Poinsettia -- Euphorbia pulcherrima, is one of the few Christmas customs native to America.
The now symbolic Yule Log was inherited from Scandinavia; fire being the most precious thing in a household. During the Holy Season, people would cut and burn the log -- praying that it would burn forever. In parts of the Smoky Mountains the Yule Log is still a central aspect of Christmas as many families save a piece of the log to start the fire the following year.
From the Druids of ancient Britain and Gaul comes the belief that mistletoe possesses supernatural powers; the ceremonial worship of trees in ancient pagan rites almost certainly led to the .decoration of trees in connection with the coming of the Christ Child -- German immigrants brought this custom to this country.
We have to give France the credit for our Christmas carols which were adapted from the "ring dance" common in the streets of France -- and to Holland for the Christmas stocking tradition as they placed their tiny wooden shoes in chimney corners on Christmas Eve. However, it took the poem " 'Twas the Night Before Christmas," written by Clement C. Moore, to popularize long red stockings hung by the fire on Christmas Eve.
Even the traditional mince meat pie comes from the time of England's King Henry VII. It was rectangular in shape to represent the manger. The lattice work crust is symbolic of the cross. (A pie baked for that royal glutton was 9 feet long and weighed 165 pounds -- containing several kinds of game, plums, spices, oranges, eggs -- the ingredients being minced. Puritans denounced such worldliness and tried to do away with all "minc'd pies.") They did succeed in reducing the pie's size.
So when we see the crimson leaves of the beautiful poinsettias this Christmas, we can not only take pride in the fact that it is an American addition to the Christmas scene but that it was named for a Southerner, Joel Poinsett of South Carolina, who introduced the plant into the United States from Mexico, where it is called "flower of the blessed night."

I spent one year in Georgia several years ago and I enjoyed so many things about your state. I look forward to the day I can revisit the wonderful people I met and see the lovely scenery again.

While I was in Georgia I collected a sackful of sweet gum balls and cotton bolls and brought them back to Washington with me. Both the pods and balls are a novelty here. Although I used my supply sparingly on craft projects, I am completely out and would like to know where I can obtain a new supply of sweet gum balls and cotton bolls. FROSTY CRANBERRY MOLD
l (81/2 oz.) can crushed pineapple 1 (1 Ib.) can whole cranberry sauce 2 (3 oz.) pkgs. raspberry flavored gelatin
1 (8 oz.) pkg. cream cheese 2 tblsp. salad dressing, or mayonnaise 1 cup heavy cream, or 1 (2 oz.) pkg. whip topping mix
whipped I/ 2 cup nuts, chopped l tart apple peeled and chopped

Drain fruits, reserve liquid. Add water to make two cups, bring to boil, dissolve gelatin in hot liquid. Chill until partially set. Cream softened cream cheese and dressing until fluffy. Gradually beat in gelatin. Fold this mixture into whipped cream or topping. Set aside 1 I/ 2 cups of this mixture. Add drained fruit, nuts, and apple to remaining gelatin mixture. Pour into 12x7 1/2x2 inch glass dish, refrigerate until surface sets, frost with reserved topping; refrigerate several hours. Makes 12 servings. This salad
freezes well.

Soybeans have been known in America since 1804 when a few bags were brought from China as a reserve food supply in the hold of a Yankee Clipper. Civil War soldiers carried them as "coffee berries", using them to brew coffee when the real thing became scarce. After the turn of the century they were grown mostly for hay and forage with some being harvested as seed.

The laboratory is also developing projects to meet other needs. A forage program will analyze and evaluate farm-grown feed and provide livestock ration recommendations. Pesticide residue determinations, insect and disease identifications, and food analysis programs are also in the works.
With these additional activities, the laboratory will have an increasingly important impact on Georgia's growing agriculture.

How to Sell a Cow

The soybean received its first real impetus for expansion during World War I when there was such a shortage of fats and oils in the U.S. During World War II, the U.S. soybean came into its own as restrictions on imports of oils and proteins from traditional world sources stimulated domestic production. An abundant supply of soybeans at home, coupled with the world food shortage, resulted in the beginning of soybean exports. In the years following, the U. S. switched from being a net importer to being a net exporter.
Since then, soybeans have enjoyed an export surge. Due to a steadily expanding volumne, soybeans ranked as the nation's number one agricultural export last year.

A Missouri county agent, Mr. Dick Walter, says farmers should sell cows like cars with options. Start with a basic price of $200, add $45 for a two-tone exterior if it's a Holstein, $60 for the product storage compartment, $15 for dual horns, $125 for genuine cowhide upholstery, and $35 for the automatic fly swatter. With all the other little odds and ends the total price should add up to about $595.

To pluck a duck, wrap the duck in heavy cloth, such as burlap bags or a piece of old quilt or blanket, and place in a large container. Pour boiling water over the wrapped bird until cloth is wet. Let steam for 10 minutes and remove cloth. Feathers can be removed easily.

Want to know how to pluck a duck? I always DRY PICK first, and then pour melted, nearly hot bees wax over the bird. Encase the bird in the wax, let wax get cold, and then peel off. Feathers and down come off and any left on can be singed off. The bird must be dry, not wet, when the wax is applied. Indians cooked water fowl by merely using clay to encase the birds in. The casing was about three inches thick and buried in hot embers until done. The casing was then cracked open causing feathers to come off and insides to fall out.

Easy way to pluck a duck - in your hot water, at least several gallons, pour about one cup of detergent (dish water or washing machine detergent). Dip duck therein - do let cool a little as the soap holds the heat or you'll scald your hands - and pull out feathers. Duck the duck again and presto - clean duck all the way. Reason ~ soap will take the oil off the feathers causing feathers to loosen and will not shed water. Wax will clean a duck but will also take the skin off along with feathers so I won't use that method.
