Put People First
The Georgia Association of Extension Home Economists is the local affiliated group of the National Association. There is one or more Extension home economist in most counties of the state.
The home economist is a member of the county Extension office
team, along with the county agent and clerical staff and, in some counties, the special expanded foods and nutrition staff members.
To qualify as an Extension Home Economist, one must have'a degree in home economics from an accredited college or university. We usually belong to the American Home Economics Association and to the Georgia Association of Extension Home Economists, which are professionaj organizations. The Georgia Association has 206 members including county Exten-

sion home economists and state staff specialists. The purpose of our group is to promote professional improvement and to interpret the broad concept of home economics in a changing society.
Through advanced study and other forms of professional growth, home economists become better informed themselves. They also use various forms of communication to get needed information from available sources to all people who need it. As Extension educators, our prime concern is people.
Through various activities of the Association, home economists take advantage of new training opportunities.
The Association aids in 4-H activities by sponsoring 4-H projects, such as home management, and cosponsoring 4-H events with the County Agents Association.
Three Georgia Home Economists were named to serve on National Committees for 1972. They are: Mrs. Claudia Noell, Research; Mrs. Patricia Barkuloo, Arrangements and Mrs. Jacqueline Stuckey, Exhibits.
Extension education programs provide information for any consumer in family economics and management, housing and design, foods and nutrition, clothing and textiles, citizen participation in public affairs and other areas.
Homemakers want the best that life has to offer. Extension home economists try to help individuals, families and communities to develop to their full potential. We strive to always be willing to accept the challenges of the times.

Farm Survey To Be Taken
Agriculture is America's biggest business. Keeping up with its rapid and important changes is vital to all farmers and ranchers. To update the agricultural statistics these producers need, the U. S. Department of Agriculture's Crop Reporting Service must have the help of thousands of farmers and ranchers. The end-of-the year farm surveys get underway in late November and end in early December, according to Frasier T. Galloway, State Statistician.
If your farm is in the survey sample, please cooperate. All information is kept confidential and only state and national totals are released. If agriculture is important to you, this survey is too.
Courses Offered
For Sanitarian Exam
Five new correspondence courses have been approved at the University of Georgia for special use of personnel seeking additional credit for science courses which they may need to qualify them for Georgia's Registered Professional Sanitarian examination.
Applications for these courses should be sent to the Department of Independent Study, University of Georgia, Center for Continuing Education, Athens, Georgia 30601.
Peanut Production
Sets New Record
Georgia peanut production in 1971 set a new record. The forecast of 1,249,500,000 pounds produced in 1971 surpasses the previous record set in 1970 (1,125,540,000 pounds) by 123,960,000 pounds.
Read Labels
For lacts
Labels are a very important part of buying and are easily read if a few facts are known. All labels should contain the following:
An accurate name and description of the product. If there is an ingredient which traditionally is not expected to be found in the product, it must be shown as part of the product name.
A picture which accurately represents the product, if one is used.
A list of ingredients beginning with the item weighing the most, and continuing to the item weighing the least.
The net weight of the contents, not including the packaging.
Storage or cooking instructions when necessary.
The packer's or distributor's name and address, and whether the company named is the packer or the distributor.
The mark of inspection. If the product is imported, the name of the country of origin must be on the label. All imported products must be inspected for wholesomeness.

TURKEY TIME

IN GEORGIA

Since the first Thanksgiving, turkey has been the favored main course for

Thanksgiving dinner. And yet, if the first settlers of America came to enjoy

Thanksgiving dinner with us today, they probably would not recognize the bird

we were carving.

The wild, bronze and multi-

colored, probably tough and boney,

turkey enjoyed by the Pilgrims cer-

tainly cannot be compared to the

meaty big breasted white turkeys

most of us will serve as main fare

Thursday.

The turkey is a native American

game bird which is related to the

pheasant. There are a number of

varieties.

Wild turkeys were once un-

believably numerous throughout the

United States and Central America,

living in the forests in small flocks

and coming out to the clearings only

to feed.

They are fast on their feet and

when pursued they run rather than

fly, although when they must fly,

they fly high and fast, at speeds

estimated at fifty miles per hour or

more.

The Indians domesticated

turkeys long before the arrival of the

early settlers. The Spanish

conquistadores took birds

The squash man advises that the butternut is bottle shaped, buff color, weighs two to four pounds, and is eight to ten inches long; the
cushaw is 20 inches long, white with green stripes, and weighs 12
pounds; and the sugar pumpkin is eight inches long, dark orange, and weighs five pounds.

Carol Shaw, an Abraham Baldwin College coed, from Colquitt was chosen as Miss Agriculture at the Georgia Agricultural Queen competition held recently in Atlanta at the Southeastern Fair. Carol also reigns as the 1971 Georgia Cotton Queen.

Dear Editor: A few weeks ago on a children's T.V. program they had a
doll, stuffed type, that was really 3 in 1. It was red riding hood, turn it upside down, pull the skirt down and it was the bad wolf. Turn it around and you have the grandmother.
I wonder if any of your readers have a pattern for this and would share it with me.

ORANGE BUBBLE LOAF

1 pkg. hot-roll mix 3/4 cup sugar 2 teaspoons grated orange peel 1/4 cup butter mixed candied fruits walnuts or almond halves Prepare roll mix and let rise according to package directions. Form dough in 1 inch balls. Mix sugar and orange peel. Dip balls in butter, then roll in sugar mixture. Grease a ring mold, tube pan, or loaf pan. Loosely fill pan 1/2 full with layers of balls. Let double. Bake in moderate oven (375 degrees) 15 to 25 minutes or till done. Invert on rack. Trim with candied fruits and nuts.

The beautiful grasses of the South are predominantly Cynodon dactylon, otherwise known as wire grass, Bermuda grass, Bahama grass or scutch. This hardy lawn grass is commonly used throughout Georgia because it is extremely drought resistant and produces a good turf if mowed and fertilized regularly.
Bermuda grass is a native of the Old World, probably India, but is now common in all tropical and subtropical climates. It will grow in almost any soil, will withstand flooding and drought, but it is intolerant of dense shade.
Another disadvantage is that this grass often spreads into flower beds and other cultivated areas. The only cure for this is pulling the culprit up by the roots.
Common Bermuda or wire grass can be established easily by seeding. Two pounds of hulled seed per 1,000 square feet in late spring or summer will produce a sturdy stand of grass from April to November. For a green cover during the winter months, you can overseed common ryegrass each fall on the common Bermuda. If you do overseed, be sure to cut the ryegrass closely in early spring so the bermuda will not be shaded out.
Wire grass is a perennial meaning that it will come up by itself every year; it reproduces by seeds, underground rootstocks and stolons. Small sections of rootstocks root readily at the joints and give rise to new plants.

Traditional Fruitcakes

For The Holiday Season

Fruitcakes are traditional Thanksgiving and Christmas cakes. Cakes rich in fruit were baked just for the holidays as it was a delicacy that could only be afforded once a year. The South seems to have picked up the custom more than other parts of the country and consequently a variety of favorite recipes have been handed down through generations. We are featuring several favorites we thought you would enjoy:
BLACK FRUIT CAKE

1 1/4 Ibs. flour 1 1/4 Ibs. sugar 1 Ib. butter 14 eggs 3/4 cup of Puerto Rico molasses 3 teaspoons of soda in 1 Tablespoon
of water 3 Tablespoons of cinnamon 3 Tablespoons allspice 1 Tablespoon mace 1 Tablespoon grated nutmeg

1 teaspoon cloves 1 Tablespoon vanilla 1 cup of grape juice or black coffee 6 Ibs. raisins 2 Ibs. currants 1 1/2 Ibs. citron 1 Ib. dates 1 Ib. almonds 1/2 Ib. crystallized cherries 1/2 Ib. of candied orange and lemon peel mixed

Prepare all fruits the day before, dredge with extra flour. The raisins should be cut in half. The currants washed and dried. Almonds blanched, dried and chopped. All fruit cut into small pieces to suit the individual taste. The citron in thin slices about as large as the thumb. Make cake as any pound cake, add spices to flour; mix soda and water into molasses and add to the batter. When all ingredients are in, add the floured fruits, mix thoroughly and fill pans, leaving an inch or little more for rising. Bake in slow oven 250 degrees, 3/4 of an hour for every pound. This makes 14 pounds. It is best to bake in two pans, having pans deep with tube. Grease and line with two pieces of brown paper.

GOLDEN FRUIT CAKE

1/2 cup butter 1 cup sugar 1/2 teaspoon grated lemon rind 1 1/4 cups sifted all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup milk 1 cup each golden raisins and chopped dates

1/4 cup chopped citron 3/4 cup candied cherries and pineapple 3/4 cup chopped blanched almonds 1/2 cup shredded coconut 3 egg whites, stiffly beaten Glaze Split blanched almonds, candied cherries and citron for decorating

Cream butter and sugar until light and fluffy. Add lemon rind. Sift dry ingredients, and add alternately with milk to creamed mixture. Add fruits and nuts; mix well. Fold in egg whites. Pour into greased and waxed-paper-lined 9x5x3 inch loaf pan. Bake in preheated slow oven 275 degrees for 2 1/2 hours or until done. Cool slightly, remove from pan, and peel off paper. Just before serving spread glaze over top of cake, arrange split almonds, cherries and citron in flower design.

GLAZE

Combine 1 jar strained apricot and apple baby food with 1/4 cup sugar. Cook, stirring until mixture thickens. Makes about 1/2 cup.
POOR MAN'S FRUIT CAKE

1/2 cup shortening 1 cup sugar 1 cup dried apple sauce unsweetened, strained and cold 1 cup raisins cut in half 2 cups flour 1/2 cup nut meats 1/2 cup citron

1 egg 1 teaspoon cinnamon 1 teaspoon nutmeg 1/2 teaspoon cloves 1/2 teaspoon soda in a Tablespoon of water 1/2 teaspoon salt

Cream sugar and shortening together, add egg. Sift spices and salt into flour. Use a portion of extra flour to dredge the fruits. Mix all together well; add soda last. Put into a greased paper lined pan, bake in a moderate oven 45 to 60 minutes. The nuts and citron may be left out if desired to make less expensive. If much fruit is used, bake
slower.

OLD ENGLISH FRUIT CAKE

1 cup butter 1 cup brown sugar, packed 4 eggs, unbeaten 1/2 cup currant jelly 1/4 cup molasses 1 Tablespoon flavoring 11/2 cups mixed light and dark raisins 1 cup currants

3/4 cup chopped dates 1 pound mixed candied fruits 1/2 cup halved candied cherries 2 cups coarsely chopped walnuts 2 1/2 cups sifted all purpose flour 1/2 teaspoon each of salt, baking soda, cinnamon and ginger 1/4 teaspoon each cloves and mace.

Grease two 9x5x3 inch loaf pans; line with foil extended 3/4 inch above tops. Mix raisins and currants with dates and candied fruits and walnuts. Resift flour with soda, salt and spices over fruit mixture; mix well. In another bowl, cream butter with sugar until fluffy. Beat in eggs, one at a time, then jelly, molasses and flavoring. Pour over fruit mixture and stir until well blended. Pour into lined pans. Bake at 250 degrees for 3 to 3 1/2 hours or until no mark is left when top is lightly touched with finger. To prevent tops from browning and getting dry, lay a piece of foil over pans last half hour. Cool in pans; turn out and wrap in foil. Store in refrigerator. Before serving add this traditional English topping of desired.

ENGLISH FRUITCAKE TOPPING

2 eggs 3 cups sifted powdered sugar salt 1/2 teaspoon flavoring

1/4 teaspoon lemon juice 1/4 teaspoon vanilla 2 1/2 cups very finely ground walnuts

Combine eggs, sugar and salt in top of double boiler. Cook over boiling water, beating constantly, 8 to 10 minutes, till light and fluffy; cool. Stir in flavorings and walnuts. Roll out on waxed paper, cover with additional powdered sugar, and cut to fit top of cake. Spread top of cake with a little jam and lay topping over it. Frost cake sides and topping with a butter cream frosting flavored with coffee. Decorate with
walnut halves.

Dairy products make ideal cosmetics. For sallow skin, apply a buttermilk mask and allow it to set for 20 minutes before rinsing. Yogurt acts as a bleach and should be applied before bedtime and left on all night.
