New Approach
To Dairy Month
The Dairy Industry took a new approach for June Dairy Month 1973 as plans began last fall. A permanent year-round June Dairy Month Committee has been formed of which I have been honored to serve as Chairman this year. The Committee is composed of representatives from all facets of the Dairy Industry: producers, distributors, equipment and supply, those involved in dairy promotion and education, the extension service, University of Georgia and Georgia Department of Agriculture.
In the celebration of June Dairy Month 1973, the effort is
] to educate, in[ form and invol(ve all those iwithin the dajiry industry I and, even more 1 importantly, evjery citizen in (Georgia in thelir awareness of the financial impact of Georgia's dairy industry and the nutrition facts of "nature's most nearly perfect food," MILK. Williams, the dairy industry's objective for June Dairy Month 1973 is coincidental to that of 4-H of which Nancy serves as President. We want to be an "IN" crowd: interested, informed and involved and to have Georgia citizens join with us. We want to spread the dairy message to the citizens of Georgia.
Recognizing that dairy products play an important role in a balanced diet, the June Dairy Month Committee plans to keep dairy information and facts before the public year/round, with a special emphasis in June.
The target audiences for 1973 are two: the media-print and broadcasting and youth.
Press packets have been mailed to all radio and TV stations, weekly, daily and special newspapers. The media joined with industry members and friends at the Kick-Off Luncheon, Friday, May 25, at the Atlanta Internationale Hotel. Two hundred individuals heard addresses by the Honorary Co-Chairmen, Nancy Williams, President of the 160,000 4-H youth in Georgia, and Senator Herman E. Talmadge.
Throughout June the media will be supplied with additional information pertaining to June Dairy Month

According to my friends down

One operates 2,000 acres. His neighbor farms one-tenth that amount. One has a master's degree. Another's education is based on experience. One is young. His neighbor is old. One raises corn in Indiana. Another feeds cattle in Montana.
The American farmer . . . not an easy man to describe and define. But, for all their differences, they are still alike. Above all else, they are businessmen. Knowledgeable in the dozen or so areas that it takes to be a farmer in the 70's.
This businessman is both management and labor. He's in charge of a physical plant with fixed assets often reaching $300,000 or more. Although he often feels like it, he can't strike for higher wages.
He's chief purchasing agent, deciding which $20,000 machine will best harvest his crop during the two weeks out of the year that he needs it.
He's an efficiency expert, always trying to cut his costs and increase his slim margin or profit.
He's an investor ' handling each dollar wisely, but putting it in a business that isn't known for its high rate of return.
He's an environmentalist and a conservationist, treating his resources wisely so his land will still be productive when the next man is ready for it.
He's a speculator, gambling on the weather, insects and disease. And hoping the law of supply and demand his basic marketing tool will treat him favorably in the marketplace.
Most of all, he's an optimist knowing that next year has to be better.
He's the American farmer. And he's the world's most important businessman.

Horsemen on public Roads.
Safety rules for Horsemen on public roads: (1) Avoid paved roads with us, whenever possible. They can be dangerous, and slippery if I am not properly shod. (2) If you must ride me on public roads, please stay well to the left side always, facing oncoming traffic. (3) Passing vehicles might startle me, and cause me to bolt. The reason for this is because my vision adaptability is such that I
have to turn my head to see beside or behind me.
(4) Never allow me to go faster than a walk on slick or dangerous

Recipes Of The Week

SUGAR CURED PORK MEAT

20-pound shoulder, ham 1 pint salt

or middling

2 Tblsp. brown sugar

1 Tblsp. red ground

2 Tblsp. ground black

pepper

pepper

Rub well on skin and all parts of meat all you can get rub-

bed in. Sprinkle rest on meat. Sew in clean white sack. Wrap

in brown paper. Hang by big part of ham or shoulder and on

corner of middling meat. Let hang up for a month. When it

starts to drip, pinch a little hole in the corner of paper, where

it can drip well.

2 squares bitter chocolate 1 Tblsp. butter

or 8 Tblsp. cocoa

2 cups sugar

1 cup rich milk

1/2 tsp. salt

24 marshmallows Irg. size 2 cups graham cracker

1 tsp. vanilla

crumbs

1 cup broken nut meats, if desired

In heavy saucepan, mix chocolate, sugar, milk and salt over

medium heat. Stir to mix thoroughly, turn down heat when it

begins to boil. Cook to soft ball stage (238) and remove from

heat. Add butter and marshmallows. Do not stir, let stand 25

minutes. Add other ingredients and stir only until crumbs are

mixed in well. Pour into buttered pan and let cool. Cut into

squares. This is a delicious fudge recipe. It isn't too sweet,

like ordinary fudge.

ARTICHOKE PICKLES

1 peck artichokes and 2 or more chopped onions should be

put in sterilized jars. Place jars in a pan of water and heat

pan.

Make a syrup of:

1 gal. vinegar

1/2 cup salt

4 Tblsp. mustard seeds

2 Tblsp. tumeric

Boil this syrup and pour over the hot artichokes. (Don't cook

them too long or they will not be crisp.) Seal.

Youth involvement in June Dairy Month activities is highlighted by the 4-H Dairy Month Poster Contest, open in two divisions to boys and girls throughout Georgia. Eligibility requires five en-
trees in a county plus the posters must be displayed in a prominent public location for a minimum of a week during June. The Junior Division is for 5-8th graders; Senior
Division for those in 9th grade or above. Award cards, 4-H jackets or blazers; and cash awards will be presented to the winners. The posters of the, ten district winners will be preserved and displayed at the Annual Convention of Georgia Dairy Farmers in Atlanta, January 1974, and at the Georgia Dairy Products Convention at Callaway Gardens, May 1974.

hydraulically controlled drawbar can tip backwards unless you are careful when using it. When pulling a load, always have the drawbar hitch at least 13 inches and less than 17 inches off the ground, and at least 4 inches behind the rear tires.
Your chances of overturning increases when you pull a heavy load uphill. Add weights to the front of the tractor and move slowly and cautiously.

If you have an insulated carrier and are going to take cooked foods, thoroughly chill the foods before packing. Foods can then be reheated over the grill at the picnic.
Canned goods can add variety to the picnic menu. Be certain that the canned foods are not opened until they are ready to be eaten. Fresh fruits and raw vegetables are always popular.
Some items, such as sandwiches, may be packed frozen and will be just thawed when served. Peanut butter, aged cheese, raw vegetables, and dried fruits such as raisins are good choices.

Always ride single file on public roads. Keep at least one horse's length away from each other, otherwise, one of us might kick the other. Don't pass unless absolutely
necessary, and then try to give a verbal warning.

light contact with our mouths. (8) You may find that approaching areas that are new to us, such as bridges, streams, etc., we might panic, jump, run, lose footing, or even fall down if we become frightened. (9) If you must take us on paved roads, you might want to consult your
Blacksmith, about putting Caulks on
our shoes. This is Safety Rules for
Automobile Drivers. Few motorists
realize just how frightened we become when approached by a speeding, noisy Automobile. Here
are a few rules we would like for you
motorists to remember. (1) When confronting a Horse and
Rider on a public road, DO NOT
BLOW YOUR HORN! This may startle me, cause me to bolt, and possibly cause serious harm to my rider, and myself. (2) Do not pass
too close, allow as much room or more in passing me, as you would in passing a car. (3) Slow down and pass at a sensible speed, as an accelerated motor might frighten us.
I have been asked to make a few comments on what is the best type of fence for us. Barbwire is dangerous, and should be avoided. The fence
should be strong enough, visible enough, and high enough, that we won't be tempted to jump over it. If boards or rails are used, spacing should be sufficiently narrow so that we can not stick our heads between
the rails or boards. If strands of wire are used, the
lowest strand should be at least two feet above ground. This way, one of us would be less apt to playfully put a front foot over it. If I were to get a foot caught in the wire, or my head stuck between the rails not properly spaced, I would probably panic, and
possibly be injured. I might even get loose, run into the
street, and cause a serious accident. The key to a safe and pleasant ride
is a contented and relaxed Horse. Most accidents are man made, and riding of course, does involve a certain risk, but with a little training and a lot of COMMON SENSE, most accidents can be avoided. Your best insurance for City Horseback Riding, or riding anywhere for that matter is a contented Horse.
