Milk Continues
To Be Good Buy
Mr. Consumer, did you know?. . . That the average cost of milk in the stores is now 31% less than it was 20 years ago. The price of milk has changed very little but due to inflation price is not an accurate measure of cost.
Figures from the U. S. Department of Agriculture show that in 1950 it took an average of 15.8 minutes of labor to earn enough money to pur-
chase a half gallon of milk in the store. In 1970, these figures show that it only took an average of 10.2 minutes of labor which represents 31% less than in 1950. This shows that
the consumer can be better fed on less of his total income.
The dairy industry has contributed to the total economy of Georgia by a capital investment of over a half-billion dollars, providing 30,000 jobs and contributing $160 million annually to the total economy of the state.
If you consider that each cow represents an investment of $2,700 multiplied by the 1,250 dairies in Georgia which average 110 cows each this comes out to $371,250,000 or over one-third of a billion dollars. There is over $2 million invested in trucks in Georgia just to transport raw milk from the farms to the plants. There is

an additional $192 million or so invested in milk plant operations. The total of these figures represents over $565 million.
The annual contribution is measured by retail sales of $160 million in 1970. The farmer received approximately $80 million at the wholesale level in addition to the value of culled animals sold and other miscellaneous income somewhere in the neighborhood of $15 million.
The costs of producing milk has increased drastically thereby reducing the returns to the dairy farmers on a given amount of milk sold. The farmers would certainly like to have the price of milk to increase along with the price of steel and labor but due to an over-supply situation this could not be done.
Throughout agriculture there are many sad stories of reducing returns to farmers. They have to drastically increase production to keep up with higher costs and investments to replace labor which is not available, thereby causing the over-supply situation.
It's a real dilemma for the farmers and the consumers benefit.

The Georgia Department of Agriculture maintains a General Field Inspection Force throughout the state in order to offer efficient service in each area of the state to the consuming public, manufacturers, dealers and farmers.

Commissioner of Agriculture Tommy Irvin Friday (at press-time for the BULLETIN), following a week's tour of Georgia tobacco markets and following a refusal of the 36 Man Flue Cured Tobacco Marketing Committee to grant more selling time on Georgia tobacco markets, sent the following telegram to all tobacco buying companies that operate on the Georgia/ Florida flue cured belt.
"Impossible to dispose of in belt type 14 tobacco during remainder of season under present sales opportunity.
"Thirty six man Industry Wide Committee has ignored my request for extra selling time.
"I consider it absolutely imperative the Georgia, Florida, Alabama belt be given one half hour extra selling time each sales day during next two weeks and be given two additional four hour sales days Friday, August 20 and Friday, August 27.
"Anticipate your full cooperation and expect immediate reply to this request." Thomas T. Irvin, Georgia Commissioner of Agriculture.

involved in investigating various types of complaints coming from federal, state, and county officials and directly from the general public.
The Field Forces are responsible for the control an'd eradication of all infectious and contagious animal diseases, some of which effect both animals and humans. These diseases cost the producer and consuming public multi-millions of dollars annually. One such disease is Brucellosis. This disease causes female animals to abort and causes undulant fever in humans. Another is Tuberculosis, transmissible to humans from cattle.
A backtagging program is used in salebarns to insure that these animals are disease free. Backtagging consists of placing (glueing) an identifying tag on all cattle sold for slaughter which are of a certain age and class.
An inspector at each slaughter house takes a blood sample from each of these animals and returns these samples along with the identifying number placed on each test tube to the lab where the sample is tested.
Should a reactor sample be found, a traceback'is made to determine who sold the infected animal and the herd of origin is placed under quarantine.
Although Georgia has been
declared a hog cholera free state, such measures as garbage cooking inspections, farm to farm movement inspections and salebarn inspections are still of necessity to keep this status. This is another responsibility

PEACH ICE CREAM 6 egg yolks 2 cups milk 1 cup sugar I/ 4 tsp. salt 2 cups heavy cream 1 tbsp. almond extract 2 cups fresh peaches, crushed & sweetened
In top part of double boiler beat egg yolks and milk with rotary beater. Add sugar and milk with rotary beater. Add sugar and salt; cook, stirring constantly over hot, not boiling, water until thick enough to coat metal spoon. Let cool, then add cream and almond extract. Partially freeze in crank type freezer. Add peaches and finish freezing. Makes 8 to 10 servings.

COCOA CAKE
Heat margarine, corn oil, and cocoa together. Pour over flour, sugar and eggs beating well. Add buttermilk, soda and vanilla. Put in long pan at 350 degrees for 20 to 25 minutes.
ICING Sift together 1 box XXX sugar, 4 tbsp. cocoa. Heat 7 tbsp. canned milk and one stick margarine. Mix with sugar and cocoa; add one cup pecans. Put icing onto hot cake.

PEANUT BUTTER Roast just enough peanuts so that the hulls will slip off easily; remove all the hulls by gently rolling, fanning and screening; grind very fine in any sort of mill, passing thru several times if necessary; and pack in cans, bottles or jars and seal if not for immediate use. Some manufacturers add a little salt and a small amount of olive oil; others do not, according to taste. For small quantities of butter a good meat grinder will answer the purpose. If the nuts are ground fine enough no additional oil will be
necessary. (Recipe taken from an old (1929) recipe book.)

Black-eyed Susan was at one time common only to the West but is now familiar to all regions of the United States. This bright sunny flower is well-loved even by the most discriminating gardener for its outstanding and intense color.
In the past few years, Blackeyed Susan has been hybridized and renamed the Gloriosa-daisy. In this form it has become a popular plant in annual and perennial borders. Still, the simple little Black-eyed Susan has an unequaled charm that even farmers who consider the plant a weed cannot deny.
"Susan's" close cousins in clude the Brown-eyed Susan, Thin-leaved Cornflower, Greenheaded Cornflower and Golden Glow. The Field or White Daisy is not a true native of this country but as an alien it has escaped into fields all over and is very much at home here.
The Black-eyed Susan is easily recognized with its brownblack, cone shaped center surrounded by golden-yellow rays, the entire flower head usually measuring about 2 inches across. It grows in upright clumps about 2 feet tall with the coarse and hairy leaves alternating up the stiff stem.
There is little or no culture involved in growing these plants. They are quite free with their seed and once established in a location you can be certain they will stay around. They prefer dry, poor soil containing a lot of acid. Even though they prefer the bright sun, they can be spotted on the edge of woodlands where there is slight shade.
This drought-resistant flower is an added attraction to any summer garden as they serve well as a cut flower. However, be sure not to plant them too near the corn field. As lovely as they are, they lose their aesthetic appeal to farmers once they start winking at him through the corn stalks.

I have trouble every time I boil eggs. I lose some of the white on every egg. How do I boil eggs?

Fresh eggs do not boil well. Eggs that are at room temperature boil better.
Do not hard boil the eggs; just keep the water to the boiling point, a hard
simmer, and cook for twenty minutes. When the egg is boiled, run cold water
over the egg while peeling, being sure to remove the membrane between the
egg and shell.

Last week at the local supermarket I bought a package of steak, one of calves liver, and one of ground meat. When I got home all three packages had several wet paper towels under the meat. I later asked an employee of the store if the meat is packaged before or after it is weighed. I was informed that prepackaged meats are packaged and then weighed. Am I paying for wet paper

Our Consumer Protection Division advises that the paper towels are not
wet when the meat is packaged but gets wet from the moisture of the meat.
Computer scales used to weigh the meat deducts the weight of the packaging
from the weight of the meat. You only pay for weight of meat. We checked the
store you bought your meat from and found their scales to be accurate. ***

Fertilizer and feed consumption is steadily increasing. The Field Forces test feed and fertilizer samples for correct weight, correct labeling, and correct listing of ingredients.
The General Field Inspection Forces inspect various complaints from the general public including such complaints of dumping dead animals and birds in abandoned wells, in streams, along roadsides, and in woods and fields.
The Field Forces make for a better Georgia, better protect the consumer, the manufacturer, and the dealer, by enforcing the numerous laws, rules, and regulations that protect the consuming public.
APPLE MAN OF YEAR Izzy Movsovitz, Savannah, was named "Apple Man of the Year" by the International Apple Institute, July 9. Mr. Movsovitz's claim to apple fame began in 1966, when, in cooperation with the Chatham County Dental Association, he instigated an apple - observance of Children's Dental Health Week.
