Exotic eats: Cultural diversity changes the flavor of Georgia cooking

Just as familiar comfort foods give us the warm feeling of remembering good times, discovering delicious new dishes provides the same measure of joy a reward for getting out of your comfort zone.
Two food experts suggested something new or a new twist this summer on familiar dishes from Asian and Latin American cuisines. The ingredients are commonly available in stores; some are grown here in Georgia.
Natalie Keng of Smyrna works to connect people with food. She is known as the "Chinese Southern Belle" on social media. She conducts food tours along the Buford Highway corridor in north DeKalb County, one of Georgia's most culturally diverse areas.
Keng explained that food might look different from culture to culture, but there are many similarities. She said the biggest difference is in people's approach to food.
"We love color in our food, and there's a Chinese saying, `S, xing, wi.' S is color, xing is aroma, and wi is taste, so it's kind of like a trinity when all those three come together," she said. "That's why I use a lot of colored bell peppers that are wonderful for salads and stir fry."
Keng said Bok Choy is a versatile food in Asian cooking. Bok Choy is a cabbage whose name simply means white vegetable in Cantonese. It is mostly stir-fried. Many different types of choy are comparable to greens used in the United States, like collards and mustard greens.
"It's fun to experiment with them," Keng said. "One might be a little bit mustardy, one might be a little more green leafy, and another one might be the white, crunchy stem, and that will determine how you're going to cook it."
Daikon radish, or white radish, is from Japan, but like choy, there are several varieties with a tradition in Chinese and other Asian countries. Daikon radish is a large root. Keng said you could eat it raw, julienne cut it for salads or cook it in soups.
"It's a little spicy when it's raw, but it mellows out when you cook it," Keng said. "In soups, it gets soft and absorbs the beef or vegetable broth, and it is such a great com-

and soups. When preparing dumplings, she lines a steamer with the cabbage to keep the dumplings from sticking.
Keng referred to the three Gs - ginger, garlic and green onions that are the base for any Asian dish. "It has a good stir fry taste. Then, add a little soy sauce or salt," she said.
Keng added that the secret to good stir-frying is to balance the flavor.
"It's orchestrated. If you put too much soy sauce or too much ginger, it could mess it up," Keng said. "Stir-frying seems easy, but it still confounds. It has to be the right balance of ingredients."
Chef Nick Leahy operates Nick's Westside in Atlanta and works to create dishes with Latin American origins. By combining different ingredients, Leahy creates unique dishes that diners from Brazil and Georgia can appreciate.
Leahy advises cooks trying an unfamiliar dish to stick to the recipe on the first try. "Follow it to the letter the first time because that way you can learn the process. After that, when you're making your subsequent versions, you can sort of edit and rift once you've learned the basics of that particular dish," he said.
"I just was teaching one of my chefs on making a soubise, which is a creamed vegetable sauce," Leahy added. "It's traditionally done with onions, but when you learn the method, you can make a mushroom soubise, like what we're doing, or a squash soubise or whatever you find in season."
Leahy's go-to food is chimichurri, a green, garlic and herb sauce from Brazil. He called chimichurri "a culinary Swiss Army

Good To Grow: Mastering the conundrum called the tomato

Tomatoes are popular but can be perplexing to grow. They do well in hot weather, but too much water or not enough can stunt them. The timing for fertilizing tomatoes is a secret gardeners hold on to as close as a fisherman's good fishing hole.
Wayne Stowe of Newton County doesn't mind sharing his secrets. He has grown tomatoes for most of his 78 years. Stowe said he treats the plants like babies, nurturing them with a little fertilizer when they are young and adjusting as they grow.
"When they start blooming and showing fruit, that's when I really start throwing the fertilizer on because that's when they really need the nourishment," Stowe said.
Tomatoes use a lot of water, but Stowe warned that too much water could give them "wet feet," causing leaf wilt and opening the door for pests. Expert advice
Bob Westerfield with the University of Georgia Extension Service is an expert in consumer fruit and vegetables. He said tomatoes can be fickle, but people still enjoy growing them.
"I cover all vegetables across the state, but I would say that for every 10 questions I get, eight of them are going to be on tomatoes," he said. "The reason is that they're just problematic. They are tropical plants that, at the end of the day, really don't like Georgia."
Even so, Georgia grows a lot of tomatoes in commercial and residential settings. But Georgia's weather extremes can stress the plant. Extreme heat and humidity are tough on tomatoes.
Westerfield explained gardeners generally need to watch for disease in tomatoes early in the growing season in June. Early blight and bacterial wilt are common. Blossom rot is another disease.
Westerfield said diseases on tomatoes are usually signs of nutrient deficiency or unbalanced pH levels in the soil. He said gardeners often think blossom-end rot which turns the bottoms of green tomatoes black is a disease, when it's actually a lack of calcium that can be solved with a soil amendment such as lime.
As the tomatoes mature, Westerfield said insects will come out to attack the fruit starting to bear out. He said gardeners he's talked to have successfully applied insecticidal soap. An-

other trick is to get to the tomatoes before the insects do by pulling them off early and ripening them on a table.
"I'm a strong believer that the minute that tomato starts to kind of turn red, it gets really close to ripening, to go ahead and harvest it, particularly if you have a bad problem with insects. The insects are going to wait for that tomato to get nice and ripe, then they will jump on it right when you want it, too," Westerfield said.
Westerfield said that weeding and mulching will also help tomatoes keep the plants from competing against weeds for nutrients and help hold moisture in the soil longer. What's your type?
Tomatoes varieties fall into two classes, indeterminate and determinate, which describe types and when to harvest. Indeterminate tomatoes are like bushes that bear fruit once in bunches. Westerfield said they are suitable for sauces and canning. At his farm, he always has spaghetti sauce and salsa at hand.
"Last night, we had Mexican food, so we had homemade salsa; that's what we do," he said. "Because all those tomatoes are coming out a relatively short period of time, you can get
the job done of canning them within a few weeks or so, and you're done."
Indeterminate varieties will keep producing tomatoes throughout the growing season. Westerfield said these can be sliced up for salads or sandwiches.
Hybrid varieties dominate gardens and farms because they have been developed over the years to resist pests and stand up to hot weather. Stowe said he used to grow heirloom tomatoes years ago, but they were susceptible to pests. Stowe said as he's gotten older, he can't put in as much work in the garden as he used to. He now grows hybrids exclusively, mainly Celebrities and Better Boys.
Stowe said Celebrities as very disease resistant and can produce good-sized tomatoes, like half a pound. He said Celebrities are also semi-determinate in that they will keep producing a few green tomatoes after the big harvest.
Like any other gardener, Stowe has his methods for growing tomatoes. He uses an auger to drill a hole where the plant will go and fill it with potting soil. Stowe found that water storing crystals help keep the roots from getting too wet.
Stowe said the best thing that comes from the garden is friendship. What he doesn't sell or can, he'll give away. Stowe told the story of teaching ladies from his church how to can tomatoes one year. They brought the jars, and Stowe provided the tomatoes.
"A lot of them had never canned anything, so we had them over, and we canned all day long," Stowe said. "I called it tomato-canning quilting bee."

Bacon County: Georgia's Rural Strike Team helped craft marketing plan that landed new industry

"Just like the blueberry industry and tobacco industry before, our local farmers can produce anything you want as long as there's a market for it," Ellis continued. "As long as they know how much is needed, when it's needed, and how much they are going to be paid for it, then sure, they are going to grow whatever fruit, vegetable or seasoning you'll need."
McGuire said they could not supply La Regina with all the garlic they would need, but he is glad to be a part of a large effort and possibly help create a new ag market in Georgia.
"I don't even think I understood how big of a deal it was at the time, whether because of it being a secret or we had a lot going on," McGuire said. "When they started talking about shipping container loads of tomatoes, and they were telling me some of their numbers, I stopped and thought it was a lot bigger deal than I thought it was."
The magazine and Gov. Brian Kemp's office cited La Regina as a crowning achievement. Kemp credited the Rural Strike Team he launched in 2019 to support Georgia's business-friendly environment through development collaboration
between local communities and the state. The Rural Strike Team leverages state resources through
the Governor's Office to help local communities attract businesses. Partnering agencies such as the Georgia Department of Economic Development, the Department of Community Affairs, and Abraham Baldwin Agricultural College's Rural Prosperity Center can help communities craft a marketing plan specific to them, develop a target list of specific industries, and provide training to local leaders who are actively recruiting business prospects, according to a press release announcing the survey results.
"It gives us somebody on the ground," Kemp said in the statement. "We have somebody out there grinding away to help train the locals on workforce development, on how to get a project, how to convince people to come to their county, develop sites and infrastructure. What are the resources you need? How do we help?"
Ellis added that five development projects submitted for the survey were other examples of success and how much agriculture played a role in supporting them.
Alma Packing International specializes in blueberries, a
major crop in Bacon County. To grow with the market, the company diversified operations to include a quick-frozen production line that allowed them to go from a four-month season to year-round packing operations, Ellis said.
Also, Mid-South Feeds purchased a 90,000-square-foot building in Alma recently, separated their livestock and pet food lines, and hired additional employees. Beach Timber Company started on a small family farm 36 years ago and has expanded to a 165-acre site today, manufacturing poles, dock pilings, and custom-made wood products.
"The La Regina project, that was the big one, but that wasn't even on the list. When we talk about why ag is important and it's the driving force even with our success here three of the five qualifying projects are ag-based companies using local raw materials in production," Ellis said.

Hello! I'm Georgie, the Georgia Grown mascot. I travel thru Georgia promoting the Peach State's No. 1 industry, agriculture. Last week, my family and I took a
tour of the Broxton Rocks with a couple of guides from
South Georgia State College in Douglas, Dr. Jim Cotting-
ham and Frankie Snow. Georgia Highway 107 runs near
the Coffee-Jeff Davis County line along the Ocmulgee
River. Large rock formations that don't normally occur
anywhere south of the Fall Line appear along the road
west from Snipesville. We took Rock Road and walked
to a place where there's a rock cliff and a waterfall that
were cut out of the earth by Rocky Creek. The landscape
is completely different from the surrounding area, with
cliffs, caves and crevices cut deep into a rock face instead
of topsoil. Mr. Snow pointed out several rare plants, some
of which only exist near the Broxton Rocks, where they
are protected by The Nature Conservancy. One of them
is called rattlesnake master, a plant similar to parsley that
was important in the culture of Native Americans who
lived in the area. The early settlers believed rattlesnake
master could cure snake bites, until they tried it out.

knife" that is good on almost anything. People in Brazil traditionally use it as a steak condiment, but it goes just as well on fish or any other dish.
"It's a really nice, bright, herby vibrant sauce that goes well with anything," Leahy said. "If you're at the market and see a beautiful piece of swordfish, put it on the grill and finish it with a little chimichurri, and it tastes delicious."
Hummus is an easy dish made traditionally with chickpeas, but Leahy makes his with Sea Island red peas. He said the peas have an earthier taste and give the hummus a slightly nuttier flavor. He said once you make hummus the way you like, you can experiment with other ingredients.
"A lot of times when fresh peas are in season we will make a field pea hummus or English pea hummus which are obviously a very different color to traditional hummus, but if you cook your peas nice and soft and tender, they puree like a chickpea would. You'll get a bright pea flavor rather than a dry legume flavor," he said.
Leahy's advice is to keep it simple; don't do too many things with a dish, and make sure the items make sense to each other.
"Chefs sometimes try to show how good we are and what we do by putting 15 preparations and techniques on the plate, and I think sometimes that takes away from the overall dish or ingredients," he said.
"I think the home cook may do the same thing by trying to put too many things together where I think you either want to have your flavors complement or contrast."

2 cups sliced Bok choy (2-inch pieces, diagonal)
1 1/2 cups sliced shitake or oyster mushrooms (from a local farm)

Directions
Place skillet on medium-high heat. Add vegetables, onions, and sauce to hot pan. Stir fry 1 minute (or desired tenderness) and heat through. Add extra sauce if desired. Serve with rice or noodles. You can substitute broccoli or whatever vegetable is seasonal (or your favorite) for Bok choy and use different mushrooms.
Chimichurri
Nick Leahy is big on sauces like chimichurri, a Brazilian green herb sauce. He called chimichurri "a culinary Swiss Army knife" that is good on almost anything. Below is a basic recipe for steak from the writer, but any green herb can be added for taste preference.

1 cup parsley 1/2 cup cilantro 3 cloves of minced garlic 2 Tbsp red wine vinegar 1 Tbsp lime juice 1/2 Tbsp of oregano
Directions
In a food processor, mix all ingrediants together. Pulse a few times. While the processor is running, slowly drizzle in 3/4 cup of olive oil. You can stop here if you like the taste.
Hummus
Hummus is delicious as a dip or appetizer with carrots, but Leahy said he uses it sometimes as a base for other dishes. "Just a swab of hummus on the plate under a nice fish, then topped with chimichurri is a great contrast," he said. The following recipe comes from Jessica Shillato of the Spotted Salamander in Columbia, S.C. You can replace the Sea Island red peas with cow peas or whippoorwill peas.
Ingredients
2 cups dried whippoorwill peas, Sea Island Red peas or cow peas
4 medium garlic cloves
1/4 cup olive oil 1/4 cup tahini 1 lemon, juiced 1 tsp kosher salt 1/2 tsp cayenne pepper 1/2 tsp ground cumin Black and white benne (sesame) seeds
Directions
In a medium saucepan, simmer peas in 6 cups boiling salted water until tender, 1 hour and 30 minutes to 2 hours. Drain, and let cool. In same saucepan, heat olive oil and garlic over medium-low heat. Cook, stirring occasionally, until garlic is tender, about 15 minutes. Do not let garlic brown; reduce heat if needed. Add cooked peas, garlic and oil, tahini, lemon juice, salt, cayenne pepper and cumin to a blender; blend until smooth. Transfer hummus to a small bowl. Drizzle with olive oil and garnish with benne seeds. Serve with carrots.
