It's beginning to smell a lot like Christmas at the Atlanta State Farmers Market in Forest Park, where the first of some 30,000 Fraser firs and other species of Christmas trees began arriving the week before Thanksgiving.
Over a three-week period, Senoia nurseryman Kevin Martin and North Carolina grower Appalachian Farms will bring in about 30 truckloads of trees and premade wreaths. They will sell retail to individual customers and wholesale to businesses, organizations and produce stand operators from the Georgia Grown shed at the market. Martin has been selling trees on the market since 1989 "at least," he said.
In addition to Fraser firs, other species from Oregon and Canada will be offered to fill gaps in the supply. One of the few holiday shortages that are not pandemic-related, the rumored dearth of Christmas trees this year is more a matter of growers leaving the business in recent years. Since the growth cycle for a marketable tree is about seven years, the loss is only now being felt.

Forestry Matters: `Tis the Season ... for Trees!

It's the most wonderful time of the year! Whether you put those words to song or paused a second to wince, December does usher in a unique season in Georgia. And while many folks' thoughts turn to the joys of gift giving and worship, a tree lover's thoughts also turn to ... planting. December through February is recognized as the ideal time to plant trees in our state. Georgia's Arbor Day is always held the third Friday in February, while the national date for recognizing the value of trees falls in April. In general, tree planting falls into two categories: rural and urban. In rural areas, landowners growing timber tracts typically plant one-year old seedlings. They are mostly bare root, with no dirt around the rooting system. Containerized seedlings have dirt plugs surrounding the roots. Whether planting by hand or machine, it's very important to handle either type of seedling with care. Seedling roots must be protected from exposure to the air because they can easily dry out. They must also be sheltered from the elements to stay healthy. Never store seedling bags in the sunlight; a cool dark place is best for them. Don't let them freeze and always cover them during transport. They should be planted soon after removal from the nursery. The number of pines planted per acre is usually between 605 and 726. Hardwood plantings number 200 to 400 trees per acre. Rural trees are commonly planted with the objective to

produce timber and wildlife habitat. Many landowners will go on to say that the aesthetic beauty and recreational value of their property gives them just as much joy as income and animals.

Planting seedlings in urban environments is a somewhat different process. Sure, they're also placed in the ground and covered with soil, but quite a few considerations should be taken before starting to dig.
Usually, older seedlings and saplings are used for urban plantings. They may be potted, or the root ball may be wrapped in burlap. Depending on the size of the root ball and height of the tree, be careful when lifting and moving these trees they're heavier than they look.
Dig a nice, wide hole for the tree, about three times the tree's diameter. The hole should be no deeper than the root ball or container. This PDF has all the pointers you'll need:

It's very important to put the right tree in the right place. Always consider the tree's mature size when deciding where to plant. Don't plant oaks near a power line. Staking provides needed support for newly planted trees and mulching makes a difference. About two to three inches deep is ideal, but never pile it against the stem.

Georgia Cooking: Collards Two Ways

Mary Mac's Traditional Southern Collards

Ingredients 2 lbs. of collard greens, stalks
removed and cut into 2-inch strips 2 gallons of water 6 oz. of fatback* 1 smoked ham hock 1/3 cup bacon drippings 1/8 cup salt
Directions Wash the cut greens in cold water and 1/8 cup salt. In a large stock pot, on high heat, boil the water, smoked ham hock, and fat back. Let boil for an hour.

Add collards and bacon drippings to the pot. Let come to a roaring boil and then reduce heat to medium. Let cook for 40-45 minutes. You may need to add additional water if the water starts to absorb past 1/3 of your original liquid.
Remove from heat and take out the fatback and ham hock. Serve warm. Goes well with corn bread.
Serves 6-8

*If you are not used to cooking with fatback or ham hocks, they are easily found at most grocery stores. Just ask your butcher if you have trouble finding them. Also, plan ahead so you can save your bacon drippings.

Warm Collard Green Cheesy Bacon Dip

Ingredients 8 slices thick-cut bacon, diced 14 cups chopped collard greens; stems removed 1 cups diced onions 3 Tbsps. minced garlic 3 cups grated Cheddar cheese (12 oz.) 1 cups grated Parmesan cheese, divided 1 cup mayonnaise 8 oz. cream cheese 16 oz. sour cream 3 Tbsps. hot sauce Salt & pepper
Directions Preheat oven to 350 degrees.
Heat a Dutch oven over medium heat. Cook bacon until crisp. Remove bacon from pan, drain-

ing on paper towels, reserving cup of bacon grease.
Add onion and garlic to reserved grease, cooking until translucent. Add collard greens in batches, stirring to wilt before adding more. Once all collard greens are wilted, add cream cheese. Stir cream cheese until melted then add sour cream, mayonnaise, and hot sauce, mixing well to combine.
Add 1 cup Parmesan, Cheddar, and bacon to pan, stirring until cheese melts. Season to taste with salt and pepper. Pour mixture into ovenproof dish. Sprinkle remaining Parmesan over dip. Bake 30-40 minutes or until bubbly and brown. Serve with tortilla chips, crackers, or French bread.

Poultry Science Complex: Public/private collaboration raises millions for design and construction

"We are thankful for the trust and investment by public and private partners in making Georgia the epicenter of poultry sciences for the world."
State funding of $23.9 million has been provided for the design and construction of the project in the fiscal year 2021 and 2022 budgets.
Kemp, who has been vocal in his support of agriculture in Georgia, said the building is "the next step in securing another century of excellence in teaching, research and extension at the University of Georgia.
"To recruit, train and empower our future farmers, re-

searchers, scientists and leaders in agribusiness, any good harvest we hope to reap in the Peach State depends on their ability to innovate, produce and lead in their respective fields," Kemp said. "This new poultry science building will help the university accomplish this for generations to come."
Robust support from industry, alumni and other donors has contributed to significant progress toward the goal of $27 million in private funding for the project, said Mary Ann Parsons, senior director of development for CAES. Lead donors of $1 million or more to date include the R. Harold and Patsy Harrison Foundation, Wayne Farms, and the Luther & Susie Harrison Foundation.
Industry leaders such as AgGeorgia Farm Credit, the Franklin P. and Arthur W. Perdue Foundation, Aviagen, CBH International, Claxton Chicken, Crider Foods, Crystal Farms, the Georgia Poultry Federation, Columbia Farms of Georgia/ House of Raeford, Merck Animal Health and Southeastern Minerals also have contributed to the project.

Thru Bartow
Hello! I'm Georgie, the Georgia Grown mascot. I travel the state of Georgia promoting our No. 1 industry, agriculture! Bartow is a small town in Jefferson County and the boyhood home of a man named Roy Evans. After high school, he attended Georgia Tech and later bought the American Austin Car Company out of bankruptcy for about $5,000. In 1940, the U.S. Army thought it would be a good idea to replace horses and motorcycles with a better mode of transportation for its troops and equipment. Their request was for a four-wheel-drive vehicle that weighed less than 1,300 pounds and could be mass produced. Mr. Evans' company delivered a prototype in just 49 days, and received the contract to produce the general-purpose vehicle now known as the Jeep. Willys-Overland and Ford Motor Company chipped in to help with production. The Army said the Jeep was "the greatest single contribution to winning World War II." The original Jeep prototype is now in the Smithsonian Museum. Mr. Evans came home to Bartow to be laid to rest in 1976.

Georgia ag foundation announces 2022 scholarship opportunities

The Georgia Foundation for Agriculture is offering scholarships for graduating high school seniors, rising college juniors and seniors, technical college students and UGA College of Veterinary Medicine students specializing in large/ food animals.
Visit https://www.gafoundationag.org/scholarships for a list of eligible majors/schools, application instructions, and to apply. Applications must be submitted online only by March 1, 2022. Transcripts and letters of recommendation must be submitted online with the application.
The four scholarship categories the Georgia Foundation for Agriculture is offering are: Scholarship for Agriculture Ten schol-
arships of $3,000 are available for graduating high school seniors. The top three ranking applicants will be eligible for an additional $1,000 bonus. Applicants must: be a Georgia resident; be enrolled in a unit of The University System of Georgia, Berry College, Emmanuel College, or any Georgia accredited college/ university with an Ag program for the 2022-23 academic year; be pursuing an undergraduate degree in agricultural & environmental sciences, family & consumer sciences or a related ag field; have a minimum 3.0 GPA; be engaged in high school leadership activities.

Technical College Scholarship for Agriculture Four scholarships of $1,500 are available. Applicants must: be a Georgia resident; be enrolled in a Georgia accredited technical college during the 2022-23 academic year; Have a minimum 2.8 GPA; Major in an area of study related to agriculture. Rising College Jr./Sr. Scholarship for Agriculture Eight scholarships of $2,000 are available. Applicants must: be a Georgia resident majoring in agricultural & environmental sciences, family & consumer sciences or a related Ag field; be a sophomore or junior with at least two semesters remaining to receive an undergraduate degree at a unit of The University System of Georgia, Berry

College, Emmanuel College, or any Georgia accredited college/university with an Ag program; be engaged in college leadership activities; have a minimum 3.0 GPA. UGA College of Veterinary Medicine Scholarship This scholarship is for students currently enrolled in the UGA Veterinary Medicine program specializing in large animal/food animal practice. The GFA will award two
$5,000 scholarships. Applicants must be a Georgia resident; be a current University of Georgia veterinary medicine student specializing in large animal/food animal practice and have a minimum 3.0 GPA.
The GFA is a non-profit 501(c)3 organization dedicated to preparing the next generation of leaders for success in Georgia agriculture. The GFA works with Georgia Farm Bureau and other Georgia agricultural and educational organizations to achieve its mission. The third annual Georgia National Antique Agriculture Show in Perry attracted more old stuff than either of its predecessors and made a large impression on young attendees.
Nearly 400 pieces of vintage farm machinery and several new attractions rooted in old farm ways kept show-goers of all ages entertained. A new attraction the mini tractor pull even gave kids the opportunity to participate.
Next year's show is scheduled for Nov. 10-12, 2022.

A first at the Antique Ag Show, the event took place in the Reaves Arena. The sport uses stock and modified garden tractors to pull weight-transfer sleds defined distances, in this case 200 feet.
