Phase Four Wait And See
When in June President Nixon announced his price freeze program as part of phase 3, I expressed my concern, in this column, that Georgia and American farmers would suffer.
Even though that phase of the President's economic program was
not supposed to freeze prices at the farm level, I knew it would do just that, | and our farmers I were caught in a squeeze they [could not survive In.
Now we have phase 4. This is only a stop-gap measure that will offer some relief to some farmers now. Beyond that, we are going to have to wait and see what the long range effect will be.
I do not believe that the agricultural production increases sought by the President will increase production and reduce food prices any time soon.
Our farmers need long range, permanent incentives to plan and finance production schedules. They can not, overnight, jump into full scale production, get financial backing from the lending institutions, and incur the expense of producing additional food without knowing that they will be allowed to make a fair return for their risks and labors.
Despite the President's statement of hope for a return to free enterprise, there is no real assurance that this phase will not be followed by some other form of government restriction.
Food should be allowed to seek a price level in keeping with the natural laws of supply and demand, reflecting the cost of production and a reasonable profit.
In the face of such uncertainty and instability in the market place and this late in the season, we can not expect an immediate production effort to increase supplies and reduce food prices.
Farmers must be encouraged, and incentives must be assured if we are to expect production increases and lower food next year.

New Market Facilities
A new farmers market for Georgia located at Albany,
was officially opened and dedicated last week to serve produce farmers, dealers, and consumers in the southwest Georgia area. The new market, pictured at the left, was built at a cost of $130,000 on 10 acres of land donated by the Dougherty County Commissioners. The
new market was possible through the full cooperation of the city and Dougherty County officials and legislative leaders. The new market is designed for total consumer convenience. J. H. Young, Leesburg, and Don Kearce, Albany, are shown with Commissioner of
Agriculture, Tommy Irvin at the new market. Pictured at the right is a shed area of the newly remodeled farmers market in Columbus which was officially opened and dedicated last week. Total renovation of the market has taken some 14 or 15 months of work. Some of the additions include a new produce building and two new poultry distribution buildings. The market now offers the full-time facilities of a modern cafeteria also. The Columbus Farmers Market was remodeled at a cost of $875,000.

Response: Last week we were asked how to read the dates on cartons of milk to determine freshness. We replied that the date on the carton was the date the milk is removed from the shelf. This is correct but incomplete. Some brands have code dates that cannot be read. Some have code dates for the date the milk was processed. Even thought the dates are there, milk kept under proper refrigeration will keep one to two weeks after purchase. We suggest that you ask the store manager to help you determine the significance of th* e*co*d*e.
Could you tell me why my magnolia tree has never bloomed? It is fifteen years old, about ten feet tall, and well fertilized. My neighbors on both sides have trees with blooms and they are smaller trees.

Magnolia trees usually take from eight to ten years to bloom and will take longer if they are growing well. An interesting fact about magnolias
is that the poorer growing trees bloom early and the healthier ones bloom
late.

Cannings Problems Can Be Solved
The condition you described of cracked bark was probably due to the 6 weather during the snow storm in Georgia earlier this year. It is not noticeable until hot weather. * * *
Enclosed is a stem which has some sort of creeping vine on it. It is taking over my flower bed. Can you offer advice on what to do to get rid of it. I keep pulling it up, but in a week it is back.

The vine is the love vine, or Dodder. There is no control for this vine
on other plants except "elbow grease". However, to prevent its reoc-
currence we suggest that you use a preemerge such as Dacthal in the
spring before the seeds sprout. It is available from most garden centers
and seed and feed stores.

We Get Letters
Dear Editor:
First of all, I want to tell you how much I enjoy the MARKET BULLETIN and the information it contains. However the one published May 16,1973, contained an item on page eight that I challenge. It said outdoor lighting can damage trees and shrubs and went so far as to say that even a pinprick of improper light could cause damage to outdoor greenery.
We are aware of the photoperiodic responses, of certain plants such as chrysanthemums, petunias, poinsettias and other seasonal plants to light. In fact, we use lighting very extensively in greenhouses to stimulate germination, growth and bloom in various plants. My experience does not indicate any damage to trees or shrubs other than the possible attraction of insects.
I would like very much to have a copy of the report your editor quoted and name of the USDA technician who did the research and released such information.
If the article is not true or the information is taken out of context, then I think you should take steps to inform the public about the limitations of the article.

(Editor's Note: The article you mentioned in the BULLETIN was one of many fillers sent to us from the Agricultural Extension Service. We often save them and use them as space dictates. We were surprised to learn that the Extension Service nor the U.S.D.A. could supply us with the particular technician or report which was quoted in this short filler. Your letter has prompted us, Mr. Gillespie, to make sure that we can ascertain the source of all information, even that that comes from usually reliable sources such as our Extension Service and the U.S.D.A. Since we were unable to find the source of this quote we have called on two of our state's experts in horticulture and received the following opinions:
Mr. Troy Keeble, State Horticulturist, advises that night lighting will prevent some flowering shrubs (hydrangeas for sure) from flowering. Otherwise there is no real harm. Dr. Phelts, Plant Physiologist with the Environmental Protection Agency, said that night lighting would attract bugs. The prolonged day length would encourage growth of succulent young shoots which would be killed easily by cold weather. Lights used in greenhouses to keep plants growing can be controlled. We, therefore, concur, Mr. Gillespie, that when lights are installed correctly by a knowledgeable person they certainly should do very little or no harm.)

DILLED GREEN BEANS Yield: 7 pints
Green beans, whole

Whole mustard seed
5 cups (1 1/4 quarts)
1/2 teaspoon per

5 cups (1 1/4 quarts)
Salt 1/2 cup
Wash beans thoroughly; drain and cut into lengths to fill pint jars. Pack beans into clean, hot jars; add pepper, mustard seed, dill seed, and garlic. Combine vinegar, water salt; heat to boiling. Pour boiling liquid over beans, filling to
1/2 inch of top of jar. Adjust jar lids. Process in boiling water for 5 minutes (start to count processing time as soon as water in canner returns to boiling). Remove jars and com plete seals if necessary. Set jars upright, several inches
apart, on a wire rack to cool.
CUCUMBER RINGS
First Step:
Cucumbers should be cured in a brine made by adding
about 1 1/2 pounds of salt to 1 gallon of water. As soon as
brine tests acid the cucumbers should be freshened by stan
ding in cold water for about 2 hours and then sliced.
Second Step:
2 cups vinegar
3 cups water
2 pounds sugar
3/4 ounce whole
3 pounds sliced
cloves
brined cucumbers
1 1/2 ounce stick
3/4 ounce dried
cinnamon
ginger root
Drain sliced cucumbers, let stand for 2 to 3 hours in a
weak vinegar solution (1 cup vinegar to 3 cups water). Then
add second cup of vinegar and allow to stand a couple of
hours. Add sugar and spices. Cook the cucumbers in the
sirup until clear and transparent. Let stand overnight in the
sirup so that the slices become plump. Cut a slit in the center
of each cucumber ring and garnish with a strip of sweet red
pepper. Pack in jars, pour over the strained sirup, paddle to
remove all bubbles and process like other pickles, 15
minutes in hot water bath.

Pelargoniums are tender,
shrubby, and herbaceous flowering
plants. They are native to South
Africa, Asia and Syria and belong to
the Geranium family, Geraniaceae.
Few flowers are more popular in
the summer with their bright vivid
flowers, wavy-edged leaves and
sturdy shape. Geraniums have long
dominated summer flower boxes,
hanging baskets and seasonal beds
because they bloom from the time
they are planted in early, summer
until frost.
Geraniums need a minimum tem
perature of 40 degrees, con
sequently they must be brought in
doors during winter months except
in mild climates such as South
Georgia. Water plants only enough
to keep the leaves from wilting
during the period from October to
March.
The horseshoe-shaped zone of
dark coloring on the leaves of many
varieties designates the group of
geraniums known as zonal
pelargoniums. Besides the zonal
pelargoniums which have plain
green leaves or green leaves
marked with the characteristic hor
seshoe-shaped zone, there are
many varieties which have
variegated foliage.
Plants should be pruned back in
March or April, before growth
becomes active. Pruning will
produce compact full plants
whereas unpruned plants will be
leggy with leaves and flowers only
at the ends of the stalks.
Geraniums can be propagated
from 3 to 5 inch cuttings of young,
short-joined shoots in early Sep
tember. Insert cutting in 2 parts soil
and 1 part sand; water, and leave in
shady spot for about 2 weeks. After
the cutting is rooted it should be
replanted and taken indoors for the
winter. The new plant will be ready
to put in the garden next spring for
summer flowering.
There are numerous other groups
of geraniums, including the ivy-
leaved, scented-leaved, regal and
succulent pelargoniums. The zonal
geranium, though, is the variety we
are most familiar with in summer
gardens.

Georgia Clover On The Decline
At one time (1955) Georgia had 867,965 acres of crimson clover--either sown or volun'teer--and the pretty blossoms were a sight to behold along the state's roadsides.
But cropping patterns change; some plants increase while others pass by the wayside. And crimson is about gone from the Georgia scene.
There are only about 85,000 acres of crimson clover left.

Marbling In Meat Needed For Flavor
Most people don't like to eat fat, but if there were no fat interspersed within the lean, most meat would not be flavorful.
Flecks of fat within the lean are called marbling. This is one of the important quality grade factors for beef. Beef graded prime or choice has more marbling than beef of lower grades.
