America's Future
The theme for National FFA Week this year is "FFA -- Involved in America's Future." I invite you to turn your thoughts toward this theme for the next few minutes. What are some of the ways in which we are and will be involved in America's future?
For years, the vocational agriculture program placed almost total emphasis on production agriculture enterprises. Today, while
the program fully recognizes the role of agriculture production, it also is training men for off-the-farm jobs in agri-
business. In addition to
farmers, it includes the farm suppliers who manufacture and sell farm machinery, chemicals, feeds and fertilizers. It also includes those who are engaged in the marketing, storage, processing, transportation and distribution of farm products. It, too, includes those who provide credit, insurance and technical services. These are the men who also play important roles in this promising field of agri-business.
Few of us realize how big agribusiness is in our state. Of the total manufacturing concerns in Georgia,

71 percent are members of the agribusiness complex. They employ 76 percent of the manufacturing em-
ployees of the state. Yes, we FFA members and
students of vocational agriculture are involved in America's future in food production and in agri-business. We are involved in other areas too.
While most people consider us as "farmers", they are unaware of the mainstream of our high school instruction. Not only are skills taught in a great diversity of fields, but shop instruction gives the individual an opportunity to apply what he learns to specific problem. Many of the areas in which we are instructed are literally starving for even partially-
skilled workers. Yes, we have many problems -- if
we are involved. You have heard from new revolutionary groups that America must be torn down and rebuilt if we are to solve our
problems. What ails America will not be
solved by those who heighten their emotional experience through drugs and dreams of love nor those who strum their guitars and sing of peace. When it becomes fashionable to replace our revolutionary rhetoric with deeds; our time and world tomorrow will be a much better place
in which to live. We have become so concerned with
the heartbeat of America that we

Ga. Recognized Act Now To Control

As Cholera Free Georgia received special Federal
recognition April 8 for improving its consumer protection activities in the field of meat inspection and for eradicating a livestock disease which, in the past, has cost farmers and
consumers millions of dollars. In special ceremonies at the State
Agriculture Building, Under Secretary of Agriculture Phil Campbell, of the U. S. Department of Agriculture, presented certificates of achievement to Tommy Irvin in recognition of Georgia's having developed a red meat inspection program equal to Federal standards and having gone a full year without a
case of hog cholera. The Commissioner said the
cholera free status has already enabled the Department to suspend expensive inoculation requirements
and thus help lower the cost of production for Georgia hog farmers.
Georgia, which ranks 8th in the nation in swine production, began its hog cholera eradication program in 1962. Prior to initiation of eradication
efforts, hog cholera cost Georgia farmers millions of dollars. The StateFederal cooperative program to eradicate the disease involved the slaughter and burying of all swine contracting cholera with indemnity paid farmers losing hogs to the
disease. Under the red meat inspection
program, federally trained inspectors of the State Department of Agriculture now inspect more than 200 slaughter or processing plants that handle meat for intra-state consumption only. Prior to initiation
of this program, there was no adequate inspection in such plants.

The Azalea Chapter of the American Rhododendron Society has scheduled a rhododendron & azalea show for Saturday, April 24 in the auditorium of the Sears Roebuck store at Peachtree and West Paces Ferry Roads in Atlanta. Admission is free and open to the public.
Interested persons, whether members of the American Rhododendron Society or not, are invited to bring their entries to the auditorium prior to 11:00 a.m.

Hosts Home Show
The Atlanta State Farmers' Market is again the site of the nation's largest mobile/ manufactured housing show, April 21-25.
Free public days are April 24 and 25, Saturday and Sunday from 12 noon until 6:00 p.m.

About 1830, an unidentified far-
mer brought grass seed to this country from the Mediterranean region. Ten years later, Colonel William Johnson carried this grass to Selma, Alabama. There it grew rapidly, and became known as
Johnsongrass. It was intended for use as a high
quality forage plant. However, Johnsongrass (Sorghum halpense) has spread throughout the southern states as a persistent, noxious weed. It has been found as far north and west as Iowa, Indiana, Ohio, Oregon and Washington. Only 10 of our northernmost states were not infested
by 1957. Johnsongrass reproduces two
ways - by seed and by rhizomes. Seed
production can be high, as much as 8 to 10 bushels per acre, but many seeds are punctured by insects and germination percentage is fairly low.
Johnsongrass from rhizomes (fleshy stems) is the main problem for most farmers. There are three types of rhizomes: primary rhizomes which live through the winter and
produce new plants next spring (these rhizomes decay after the growing season); secondary rhizomes which grow from the primary rhizomes to form new plants; and tertiary rhizomes which grow from the secondary rhizomes. Both secondary and tertiaryfrhizomes live through the winter.
There are three objectives in a
Johnsongrass control program: (1) to weaken and kill existing plants and
prevent new rhizome formation; (2) to prevent seed production; and (3) to kill seedling plants from seed already
in the soil. Here are the suggested
procedures of Johnsongrass control: Disk or plow the soil two or three
times during the winter to expose

Necessary For School
Rubella, sometimes called "German measles", has been added to the list of immunizations required for a child entering school for the first time. This ruling will be effective in September when the 1971-72 school
year begins. Rubella is in itself a com-
paratively mild disease. However, if contracted by a pregnant woman the disease often leads to mental retardation or other crippling conditions in the baby.
Rubella is the seventh immunization now required for school entry in Georgia. The others required are for diphtheria, whooping cough, measles, tetanus, smallpox, and polio.

Dear Editor:

Years ago my mother had a friend in Ma con who gave her a recipe for what she called "Famous Georgia Pecan Cake". The ingredients included 6 eggs, 3 sticks butter, 1 box confectioner's sugar, 1 sugar box full of self-rising flour, and 1 pound of pecans.

I have made severa I attempts at remembering this recipe, but all have flopped. This is an absolutely delicious cake when it is made right and even the first flop was pretty good.

If any of your readers have a recipe for this cake, I certainly would appreciate them sharing it with me.

Recipes of the Week
GEORGIA EGGS 4 hard-cooked eggs 1 bay leaf I/ 2 cup light cream 2 whole cloves 21/2 cups tomato juice or thinned tomato paste
clove minced garlic I/ 2 cups coarsely chopped onion tablespoons chopped mushrooms tablespoon chopped green pepper tablespoon chopped celery teaspoon salt V 2 teaspoon pepper Breadcrumb-Cheese Glaze
Remove the yolks from the hard-cooked eggs and chop the whites coarsely. Scald the cream with the bay leaf and cloves; strain the liquid. Mash the egg yolks with the cream and blend with the tomato juice. Add the garlic, onion, mushrooms, green pepper, celery, salt and pepper/blend by stirring frequently as the mixture simmers 10 minutes in a saucepan on low heat. Transfer to a buttered casserole or individual dishes. Sprinkle the top thickly with the glazing mix, and bake 10 minutes in a preheated 300-degree oven. Finish under the broiler if necessary to brown the top. Serves 4.

BREADCRUMB-CHEESE GLAZE Parmesan is easily grated by tossing a few small pieces in the blender. Use equal parts of grated Parmesan and dry breadcrumbs; store them in a tightly closed jar in the refrigerator.

Know Your Food Terms?

The rhododendron is a very large genus of evergreens or deciduous shrubs, rarely trees, of the family Ericaceae. They are chiefly evergreens with alternate leaves and very showy tubular flowers.
The Orient is the real home of the rhododendron with the greatest number of species and forms in China. Apparently light and cold has much to do with success. They seem to need long periods of gray weather and abundant moisture.
The Catawba rhododendron (R. catawbiense) is known to many Georgians as a compact bush which grows in profusion on the mountain tops of north Georgia, Tennessee and North Carolina. It is a shrub from 12 to 18 feet high with leaves from three to five inches long, shining green above, paler beneath. It bursts forth in beautiful trusses of pink, lavender, mauve, and purple in iate June.
The variety insularis was "rediscovered" as interest in rhododendrons more suited to the climatic and soil conditions at lower elevations in the Southeast increased. It is now being studied not only for its demonstrated resistance to the heat and soil pathogens of this region, but also for its use as horticultural plant material in the lower Piedmont and coastal plains of the Southeast.
Cherokee County, Georgia, has a small colony of R. Catawbiense variety insularis located at an elevation of 850-1000 feet.
This form may prove useful in developing new strains of more heat-resistant hybrids for introduction into areas of the Southeast where rhododendrons are not or cannot yet be cultivated.
Commissioner of Agriculture Tommy Irvin accepts certificates of achievement from U. S. Under Secretary of Agriculture J. Phil Campbell in recognition of Georgia's having developed a red meat inspection program equal to Federal standards and certifying Georgia as a hog cholera free state.

How well do you know your food terms? Recipes can be easily ruined by the
mistaken interpretation of a term. Although many of the following terms will be familiar, some will be confusing. Test yourself to see how many you can get correct.

Baste. To pour liquid composed of drippings, fat, and water, or sugar and water over a food while cooking.
Beat. To mix with an over and over motion to smooth a mixture and to introduce air. May use rotary beater or electric mixer.
Bind. To unite ingredients with a sauce or with slightly beaten eggs.
Braise. To brown meat in a small amount of fat, then cook slowly in a covered container with a small amount of liquid or in steam.
Cream. To work one or more foods until soft and creamy.
Cut. To divide food material with knife or scissors. To incorporate fat into dry ingredients with a pastry blender or two knives, with the least possible amount of blending.
Dredge. To sprinkle or coat with flour or other fine substance.
Fold. To combine delicate ingredients such as whipped egg whites or cream with another mixture using a wire whip or rubber spatula.
Glaze. To coat with a thin sugar

syrup.
Marinate. To allow food to stand in an oil and acid mixture such as French dressing.
Mask. To cover food completely with sauce, mayonnaise, whipped cream, etc.
Mill. To beat.
Poach. To cook food by slipping it into hot liquid.
Render. To free fat from connective tissue by means of heat.
Saute'. To cook in a small amount of fat.
Scallop. To bake one or more foods with a sauce in a baking dish, usually topped with crumbs.
Sear. To brown the surface quickly by intense heat in order to develop color and flavor and to improve appearance. Usually applied to meat.
Shirr. To break into a dish with cream or crumbs, then bake.
Stew. To simmer in a small amount of liquid.
Whip. To beat rapidly to produce expansion due to incorporation of ah'.

Johnsongrass

Johnsongrass rhizomes to freezing temperatures. Johnsongrass is not cold-hardy, so this is a good cheap control measure.
Frequent disking also cuts surviving rhizomes into short pieces and encourages uniform emergence, which is desirable for chemical control measures.
Allow Johnsongrass to reach 12 to 20 inches and spray with 3.5 to 5 pounds of dalapon (5 to 7 Ibs. Dowpon) per acre with 0.5% surfactant. After seven to ten days, repeat the treatment.
Two weeks later, disk the soil to improve control and encourage disappearance of dalapon. Apply a good grass control herbicide such as trifluralin (Treflan) or nitralin (Planavin) if the crop is soybeans, to destroy Johnsongrass seedlings.
Two weeks later, plant crop in the usual manner. Note: the Dowpon label suggests a shorter time between treatment and planting under certain conditions of temperature, moisture and land preparation. Be sure to allow sufficient time for dalapon to disappear from the soil to avoid injury to the crop.
There are several methods of using different herbicides to control Johnsongrass in other cropland or noncropland situations. These methods are outlined in Extension Circular No. 552, "Johnsongrass Control" available from your county agent's office. You also may wish to check with your county agent about proper timing of treatments, sprayer calibration and other specific details on Johnsongrass control.

Your local hardware store has several preparations. For stubborn stains, use a five percent solution of oxalic acid or a 10 percent hydrochloric acid solution, both poisonous. After applying the acid with a bit of cloth or paper toweling, rinse thoroughly as acids, if allowed to stand, damage porcelain enamel.
*** I have several horses which are fed grain and hay daily in addition to grazing in a fescue pasture. Mineral salt blocks are also kept at their disposal. However, for the past two months they have been gnawing the pine boards around feed troughs and stables. Is something missing from their diets?

I pickled some cucumbers by the recipe on the back of the bag the lime came in. The middle of the cucumbers were dissolved or eaten or something. I don't know what happened. I guessed at the amount of water to be used but used the right amount of lime. I pickled them last summer in the hot weather.

If these two ingredients are not used in correct proportion, the solution will be too alkaline and will not ferment or too high in acidity -causing the pickles to dissolve.
