Georgia Resources Creates Farm

Need Processors
Georgia is blessed with the climate, soil and people necessary to produce a large portion of the food consumed within the state.
Unfortunately, such is not the case. Georgia produces only a small percentage of the food consumed by
Georgians, but even more disturbing is the fact that much of what we do produce is shipped outside the state for processing and then shipped back into Georgia for consumption. A check of the canned and processed food products in the average home kitchen in Georgia will prove this is true. We are known as the "Peach State" but in the average super market today you will find as many cans of peaches on sale from as far away as California and Indiana as from Georgia. I recently had a member of my staff survey canned and frozen fruits and vegetables in three major super market chains in the greater At-

Mechanization
The most obvious impact of the farm labor problem on American farming in recent years has been the necessity for increased mechanization. In the 1970's this trend toward mechanization will continue.
Consequently, the U.S. farm machinery industry will become larger and larger. Already, West German and Japanese farm machinery makers are attempting to get a slice of this multi-billion dollar farm equipment pie with their imports.
The emphasis in agricultural mechanization for the 70's will be on speed. The farmers will be using highly sophisticated machines that perform several functions land preparation, chemical application, fertilization, and planting in a single pass.

I bought some ground meat for hamburgers. It seems to cook out more fat than usual. What is the trouble with this meat?

The Consumer Protection Division of this department purchased some of this meat and checked it in the laboratory for fat content, preservatives, and extenders. It contained 40% fat. Regulations require that ground hamburger meat have no more than 30% fat content. The store manager cooperated in correcting this irregularity.
There is something strange on my Silver Maple tree white masses with white wooly streamers on the leaves and a sticky substance falls on the ground. What is it and how do I get rid of it?

Entomologist John Ridley tells us that the strange thing on your Silver Maple tree is an insect, the wooly alder aphid or maple leaf aphid. The sticky material is honey dew from the aphids. Control for maple leaf aphids is to spray with Malathion or Cygon thoroughly on the under side of leaves.

Such agribusiness industries would not only offer new markets for Georgia farmers but would also offer job opportunities in rural areas. There is also the possibility that by reducing the freight costs, locally produced and processed food products just might help narrow the inflationary spread between what the farmer gets for his product and what the consumer has to pay.
I have asked the State Department of Industry and Trade to give new thought and renewed emphasis to attracting more agribusiness type industries to Georgia. They have

Dear Editor: I noticed a letter in your BULLETIN several weeks ago
recommending the use of dish water to add to your compost pile. I quote from the ENCYCLOPEDIA OF ORGANIC GARDENING:
"The organic gardener is inclined to utilize every waste in some form and frequently would like to dispose of dish water by adding it to the compost heap. This is not advisable for the following reasons: Dish water invariably contains some fat and soap, and since soap is highly alkaline, an excess amount of soda would gradually be added to the compost if dish water were regularly poured on the heap. In addition, the chemicals in modern detergents are very detrimental to soil bacteria."

To mothers who have sons in the service this recipe stays fresh and good. I have a son in Viet Nam who has enjoyed these several times and says they are always good and stay together.
3-2/3 cups sifted all-purpose flour 21/2 teaspoons baking powder 1/2 teaspoon salt 2/3 cup shortening 1 1/i cup sugar 2 eggs, unbeaten 1 teaspoon vanilla or lemon flavoring 4 teaspoons milk
Sift flour, baking powder and salt together. Cream shortening, add sugar gradually, add eggs one at a time, add vanilla. Add flour alternately with milk. Chill 3 or 4 hours or over night (more crisp if chilled over night). Roll out very thin and cut with cookie cutter; sprinkle with sugar. Bake on ungreased

Prickly or wild lettuce -- Lactuca is the ancient and delicious ancestor of the modern green. Lactuca is a large genus of milkyjuiced herbs -- most of them weedy - but this one species is important as the source of lettuce. The flower heads are small, usually nodding.
Lactuca is from the Latin for milk-in allusion to the milky juice. Prickly lettuce is one of the more succulent members of the wild lettuce family and one of the ancient foods of Europe. Some botanists say that the lettuce we now buy in stores got its start from this species.
Like such Boy Scout familiars as rosinweed and prairie dock, the prickly lettuce indicates north and south, its sharply toothed and tipped leaves twisting edgewise to the sun. Both the lower par f the stem and the center leaf bristle with prickles but quickly lose their sharpness in boiling water.
If you gather this lettuce young enough it is tender enough for the most delicate of salads and makes one that is hard to surpass. For a great dressing blend I/ 2 teaspoon celery salt, I/ 2 teaspoon dry mustard, I/ 4 teaspoon pepper and a minced clove of garlic in a bowl. Stirring add I/ 4 cup of iemon juice slowly to the mixture stir in a teaspoon of finely chopped pickles -- then gradually mix in 3/ 4 cups salad oil. Fry 8 slices of bacon until crisp, starting with a cold fry pan and tilting so that the grease accumulates to one side. Toss the greens with the dressing and with 2 tablespoons hot bacon fat, garnish with the crumbled bits of bacon and serve at once.
When the prickly lettuce is slightly older, in the late spring and early summer, you can have your family eating with gusto by using it in all kinds of casseroles and boiled dishes._________

The package weight is not included in the stated weight. Department of Agriculture Sanitarians regularly visit all grocery stores with certified weight kits to check weights of all pre-packaged foods and scales.

Beef varies in quality more than any other kind of meat. Meat grading is a voluntary service provided by the USDA's Consumer and Marketing Service. PRIME grade is the ultimate in tenderness, juiciness, and flavor. It has abundant marbling-flecks of fat within the lean which enhances both flavor and juiciness. CHOICE grade beef has slightly less marbling than
PRIME, but still is of very high quality. GOOD grade beef often pleases thrifty shoppers because it is somewhat more lean than the higher grades. It is relatively tender, but lacks some of the juiciness and flavor of the
higher grades. There are also standard and commercial grades of beef.

4-H Home EC Winner
' Georgia's 1970 winner in the 4-H home economics program was announced this week. She is Mary Ann Johnson of Cobb County.
Mary Ann, daughter of Mr. and Mrs. Cress Johnson of Marietta, is a seven-year veteran of the educational opportunities offered through the 4-H Club program.
In making the announcement, T. L. Walton, state 4-H leader with the University of Georgia Cooperative Extension Service, said Mary Ann's selection was made on a basis of her 4-H records and her success in consumer education as related to everyday living.
