Georgia chefs, Georgia food: Georgia Grown elevates the standing of Southern cuisine at second annual Beard House dinner

Georgia owns two of the most iconic foodstuffs in the Southern culinary pantheon: roasted peanuts and Coca-Cola. And while the two work together well as a meal unto themselves, adding them to the likes of Georgia grown quail raises the state's kitchen cred in ways heretofore unimagined.
The Georgia Department of Agriculture's Georgia Grown marketing program engaged in another successful round of myth-busting June 18 when Executive Chef Holly Chute and her cadre of local culinary up-and-comers staged a second Georgia-themed dinner at the prestigious James Beard House in New York City. Home of the late cookbook author and teacher credited with making American cuisine respectable, the Beard House bills itself as a "performance space" for visiting chefs from around the country who stage special event dinners for well-heeled Northern foodies. The dinners serve as a fundraising mechanism for the foundation to continue James Beard's legacy.

Unmanned aircraft may change the way Georgia farmers water their crops
A yellow crop duster as bright as the summer sun was buzzing a field of peanuts, swooping and diving like a honey bee drunk on spring's first sip of nectar. The swashbuckling artistry of the pilot's technique was a stunning counterpoint to the computer controlled ascent of an unmanned aircraft in a field nearby.
This picture perfect meeting of agriculture's past and its future happened on a hot Tuesday in June at the University of Georgia's C.M. Stripling Irrigation Research Park in Camilla. Researchers from the University of Florida met there with scientists from the U.S. Geological Survey to collect aerial photographs of peanuts and corn in the field. The photos will be used to create moisture maps designed to help farmers control the effectiveness of their irrigation. Such "precision agriculture" has the potential of saving 450 million gallons of water a day during Georgia's peak growing season, according to the USGS.
The Florida team deployed a ready-made drone, known as an Octocopter, to gather thermal, infra-red and hyperspectral images of the plants and surface soils in the fields below.
"Maps containing the images will be gener-
ated that can be used to identify crop type and growth stages and soil-moisture distribution, showing areas of fields that would require more or less irrigation to produce optimum crop growth and yield," said Jaime Painter, a USGS geographer in Norcross. "This information can be used to direct precision agriculture techniques such as variable rate irrigation, currently being developed and tested at the Stripling Irrigation Research Park."
Calvin Perry, superintendent of the 130acre Stripling Research Park, said he's eager to see whether the drone imagery supports the findings of an experimental soil sensor system developed by UGA and installed in the fields at Stripling for study. The sensors are planted at varying depths between eight inches and 24 inches. They take soil moisture readings every 20 minutes.
The Stripling Research Park has 1,200 plots under cultivation with peanuts, cotton, corn, sweet corn and a small amount of soybeans. The park hosts research into various methods of irrigating those crops and examines the effects of those methods on growth and development.
"We're all about helping growers be as efficient as they can when irrigating," Perry said.

Donald Chase went to college to learn something besides farming. He left knowing there is nothing he would rather do more than farming.
"My father was really focused on his children receiving (an) education because it gave us opportunities. It wasn't expected of me to farm, so I farm because I want to," he said.
Nearly 30 years after he came to that realization, Chase is still convinced he made the right choice.
"I tell people that I enjoy my job 360 days a year. Now there's five
that just are terrible, when things are going wrong and nothing's happening like it's supposed to, but that may be an exaggeration. I may like it 363 days a year," he said.
Chase and his father grow peanuts and corn, and raise chickens on 1,600 acres in Macon County. His grandfather moved the family from the dry lands of Oklahoma in 1952, buying into the Flint River watershed, where he cultivated row crops and raised chickens. It wasn't long before the Chase men began to in-
vest their time and effort in peanuts. "Peanuts have always been our
favorite thing to grow. Over the years the Lord has blessed us and we've been able to have really good success at growing peanuts. You look at the things you think you're good at and you concentrate on those," Chase said.
Chase grows peanuts for seed. His farm is certified as a buying point, meaning the nuts are processed and stored there for sale. Most of the

Market Bulletin Advertising Guidelines
Only subscribers with a current subscription number are allowed to advertise in the Market Bulletin. Advertisers are limited to one ad per issue per subscriber number. Out-of-state subscribers are only allowed to publish ads in the Out-of-State Wanted category.
All advertisements published in the Market Bulletin must relate to farming, agriculture or be a part of these industries. All items submitted for sale through the Market Bulletin must meet at least one of the following criteria:
1. Must be produced by advertisers on their farming operation
2. Must be made by the advertisers from materials on their farming operations
3. Must be owned and used by advertisers on their farming operations for at least 90 days prior to offering for sale.
Businesses, corporations, dealerships, real estate agents and other commercial enterprises are not allowed to advertise in the Market Bulletin. These are enterprises that produce products intended for mass market; handle larger than normal quantities of product for distribution; are supported by business advertisements; listed under business directories in phone books; hold business licenses or other regulatory licenses, permits or registrations.
Items for sale or service must conform to all laws and regulations covering their sale and movements. Note that some categories have certain requirements, such as Coggins tests or USDA Organic certification documentation, in order to be printed. Review the ad requirements for specific categories for more information.

Guest column: Georgia climate outlook for the rest of 2016 and beyond

This year began with a strong El Nio dominating the global climate. El Nio has strong influences on the climate of the Southeast, so it is no surprise that Georgia experienced weather that was dominated by the El Nio signal this winter and spring. In typical El Nio years, South Georgia has the best chance of above-normal rainfall, while North Georgia is sometimes wetter and sometimes drier than average.
This year, the wettest conditions in the South have been located to the west of Georgia in Texas and Louisiana, but parts of Georgia have also seen plentiful rain especially those areas near the path of Tropical Storm Colin in early June. Often a dying El Nio leads to a dry spring, and we have seen that as well, particularly in North Georgia where severe drought developed over the last month.
El Nio is now officially over and we are in neutral conditions. Statistically, neutral conditions are more favorable for an active hurricane season in the Atlantic. It is likely that we will see more named storms than average this year, although they may or may not cross over Georgia. In areas that do not experience tropical storms, drier than normal conditions are more likely. This may continue through the summer and into fall and winter.
With El Nio gone, climate models predict that the opposite phase, La Nia, is very likely to develop by late summer and last at least through next winter. This will impact our climate conditions well into 2017. Most of the climate models indicate that La Nia is likely to be moderate in strength, which means the strongest effects will be seen in South Georgia. Prediction is less certain for northern areas.
The outlook from the Climate Prediction Center indicates Georgia is likely to have above normal temperatures through September.
Later in fall we are expected to feel the impacts of the La Nia as it strengthens in the Eastern Pacific Ocean. This means that warmer and drier conditions are likely from late fall through the winter months, especially in South Georgia.
That could set up the state for the development of drought in 2017, since soil moisture and water supplies may not fully recharge over the winter months. Recent droughts in 19982002, 2007-2009, and 2011-2013 occurred during La Nia episodes.
The bottom line: hotter and drier conditions than normal are expected in most of Georgia through fall, except where tropical storms bring rain to the area. Additionally, warmer and drier conditions than usual are likely this winter as La

Nia dominates the global climate especially in South Georgia.
Drought may be a possibility in 2017 in areas that do not receive adequate rainfall over the winter. Spring 2017 may have good field conditions for farm equipment and soils could reach optimum temperature earlier than usual, but moisture for germination could be lacking. This winter would be a good time to harvest low-lying areas of timber that are inaccessible in wetter years due to soggy soils.
We've Been Travelin'
Devoted Market Bulletin reader Jeremy Anderson took us along on an epic journey to the Mayan ruins in Belize. The journey was recommended to Anderson by his friend, Jim McCranie, who worked at the McCranie Turpentine Still owned by his family in Willacoochee. McCranie traveled to Belize as an advisor to the fledgling turpentine industry there. "Between the pine trees being so far apart and the local people not following procedure for harvesting gum, both led to the demise of his efforts," Anderson said. The landscape of Belize is very similar to the Longleaf pine/ warm season grass/sandhill communities becoming so rare in Georgia, Anderson said.
From one plant, many fruits
Benny Sanders of Dallas got a surprise from one of his tomato plants this year: huge clusters of fruit. Sanders, who has been growing tomatoes for years, said he's never seen so many on one plant. He grows them in raised beds.

After spending time in Hawaii and Florida, two of my friends one from Maine and one from Long Island became so enamored with hibiscuses that they both got hibiscus tattoos. Hibiscuses have gotten under my skin as well but not so literally. Like my friends, I appreciate hibiscuses and their kin for their showy and distinctive flowers.
When you say hibiscus, most people think of the Chinese hibiscus (Hibiscus rosa-sinensis). The Chinese hibiscus is a tropical shrub that blooms outdoors all summer and is available in a wide range of colors. Some people overwinter hibiscus as a houseplant, but I have found it prone to scale, aphids, drafts and general fussiness. Unless you have a greenhouse, you may want to buy a new hibiscus each spring.
The dinner plate hibiscuses such as `Disco Belle' are among the largest and showiest flowers you can grow. I gave up on them because caterpillar-like sawfly larvae kept turning the leaves on mine into lace. (Someone also stole one I had planted!)
Although I like these two hibiscuses, here are a few I like even better and have had better luck with:
Shrub althea (Hibiscus syriacus), also known as rose of Sharon, has blooms that look tropical even though this large shrub
is winter hardy all the way to USDA Zone 5.
Scarlet swamp hibiscus (Hibiscus coccineus), also known as Texas star hibiscus, is native to several Southern states, although Texas is not one of them. Whatever you call it, it is a beautiful perennial. It prefers moisture and dislikes dry conditions but will tolerate regular garden soil.
Seashore mallow (Kosteletzkya virginica) is a hibiscus relation native from New York to Texas. This perennial normally has pink flowers. Last year I bought a white one by mistake, but when it bloomed I loved it, too.
Hibiscus manihot or sunset hibiscus (Abelmoschus manihot) is one of my favorite annual flowers. It is okra's prettier cousin. Garden writer Elizabeth Lawrence described its yellow flowers as being "cool as lemon ice." I cannot describe it better.
Turk's cap mallow (Malvaviscus arboreus var. drummondii) is a sprawling perennial that lights up the fall with vermillion flowers that serve as beacons to late-migrating hummingbirds. The petals of this hibiscus relative never open all the way, but it creates quite a show nonetheless.

Preparation:
Puree the first 10 ingredients in a blender until smooth. Adjust the seasonings as needed. Chill in the fridge for at least one hour. Stir in the finely chopped watermelon and avocado at serving time. Makes 4 servings.

extensively around the world for both business and pleasure and the Georgia Grown dinner ranks as one of the best we've had. We were impressed with several different aspects, both subtle and direct," Regan said.
"First, it almost goes without saying that the quality of the dishes was excellent. But the subtlety of using ingredients that are home to Georgia was interesting and complex. Using hometown Coca-Cola to cure the quail was innovative, and putting peanuts on the cheese with the strawberries was a subtle but definite nod to the Georgia legume. I think a lot of people up North have stereotypical views and think either Atlanta or Civil War when they think of Georgia and don't realize there is a world of sophisticated cooking, combining traditional ingredients in new and
exciting ways." Several days after the dinner, the couple
was still debating their favorites. He was partial to the Herbed Springer Mountain Farms Chicken with Vidalia Onion-Tomato Pie.
"The juxtaposition between the hot pie and cold chicken was perfect, and the complimenting tastes were unusual and fun," Regan said. "Sara was taken by the Wild Georgia Shrimp with Sweet Corn Three Ways, the crispy corn being a delicious twist on a dish we've had before but never with such imagination."
Springer Mountain Farms was one of several Georgia Grown members that provided products served at the dinner.
"We've been part of the Georgia Grown program for a long time because we feel pret-
ty strongly that if we can't be the best that we can be with our friends and neighbors and the folks across the street, then we haven't done our job," said Dale Faunce, marketing director for Springer Mountain Farms in Mt. Airy.
"Georgia Grown is a very important thing for us and when it comes to supporting a Georgia Grown event in New York City, we're all about it."
Georgia wines accompanied each course of the Beard House meal, and that was the aspect of the meal that surprised the Regans most.
"We had no idea that there was even a wine industry in Georgia, let alone one that had such robust offerings," John Regan said. "Having lived in Virginia and now in New York we are familiar with new and unex-
pected sources for wine. However, both of us were blown away by the maturity and depth of Georgia's wines."
Chef Derek Dollar, a member of the 2016 class of Georgia Grown chefs recognized by the Department of Agriculture for promoting Georgia grown foods, said the opportunity to cook at the Beard House was the culmination of a long-held dream.
"I can remember going to New York to visit my brother a decade ago, passing by the Beard House and peeking in the windows thinking, `I want to cook here one day,' so it was gratifying to finally be able to see my goal through," Dollar said. "The entire staff at the Beard House was supportive and told us we knocked it out of the park. It was a great experience and I can't gush enough about it."

Peanuts: Georgia grows more than half of the nation's crop

work on the farm is geared toward peanut production. He rotates corn with the peanuts, selling the corn he harvests to the feed market. He fertilizes the corn with litter from his poultry flock. Aside from 60 acres devoted to sweet corn, sold at a roadside market owned by his wife and his mother, Chase spends most of his time thinking about and working for peanuts.
He is an elected representative on the Georgia Peanut Commission and chair of that organization's research committee. Peanuts
are a $2 billion industry in Georgia, and the state produced 57 percent of the nation's crop in 2015. Chase said his primary goal is helping to further research that will find ways to maximize yields and lower costs for farmers.
"We've got varieties now that are yielding far beyond what we ever expected," he said. "It's become standard that we get 6,000 pounds to the acre. We've got peanuts that are capable of making 8,000 pounds to the acre. This hasn't been done yet commercially everything would have to be perfect but
it's possible." Like others engaged in the work of feed-
ing the world, Chase sees farming as the noblest of all professions.
"Somebody told me once that you need a doctor three or four times in your life, but you need a farmer three times a day," he said.
Like his father before him, he is leaving it to his children to choose their career path.
"I want to make sure that my children have the opportunity to farm if they want to," Chase said. "If they have another dream
I want them to live their dream, but if this is what they want then I'd love to make sure there's something here for them."
Learn more about Georgia's peanut industry and Chase's role in it this fall at the Georgia National Fair. Chase is one of two peanut farmers and two blueberry farmers who will be featured in a series of short films about Georgia agriculture. The films will be screened daily Oct. 6-16 in the Georgia Grown Building at the Georgia National Fairgrounds and Agricenter in Perry.
