Vote Needed To Farmers In 77 Counties

The farm community has a vital interest in Amendment No. 4 on the Nov. 5 ballot. This amendment will decide the future of the school lunch program throughout Georgia.
All over the country, our state is recognized for its efficient system of providing nutritious lunches at a cost within the means of most Georgia families. A legal interpretation last year now threatens this proven, successful program. Amendment No. 4 will clear the way for the school lunch program to continue to operate at its usual high level.
Families with children in school need no elaboration on the value of the school lunch program to the growing child in terms of sound nutrition and education in good eating habits. And most farm communities are also aware that the school lunch program is an ardent champion of Georgia's farm crops. Every aspect of school lunch calls for a YES vote on Amendment No. 4.

Emergency loans are available to eligible farmers in 77 Georgia counties due to severe crop losses, the Farmers Home Administration has announced.
Funds may be advanced at three per cent interest for such items as seed, feed, fertilizer, fuel, herbicides, insecticides, labor, machinery repair, payment of unsecured operating bills, payment on farm machinery, family living expenses and other purposes that would enable a farmer to continue his operation.
Application for loans should be made to your local F. H. A. office.

Sweet Potato Recipes
Prize winning recipes from the 1968 Seventh Annual Sweet Potato Festival, sponsored by the Georgia Sweet Potato Commodity Commission

Sweet Potato Pie
2 Cups Sweet Potatoes (Mashed)
1 Stick Butter 1/4 Cup Milk
1 1/4 Cups Sugar 1 Egg (Beaten) 1 Tsp. Vanilla
Boil sweet potatoes in clear water until tender, peel while warm, put in large bowl in mixer and on low speed, mash well. Add butter while potatoes are warm. Add sugar, egg, milk, and vanilla, pour into unbaked pie shell and bake in moderate oven until filling is set and begins to brown.

Sweet Potato Cake
3 Cups Flour
2 Cups Grated Sweet
2 Cups Sugar
Potatoes
1 Tsp. Cinnamon
1 Small Can Crushed
1 Tsp. Nutmeg
Pineapple
2 Tsp. Vanilla
3 Eggs
1 1/2 Cups Crisco Oil
1 Cup Chopped Nuts
Mix flour, sugar, cinnamon, and nutmeg. Add oil
and mix vanilla, sweet potatoes, pineapple and juice,
nuts and eggs. Mix well. Bake in No. three 9-inch
greased and floured cake pans at 350 degrees F for
about 30 minutes.
1 Stick Oleo 1 Eight-Ounce Pkg
Cream Cheese
Icing 1 Cup Chopped Nuts 1 Box Powdered Sugar 1 Tsp. Vanilla
Cream oleo and cream cheese. Add vanilla. Sift
sugar and mix with cream mixture. Add nuts and frost
cake.

Candied Coconut Yams
8 medium Sweet Potatoes, cooked, peeled and halved
1/4 cup melted margarine 1/4 cup Maraschino cher-
1 1/2 cups shredded coconut
1/2 cup brown sugar 1/4 cup whipping cream
Arrange sweet potatoes in lightly greased casserole
dish. Sprinkle with one cup coconut. Combine mar-
garine, brown sugar and cream. Mix well and pour
over potatoes and coconut. Top with remaining 1/2
cup coconut and cherries.
Broil 4 minutes or until coconut is light browned.

Peach-Filled Potato Squares
1 medium orange,
1/3 Tsp. salt
washed
2 cups peaches (fresh,
1 Cup light or dark
frozen or canned)
brown sugar, packed 1/2 Cup Orange juice
Grate rind of orange and chop orange very fine (should be about 2/3 cup). Combine peaches, sugar, orange juice and salt with the rind and orange. Bring to good boil and cook uncovered over low heat for at least 30 minutes or until thickened, stirring occasionally, if this tends to be too thin dissolve 2 Tblsp. corn starch and stir in. Let this cool before pouring on
potato mixture.
Sweet Potato Mixture:
1 Cup butter, margarine or Crisco
1/2 Tsp. salt 1 Cup mashed cooked
sweet potatoes (fresh or canned)
1 cup sifted plain flour
1 cup light or dark brown sugar, packed
1/4 tsp. nutmeg 2 1/2 cups quick oats 1/4 cup finely chopped
nuts
Cream butter and sugar until very light and fluffy, add salt, nutmeg, and sweet potatoes, beat smooth. Mixtogether flour and oats and stir into potato mixture. Spread about 2 1/2 cups of this mixture into greased and floured 13 x 9 inch baking pan. Top with peach mixture spreading carefully. Mix nuts with remaining potato mixture, spread this over peach mixture. Bake in 350 degree F. oven for 45 minutes. Cool in pan and cut in squares, serve plainer with whipped cream.

Sweet Potato Souffle with Orange
3 Large baked sweet potatoes (peeled)
1/3 cup brown sugar (packed)
3/4 cup milk
Juice from 2 oranges 1 stick butter or mar-
garine 1/3 cup granulated sugar Grated rind 3 oranges
Place all ingredients in large mixing bowl and beat until light and fluffy. Pour in greased baking dish. Cover with mixture of 2 Tblsp. brown sugar and 1 1/2 tblsp. butter. Bake in 350 degree oven for 30 minutes. (Do not use mixture that sticks to the beater as it will be stringy.)

Prune-Filled Sweet Potato Squares
Filling
1 medium orange, washed and ends trimmed
1 cup light brown sugar, firmly packed
Dash of salt 2 cups prunes, pitted and
chopped 1/2 cup orange juice
Chop orange with rind very fine (approximately 2/3 Cup). Combine with prunes, sugar, orange juice and salt. Bring to boil; simmer uncovered, over low heat 30 minutes or until thickened, stirring occasionally. Cool.
Sweet Potato Mixture

21/2 cups quick oats 1/4 cup finely chopped

Cream butter and sugar until light and fluffy. Add salt, nutmeg and sweet potatoes; beat smooth. Mix together oats and flour; stir into potato mixture. Spread abour 21/2 cups of this mixture into greased and floured 12 x 9 inch baking pan. Top with prune filling, spreading carefully. Mix nuts into remaining sweet potato mixture; gently spread over prune layer. Bake in 350 degree F. oven 45 minutes. Cool in pan, cut into 24 squares.

Sweet Potato Surprise
4 Medium Sweet Potatoes 1/2 cup sugar 1/2 cup light corn syrup
2 eggs l /2 stick butter
Whip cooked potatoes until creamy. Combine all
ingredients. Pour into baking dish. TOPPING: 1 cup light brown sugar, 1 cup chopped nuts, 1/3 cup flour, and 1/3 cup butter. Blend all ingredients and spread on sweet potato mixture. Bake 30 minutes in 350 degreeF. oven.
