Man's Obligation To God, Fellowman

To be stewards of the soil is part of man's obligation to God and to his fellow man. This week in Georgia and throughout the nation attention is focused on this challenge as we observe Soil Stewardship Week. The theme for this year's observance is Creative Conservation, and due to man's failure in the past to protect his environment, this is exactly what it will take to improve the living world around us ... creativity.
Fortunately, many thousands are increasingly interested in doing
something constructive about the environment. The ^motivation springs from an innate need for personal association with the earth; or from a desire for public service; or out of a feeling of

obligation to improve our world and to leave a better place for our offspring.
Soil stewardship is the spirit of responsible men at work on the land and in harmony with the land. With the growing realization that our natural resources are indeed limited and precious, with the rising value we place on the quality of our surroundings, and with the spreading concern for an elevation in the quality of our lives, we are, as we must, broadening our standards.
No longer can we make our land use decisions based solely on the economic value and return. We must, to meet our challenge as stewards of the land, ask ourselves: which means the most in terms of livability? Which option is best for our children and our community? Which alternative will make our world a richer, cleaner and more attractive place to live - not just exist?
When these questions are answered, when the alternatives for the use of our precious resources are considered and the decisions made on the basis of creative conservation, then we are meeting our challenge to be stewards of the soil.
It is not just a responsibility, it is a great opportunity. Georgia is blessed with many active creative conservationists. We must all now join with them and our neighbors and say, "This is my job, my responsibility. I can add something of myself to this place, make it better for me and my family, for my community and in the eyes of God."
DAIRY INVESTMENT
Capital investment on representative U. S. dairy farms has increased about 50 percent since the mid1960s, according to Economic Research Service of USDA.

CREATIVE CONSERVATION

The 50,000 farm ponds in Georgia are examples of creative conservation. These ponds conserve water and enhance fishing and other recreational opportunities. In addition, farmers have grassed 43,000 acres of waterways to effectively discharge water from farm land with little erosion or siltation. Records show that 107,000 Georgia landowners have signed cooperative agreements with Soil and Water Conservation Districts (there are 27 of these Districts in the state) to carry out conservation practices. The stakes of conservation are high for the city dweller,
too. In fact, the establishment of sound and realistic priorities for land use are major considerations for the well being of urban dwellers. Siltation of streams, lakes and reservoirs is, by volume, today's greatest single water pollutant, and approximately one-half of the siltation of all surface waters is from non-agricultural areas. So the farmer also has a stake in the conservation efforts of towns and cities. Agriculture and business, farmers and nonfarmers, have a common interest in Soil Stewardship Week, observed May 7-14 in Georgia.

Recipes of the Week

JERUSALEM ARTICHOKE PICKLES

1 gallon Jerusalem

11/2 cups sugar

artichokes

1 clove garlic

1 Tablesppon tumeric

3 Tablespoons mixed

3 Tablespoons salt

whole spices

2 quarts vinegar

Scrub then pack Jerusalem artichokes into hot jars; add

spices to vinegar. Simmer 15 minutes, then boil for 5 minutes.

Pour pickling solution over Jerusalem artichokes. Process 15

minutes at simmering, then complete seal.

1 can (small) salted nuts
2 cups miniature marshmallows

In top of double boiler, melt morsels and the marshmallows. Remove from heat and add the nuts and noodles. Stir well and when candy will hold its shape, drop from spoonfuls onto wax paper.

BIG SHRUBS
Bare of foliage on their lower limbs and completely out of scale with their surroundings, large overgrown shrubs are unsightly. They also make the inside of the house darker by blocking light. Such plants can be made more attractive if severely pruned (say, within six inches of the ground) and allowed to rejuvenate themselves. Extension horticulturists say this type of pruning should be done three to four weeks before new growth begins in the spring. Be sure to treat the cuts with pruning paint.

Merrybells, Wild Oats, or Bellwort are all common names for this lovely member of the Lilicaceae family. Unfortunately Merrybells are often overlooked as they are an inconspicuous flower of moist woodlands. They bloom mainly from April to June and worth looking for next time you wander through the woods.
The flowers of this plant are much larger versions of the Solomon's seal. They are long, slender bells, greenish yellow or bright yellow and hang from the tips of the branches and leaf axils.
The foliage of this wild flower is part of its trouble. The foliage blends in so well with its surroundings that it is often hidden among ferns and Trilliums. The leaves are alternate on stems which rarely exceed 12 inches in height. They are pale-green, lance-shaped and from 1 to 3 inches long.
Merrybells will spread to form open colonies if they are planted in humusy soil that remains reasonably moist and never becomes bone-dry. In the spring while trees are leafing out filtered sunshine is ideal for growth, but in the heat of summer, the heavy shade is necessary to keep the roots cool. Multiplication is easy just cut the creeping rhizomes apart in early spring or fall.

(Continued From Page 1) Georgia can be frozen successfully. They may be frozen whole, sliced, mashed or as a juice. Decide how you plan to use the fruit and freeze it accordingly.
Fruit ice cream you'd want mashed or nectar to go in the ice cream. Fruit pie go ahead and make the pie filling and freeze it in pie size containers. Fresh jam, marmalade, preserves and jelly can be made from frozen fruit.
In canning peaches, pears and apples, remember enzymatic browning occurs if the peeled product is exposed to air, As soon as the fruit is peeled, place it in a salt-vinegar water solution. Be sure to rinse the fruit in cold water before placing it in the syrup.
Best results are obtained if you precook the fruit before placing it in the jar. Blackberries, however, should be packed raw in the jar and covered with hot berry juice. All canned fruits and fruit juices should be processed in the boiling water bath canner after they are packed in the jar.

The blacksmith shop was once a part of every town and cross roads in America, but today, people just don't bring their horses into the city much. There are still however, about 50 blacksmiths in Georgia serving the state's growing equine industry. Tom Allanson of College Park has his "shop" in
the back of a used telephone truck. This way, he can take hi shop to the horse instead of the horse coming to town for new shoes as you and I must do.

in August, with a five to six percent decrease over the cooler seasons of the year.
Three different environmental temperatures were selected to represent the three seasons of winter (45 degrees), spring (65 degrees) and summer (85 degrees).
The temperature within each house was adjusted for a daily variation of ten degrees above and below the mean to simulate natural daily fluctuation.
The study covered a period of twelve months. Pullets were placed in each of the test environments before they began to lay, and the first results were immediately noted: pullets in the cooler environment of 45 degrees Fahrenheit did not start laying as soon as those in the two warmer houses.
The onset of production in the cooler group was delayed on an average of approximately one week. However, once the hens did start laying, egg production, egg size, fertility and hatchability were as good in the cold environment as in either of the others.
The study revealed that the high environmental temperature of 85 degrees F. caused a decrease in egg production and egg size as well as fertility and hatchability, particularly in older hens.

The most efficient among American farmers? Dairymen score near the top in the efficiency ratings. Milk output per man-hour has doubled since 1960, and in 1970 dairy farmers spent an average of only 11 minutes a day to care for each milk cow. Ten years ago, according to Economic Research Service of USDA, these farmers used over 20 minutes per cow in direct labor.
