Developing Our
Beef Industry
It is time for us to develop a comprehensive program for the beef industry in Georgia. Too long we have allowed this great industry to grow like "Topsy".
It is now in a position to realize it's full Dotential here in
Georgia. We can't afford to let it flounder and become more fragmented.
The time is here for all of us to work to-, gether. This ineludes the retail stores who sell to the housewife, the processors who buy from the producer and sell to the retail stores, and the producer who's job it is to produce and fatten cattle. I have reason to believe that these people are ready to help one
(Our guest columnist this week is Frank Welton, Executive Director, Georgia Agribusiness Council, Inc., 19 Hunter Street, S.W., Atlanta 30334.)
another in promoting this industry here in Georgia.
We are presently developing a line of communication that should provide a free flow of information and understanding between interested groups.
Once we get these communications lines working we will be able to more readily identify problems within the industry and work toward their solution.
There are many outside economic and logistical pressures being exerted on the growth of the Georgia cattle industry. We must identify and understand these pressures and find ways to overcome them or use them to our advantage.
The potential is here as evidenced by some facts we should all be aware of. Nowhere else in the country can you produce an 800 pound beef animal for less per pound than here in Georgia.
The southeast is well established in the brood cow business. We have an abundant supply of forage for feed that allows us to produce beef economically. Georgia is located in the center of an expanding market.
We have the educational and research facilities, adequately staffed, to carry the program to all segments of this dynamic industry. Now is the time to take .advantage of a great opportunity.
CLEAN WINDOWS
Ever tried washing your windows with old-fashioned cornstarch? Georgia Extension Home economists recommend this method. Put a half-gallon of warm water in a plastic waste basket and add onefourth cup of cornstarch and stir it up. Then just wash away. This mixture will cut dirt faster and shine the windows.

NUMBER 44
Food Committee
Appoints Members
Commissioner of Agriculture Tommy Irvin has announced that Raymond Summerlin, Director, Consumer Protection Division, Georgia Department of Agriculture, has been appointed a member of the seven man Food Standards Committee of the Food and Drug Administration.
Mr. Summerlin's appointment will run until June 30, 1975. This is the first time that a committee member has been appointed from Georgia.
Food Store Chain
Receives Award
The Independent Food Store of The Year Award for 1971 was presented to the M & M Super Market chain of Savannah in recognition of its "outstanding job in behalf of consumer service and consumer protection" on October 25.
The award was made by Commissioner of Agriculture Tommy Irvin.
The independent three-store food chain is owned by Norton Melaver and sisters, Miss Annie and Miss Millie Melaver of Savannah. Bob Brown, meat supervisor for all three stores, accepted the award in behalf of the Melavers.
Chicken Talk
Chickens talk! Did you know that? They have a limited "vocabulary," but can communicate through sight and sound.
Studies show that chickens make about 20 different sounds, each with its own special meaning. The birds don't combine these sounds, to make a complex language as humans do, but considerable information is conveyed by the postures assumed or movements made by chickens.
Field Dressing Best
For You And Game Conservation of game through wise use is the goal of hunters in Georgia. Through conservation, hunters prevent waste of meat of animals which they shoot during the hunting season.
A little extra effort in the field will guarantee many hours of pleasure at your dinner table. One of the choicest of all meats is venison a properly dressed deer can supply a normal Georgia family with enough steaks, chops, roasts, and stew for more than a month.
BE PREPARED
Be prepared in advance to bring home a deer, whether you actually succeed or not. Wise deer hunters take along a sharp knife, a piece of cheesecloth
or a clean rag, a 12-inch piece of string, a 12-foot piece of quarter-inch rope, and their hunting license.
If you are a resident hunter under 16 years of age or a holder of a honorary hunting license over 65 years of age, you can obtain two free deer tags from any office of the State I Game and Fish Commission bei fore going hunting.
DRESSING OUT
Tag the animal as soon as you kill it. A deer can be effectively field dressed while merely laying on the ground, preferably with the head uphill on sloping ground. Bleeding by cutting the jugular vein in the neck is not necessary as most fatal wounds sever enough arteries and veins to provide adequate bleeding.
Slit open the carcass from crotch to briskett, point between the forelegs, gently, cutting with the tip of -the knife just under the skin. Be careful not to puncture the intestines or the paunch. In all operations prevent hair from coming in contact with the meat. Cut around the anus and sex organs, so as to loosen the entrails.
REMOVING INTESTINES
If the bladder is full, it should be tied off with a piece of string. The large intestine can easily be separated from the pelvis with your frngers. Work the

Federal Seed Act
Violators Fined
A judgment of $3,000 has ended a case against Green Brothers Seed Co., Nashville, Tenn., for violations of the Federal Seed Act. A judgment in the amount of $ 1,925 was entered against Michael-Leonard, Inc., Grant Park, Illinois for violations.
Officials of this -U. S. Department of Agriculture agency said the cases involved shipments of seed into Alabama, Georgia, North Carolina and Virginia. These violations were found when Georgia Department of Agriculture inspectors collected samples to be tested in the Department Seed Laboratories. The violations included the presence of noxious-weed seeds in excess of the amount permitted under the act; failure to attach labels to each bag; and false or incomplete labeling as to the shipper's identity, the germination and the composition of the
seed, the presence of noxious-weed seeds and the representation that the seed was a "lot" of seed. One of the shippers also did not keep complete records as required.
The judgment against Green Brothers Seed Co. was entered Aug. 30 in the LJ. S. District Court for the Middle District of Tennessee. The Michael-Leonard, Inc. judgment was entered September 10.
The Georgia and North Carolina Departments of Agriculture, the Alabama Department of Agriculture and Industries, and the Virginia Department of Agriculture and Commerce cooperated in making the investigations.
The Federal Seed Act is a truthin-labeling law designed to protect the farmers and other consumers in the purchase of seed. It requires, in part, that agricultural seed be labeled truthfully and completely.
Record Crop
For Soybeans
Georgia's soybean harvest is in full swing and while the state doesn't have 'beans running out its ears, it is gathering a record crop.
In fact, soybeans seem well on their way to setting five records this year. Acreage, yield per acre, total prpduction, price and value are likely to be higher than ever.
No doubt about the acreage, says James E. Jackson, right, Extension agronomist at the University of Georgia, and one of the soybean's best friends.
There are 639,000 acres this year 20 percent above 1970. Only one Georgia crop, corn, outranks soybeans. 'Beans have long since passed peanuts, cotton and tobacco. Georgia farmers are learning how to grow soybeans, too. Evidence of this is the 25-bushels-per-acre average yield. This record also means record total production about 16 million bushels.

We Get Letters
Dear Editor: The new MARKET BULLETIN is a weekly source of in-
terest to me. I thoroughly enjoy it. I'm clipping the "What Is" items to make a scrap book. I also save and file many of the recipes and other items that will be of use for future reference.
Will you please ask the readers for a recipe for pecan roll candy? The recipe I have in mind is made with graham crackers. I think it contains corn syrup and probably condensed milk.

Dear Editor: While visiting in South Carolina recently we heard of an
item called "Stickles" which was supposed to be very good to eat. No one seemed to know the recipe. I would appreciate hearing from anyone who can tell me how to make "Stickles".

What
How Cnicus benedictus came to be known as blessed thistle is a mystery. The only "blessing" this plant is likely to receive is a good "blessing out" when it is found in a grain field.
This winter annual is also commonly called Our Lady's thistle or sweet sultan, all attractive names for a problem plant. To some, however, blessed thistle may be very interesting. The stems of the plant are 18 to 36 inches high and covered with fine white hairs; the leaves are deeply cut with spines and covered with sticky hairs; the yellow flowers of the plant are embedded in egg-shaped heads with sharp barbs radiating outward and the seeds are cylindrical in shape, slightly bent, heavily ribbed and topped with many stiff bristles.
To control the tap rooted annual use seed free of blessed thistle seed. Plow and harrow in early spring to kill plants already established and to encourage remaining seeds to sprout. Mow infested fields before seeds form.
Forage Testing In Athens, Ga.
The Georgia Department of Agriculture laboratories has worked for many years with the Dairy Extension Service, Athens, in carrying out the Georgia Forage Testing Program. In this program silage and hay samples are submitted by county agents to be tested for certain feed information.
The chemical findings of the lab are turned over to the Extension Service in Athens where total digestible nutrients are calculated, ration formulations made, and other feed information is discerned. These findings are then given to the farmer for his information. This is a free service of the Department of Agriculture and the Extension Service.
Analytical work such as soil analysis and plant tissue work is done by the Soil and Plant Analysis Laboratory, University of Georgia, Whitehall Road, Athens 30601. The cost for this work is three dollars. Checks should be made payable to the Soil and Plant Laboratory. See your county Agent for further details on both of these services.

Field Dressing Best
(Continued From Page 1)
^^
membrances loose from the front and back, then pull the intestine through
the pelvic girdle on the inside.
The whole intestinal system can now be rolled or lifted out of the body
cavity.
CLEANING CHEST CAVITY
Next, the diaphram dividing the stomach cavity from the chest cavity is removed by cutting it next to the ribs. Reach as far up into the chest cavity as possible and cut the windpipe out. Now pull out all the chest organs, including the lungs, heart, and liver. Lay the heart, kidneys, and liver aside for immediate use as camp meat.
The body cavity should be wiped as clean and dry of all blood and loose tissue as possible, preferably with a clean piece of cheesecloth or a clean rag.
If the bullet passed through the paunch or intestines, it may be necessary to rinse the body cavity with clean water. If this is done, be sure to carefully wipe the cavity dry as soon as possible and protect the carcass from further wetting to avoid spoiling the meat.
The heart, kidneys, and liver may now be placed back inside the deer for easy carrying.
COOLING
Now that the deer is dressed, it's time to get it to the road or to camp. The safest and easiest way is to drag him, especially if you're
hunting on open or bare terrain by yourself.
Once you reach your destination, your deer should be hung immediately by the antlers or front legs and his sides propped to continue the cooling process. Meat spoilage frequently occurs while the carcass travels from the hunting area to its final destination at home or in a freezer plant.
For a booklet giving full instructions on dressing your deer as well as skinning, butchering, and saving the trophy, contact the Game and Fish Commission, Washington-Trinity Building, Atlanta 30334.
Remember that hunting regulations are designed to protect our balance of wildlife and to assure that the population of deer and other wildlife will not be depleted or become too dense for survival. We urge each of you to be aware of these hunting regulations and to follow them carefully.
A GOOD SPORTSMAN. . .
Observes the game laws and helps enforce them. Is careful in handling his gun so as not to endanger the lives of others. Does not leave a wounded animal in the woods to suffer and die. Does not let wild meat spoil or go to waste. Respects the rights and property of others. Is careful not to let his match, campfire, or warming fire start a woods
blaze and thus destroy the homes of our wildlife. Leaves a clean camp and a dead fire.
Straight Line!
Please tell me what will get rid of fishing pole reeds. They are about to take over my place.
Mrs. N. B., West Green
The pole people advised that you should cut down the reeds in the early fall and spray any new shoots in the spring with Dalapon. Dalapon has a very short residual life and will not harm the soil.
***
What will get rid of crawfish? They are in an area near my well. B. C, Dawsonville
The Game and Fish Commission advises that you might pour lye, the kind used in making soap, into the burrow. However, as they are near your well, you should use extreme caution in applying the lye.
***
I have a half collie and half German shepherd dog. A friend told me he
had a German shepherd that was as mean as a rattlesnake. He told me he fed
it a teaspoon of gunpowder every day to make it mean. Is this safe?
R. W., Toccoa
Dr. Andrews, State Veterinarian, said he had heard of this being done,
but doubted if it was effective. Proper training would be more important
towards making your dog a good guard dog than anything that you might
feed him.
***
I have grown what is called hat squash. Can these be eaten or are they for decorative purposes?
Mrs. D. B., Toccoa
According to Mr. Elmo Winstead, State Seed Analyst, your squash is probably the variety known as Turk's Turban. It is considered primarily
as an ornamental squash but is edible. However, it is considered to be of
poor quality as a food.
***
Can you tell me how to get rid of weevils (adults and larva) from about three gallons of rice, without losing the rice?
D. G., Smithville
Heat the rice in an oven at 135 to 150 degrees F. for five minutes or place it in a freezer at 0 degrees C. for seven days. Either of these will kill the weevils without damaging the rice.
