Profit Opportunities
For Georgia Cattlemen
The beef cattle business in Georgia is big business and growing rapidly. The income from cattle and calves in 1970 was approximately $118,000,000. It is estimated that Georgia beef cattle numbers will continue to increase at a very rapid rate.
Even though the beef industry is large, and the past few years pri-
ces have been fairly good cattlemen haven't been taking advantage of their opportunities to increase their beef income.
In 1972 approximately 600,000 calves will be sold privately or at public auction. It is very likely that at least half of

these calves will be too light to market, thus returning a low margin of profit to the producer.
We in Georgia have an opportunity to add at least 300 pounds to these light weight calves before marketing them. Research at Tifton, Reidsville, Griffin and Eatonton has shown that we can add 300 pounds of gain to these light weight calves

Seed
Delays Cotton
Georgia farmers, being faced with the problems of low quality cotton seed for planting this year, should delay planting until warmer weather.
Most of the cotton seed being offered for sale will be tagged 70% germination. Not only are the seed low in germination, they are also very low in vigor. Farmers who do not plant until the soil has warmed up should be able to obtain a stand with the available seed.
If farmers plant early and fail to obtain a stand, it is possible that they will not be able to obtain enough seed to replant the crop later.

Check Claims On Fertilizer
Every year about this time, farmers are confronted with extravagant claims about new types of fertilizer. And most of the time, these claims are not backed up by reliable research.
Before purchasing any new or unusual fertilizer all farmers are urged to check with their county agents.

Treated For Fire Ants \
Washington approval has been received for the treatment of some 4 1/2 million acres of land in Georgia this spring to eradicate fire ant infestations,
according to Commissioner of Agriculture Tommy Jrvin.

Health Food Stores To Be Investigated
A thorough investigation of health food stores throughout the state has been ordered by Commissioner of Agriculture, Tommy Irvin.
The action followed inspections by State Department of Agriculture sanitarians that revealed the mislabeling or improperly labeling of so called "health foods" sold in such stores.
A check of three such stores in the Atlanta area Thursday afternoon revealed cartons of eggs improperly labeled and improperly graded, yet selling at a much higher price than properly labeled and graded eggs available in regular food stores.
The inspectors removed the eggs from channels of trade.
State law requires that all eggs sold in the state be properly labeled as to grade and size and that each carton be dated as to when the eggs were packed as guides to consumers.
Department inspectors are also looking into the labeling of other food products sold in such stores.
"If people want to buy such products, it's up to them," Irvin said, "but we want to make sure they are properly labeled and that the contents of such packages are accurately described on the label."

Multi-engine aircraft operating out of the Tifton airport are expected to begin treating on the Lown des County-Florida line Thursday and move northward over Lowndes and portions of Cook, Berrien Lanier, Tift, Turner, Crisp, Dooly and Macon counties involving the second application of Mirex bait over some 1 1/2 million acres.
After the treatments have mow north of Tift County, the aircni will change their base of operatic;>to the Macon airport.

Prior to beginning operations, proposed treatment programs must be submitted to both the U. S. Department of Agriculture and the Environmental Protection Agency for review and treatments are initiated only after a go ahead is

Dear Editor:
Being an out-of-state resident but having enjoyed the BULLETIN for several years and having ordered many things thru it, I am taking the liberty of giving some of our readers a tip.
To those of you who feed your cats canned fish food, when the can is empty, place it in real hot water after removing the label. Let it stand for several hours. Cool to room temperature and water your potted plants with it or seedlings in a bed and you will find that the plants will grow rapidly and do better.

Dear Editor:
It is always a pleasure to see my favorite flower written about and your article on the iris genus was no exception. However, as an Iris Society member of many years standing, I would like to correct a couple of minor errors in your article.
Number one, in our area irises bloom in spring, not summer, mid April to mid May for tall bearded irises. Some species and remontants being exceptions.
Number two, in the South, irises require a lot of attention to achieve their ultimate perfection but the extra work is worth it.
Last but not least, the plural of iris is irises according to Webster, Funk and Wagnell, Randolph's "Garden Irises" (official publication of the American Iris Society, the British Iris Society, and every other source I can find.) Write some more tho, soon.

Recipes of the Week
PRUNE WHIP
3 egg whites 1/2 cup sugar 1/2 teaspoon grated lemon rind 1 Tablespoon lemon juice 1 Tablespoon prune cooking liquid dash of salt 3/4 cup pureed cooked prunes Combine all ingredients except pureed prunes in top of double boiler. Place over boiling water and beat until mixture stands up in stiff peaks when lifted, from 4 to 7 minutes. Remove mixture from heat and fold.in prunes. Spoon into serving dishes. Cool. Serve with cream or custard.
BENNE CANDY
1 oz. benne seed, toast in moderate oven, watch closely so they won't burn, cool. 3 cups granulated sugar 1 cup milk 1 inch butter 1 teaspoon vanilla Brown 1/2 cup sugar in heavy aluminum sauce pan over low heat, to brown amber color. If it boils, it must cool before adding to mixture. At same time, cook 2 1/2 cups remaining sugar, 1 cup milk and butter in heavy saucepan. When quite hot but not at boiling stage, add browned sugar. If sugar and milk are at boiling point, it will curdle. Do not stir mixture, test with spoon to be sure it does not stick to bottom of pot. Cook over medium low heat 5 to 7 minutes. Test in cup of cold water. If you can roll a soft ball in fingers, it is done. If cooked until stiff ball can be rolled, it is over cooked and candy will be too hard. Beat until thick, add vanilla and add toasted benne seed. Be sure it is thick enough to hold its shape when dropped from teaspoons on platters greased with margarine. Yields 40 medium size pieces.

1/2 cup shortening 1 egg 1/2 teaspoon soda 3/4 cup sugar 1/2 teaspoon vinegar 1/2 teaspoon salt 41/3 cups plain flour
(correct measurement) 1 teaspoon vanilla
Cream shortening and sugar thoroughly. Add egg and beat until creamy. Add soda dissolved in vinegar. Add vanilla and then add flour gradually to make a stiff batter that can be rolled very thin. Cut out and bake in moderate oven until brown. They are very crisp and continue to taste fresh after two weeks.

SALMON CASSEROLE
1 tall can salmon (red salmon isn't salty) 1 bell pepper 1 small onion 1 small can or 1 cup canned milk, undiluted 2 Tablespoons flour 2 Tablespoons bacon drippings
Chop pepper and onion and cook in bacon drippings. Add flour and flaked salmon and milk. Cook until thickened. Put in buttered dish, cover with cracker crumbs. Dot with butter and bake at 350 degrees about 30 minutes until brown. (If you are out of pepper, add 1 Tablespoon worchestershire sauce.)

One of my cows with a

week old calf was found

dead this morning. She ap-

peared to have been tram-

pled to death by the rest of

the herd (hoof marks all

around her carcass). She has

been in this herd all of her

life and was with the calf last

night and seemed fine. What

would have caused the other

cows to kill this one?

Our Vet division advises

that your cow probably

developed grass tetany

during the night which

causes them to be highly

excitable, nervous, and

aggressive. She probably

started attacking the other

cattle

and

they

reciprocated. This may not

have necessarily killed her

but most likely further

aggravated her tetany con

dition and caused her

death. This is a disease that

cattle get from grazing on

young tender forage that

usually is deficient in

magnesium and has a high

nitrate content. You may

wish to start supplementing

your cattle with magnesium

to prevent the future oc-

curence of this. May we

suggest that you check with

your local Vet.

What is the best way of marking cattle so as to keep track of them? I have Black Angus and it is hard to see tatoo marks in their ears. I want to mark them so one could see it at a distance and it would not get torn off or lost.

We agree that tatoos are hard to read in the ears of Angus cattle. May we suggest that you use the tatoo because it is a per manent identification and also a plastic ear tag with the tatoo numbers painted on it. This way they could be identified at some distance and not require individual handling for identification. The plastic tags are sometimes lost from the animals' ears but seem to be more lasting than any other kind. Your local feed dealer can probably obtain these tags for you.

Can you tell me if the enclosed label from a pesticide I purchased is safe to use in my garden for grass and weeds from which the vegetables are to be consumed?

The name Clematis is Greek for "slender vine". The species is believed to have originated in Asia near the Himalaya Mountains and worked its way eastward to China. The Chinese developed hybrid varieties of this plant, the large purple being the most popular.
It was this Clematis that was brought to the Western World from the Orient a century ago by one of the most famous English "plant hunters", Robert Fortune. Assuming the guise of a native Chinese peasant to escape detec tion and possible death for robbing the closed door and highly antiWestern "Celestial Kingdom", For tune smuggled out hundreds of plants never before seen by Western eyes.
The flowers of the Clematis are intense in color and large in size. The blooms are often six inches across. The Clematis will bloom continuously throughout the sum mer months, usually having more than one spectacular blooming period in which the entire vine will be covered in flowers.
Clematis is a fast grower, growing as much as ten feet in a single season. It blooms each year on new wood. This means thai even if an unusually hard winter should kill the entire vine back to the ground, it rises to bloom again the following summer.
Clematis are very easy to grow if you observe a few minimum requirements: First, they enjoy a rich, loose soil; second, make the planting hole much larger and deeper than needed for the size of the roots. The large hole provides an excellent "root run" which will produce an abundance of flowers. At time of planting, it is recommen ded that 3/4 of the top growth be cut back.

by wintering them on temporary grazing.
This temporary grazing - oats, rye, ryegrass and clover - will put gain on these calves at a cost of 12 to 15 cents per pound. We have the opportunity of adding $100 to the value of the calf at a cost of $40 to $50. In many cases this is more profit than he has returned up to weaning time.
Some producers where supplemental feed is available with grazing are producing 300 to 900 pounds of beef per acre on a stockering program. These 650 to 700 pound yearlings are always in demand during March, April and May when they are ready to sell off grazing. This type of steer can go direct to the feedlot.
If the producer has'the available land he can continue the temporary grazing during the summer months on millet. Cattle coming off the millet will need only about 80 to 100 days in feedlot to hang up choice carcasses. A program such as this has many advantages, such as (1) low investment in equipment, (2) low labor requirement, and (3) a larger net return from the beef cattle operation.
The grazing of light weight calves on winter pasture can add 12 to 15 million dollars to our beef cattle income. This is an opportunity we must not pass up.
JUICIER LEMONS
Remember that lemons should have a glossy skin. A slightly green tint on the skin has no effect on juiciness, but smooth-skinned lemons usually have more juice than rough-skinned types.

Peach Crop
May Be Slack
Peach production in deep south Georgia may be reduced this year because of the unusually warm winter season but trees in middle and north Georgia seem to have had enough chilling temperatures to assure a favorable crop.
There are as many as 25 different varieties of peaches grown commercially in Georgia and each has its own characteristics in regard to the winter temperatures needed for good production. Each variety requires a certain number of hours of below 45 degree temperature to break its dormant period and initiate bloom and the setting of fruit.
The determining factor now is how much mild weather we will have this spring. A late freeze could cause serious problems for the industry, with trees now in bloom and setting fruit.
