The County Agent,
An Interpreter
The County Agent - through the years has probably been the most widely known man in agricultural circles and one of the key men responsible for America's ability to produce agricultural commodities in abundance. This has meant the United States has been able to turn most of its manpower towards production of goods and services for the highest standard of living found in the world.
The County Extension agent just didn't happen. He was the product
of a new educational system devised by our forefathers to take our research data and technical terms and put them in layman's language.
The county agent became the interpreter who took the investigative results of the research stations and the universities and made it available to the person who was producing the agricultural commodity. In 1914, with the passage of the Smith Lever Act the county agent and his co-worker, the home demonstration agent (now called Extension home economist) were given official status in a new type of legislation involving the U.S.D.A., the Land Grant University, and the county cooperating boards.____
(Our gueat columnist this week is Doug Strohbehn, President, National Association of 'County Agricultural Agents, Fulton County Courthouse, Atlanta. 30303.)
In Georgia, as well as the other states, the county Extension Agent's job is to help people help themselves. He is the informal educator and the liaison between the people in the county and the Land Grant University (The University of Georgia).
Through the years the role of county agent has been enlarged from a production specialist to that of specialist in working with all the people in his home county to help them develop their program.
His primary goal today is to develop the total potential of the county through agricultural production and marketing, community and rural development, the 4-H program, and many others. To assist him in this job is a state staff of specialists in numerous fields that are available for assistance to do any job that comes his way.
Georgia has one of the best Extension staffs in the nation. And, it is one of the few states in the nation that includes in its state (Georgia Association of County Agricultural Agents) membership all of the county Extension agents, District and State staff personnel.
Our membership of 343 ties us with Texas as the largest state organization in the 5,500 members of National Association of County Agricultural Agents.

"First I am frosted, then I am beaten, then I am roasted, then I am eaten".

The answer to this childhood riddle is the chestnut, thought of today as a

A weed is commonly defined as any plant growing out of place. This

definition may be further expanded to indicate that a weed is an unwanted

plant that presents difficulty in cultivating desirable plants, a hazard of

poisoning livestock, or a potential for decreasing the value of plant and animal

products, whether through increased cultivation or harvesting costs, or through

yield and quality reduction.

Storing Meats be able to recognize a wide variety
of plants.

A poultry scientist with the University of Georgia Extension Service has received $6,000 in research grants to study a problem which costs the U. S. egg industry an estimated $60 million a year.
O. W. Charles will use the money for an in-depth look at factors influencing egg shell strength.
The $6,000 was awarded in three separate grants $2,500 each from the Southeastern Poultry and Egg Association and the Georgia Egg Commission, and $1,000 from the National Feed Ingredient Association.

Effective weed control is dependent upon this ability to recognize or identify plants so that you can choose the appropriate cultural practices and herbicides to selectively control weeds.
There are more than 200 persistent weed species in Georgia. About 100 of these species occur as common troublesome weeks, 27 species are listed as noxious weeds.
Due to the many letters we have received regarding weeds and their identification and control, we have this week begun a series in our "What Is" column featuring noxious weeds of Georgia.

Many meat items are lost after purchasing. To avoid this, store the products properly and make sure they are properly cooked.
Cook beef to rare, medium, or well-done.
Cook lamb to medium or well-
done. Always make sure pork is cooked
to well done. Cook poultry thoroughly all at
one time; never partially cook and store for further cooking later.
If stuffing is cooked inside the bird, make sure the center of the
stuffing is fully cooked.

PICKLE POWER
Pickles are packing a lot of power right now in the vegetable market. They are one of the top percentage gainers among processed vegetables. Pickles' popularity skyrocketed 57 percent from the late 1950's to the late 1960's as shown by the increase in cucumbers grown for pickles. Their growth is among the highest of all vegetables for processing. The reason is the large expansion enjoyed by snack foods, plus an added push from the industry itself.

Cyperus rotundus or nut grass is not really a grass at all but sedge characterized by a triangular branching slender, smooth stem and three-angled leaves. It is a perennial and is as reliable as taxes every spring.
This plant is usually 6 to 18 inches tall and reproduces by seed and underground rootstocks. Seeds are produced from August through November and self-sow readily. The flower head is branched, each branch carrying several spikelets with brown florets arranged in two tightly packed rows.
The only interest the average farmer has in this plant is how to get rid of it. This is easier said than done as nut grass is stubborn, persistant and apparently enjoys being a thorn in one's side.
Many books will advise plowing with a turning plow or scrape at regular two week intervals from April to October, promising to control the weed after two seasons of this procedure.
There is, however, a more direct approach to the problem fumigate the affected area with methyl bromide, the only known control for nut grass.
The procedure for applying methyl bromide, however, is rather tedious requiring a plastic cover to assure the elimination of not only the surface plant but the underground tubers as well.
For specific instructions on controlling nut grass, contact your local county agent for assistance.
Henderson Honored
Professor H. B. Henderson, chairman of the University of Georgia College of Agriculture's dairy science division, has been honored by the Georgia Environmental Health Association.
The association approved a resolution praising Henderson's work and citing his "outstand-
ing contributions" and faithful service to us all."
The resolution lauded Professor Henderson for having "given unselfishly of his time and talent to the establishing and activation of the Environmental Health Science degree program at the University of Georgia" and having "served the profession diligently as a member of the State Examining Board of Sanitarians."

Can green beans that were put in the treezer be canned? I put two bushels of this year's beans in the freezer and now wish I had canned them. Can you
give any advice? J.I.D., Ellijay

Our Home Economist advises that after the beans have been frozen, they would be quite mushy by the time they had gone through the complete canning process. Therefore*, s*he* does not advise canning them.
Is it possible to remove battery acid from chrome and how? D. P. Griffin

Our State Chemist advises washing the chrome with water several

times, using a little baking soda to neutralize what soaked into the

chrome.

***

I have a horse that eats the bark oft of small trees. Can she be broken

from this habit?

C. W., Douglas

Our State Vet, Dr. J. F. Andrews, advises that this is truly a habit in

some horses although it may be an indication that your horse has a

mineral deficiency. He suggests that you contact your feed dealer and

obtain a good mineral supplement for your horse and see if this will

help him kick the habit.

***

With my husband and sons doing hunting this fall, I am in need of some good recipes for wild game. Can you advise me where to go?
W. B., Tifton Just so happens we have this fantastic new pamphlet, "Cooking Wild Game" which should be just what you need.
* * is
How long after castration of a two year old hog before the meat would be suitable for family consumption?
D. A., Milledgeville In the opinion of Dr. J. F. Andrews, State Veterinarian, the animal
should be kept at least 90 days after castration before being slaughtered
for consumption. It may well be that after that time the meat will be
coarse and tough in an animal of this age, but certainly after 90 days
time the male sex odor should no* l*on*ger be in the meat of this animal.

I would like to save the seed from my foot long cucumbers. Is this possible or should I buy new seed?
Mrs. A. B., Smyrna According to Mr. E. E. Winstead, State Seed Analyst, if the variety which you planted was one such as Polaris, Poinsett, or a similar open pollinated variety, then the seed can be saved from year to year. If the seed was one of the hybrid varieties, such as Gemini, you cannot expect the plant to come back true next year.
***
Can you please tell me where I can purchase an electric caponizing set? I'm especially interested in getting one from a man who makes them in southeast Kansas but don't know his address. Can you find it?
E. S., Eden

These sets can only be purchased from a veterinary supply house through a veterinarian. May we suggest that you contact your vet for assistance.

Plant Analysis

Helps Yields

Nutrient elements must be

available to your crops in a specific

amount and balance if they are to return high profits. Both yield and

quality are lowered if the concen-

tration of an essential element in the plant is too low.

For years, Georgia farmers have

based their evaluation of a plant's nutrient content on its outward ap-

pearance and on soil tests. Today, a

new technique

plant analysis

can determine the specific con-

tent of most elements required by

plants.

By combining plant analysis and soil testing, you can use lime and

fertilizer more efficiently. The result

can mean higher yields, quality and profit.
A special mailing kit must be used for submitting plant tissue samples

to the lab. The kit is available at

your county agent's office. It con-

tains a mailing envelope, sampling instructions and a questionnaire.

Attach a check for $3.00

made payable to the University of

Georgia

to the questionnaire.

This charge covers the cost of the kit, the analysis and the lab's inter-

pretation.

It is important that you answer all

questions on the questionnaire. If

you leave out information, you may get only limited evaluations and

general recommendations.

Pricing Eggs

Egg prices vary by size for the

same grade. The amount of price

variation depends on the supply of

the various sizes.

Generally speaking, if there is less

than a 7 cent price spread per dozen

eggs between one size and the next

smaller size in the same grade, you

will get more for your money by

buying the larger size.

When large eggs sell for 60 cents

per dozen, that's the equivalent of

40 cents per pound

very

reasonable for a pound of high

protein food.
