I appreciate very much this opportunity extended by Commissioner Tommy Irvin of communicating with readers of the FARMERS AND CONSUMERS MARKET BULLETIN and discussing the services of the Farm Credit Banks in Georgia.
These banks, The Federal Land Bank and the Federal Land Bank
Associations, the Federal Intermediate Credit Bank and the Production Cr WCH edit Associations, and the Columbia Bank for Cooperatives, provide a large proportion of the total agricultural credit being used in Georgia. At the end of June, the Federal Land Bank Associations in Georgia

had over $296 million in long-term loans outstanding to over 15,000 borrowers. At the same time, the PCAs had extended over $252 million in short and intermediate term credit to over 11,863 borrowers in Georgia.
The third member of the farm credit family, the Columbia Bank for Cooperatives, had approximately $70 million in loans extended to 30 purchasing, marketing, farm supply and processing cooperatives in the state.
With the implementation of the Farm Credit Act of 1971 in May of this year, we see the beginning of what may turn out to be a new landmark in service to farmers and farmer cooperatives.
The first rural housing loan made in the nation to a non-farm family under the new Act was made to a Georgia family near Dalton on May 20.
This new legislation can be of tremendous importance in keeping the farm credit system geared to the new needs of farmers and their cooperatives for the increasingly larger amounts of credit required in agriculture.
We pledge to the farmers of Georgia our maximum efforts in making this new authority work to the best advantage of farmers and their cooperatives in the interesting, challenging period that lies ahead of us, in Georgia's expanding agriculture and agribusiness future.
LOT OF FOOD
The average family of four eats two and one-half tons of food a year. That's a lot of food! Nearly threefourths ton are dairy products. About one-half ton is meat, poultry and fish. Another half ton consists of fruits and vegetables.

lemonade

condensed milk

1 large size non-dairy whipped cream (Cool Whip)

Mix all ingredients into a graham cracker crust and

refrigerate for several hours.

HEART'S DELIGHT PUDDING

1 cup brown sugar

11/2 cups hot water

Place in ungreased baking pan and stir until sugar is

dissolved. Set aside.

In a bowl mix together until smooth:

1/2 cup brown sugar

1 tablespoon butter

1/2 cup sweet milk

2 teaspoons baking powder

1 cup flour

1 cup chopped pecans

(add nuts last)

Drop dough by spoonfuls on top of water-sugar mixture (as you would dumplings). Bake in a preheated 375 F. oven about 20 minutes or until brown. May be served hot or cold with whipped cream.

PEACH CRISP

Fresh peaches

1 cup quick oatmeal

1/2 cup flour

1 cup sugar

1 stick margarine

1 tsp. almond flavoring

dash of cinnamon

in about 1/2 c. water

Mix sugar, oatmeal, flour and cinnamon. Work margarine into

dry ingredients with fingers. Slice peaches in 10 x 7 x 2 inch

pyrex dish. Pour flavored water over peaches. Sprinkle flour

mixture over top. Bake at 350 F. until light brown about 45

minutes. Serve with ice cream.

Preceded only by Florida and Texas, Georgia ranks third in the nation in watermelon production. This member of the gourd family is native to Africa but has been a resident of our country since the first settlers arrived. They were found in Massachusetts gardens as early as 1629 but did not flourish until brought south to the long hot growing season and high humidity of Georgia and Florida.
In the United States watermelons are a universally popular summer dessert, but in the dry countries of Africa and the Near East, they are considered a staple food and animal feed. They are especially valuable in countries where water is scarce for their high water content. In some parts of Asia the seeds are roasted and eaten as snacks. Americans prize their watermelonrind pickles while the Orientals preserve entire halves of water melon in salt or brine.
Watermelons are a good source of vitamin A and fair source for vitamin C. They should be picked when fully ripe but not overripe. It is difficult to determine the proper stage as the external charac teristics change very little as the melon ripens. When green, the fruit gives off a metallic ring when thum ped; this sound becomes more muffled with increasing ripeness.

Churning Ice Cream Brings Back Memories

Smiles and quivers of anticipation always come when someone remembers churning homemade ice cream on a warm summer evening. Taking a turn with the crank and eagerly awaiting the dasher to lick are two favorite memories.

It hardly matters whether you churn ice cream with the flick of a switch or with old-fashioned elbow grease; old-fashioned homemade ice cream is still the family favorite.
Check these tips to insure ice cream that is sure to please.
1. Select a recipe to give the texture you like. Ice creams vary in texture from light, melt-in-your mouth crystals to a richer, creamy consistency. The recipe ingredients and method of preparation determine the texture. Usually uncooked ice creams and recipes containing
relatively small amounts of milk fat and/or eggs will have a more grainy texture; whereas those with whipping cream and eggs in large amounts and cooked ice cream mixtures make smoother finished products. Also, other things being equal, churned ice cream will have a smoother texture than unchurned.
The "why" behind this is the way in which the ice crystals form during freezing. During freezing, water, of course, forms crystals. If there is cream, eggs,or the mixture is cooked before-hand, the ice crystals will grow slowly and form small crystals in large numbers, instead of fewer
but faster forming crystals. Dry milk solids added to whole
milk will enrich the mixture. The larger amounts of solids reduce the quantity of water available to form
crystals. Also the thicker mixture

allows more air to be incorporated
which gives a smoother texture. 2. If time allows, thoroughly
cool an ice cream mix after it is prepared and if possible keep it in the refrigerator for a few hours or
even overnight before churning. This will improve the flavor and texture.
3. When a tub freezer is used be sure that the lid, can and scraper are sterilized in boiling water, that the lid fits properly, and that melted ice
does not seep into the can. 4. Fill the freezer only three-
fourths full of mix. Otherwise, there'll not be enough room for the increased bulk caused by whipping.
5. To pack freezer, allow ap-
proximately 6 parts ice to 1 part of coarse rock salt. Turn crank slowly till ice partially melts and forms brine - add more ice and salt to maintain ice levels. Then turn rapidly and constantly till crank turns hard.
When the ice cream is frozen, remove the dasher and pack the freezer with a mixture of crushed ice and salt. (4 parts ice to 1 part salt). Cover with newspapers and let stand about 2 hours to ripen. You may ripen in freezer.
The cream should be smooth when served, if it proves granular, you

VANILLA ICE CREAM

4 eggs

4 cups light cream

2 1/2 cups sugar

2 tablespoons vanilla

6 cups milk

1/2 teaspoon salt

Beat eggs until light. Add sugar gradually, beating until mixture thickens. Add

remaining ingredients; mix thoroughly. Freeze in ice-cream freezer. Makes 1

gallon.

STRAWBERRY ICE CREAM

4 eggs

2 16-oz. pkg. frozen strawberries

1 2/3 cups sugar

4 cups milk

2 cups whipping cream

1 15-oz. can sweetened condensed

milk

Beat eggs until light. Add sugar gradually, beating until mixture thickens. Add

remaining ingredients; mix thoroughly. Freeze in ice-cream freezer. Makes 1

gallon.

That cracked or soiled eggs contain bacteria that can produce food poisoning. For your protection, use cracked or soiled eggs only when they are thoroughly cooked or when the foods in which they are used as an ingredient are thoroughly cooked.
That the green discoloration that sometimes appears between the white and the yolk of a hard cooked egg results from a chemical reaction which is harmless. To help prevent this discoloration, cook eggs at low temperature, avoid overcooking and cool promptly.
