The first of this month, I had the opportunity to attend the National Association of State Departments of Agriculture meeting held in Miami, Florida.
I believe this association can and does render a real service
to Georgia farmers as well as the agricultural interests of the other 49 states as there are many programs, such as eradication efforts, which cannot be accomplished without cooperation and joint effort.
DECENTRALIZATION
One important topic of discussion at the meeting was the decentralization of many of the activities of the United States Department of Agriculture. The federal department has indicated its intention of turning over many of its programs to the local State Departments of Agriculture. I feel this is a good step as often the problems of one state cannot be fully understood or solved as rapidly through the Washington office as they could through the local state offices. Therefore, I recommended that a committee representing each section be appointed to review these proposals and work towards early implementation.
BANGS DISEASE
It was also recommended at the convention that all states engaged in Brucellosis eradication (Bangs disease) work towards complete eradication by December of 1975. Georgia achieved modified-certified brucellosis free status several years ago and we already have about 45 counties that have achieved complete eradication. It is, therefore, my goal that Georgia achieve Brucellosis free status prior to 1975 as this disease costs our livestock farmers many thousands of dollars annually. There were 13 other resolutions passed at the meeting concerning the animal industry of our nation which I believe will be of direct or indirect benefit to the state's livestock farmers.
PLANT INDUSTRY
As a member of the plant industry committee, I recommended that cytoplasm of hybrid seed corn continue to be a part of the labeling requirement as Southern Corn Leaf Blight continues to be a threat to the nation's corn . production. Several other resolutions were passed to protect the nation's food supply and to inhibit the spread of destructive insects.
In addition, I supported a resolution to continue the Fire Ant Eradication program.
ENVIRONMENT
The nation's Commissioners of Agriculture also made recommendations concerning the quality of the

Beef Grades Lures For Armyworms

Tell Quality
Beef grades are a measure of quality. But because beef can vary so much in quality, it takes eight grades to cover the range.
The grade preferred most by consumers is USDA Choice. It is the grade most widely sold. The three lower grades -- USDA Utility, Cutter and Canner are seldom, if ever, sold as retail cuts.
When making beef purchases, look for the purple grade shield. Federal meat graders who place the USDA grade stamp on meat are highly-trained and grade only whole carcasses or wholesale cuts.
Do not confuse the purple grade shield which identifies quality with the round purple inspection stamp which certifies wholesomeness. This round symbol simply means the meat has been inspected, that it came from a healthy animal, was processed in a sanitary plant, and is edible. Briefly, this is what to expect from the top five grades:
PRIME is
USDA the ultimate in tenderness, jui-
PRIME ciness and flavor. It has abundant marbling (flecks of fat within the lean) which enhances both flavor and juiciness.
CHOICE is
USDA quite tender, juicy and flavorful. It is
CHOICE \ slightly less mar] bled than Prime, but still very high quality.
GOOD pleases
USDA lots of thrifty consumers. It is
GOOD relatively tender, but lacks some of the juicy, tender flavor of higher grades because of less marbling.
STANDARD
USDA has a high proportion of lean
STNDRD meat and little fat. Because of this, the flavor is mild and most cuts will be somewhat dry unless prepared with moist heat.

COMRCL kposed to the 'preceding top four grades which are restricted to young animals. It can have abundant marbling such as Prime, but because of its maturity, requires long, slow cooking with moist heat to make it tender. Regardless, of your selection of grade, all provide the same nutritional value. Differences are in flavor, juiciness, cooking methods and price.

May Lead To Control

Agricultural research scientists are constantly working to find new and better methods for controlling insects which damage our food and fiber supply as well as the aesthetic nature of our environment.

The southern armyworm has long been an enemy of lawn grasses, vegetables, corn and other crops. Scientists have recently discovered how to lure the worms into traps by

using compounds the female of the species employs to lure the male armyworm.
This method could help prevent environmental pollution if it proves effective in traps for detection and perhaps control.

Early detection could reduce both the amount of the insecticide and number of applications needed to combat these serious pests.

Southern armyworm chews its way through the leaf of a bean plant. The insect, a species of climbing cutworm, produces four or more generations a year and feeds on buds, leaves and fruits of vegetable, orchard and vineyard crops.

The southern armyworm's two sex attractants were isolated, identified and synthesized by a team of four scientists. Hundreds of insect species are believed to produce sex attractants, but the lures of only 30 species have previously been isolated, identified and produced synthetically.
The two lures were identified from extracts taken from 305,000 female moths.
In laboratory tests, the synthetic lures produced the same response by males- as did the natural lures. Field tests revealed a different response, however. Although each lure alone attracted males in the laboratory, it excited but did not attract them to traps in field tests. However, males were attracted to traps which were baited with both lures combined.

Further tests must be made to determine the potential of the lures for use in surveys or control of the southern, armyworm.

Water Vital

Scientists count and remove moths which were attracted to the female's sex pheromones (sythesized) and trapped on the side of a sticky tubular lure.
Sweet Potato festival
The Eleventh Annual Georgia Sweet Potato Festival will be held in Ocilla on November 19. A day of fast moving activity is planned with the election of a Georgia Sweet Potato Queen being the highlight of the day.

To Turkeys
Water is one of the most important nutritional parts of a turkey's diet.
Southern Extension poultry specialists explain that water is a physical part of the body cells to which it gives substance. It serves as a cushion for the body organs, lubricates joints, transports nutrients and waste products and is also an activator and a reactant in many of the metabolic processes.
Many factors influence the water needs of a flock of turkeys. The birds' rate of growth, the quantity of salts in the feed and the physical composition of the feed are some of them.
Anything which inhibits normal growth rates, such as the presence of disease, will change the level of water consumption. The amount of water the birds use is a good barometer of the flock's performance.
Therefore, the poultry specialists recommend equipping all buildings where turkeys are housed with a water meter so the daily water consumption of the flocks can be monitored.

Dear Editor: I noticed the bird houses constructed from detergent jugs
submitted by a gentleman from Albany, Georgia, and it gave me the idea that it would be nice to pass the idea of the "Homemade Pecan Pick Upper" to anyone having the need for such.
Material as follows: Handle, like broom or mop. Tin can, like quart drink can or smaller with both ends
removed Rubber strips, like from an old inner tube, cut 3/16" wide,
more or less. Two wood screws, round head, 1/2 inch or less with 2
washers to fit screws. Fasten handle to can inside let handle lack 1 inch from touching bottom. Punch holes in bottom rim of can with 8 penny nail for rubber strips to be placed 1/2 to 3/4 inches apart. Enter strip from outside can - tie knot inside can to secure strip and stretch strip to opposite side, entering can from outside, tie knot so as to make strip secure and letting strips rest on the edge of can. Usually this takes 4 strips across the can. Pecans slip between rubber strips and are trapped inside can.

EGG NOG BAVARIAN
4 eggs, separated 2/3 cup sugar 1/8 teas, salt 2 cups commercial egg nog 2 envelopes gelatin 2 teas, rum extract 2 cups whipped cream
Beat egg yolks slightly in the top of a small double boiler; stir in 3 Tablespoons of the sugar, salt, and egg nog. Sprinkle gelatin over. Cook, stirring constantly over simmering water for five minutes or until gelatin dissolves and mixture thickens slightly and will coat a spoon. Stir in rum extract. Strain into a large bowl, set bowl in larger bowl tightly filled with ice and water to speed setting. Chill at room temperature, stirring often just until as thick as unbeaten egg whites.
While mixture chills, beat egg whites until foamy and double in bulk. Add remaining sugar one Tablespoon at a time, beating all the time until sugar dissolves and meringue stands in firm peaks. Beat 1 1/2 cups cream until stiff. Fold meringue, then whipped cream into thickened gelatin mixture until no streaks of white remain. Spoon into 8 cup mold and chill overnight.
To unmold, run a sharp, thin blade knife around edge of mold, then dip mold very quickly in and out of a pan of hot water. Cover mold with serving plate. Turn upside down, gently lift out mold.
Beat remaining 1/2 cup cream until stiff. Spoon in puffs on top of mold. Garnish with chocolate curls if you wish. For the holidays, decorate mold with red and green cherries with stems. You can put whipped cream in a pastry tube and decorate the mold if you wish.

ROASTED WILD TURKEY
1 turkey, 8 to 10 pounds ready-to-cook salt and pepper 8 cups partially dry bread crumbs 3/4 cup finely chopped celery 1/2 cup chopped walnuts 2 to 3 teas, sage 1 teas, salt 1/4 teas, pepper 1 1/2 cups chopped onion 1/4 cup butter or margarine
Sprinkle turkey inside and out with salt and pepper. Combine bread, celery, walnuts and seasonings. Cook onion in butter or margarine until tender, but not brown; pour over bread-mixture. Add the water and toss lightly. Spoon stuffing lightly into body cavity. Put remaining dressing in a greased casserole. Cover and bake in oven with turkey during last 30 minutes of roasting time. Truss bird. Cover breast with bacon slices and cheesecloth soaked in melted bacon fat. Place turkey, breast up, on rack on roasting pan. Roast at 325 degrees F. 20 to 25 minutes per pound or until tender, basting frequently with bacon fat and drippings in pan. Remove cheesecloth, skewers and string. Serves 8 to 10.

CURRIED FRUIT BAKE

Preheat oven to 325 degrees. Drain fruit, dry well on paper towel. Arrange in 1 1/2 quart casserole. Melt butter, add sugar and spices and spoon over fruit. Bake 1 hour uncovered. Refrigerate overnight. Next day, 30 minutes before serving, reheat casserole of curried fruit in 350 degree oven 30 minutes. Serve warm.
Place a cherry in each peach half. Warm a bottle of lemon extract in hot water and sprinkle 1 teaspoon of the extract over the hot fruit. Ignite the fruit for a beautiful effect. Serves 12.

Anyone who has ever taken a walk in the woods, a stroll down a country road or attempted to remove the "burs" from an animal's coat, is all too familiar with cockleburs. Cockleburs are not only a problem to farmers but also every four-legged creature with a furry coat. These coats attract the spiney burs and it is often necessary to cut out a mat of hair to relieve the animal. A cow's tail filled with burs is just about the most deadly fly-swatter known to man.
The plant itself, that nobody ever seems to remember, is an annual with a deep tap root. The stem is erect and somewhat hairy. It is ridged and branched in the upper part and often dotted with red spots. The leaves are rough and hairy, somewhat heartshaped, with jagged edges and generally cut into three lobes. The flower heads produce pollen but it is the seed or bur that we are most familiar with.
Although the seed head gets more attention as the general nuisance, it is the young cocklebur plant in the tender 2-leaf stage that is really dangerous. It contains a poisonous glucoside that is fatally
poisonous to sheep, cattle and particularly hogs.
2-4-D is generally recommended to rid the area of cockleburs, except in cultivated crops. In crops, you should check with your county agent for instructions for spraying. - Valera Jessee.

4-H COSMOPOLITAN CUISINE
Girls and boys enrolled in 4-H food - nutrition projects are becoming world travelers without leaving their own homes. Using manuals currently available, they are learning about cuisines popular in various areas of the world. The youths learn to prepare a tamale loaf from Mexico, sauerbraten from Germany, fisk med citrpnsauce from Scandinavia, minestrone from Italy and sukiyaki from Japan as well as other national favorites. Members find their culinary travels fun and educational and an easy way to learn the basics of good nutrition, reports the Cooperative Extension Service.

I have two cows that give plenty of milk but there is hardly any cream. I am feeding them hay and dairy feed. What can I do to get more cream?
A. B., Odum Dr. Andrews, State Veterinarian, advises that if this has been a con stant situation, it .may be normal for them to give abundant milk and not much cream. If they were giving more cream previously, it may be possible these cows have a vitamin or mineral deficiency. He suggests that you contact your local veterinarian and ask if he would suggest giving these cows injections of vitamins A, D, and E, which might help increase the amount of cream their milk might contain. A good mineral supplement given free choice might also help.

Mr. C. D. Spivey, Extension Horticulturist, advises that the damage on your apple leaves was caused by plant lice (aphids). Spray your trees ac cording to the spray schedule we mailed you. He advises that a three year old tree is still in the juvenile stage unless it is a dwarf or semi-dwarf tree. However, severe damage by insects or diseases will prevent adequate growth and development for the tree to bear. Flower buds are developed this summer for the 1* 97* 2* crop of fruit.
I am sending you a leaf from my rubber tree and would like to know what is wrong with it. Why are the leaves falling off?

Keep your plant out of drafts. Your trouble is probably over-watering. It should be watered only when the soil becomes slightly dry.
