TIME TO PLAN YOUR
THANKSGIVING DINNER
The Holiday season is rapidly approaching. Only two weeks until Thanksgiving. May we suggest that you plan your menu now, and include one of these special surprise recipes made from good Georgia products.
The Pecan Mallow and Cranberry Salad recipes were published in last year's Bulletin. We are repeating them as many of our readers wrote that they were extra good.
POULTRY STUFFING
1 cup pecan pieces
2/3 cups butter or
2 qts. bread crumbs
poultry fat
C/2 CUps)
1 teaspoon poultry
l'/2 cups apples, tart,
seasoning (prepared)
chopped, unpeeled
1 'A teaspoon salt
1 '/2 cups celery chopped
3/4 teaspoon pepper
Melt fat in fry pan, add celery and apples, cook five minutes. Sprinkle
dry seasoning over bread crumbs. Last add celery, apples and fat. Mix
lightly but well. Stuff body and neck cavity loosely. This is enough stuffing
for a 4 to 6 pound chicken; 6 to 10 pound turkey; or 5 to 7 pound duck.
FROSTED PUMPKIN PIE
9 in. baked pastry shell, cooled
'/4 tsp. nutmeg
1 '/2 pints vanilla ice cream
'/4 tsp. cinnamon
1 cup pumpkin
</2 tsp. ginger
'/a cup brown sugar
2 pint whipped cream
Remove ice cream from freezer to soften. Combine pumpkin, sugar, and
spices. Mix with ice cream and pour into baked pastry shell. Place in freezer
for 3 hours. Remove 20 minutes before serving for ease in cutting. Deco-
rate with whipped cream.
PANNED CARROTS WITH PINEAPPLE
2 tblsp. butter 3 large carrots, cut
in small strips '/2 tsp. salt
</2 cup well-drained canned pineapple tidbits
1 tblsp. sugar
2 tsps. grated onion
3 tblsps. heavy cream
Melt butter in heavy saucepan. Add carrots, salt and onion; mix together
well. Cover tightly; simmer 10 minutes. Add canned pineapple tidbits;
sprinkle with sugar; mix ingredients together well. Cover pan and simmer
for 10 additional minutes or until carrots are tender. Add cream; reheat,
stirring gently to mix.
BUTTER BAKED TURKEY
1. Have turkey completely clean. Rinse with cold water, then pat dry. 2. Preheat oven to 325F. 3. Rub cavity of bird lightly with salt. Do not salt if stuffed. 4. Fill wishbone area (neck)with stuffing, if used. 5. Fasten neck skin to back with skewer. 6. Stuff cavity lightly, if stuffing is used. 7. Push drumsticks under band of skin at tail; or tie them to tail. 8. Place turkey breast side up on rack in shallow open pan. If you have e
roast meat thermometer, insert in inside thigh muscle adjoining body
of bird. 9. Cover top and sides of bird with piece of cheese cloth dipped into
melted butter. Some cooks like to wrap a strip of clean cloth around end of each leg bone and tie it with string to prevent drying. 10. Roast bird according to timetable below. If cheese cloth dries, re-moisten
it with more melted butter or with drippings in pan.

PECAN MALLOW
6 medium-sized sweet
2 tsp. salt
potatoes baked
1 cup chopped pecans
'/4 cup warm milk
dash white pepper
2 tbsp. butter
6 marshmallows
Cut small opening in top of each potato. Remove pu!p, leaving '/4 inch inside
skin. Mash pulp and add ingredients. Refill shells, place a marshmallow on
top of each and return to oven to brown.
CRANBERRY SALAD
Grind 1 Ib. of cranberries, add grated rind of 1 orange and squeeze the juice into cranberries, and 2'A cups sugar and let stand at least one hour. Chop fine 1 cup of nuts (pecans), 1 cup of celery and 1 large or 2 small apples. Mix 2 packages of red jello, using only 2 J/4 cups water, when cool add all ingredients, let stand until it begins to harden then pour into maid or molds.
