the 1940's when

the function con-

sisted of kill-

ing, defeathering and shipping to

distant markets in barrels.

Georgia contains 27 poultry and

fowl processing plants with a daily

kill capacity of 1,700,000 head. The
size of the processing capacity of
these plants ranges from 12,000 to
2400 birds per hour. All plants
maintain USDA food inspection
programs. Every bird that is shipped
from one of these plants is cleared
for wholesomeness by an inspection
prior to shipment.
Eight plants have a USDA grading
program and products shipped from these plants adhere to strict grade
standards for each class. From the baby chick to the
slaughtering house now takes a
growth cycle of approximately eight
weeks at an average weight of approximately 3 3/4 pounds.
Once the poultry reaches the
slaughtering plants they are placed
on conveyors for the killing and
defeathering operation. This func-
tion is done generally through the
aid of water and machines.
After kill they pass through a water bath of 128 and into machines containing rubber fingers that gently buff off the feathers. Just as they leave this room they pass through an enclosed water shower.
They are then cut from the conveyor and hung by the hocks for the eviscerating process. This is accomplished by an assembly line system that allows the removal of undesired parts, 100% inspection by USDA Food inspectors, and individual salvage of the giblets. Each giblet and whole bird is then sent through a shower and then through a chill bath of 34.
The excess water is allowed to
drain from the poultry and they then
intercept a giblet and neck at a wrap-
ping station. From this point they
may go to a whole bird packaging
line, a cut up line, a frozen line, or a

I have a large lawn and one area is covered with a firm, green moss. I have tried setting out woods moss in other sections but it always dies . . . any suggestions?

dicates that the lawn needs lime,

there is an excess amount of shade,

poor drainage or compacted soil.

We suggest that you plow the area

and if lime has not been added in

the last three years, you apply

about 50 pounds of lime per 1000

Fescue and Red Fescue could be

planted on this lawn area if you

have shade or sun. You can seed

this area now but it is always best

to plant Fescue in September or

Should Not Pose Serious Problem

The 15 million pound reduction in tobacco sales opportunity time this year as compared to last year should not pose a serious problem for farmers in the Georgia, Florida, Alabama flue cured tobacco belt, according to Georgia Commissioner of Agriculture Tommy Irvin.

Leptospirosis Study Receives Assistance
The Department of Medical Microbiology at the University of Georgia College of Veterinary Medicine has received a grant in the amount of $57,800 from the U.S.D.A. for the study of leptospirosis in swine.
Leptospirbsis is a highly infectious disease which causes stillbirth and death of young pigs; consequently it is of great importance in the swine producing areas of Georgia, Leptospirosis is also communicable to humans who can become infected through contact with infected swine.
A vaccine is available for the more common strains of swine leptospira, but the less common strains are becoming increasingly widespread throughout the country and vaccine is not available to combat these lesser known strains.
Summer Hog Show

A Georgia Summer Market Hog Show will be held August 13 and 14 in Statesboro.
The show is open to all hog producers in the state with both junior and adult divisions.

Wool Contest Coming

The reduction, which followed a tobacco crop forecast indicating a smaller crop this year because of adverse weather conditions, will be revised in keeping with the next crop forecast which will come out August 10 or about a month before the marketing season ends.
The 36 man industry wide marketing committee which allocates selling time based on crop conditions allocated sales opportunity time of 151,191,000 pounds for the Ga.-Fla.-Ala. flue cured belt in a meeting in Raleigh Wednesday. The belt was allocated 165,400,000 pounds of sales opportunity time for last year's bumper crop.
Georgia's 23 markets and Florida's five markets will remain open for seven weeks with the two sale markets operating with two sets of buyers the first two weeks, all markets operating with one set of buyers the third through fifth week, after which the one sale markets will close. Georgia has eight two sale markets and Florida has one.
Irvin reminded warehousemen that 17,739,000 pounds of sales opportunity time for Carolina tobacco has been built into the belt's local sales opportunity time as compared with 27 million pounds last year and urged Georgia warehousemen to give local farmers first priority in flooring and selling tobacco when the markets open on July 24.
"At the present we anticipate a strong demand for tobacco on the Ga.-Fla.-Ala. belt and foresee no difficulty unless warehousemen floor more than 18 million pounds of Carolina tobacco," Irvin said.
The Commissioner pointed out that most warehousemen have been cooperative in the past in giving priority to locally produced tobacco and said he was confident they would exhibit the same cooperation this season.
Georgia tobacco production this year is expected to be around 105 million pounds, some nine million pounds less than last year.
,The latest crop forecast indicates yield per acre this year will be only about 1,750 pounds as compared with more than 2,000 pounds per acre last year.

Welch says that milk is a food with a remarkable combination of high quality proteins, nearly ? dozen important minerals, and some of all the vitamins known to be essential to man.

My aunt makes a doorstep that I think is unique. Cut enough diamond shaped pieces of lightweight cardboard (such as a shoe box) to make twelve - five point stars. The sides of the diamond are 31/2 inches long. Cover five each of the points in a bright colored print material. (You should have each star a different color.) Sew five of the points together to form a star. Leave a small hole in the center of each star. Cover twelve cotton balls in solid color material to match each star. Tie a thread close to the cotton ball, leaving some of the material to insert into the center of each star. Use one star for the top. Sew five stars to it. Then sew five more stars to these. Leave off the bottom star. Fill with enough small rocks to have enough weight to hold a door. Sew on the bottom star. Be sure to put the cotton balls in the center of each star before they are sewn together.

STUFFED CHICKEN BREASTS IN SOUR CREAM SAUCE

6 whole, debone chicken 6 thin slices of ham

breasts

6 slices Mozzarella cheese

(4x2x1/4)

MARINADE

2/3 cup Mazola Corn Oil 2 tsps. Accent

2 tsps. Seasoned Salt

2 tsps. black pepper

SAUCE

1/2 cup chopped onion 1/2 cup chopped celery

1/4 cup chopped bell pepperl can sliced mushrooms

1/2 pint sour cream

Wash breasts thoroughly. Sprinkle Accent, Seasoned Salt

and black pepper inside each breast. Place in shallow dish

and pour Mazola Corn Oil over slowly. Marinate for at least

two hours, turning twice. Line broiler pan with Alcoa Wrap

aluminum foil. Drain breasts and reserve the marinade. Roll

one slice of the ham around one slice of cheese. Place inside

one of the breastsland fold over; securing outer skin loosely

with toothpicks. Repeat with remaining breasts. Place stuffed

breasts on broiler drip tray that has the pan underneath

wrapped with Alcoa Wrap. Broil to brown the tops of the

breasts then bake for one hour at 325 degrees. Spoon lef-

tover marinade over breasts every 15 minutes, three times.

While chicken is cooking, saute onion, celery and bell pep-

per. Cool and mix mushrooms, sauted vegetables, and sour

cream together in a bowl. Spoon over each breast during last

15 minutes of baking period.

CANTONESE CHICKEN

1/2 cup Mazola Corn Oil 1 clove garlic, minced

1 (3 Ib.) fryer, cut up

1 1 Ib. jar orange

1 tsp. Accent

1/3 cup vinegar

1/2 cup water

2 Tbls. cornstarch

1 Tbls. soy sauce

1 green pepper (cut into 1/2 cup green onions,

1 inch squares)

sliced

Heat Mazola Corn Oil in large skillet. Add garlic and heat.

Add chicken pieces; brown all sides. Sprinkle with salt. Com-

bine preserves with vinegar and Accent and pour over

chicken. Cover with Alcoa Wrap and bake at 350 for thirty to

forty minutes. Combine water, cornstarch and soy sauce,

mixing well. Heat until sauce is clear and thickened. Add

green pepper and onion. Cook slowly until green pepper is

still crunchy but not soft. Pour over baked chicken. Serve

with two cups hot seasoned rice.

WATERMELON PRESERVES

1 Ib. watermelon rind cubes 2 qts. water

2 Tbls. lime (calcium

2 cups sugar

oxide)

1 qt. water

1/2 lemon

Trim off outer green skin and pink flesh, using only greenish-

white parts of rind. Cut rind into 1-inch cubes, and weigh.

Soak cubes for 3 1/2 hours in limewater (2 quarts water and 2

T. lime). Drain and place cubes in clear water 1 hour. Again,

drain off water and boil 1 1/2 hours in fresh water, then drain.

Make a syrup of 2 cups sugar and 1 ^quart water. Add rind

and boil 1 hour. As syrup thickens, add 1/2 lemon, thinly

sliced, for each pound of fruit. When the syrup begins to

thicken and the melon is clear, the preserves are ready. Pack

preserves into hot sterilized jars, add enough syrup to cover,

and seal.

WATERMELON BOAT

Cut watermelon lengthwise. Cut edge of melon in saw-tooth design with sharp knife. Scoop out center with melon-ball scoop, leaving about an inch of the watermelon fruit intact. Fill the watermelon half with all the prepared watermelon balls. Decorate with strawberries and mint. Wrap in plastic wrap or foil. Chill.

WATERMELON SHERBET

1 1/4 cup water

1 Tbl - 1 tsp. lemon juice

2 cups watermelon juice 1/2 cup sugar

1/2 cup non-fat dry milk 2 egg whites, beaten

solids

stiff

Blend 1/2 cup water and sugar in heavy pan. Heat until sugar

dissolves. Bring to a boil and simmer 5 minutes. Meanwhile,

place 3/4 cups water and lemon juice in mixing bowl.

Sprinkle non-fat dry milk solids over the surface, and beat

until mixture is thick and fluffy. Blend in watermelon juice

and crushed watermelon; add syrup. Pour mixture into

refrigerator tray and begin freezing. When partially frozen,

remove from tray and beat with rotary beater. Fold in stiffly

beaten egg whites. Return to freezer until frozen firmly. 12

servings.

MILK UP
Milk going into all dairy products in 1972 worked out to 563 pounds per person, or five . pounds more than the year before. This marked the first time since 1955 that per capita consumption went up, according to the USDA.

LAWN CARE

A hot parrafin wax is often used on rutabagas to prevent wilting and loss of weight. However, if the coat is applied too heavily, it can cause internal breakdown of the roots, .lust the wax itself will not enable you to keep the rutabagas throughout the summer. To keep them for several months, they must be stored at around 32 F. with a relative humidity of 90 to 95%. They can be kept for a short while in a cool place where the humidity is high, but the length of time they can be kept in this manner is limited.
