rugs. Like Bedstraw, the leaves are roughly prickly on the lower surface. After 3 year's growth, the long fleshy roots are dug, cleaned and dried, then ground. Eight ounces of ground Madder is soaked overnight then boiled and immediately strained through gauze for use as a dye.
