The Georgia Department of Agriculture is primarily a law enforcement agency. It is our responsibility to administer those laws passed by the Georgia Legislature which pertain to this department and in general protect the health and welfare of the farmers and consumers of Georgia.
For example, our meat inspection program assures the Georgia housewife of good wholesome and safe meat products while the seed
! germination and I labeling law iassures the farmer of a quality seed product which should produce a good yield for his efforts.
One responsibility of the Department of Agriculture, however, is designed primarily to protect the pocket book of the farmer, consumer and of industry - our weights and measures program. This division assures us that the many items we purchase by weight or measure - from food to fertilizer to feed, cement or cloth - are correctly measured.
The department is charged with maintaining accurate weights and measurements on all items produced and sold in Georgia. In addition the weights and measures inspectors checks the standards and calibrations used in manufacturing scales and the manufacture of other items from jars to truck scales used for weighing whether by mass, liquid, or length.
An error as slight as one half ounce per pound in meat purchases could cost the average housewife more than $100 per year. Most of the errors found by department inspectors are accidental and the merchants are the first to welcome the inspector as errors can cost him thousands of dollars annually.
Savings to the consumer, farmer and manufacturer as a result of these checks and corrected errors amount to over one million dollars annually.
To aide in the performance of this responsibility, the department maintains a weights and measures laboratory at the Atlanta State Farmers Market that is as modern as any in the country.
Each year, during the first week in March, the men dedicated to accurate weights and measures throughout the nation observe Weights and Measures week.
We salute these men and the weights industry which give us accurate calibrations, assurance in our purchases and save us many dollars each year.
WHAT IS HOMINY?
Hominy is prepared from the mature kernels of regular field corn. It is soaked, then cooked slightly, and the hard outer covering removed before further processing.

These district advisors will meet with the Commissioner and market personnel in the Agriculture Building on Monday, March 8.
The District Advisors are: Harris Kicklighter, First District; Earl Taylor, second; Boyce Riddle, third; W. A. Staples, fourth; Chandler B. Gladin, fifth; N. E. Duke, sixth; Alton Holcomb, seventh; B. E. Tanner, eighth; Clyde T. Law, ninth, and Mike McCoy, tenth.
Nominees from each of the districts will assist the district advisor in recommending changes and improvements for the Atlanta State Farmers Market.

The referendum period for the Agricultural Commodity Commissions for Peanuts and Tobacco ended February 12, 1971. Tabulation of the votes cast indicate that producers of these two commodity commissions overwhelmingly support the continuation of the Peanut and Tobacco Commodity Commissions.
Other referendums still in progress are Milk, Sweet Potatoes and Peaches. The referendums for Cotton and Apples will begin March 1.

quail business. This is expressed simply in a cycle from the breeder, to the egg, to the chick, to the six week bird, and finally the fully grown adult bird.
Beginning with the breeder hen, the average hen produces 85-90 eggs per season. The hatchability of the hen's fertile eggs is 87 percent. When the egg is laid, it must be set in an incubator within ten days or it will become stale and not hatch. The eggs have a value of approximately ten cents or more each.
The eggs should hatch in about 23 days under normal incubating conditions.
Next in the cycle is the baby chick. The chick may be sold upon hatching for twenty-five cents or

LIME-MARSHMALLOW SALAD 1 cup boiling water 1 pkg. lime gelatin l pkg. (4 02.) cream cheese 40 miniature marshmallows l/ 2 cup mayonnaise 1 small can crushed pineapple l cup pecans, chopped
Add gelatin to water, mixing well. Stir in cream cheese and marshmallows until all is melted. Place in refrigerator until slightly congealed. Then add mayonnaise, pineapple, and I/ 2 cup nuts beating with electric mixer until well blended. Place in refrigerator until congealed. Sprinkle remaining nuts on top of salad. Serve on lettuce leaf.

GERMAN SWEET CHOCOLATE PIE 1 pkg. (4 oz.) German Sweet Chocolate 1 2/ 3 cups (14 1/2 oz. can) evaporated milk l l/2 cups sugar 3 tbsps. cornstarch I/ 8 tsp. salt 2 eggs l tsp. vanilla 1 unbaked 10 inch pie shell 1 I/3 cups coconut l/ 2 cup chopped pecans I/ 4 cup butter
Melt chocolate with butter over low heat, stirring until blended. Remove from heat, gradually blend in milk.
Mix sugar, cornstarch, and salt thoroughly. Beat in eggs and vanilla. Gradually blend in chocolate mixture. Pour into pie shell.
Combine coconut and nuts; sprinkle over filling. Bake at 375 degrees for 45 minutes. Filling will be soft, but will set while cooling. Cool at least 4 hours before cutting.

THE MARKET BULLETIN

Everybody knows that flowers are the perfect prescription for our spirits, powerful medicine to cure the blues, restore smiles and put pep in the step.
During the warm days last week as we saw bulbs breaking
through the ground and realized that spring is just around the corner, we can see why flowers were so valued as cures for various physical ailments, prime ingredients for potions, omens, etc.
If you want to try turning from the medicine cabinet to the garden sometime, here are a few of the cures (tried and treasured, but not always true). . .
Wounds can be treated with marigolds or arrowroot; Black and blues can be erased with a salve made from the roots of lily of the valley; daisies relieve toothache; basil will ease headaches.
For plague and pestilence, crocus and geraniums; Beautywise, use belladonna lily for the complexion, cornflower to remove freckles and crocus for hair coloring. . .
And finally, for safety and security, asters will ward off serpents; cornflowers will repel spirits and mistletoe drives away nightmares. Verbena was a big seller as a hex on enemies and witches. Nonsense? Perhaps. But flowers are still casting enchantments, snaring hearts and clouding senses with a romantic haze.

Raising Quail

from prime stock and saved until next season. The breeders normally begin laying in April, although they can be induced to lay earlier with artificial lighting and be made to lay year round with artificial lighting and heating.
Disease in quail is always easier to prevent than to cure. By keeping your developing and finishing pens clean and by adding disease preventives, most disease should be prevented.
Although there is a lot of work and much to learn about raising quail, the good producer should gain much economically from the production.
Quail makes a very tasty meat and there is very little waste to them. A pen-raised Bobwhite Quail is about a third larger than one killed in the wild. Statistics show that a bird killed in the wild costs from $15.00 to $19.00 each considering the cost of a gun, shells, keeping up bird dogs, etc. So, as one can easily see, it's much cheaper to raise quail or to buy them to eat.
Quail are delicious, fried like chicken, with good old southern grits, biscuits and gravy with tossed salad and plenty of iced tea.
