Aid Agriculture
As I travel over this great state and have the opportunity to meet and talk with nonfarm people, I am often asked the questions "Why farm programs? Why must the government subsidize farmers?"
Too often, farm programs are represented as "handouts"
to "fat-cat"
landowners who ride around in fancy cars and collect millions for not planting crops. Subsidies to fa rmers are condemned while similar payments to other industries are tolerated and even encouraged. U. S. subsidies total approximately $63 billion and agriculture's share is

less than $5 billion. It is estimated that farmer benefits actually take less than 2 cents of each federal dollar.
Why should farm subsidies be singled out for so much criticism? Subsidy and subsidy-like programs currently exist in nearly every facet of American Life. Uncle Sam provides depletion allowances to oil and mineral industries; land grants and operating subsidies to railroads; capital and operating subsidies to shipping companies; airport and highway construction; low interest loans and loan guarantee programs for businessmen, home buyers, students and others; urban renewal, protective tariff, and many more subsidies too numerous to list.
Publishers of newspapers, magazines and books receive favorable postage rates. Working people are protected by minimum wage and collective bargaining laws.
Utility companies are guaranteed a profit return on their investment because their product is vital to the public welfare. Is food and fiber any less vital?
Farm programs and program payments are designed to help reduce the potential American agriculture has -for excess crop production. They provide an effective means through which producers can assess the total picture and act together to bring supply into line with demand, thus assuring the consumer an adequate and continuous supply of food and fiber at a reasonable cost.
An individual farmer has no way to plan his production to fit the
needs of the domestic and world markets. When he plants his crop he

Fill A Need - Plant A Tree

During the past month of June in
Trees planted around homes and along city and village streets fill a need. They fill a need for shade, a need for screening, a need for softening the harsh and stark lines of buildings, a need for adding beauty and graciousness and a feeling of welcome.
For trees to do their intended job satisfactorily and continue to do it they must be selected carefully, then watched over until they become established. Once they are
established, carefully selected trees require less attention.

Texas over 1500 cases of screwworms were diagnosed. This is more than Texas has experienced in the past ten Junes. The Southeastern states are very vulnerable due to climatic conditions. The movement of, livestock from west to east can cause infestations with this disastrous parasite.
Georgia will be extremely fortunate if we do not have a screwworm problem between now and the time we have a killing frost.
Please stay alert and report any suspicions of screwworm infestations.

Wins Top Honors
The ABRAHAM BALDWIN AGRICULTURIST, a quarterly agricultural magazine, has been named the number two agricultural college magazine in the nation by an association of college editors.
Third place was shared by the University of Georgia and Kansas State University.
ABAC placed second only to Ohio State University.

Pecan Production Pecan production in the State in 1971 totaled 90 million pounds based on reports from shelters, processors, growers, and buyers throughout the State. According to the Georgia Crop Reporting Service, the final estimate is sharply above the 54 million pounds produced in 1970.
Sandwich Month August is sandwich month and Americans eat more than 266 million sandwiches every day.
For fresh-tasting, non-soggy sandwiches, spread softened butter or margarine evenly to the edge of each bread slice. Peanut butter and moistened cream cheese also prevent moist fillings from soaking into the bread.

(Editor's note: In the August 2nd issue of the Farmers and Consumers Market Bulletin, we published many letters chastising the editors for advice on how to rid a pond of otters. As a result, we have received numerous calls and letters in defense of our advice and chastising our chastisers. We feel this calls for equal space.)

I read with interest the letters concerning the trapping of the otters. I used to do quite a bit of trapping years ago, and drowning is supposed to be an easy 'death. For the benefit of those who wrote in protesting the killing of our animal life, I would like to say that I have a number of laboratory rats which had escaped from their cages and have had a population explosion under my barn. I am shooting them, trapping them, drowning them, knocking them in the head, poisoning them, anything to get rid of them. Now if these chicken-hearted do-gooders would like to have some of these lovely creatures which are eating up my stock feed, I will gladly crate up some of them and ship them to their address, freight charges collect of course. They can turn them loose around their estate, and watch the beautiful little creatures enjoy life, and multiply.

I wonder if you would print one letter in your defense in regard to otters from a pond owner. In the first place I believe Mrs. F. W.'s animals were musk rats and not otters, as I have never seen or heard of otters in a captive pond in over 70 years of rural life; but they would act the same in either case. It is plain to see that the protesters are either misinformed or uninformed. If I caught someone trapping the varmints in a nice humane trap and turning them loose near my pond I would be tempted to shoot them as well as the animals. If Dr". M. J. had a nice pond and welcomed them with a "life time supply offish" in about two years he would have a nice, slimy mud flat with swarms of mosquitoes and crawly things. He evidently doesn't know that the first thing they would do would be to riddle his dam with burrows in which to raise their young. I don't believe if he noticed the first leak within fifteen minutes after it started, he would be able to save his dam. Thanks so

CRISP DILL BEANS
2 Ibs. small tender green beans, stemmed and cut in
uniform pieces
Pack prepared beans in sterilized jars
To each pint add:
1/4 tsp. cayenne pepper 1 clove of garlic
or 1 hot pepper
1 Irg. head of dill
Bring to a boil:
2 .cups water
1 pt. cider vinegar
1/4 cup salt
Fill jars with liquid, seal. Process for 5 minutes at 212 F.

Place ingredients in casserole dish starting with rice on bot-
tom. Bake for 1 hour at 350.

PORTABLE SEWING
; Many on-the-go seamstresses could make good use of a portable sewing center. A discarded suitcase is ideal for the job, according to University of Georgia Exitension home economists. The side pockets can hold (patterns, thread, scissors, tape measure and other sewing items. At clean-up time, everything can be folded up and stored in a few minutes.
POULTRY STORAGE
Smoked chicken or turkey may be stored in the refrigerator. But University Extension home economists advise if you plan to keep smoked poultry for two weeks or more that you put it in the food freezer to prevent spoilage.
WRINKLED LEATHER
Most wrinkles in leather will hang out if left in a damp room overnight, according to Margie Mclntyre, University Extension home economist. If wrinkles persist, press with an iron at "rayon" setting. Use heavy wrapping paper as a press cloth and press on right side of garment. Press with a light, quick hand to avoid overheating and shine.
ROCK EAGLE
Rock Eagle 4-H Center near Eatonton is the largest such 4-H facility in the world. Completed in 1955 at a cost of $3 1/2 million, the rural youth center can care for 1,200 boys and girls as they learn and play together. Many of Georgia's 160,000 4-H'ers have the opportunity to visit the center during the summer camping season, when 1,100 come and go each week. Over the years, it has become regional and national in scope and has drawn many visitors from foreign countries.

Add vegetables cover tightly, cook
about 10 minutes until tender.
2 tablespoons Fat
Melt fat
Stir in flour
Slowly add milk
Cook and stir until thickened
Add cooked vegetables with cooking water and cheese to white sauce.
Cutup and measure cheese
Stir while cooking over low heat to melt cheese.
Serve hot.

Nasturtiums are noted not only for their showy summer-blooming flowers but also for their unusual flavor and frangrance. The plants are natives of Mexico south to Chile. The warm colors of these countries are exemplified in the brilliant assortment of oranges and yellows characteristic of Nasturtiums.
The common garden Nasturtium is a popular garden planting because it grows in practically any kind of poor soil. They require little moisture but prefer semi-shade or filtered sunlight.
In addition to the enjoyment Nasturtiums bring in the summer, it is possible to grow pots of these bright plants indoors during the dreary winter months. Sow seeds in pots from September to January in a mixture of loam, leaf mold and sand. They like a night temperature or about 50 degrees with a daytime rise of 5-10 degrees and must be well-drained. Your "winter" Nasturtiums will produce a profusion of blooms for several weeks during a time when color is at a premium.
Beside their garden value, Nasturtiums are noted as a kitchen herb. The word is a combination of the Latin nasus, "nose" and torquere, "to twist", the nosetwister since its odor makes the nostrils quiver and twist. The herb originally came from the Peruvian Andes.
Everything about Nasturtiums is edible except the root. The young tender stems and leaves are good in salads, the chopped young leaves are delicious in sandwiches, the blossoms in fruit salads, and
minced blossoms can be blended into creamed butter or cheese for use as a spread. The unripe and still green seeds have a peppery taste and are often pickled.
PICKLED NASTURTIUM SEEDS
6 T. salt water 2 cups approx. small, ripe
green nasturtium seeds 3 cups white vinegar 2 bay leaves 1 Irg. whole mace 12 white peppercorns 1/4 cup sugar 1 dried hot chili
Dissolve salt in 4 cups water. Soak nasturtium seeds in the mixture for two days. Drain and rinse with cold water. Cover with fresh cold water and let stand for one day. Drain very well and pack into hot sterilized jars. Boil remaining ingredients together for 10 minutes. Pour over seeds. Cool slightly and seal. Let stand for three months before using. These resemble capers and can be substituted for them. Makes about three 1/2 pints.

None of the writers indicated they have any personal investment of money or time in real estate capable of attracting an otter. One stated a love for fish ponds. All praised the beauty of this destructive little culprit. They all probably put out rat and mice poison or hire an exterminator, when actually a mouse is a very pretty and playful little fellow and is admired by millions. Yet we continue to destroy Mickey Mouse's counterpart. See what I mean? It all depends on where we're sitting. Otters are a big problem to me. I own one half mile of a fresh water stream and the otters keep the fish population so low that the stream is of no value to me for fishing. However, "city cousin" continues to traipse to the country "for a little fishin". I poison rats and mice and would readily destroy any otter damaging my property. Heartless? Hardly! Those wildlife lovers who wrote in to the Bulletin probably don't have a pond and wouldn't know what to do with it if they did. My main com plaint is that I hate to hear a city slicker tell a farmer what to do when they don't know how to handle their own problems.

Sure I love animals, but they are meant to be controlled. What would the "Bleeding Heart Lovers" do if a flock of pigeons were ruining the roof on their home or if rats were getting out of control in their buildings? I would like to say you are doing a good job, Bulletin Staff, helping us with our problems. Keep up the good work. Some people appreciate your help. Some have nothing better to do than complain.

with the otter and all of the other "lovable" varmints that have been

For the most part, he must produce outdoors with no guarantee of what the weather will be, if insects or disease will strike or what the price will be at harvest time. Farmers are the only producers I know of who have no control over what they get for their product, yet there are those who would blame the farmer for high food prices.
The cost of farm programs is a small price to pay for an adequate supply of food and fiber for future generations. It makes good sense to try and keep the nation's largest single industry healthy.
Nuts are attractive and taste tempting at any time of the year. They are a decorative addition to many foods and rank high in nutrition. Packaged mixed nuts in the shell are a combination of five species: almonds, Brazils, filberts, pecans, and walnuts.
