Falling for cider: Food safety knowledge for a delicious seasonal beverage

As autumn commences in earnest, we celebrate the changing of the seasons with food and drink from ripened pumpkins, squash, apples and the bounty of other Georgia Grown products.
"Georgia farmers produce more than a dozen varieties of apples," said Agriculture Commissioner Gary W. Black. "Visiting one of Georgia's orchards for apple picking is a great family agritourism activity and cider is a seasonal favorite we can enjoy now into the winter."
The desire to be closest to the source of our food and have natural processing techniques is important for many Georgians; however, it is important to balance this with food safety. When it comes to apple cider, this means evaluating the pasteurization process of commercial cider and using safe practices when

making homemade cider. The making of cider relies on yeast, which is naturally present in apples, to ferment the freshly pressed apple juice. Pasteurization, or heat treating the juice, is a common practice and a regulatory requirement in Georgia to kill bacteria that may be incidentally introduced into the cider while it is being made.
In the last five years, unpasteurized cider has led to several serious foodborne illness outbreaks in the U.S. due to the presence of E. coli O157:H7, Salmonella and Cryptosporidium pathogens found in unpasteurized or improperly pasteurized cider products. Pasteurization effectively kills these harmful bacteria during processing, making it safe for everyone to consume. The process especially helps protect children, the elderly, pregnant women and any chronically ill people who may be more vulnerable to becoming sick.
How can you address packaged apple cider safety concerns? Natalie Adan, Food Safety

Division Director with the Georgia Department of Agriculture, has the answer.
"Packaged juice that has not been pasteurized is required to be labeled with a consumer advisory statement for children, the elderly and persons with weakened immune systems," Adan said. "Unpasteurized cider is not required to be labeled as such when it's being sold single-serve, by the glass which many orchards, roadside stands and farmers markets may do. Always look for a label and, when in doubt, ask."
When making homemade cider, a few simple guidelines can dramatically reduce the risks of exposure to harmful bacteria. Always inspect the apples and avoid using any with visible signs of decay. Before making cider, start with clean hands, apples and equipment. Wash hands with warm soapy water for at least 20 seconds. Wash apples thoroughly under cool running tap water, scrubbing with a

Georgia Grown Profile: Georgia Forestry Commission encourages the growth and conservation of forest lands

When the term "wildfire" is mentioned, most think of the western part of the country and the devastation caused there annually by forest fires. However, with more than 24 million acres of forest land here in Georgia, fires that get out of control can have just as heavy of an impact.
In 2011, more than 151,000 acres of Georgia's forestland was burned by wildfire. Preventing forest fires and conserving our state's forests is the primary focus of the Georgia Forestry Commission. The agency provides leadership, service and education in the protection and conservation of Georgia's forest resources.
"Georgia averages over 5,000 wildfires per year which occur mostly in rural areas," said Wendy Burnett, director of public relations.
Programs have been put in

place to enable the commission to achieve its goals. For instance, the Forest Management Department advises local owners and monitors their forests for pests and other harmful conditions. The Forest Protection Department responds to forest fires around the state.
The commission also reaches out to the public with education initiatives teaching wildfire safety and how to prevent wildfires.
"The easiest fire to control is the one that you prevent from happening in the first place," said Burnett. "The last two years have been our lowest fire season in our state's history."
When a forest fire is reported, 109 commission offices throughout the state are prepared to respond with wild land firefighters and equipment.

Wildfires in Georgia are most common during the dry winter months. Cases begin popping up in
late December. Reports start fizzling out around April. The positive side to this is that GFC is able to send teams to help when wildfires are heaviest out west.
Here at home, preventative efforts like prescribed burning keep understory vegetation contained so that wildfires can't burn out of control. Workers also plow containment lines around active wildfires to keep them from spreading. Preventing and extinguishing forest fires plays a huge role in maintaining Georgia's forests; however, rebuilding and repopulating can keep forests flourishing. The commission encourages planting by offering a wide array of hardwood and softwood bare root

seedlings as well as instructions on how to plant and care for them.
"I think the most important thing for people to know is what a big impact forestry has on the state of Georgia," said Burnett. "They provide the clean air, the clean water, what we call ecosystem services. Those services that aren't necessarily tangible, but we all benefit from them every day."
With forestry being such a big part of Georgia agriculture, taking part in the Georgia Grown program helps GFC continue to raise awareness about the importance of the state's forests.
"People don't always think of forestry as agriculture. It's a crop that landowners take great pride in and invest a lot of resources and time into," said Burnett. "[Georgia Grown] has helped bring more light from the agricultural community to forestry."

Only subscribers with a current subscription number are allowed to advertise in the Market Bulletin. Advertisers are limited to one ad per issue per subscriber number. Out-ofstate subscribers are only allowed to publish ads in the Out-of-State Wanted category.

Businesses, corporations, dealerships, real estate agents and other commercial enterprises are not allowed to advertise in the Market Bulletin. These are enterprises that produce products intended for mass market; handle larger than normal quantities of product for distribution; are supported by business advertisements; listed under business directories in phone books; hold business licenses or other regulatory licenses, permits or registrations.

Guest Column: Protecting poultry from avian influenza is an ongoing effort in Georgia

It is fitting that the "Eat Mor Chikin" slogan was developed by Georgia's chicken sandwich giant.
Poultry production pumps more than $28 billion dollars into our state's economy annually, making Georgia the top broiler-producing state in the country. In fact, if the Peach State were a country it would rank seventh in broiler production behind the United States, China, Brazil, India, Russia, and Mexico.
There is no denying the important role the poultry industry plays in our state's economy, which is why it is imperative our producers take the threat of infectious diseases like avian influenza very seriously.
Avian influenza occurs naturally in migratory waterfowl and is spread through direct contact with fluids from infected birds. The United States Department of Agriculture categorizes avian influenza by threat level: low-pathogenic avian influenza, which may only cause mild illness in domestic birds, and highly-pathogenic avian influenza, which causes severe disease and high mortality among domestic birds.
While avian influenza has not been contracted in Georgia, state partners first made initial preparations for the possibility of an outbreak in 2004 with the development of a response plan. This plan is reviewed and tested by tabletop and field training exercises multiple times a year.
The most recent American outbreak of highly-pathogenic avian influenza was found last December and traced to European migratory waterfowl last fall. Since the discovery of this highly-pathogenic case, 21 states have been affected by outbreaks with the loss of millions of chickens and turkeys. If something similar were to occur in Georgia, it could greatly impact our economy.
Fortunately, Georgia is a leader in agriculture innovation,

affording our poultry farmers with cutting-edge research and preventative options. Leading this effort is Dr. David Swayne, a renowned avian influenza expert and director of the National Poultry Research Center in Athens. Prior to the start of this year's migratory season, I invited Dr. Swayne to speak to the Senate Agriculture Committee about the research he is working on to prepare Southeastern farmers for potential outbreaks.
Our state's poultry community is working closely with experts like Dr. Swayne as well as our state Agriculture Commissioner Gary Black, the Georgia Poultry Federation (GPF), and the Georgia Poultry Laboratory Network (GPLN) to prevent the spread of avian influenza. In fact, every commercial flock raised in Georgia is tested prior to processing at

GPLN that's about 300,000 birds a year. Undoubtedly, preventing contact with the disease is the
most important step in preventing an outbreak and Georgia farmers are working hard to keep their flocks healthy by adopting biosecurity practices and participating in continuing education programs outlined by the USDA and industry partners.
The Georgia Department of Agriculture, GPLN and GPF have all worked hard to present biosecurity information and best practices information to growers, both commercial and backyard. Care has also been taken to address other aspects of the poultry world such as repairmen, feed companies, utility companies, lenders, etc. In addition, the industry's "All In or All Gone" partnership (AllInAllGone.com) has joined with 11 states to share information and updates about potential avian influenza outbreaks.
Georgia's thorough response plan has been coordinated with GDA, GPLN, and USDA and includes all facets of a potential response, from communication of an initial infection to the disposal of broilers.
Overall, these preparedness efforts have helped safeguard Georgia's poultry industry. While we prepare for the worst case scenario, we are fortunate Commissioner Black and our poultry community are taking every preventative measure possible to prevent and if necessary, stop an outbreak so Georgia can keep producing and eating more chicken.

Sugar cane rises again in South Georgia

You can tell a true Southerner by the syrup they pour on their Saturday morning pancakes. If they reach for the maple syrup, their taste buds have clearly fallen to the Yankees. If they ask for cane syrup, well, bless their hearts and unlock the secret stash.
Cane syrup was once the sweetener of choice for everything from baked beans to barbecue sauce to cake, a "staple of everyone's home during the Depression and older times," according to Jeremy Anderson, a sugar cane grower in South Georgia.
Today cane syrup is a rarity in home pantries and a misnomer on grocery shelves.
"Most of it is loaded with cheap corn syrup," said Anderson, who works as program director of the Fish and Wildlife Program at the Southern Regional Technical College in Tifton.
Jeremy and his father, Nickey, are doing their part to restore sugar cane and cane syrup to their rightful prominence in Georgia. The pair has been growing sugar cane since Jeremy was in high school. They currently grow several varieties of green and also Georgia Red cane. At harvest time, they take their crop to the home of Steven Gordon, a family friend who inherited a cane mill from his grandfather. Once mule-powered, the mill is turned today by a riding lawnmower.
Gordon's farm is located in the Tibet Community right outside of Ludowici, and it's been in his family since the 19th century. In addition to the cane mill he's got an 80-gallon syrup kettle for boiling cane juice. Anderson said it takes about 800 stalks of sugar cane to make enough juice to fill the kettle.
Once full, the water is boiled out of the juice to make syrup. The boiler is fired with Longleaf fat lighter, and the yield on their October boiling was about 10 gallons of bottled syrup.
"It took about nine hours from grinding the cane at the mill to putting the syrup in the bottles," Anderson said.
It's hard work harvesting a acre of sugar cane, feeding it to the mill, grinding it, boiling the juice and bottling the syrup, but it's a labor of love.
"We make syrup because we like doing what our ancestors before us did," Anderson said. "We don't make any money off of it; we just enjoy keeping it going. Making cane syrup is kind of a lost art and if we don't keep doing it and keep getting people involved with it we are going to lose it."

Don't give the gift of food poisoning

Food safety reminders for the holidays

Wash hands with warm water and soap for 20 seconds before and after handling any food.
Wash food-contact surfaces (cutting boards, dishes, utensils, countertops) with hot, soapy water before and after preparing each food item.
Rinse fruits and vegetables thoroughly under cool running water and use a produce brush to remove surface dirt.
Do not rinse raw meat and poultry before cooking in order to avoid spreading bacteria to areas around the sink and countertops.
Use a food thermometer to make sure meat, poultry, and fish are cooked to a safe internal temperature. To check a turkey for safety, insert a food thermometer into the innermost part of the thigh and wing and the thickest part of the breast. The turkey is safe when the temperature reaches 165F. If the turkey is stuffed, the temperature of the stuffing should also be 165F.
Bring sauces, soups and gravies to a rolling boil when reheating.

Cook eggs until the yolk and white are firm. When making your own eggnog or other recipe calling for raw eggs, use pasteurized shell eggs, liquid or frozen pasteurized egg products, or powdered egg whites.
Don't eat uncooked cookie dough, which may contain raw eggs.
Refrigerate leftovers and takeout foods-- and any type of food that should be refrigerated, including pie--within two hours.
Thaw safely in the refrigerator, under cold running water, or in the microwave--never at room temperature. Cook food that has been thawed in cold water or in the microwave immediately.
Allow enough time to properly thaw food. For example, a 20-pound turkey needs four to five days to thaw completely in the refrigerator.
Leftovers should be used within three to four days, unless frozen.

Ingredients: 1 wheel Sweet Grass Dairy Green Hill (or 7-8 oz. Brie) 1 sheet frozen puff pastry 2 tbsps. Wisham's Cranberry Pepper Jelly (or any preferred pepper jelly) 2 tbsps. chopped Georgia pecans Egg wash (1 egg mixed with 1 tbsp. milk, cream or water)
Preparation:
Preheat oven 375 degrees. Slice cheese in half horizontally. Top bottom half with jelly and pecans. Place top half over jelly and pecans. Chill while preparing dough.
Roll thawed sheet of puff pastry to approximately 10 x 12 inches. Place cheese upside down in center of top two thirds of dough. Cut one third dough off and set aside. Pull sides of dough up clockwise, pinching to seal in center. Make sure there are no openings. Turn over and set on parchment lined baking sheet. Cut designs in remaining dough and use egg wash to glue on top of pastry. Brush remaining surface and sides with egg wash.
Bake 375 degrees for 15-20 minutes or until golden. Let set several minutes before cutting. Serve with crackers.

Georgia ranks first nationally in the production of blueberries, pea-

The blueberry's recent rise to prominence in Georgia comes as the

state's peach crop has fallen to third-place nationally behind Califor-

nia and South Carolina. Georgia's blueberry growers are increasing

their yield each season, thus creating a need for bigger markets in the

"They are looking for more market opportunities because they are

producing more," said Roderick Gilbert, senior agribusiness coordina-

Big rivalry, big win
Farmers are a generally amiable lot, but like every other human on the planet, they're not entirely immune to the competitive urge. In October, Howard Milsap of Newnan was reading his Market Bulletin when he caught sight of a photo of Fred Barnes of Tifton posing with the multi-spud sweet potato vine he'd harvested. When Milsap went to harvest his own sweet potato crop, he found this 38-lb. beauty hiding beneath three other potatoes that measured about 5 inches in diameter each. His thoughts turned to Barnes. "I wanted to show Fred Barnes of Tifton how to grow sweet potatoes," Milsap wrote. "It's so big I can't get it in the oven."
Brody Ogles, a student at Rosemont Elementary in LaGrange, was named Georgia State winner of Bonnie Plants' Third Grade Cabbage Program. Brody grew this 30-pound cabbage, which earned him a $1,000 scholarship. Bonnie Plants Third Grade Cabbage Program has provided cabbage plants to third graders throughout the state for 13 years. Nearly 50,000 Georgia students received plants this season. "Our steadfast hope is that our Bonnie Plants Cabbage Program will be a catalyst to spark children's interest in agriculture, understand where their food comes from, and allow them to learn the joy and rewards of gardening," said Kimberly Harruff, program director.
