Higher Than What?
Despite what you may have heard recently, neither food prices in general nor poultry prices in particular can be cast as the chief villains in the continuing saga of the upward-spiraling trend of the cost of living.
T~he f~act is that the cost of food at home has increased at
i only approximately the same rate as the cost of most other commodities on an overall, year - after year basis, and is not in the same league wiIth increases in the cost of services as a contributor to increased living costs. Poultry and egg prices have trailed food prices generally, with the result that these commodities are today among the best friends that the homemaker has in her daily battle to beat inflation. The Consumer Price Index (which is the U. S. Department of Labor's yardstick of average changes in the prices of goods and services usually bought by wage earners and clerical workers) indicated in June an overall increase of 25 percent over prices in the base year of 1967, with an overall index of 125. The overall index for food was only 123 (23% above 1967 prices), compared to 125.7 for all items less food. The index for the cost of food away from home was 130.9, which, when eliminated, reduced the index for the cost of food at home to 120.9. In terms of expenditure classes, this compared to indexes of 122.5 for apparel and upkeep, 126.1 f health and recreation, 129 for housing, 132.4 for medical care, and 143 for public transportation! As one prominent spokesman for the food industry has suggested, when one hears people complain that the cost of food is higher, he might well ask: "Higher than what?" In a full-page ad in the Wall Street Journal, this spokesman's company went on to point out that the average retail price for broiler chickens has decreased from 59.5 cents in 1950 to 41.6 cents as of February, 1972. In 1950, the ad noted, an hour's pay for the average production worker could buy 2.24 pounds of chicken. It might also be noted that, while the wholesale price index for live poultry has increased only to 118.4 in terms of 1967 prices compared to 152.4 for livestock, the average worker's hourly wage will buy over 58% more beef and almost 57%

Commissioner of Agriculture Tommy Irvin has placed an embargo on all states except those that are certified hog cholera free and those where no hog cholera is known to exist.
This embargo will continue until further notice. Anyone found violating the embargo will be guilty of a misdemeanor.

Type 14 flue-cured tobacco ended September 7. The smaller poundage sold in the Georgia-Florida Belt in 1972 resulted chiefly from less tobacco being brought into the Belt from other states. CORNMEAL LOAF BREAD

Into 3 cups of boiling water put enough meal to make a stiff mush; set off stove and add 2 cups cold water and enough meal to make the consistency of cornbread. Add 1 1/2 T. salt, and let set 4 to 6 hours. To the above mixture add: 1/2 cup sugar, 1 cup sorghum molasses, 1 tsp. soda, 1 1/2 tsp. baking powder, 1 cup flour, 2 eggs, 1/2 cup lard and enough meal to be like a rather stiff cornbread.
Cook in a greased loaf pan very slowly (250) for 2 1/2 to 3 hours. Before taking from the oven, heat may be turned up to brown if desired.

Cabbage belongs to the mustard family. Other members of this family include brussels sprouts, kale, rutabaga, turnip and cauliflower. Cabbage is considered to be a biennial because it is adaptable in most areas as either a spring or fall crop.
Well-hardened plants can withstand frost down to 20 or even 15 degrees but the plants need plenty of moisture to produce prize heads. In Georgia, cabbage is grown during the winter and early spring.
Early historians tell us that cabbage was originally from Asia Minor and the ancient Greeks spoke very highly of this vegetable as "food for the gods".
Cabbage was introduced to Europe by the Romans and to this day it is found in the wild state on the chalk rocks of the seacoast of England, Denmark and France.
Cabbage was brought to this country by early colonists. According to historians, it was unknown in this country before the arrival of European settlers. The Indians were including it in their diet by the 18th century and the German colonists were introducing soured cabbage, otherwise known as sauerkraut, to colonial America.
Cabbage is one of the very best sources of vitamin C.

The wholesale price index, which goes into more detail on prices for commodity subgroups than does the consumer price index, indicates that, of ten categories of farm products, only grains were lower in wholesale price in July than in 1967 (96.3 on the index). But eggs had shown the lowest increase among the other commodities, with an index of 102.2; and live poultry was third lowest, with an index of 118.4.
All of this illustrates that the consumer gets a lot more for a food dollar than for money spent on many other budget items; and that chicken and eggs lead the list of food bargains available to the consumer.
It's a real story when dramatic developments in the poultry industry give consumers frying chicken in 1972 at much less than in 1949, the first year such prices were reported, and eggs in 1972 at prices far below ten or twenty years ago.
Because broilers are the largest, and eggs the third largest, source of income for Georgia farmers; and because Georgia is the number one poultry state, the Georgia homemaker is doing a favor for her friends and neighbors as well as for herself and her family each time she adds poultry and eggs to her shopping cart.

I would like to know why my cow's milk sours when I mix it to churn. By the time the milk is ready to be churned it bubbles up. The sweet milk is good and only sours when mixed to be churned and only during the summertime. Is there something which I could mix with the cow's feed so as to prevent souring?

your milk from souring. Milk for churning should be kept at 73 degrees

Fahrenheit which is a comfortable room temperature. You might try put

ting in a cupful of commercial buttermilk when mixing your milk for

Feeding Garbage

No licenses to feed garbage have been issued since July 1, 1972. No more licenses will be issued. All persons continuing to feed garbage until January 1, 1973, are urged to follow the cooking requirement of 212 degrees for 30 minutes prior to feeding.
Georgia Department of Agriculture inspectors will continue to inspect premises of swine producers to insure that no raw garbage is being fed. Those found feeding raw garbage will have their swine quarantined for a 30 day period.

Gross sales reached 165,097,617 pounds which sold for an average price of $85.8 per hundred pounds for a total value of $141,125,443. This was the third in highest gross value on record exceeded only by sales of $149.3 million in 1970 and $146.9 million in 1967.
This compares with last year's gross sales of 181,322,315 pounds which sold for an average of $76.82 per hundred pounds for a money value of $139,300,000. 1972 sales volume was 16.2 million pounds or about 9 percent under that of 1971. However, because of a $8.66 per hundred pounds increase in average price in 1972, income was up $1.8 million over that of the previous year.
The season began on July 25, and ended on September 7 after 26 days of sale -- four more than in 1971.
Grade averages increased $2 to $13 above all 1971 levels with most moving up $5 to $9 per hundred pounds. Auction bids exceeded their respected government support levels mainly from $5 to $14.
Quality of marketings was substantially better than in 1971. The porportion of cutters increased with less nondescript being marketed.
The stabilization corporation received just 420,514 pounds or 0.3 percent of gross sales. This was the smallest since 1966 when receipts were 384,000 pounds. Last year 3.6 percent was delivered to the Cooperative.
