Don't Forget to Take Food Safety Outdoors This Summer

What better way to enjoy a beautiful spring or summer day than by spending time outdoors? As the weather warms up and it becomes increasingly inviting to spend time outdoors, Agriculture Commissioner Gary W. Black reminds consumers about the importance of food safety when it comes to grilling, picnicking, camping and other outdoor activities that involve food.
As temperatures rise outside, so do the activities of unseen microorganisms. During hotter, more humid months, these pathogens grow faster and can multiply in food in large numbers.
"We know the number of foodborne illnesses surges from May to September, when picnics and cookouts mean food is out in potentially dangerous temperatures," said Black. "But if consumers remember some simple food safety practices, they can enjoy their time outdoors and know they are keeping their families and friends safe at the same time."
Foodborne illness, or "food poisoning," occurs when a person gets sick from eating or drinking something containing harmful pathogens (such as bacteria, viruses or parasites). These four main tips will help keep foodborne illness at bay:
CLEAN. Coupled with the importance of hand washing, it's important to clean and sanitize kitchen surfaces, cutting boards, utensils and any food transport containers (coolers, reusable grocery bags, etc.). Remember to rinse all fruits and vegetables before eating or slicing, even if they have a rind, because as you cut the knife can carry bacteria as it slices from
A Guide to Grilling Safely
The smell of food grilling is a sure sign of summer. Keep your outdoor meals safe this summer by cooking meats to their proper temperatures. The safest way to be sure your food is done is to use a kitchen thermometer. Food safety experts recommend cooking meats to the following temperatures:

the outside in. Rinse under running tap water and scrub the surface of thick-skinned produce such as apples, oranges, watermelons or avocado. Always wash hands before handling and eating food. If you're outdoors without a sink, bring a bottle of water and hand soap, plus some moist towelettes and paper towels for wiping down surfaces (like picnic tables).
SEPARATE. Keep raw meat, poultry and seafood separated from ready-to-eat foods and any raw fruits and veggies. Don't mix and match cutting boards, platters or utensils as you prepare foods. Try using two cutting boards
(one strictly for raw meats, the other for fresh produce) and always wash the cutting boards and utensils in between uses. Check cutting boards and throw away any with cracks, crevices or deep knife scars. Never reuse the same plate you carried raw burgers or chicken to the grill on; rather, use a new plate or wash the plate before putting cooked meat back on it.
For food marinating: Always marinate in the refrigerator, never on the counter. If you marinate in a container, cover the container during storage (and/or transport). Never reuse marinade that has been used on raw meat or poultry unless you boil it first to destroy any harmful bacteria. If you plan to use some of the marinade as sauce for the cooked food, your best bet is to reserve a portion of the marinade before putting raw meat and poultry in it.
COOK. Just because it looks done, doesn't mean it is! Even your family grill master can't be sure meat or poultry is done by simply looking at it or poking it. Always use a food thermometer, sticking it into the meat's thickest part (avoiding bone and fat). Depending on how well done you like it, steaks are safe at 145F to 170F; ground beef and hotdogs at 160F; pork chops and ribs at 145F; and poultry at 165F. (Bonus tip: Meat does not need to be rinsed before cooking; in fact, rinsing causes more opportunities for cross contamination, so skip this entirely.)
CHILL: If your refrigerator or cooler temperature rises above 41F, disease-causing microorganisms start to multiply. To prevent this from happening, use a fridge thermometer to ensure your fridge is at 41F or below. When using coolers, fill them three-quarters

Georgia Grown Profile: How a farmer-turned-restaurateur does farm-to-table

Since 2007, Luke Christian and his staff have been serving customers the finest and freshest burritos, tacos, nachos, quesadillas, salads and chips & salsa prepared with a perfect blend of Mexican, Tex-Mex and Southwestern flavors. Combine the fresh flavor with excellent customer service and a comfortable, family-friendly atmosphere and you get an addictive dining experience that is second to none.
Luke owns Rancheros Fresh Grill with locations in Douglas, Tifton and Waycross, as well as Fireside Pizza in Douglas. Together they make up the Fresher Brands Management group.
"I grew up on a farm," Luke said. "I went to college and started working in restaurants and went into management when I graduated. I left the business for a few years and then I decided I would try to franchise one of the restaurants and locate it in Douglas."
People said his restaurants wouldn't work in a small South Georgia town. They also warned him that owning a restaurant is hard work. He answered them with good old-fashioned country common sense.
"Everybody has to eat and everybody wants good food," he said.
And as for the hard work, well, to a farmer it's all relative. "Have you ever picked tobacco in the hot Georgia weather? That is hard work," he said. So Ranchero's, which means farmer in Spanish, was the name he gave his first restaurant.
He did it with a degree in Psychology, which has actually been very helpful, he said. Most marketing techniques require determining how to appeal to people and to get them to visit your restaurants. It also helps with finding the right staff members who will interact with the public and give them a positive experience.
Christian joined Georgia Grown because he believes in promoting his local economy and using fresh and local product as often as possible.
Even the sauces that he has created for his business are made here in Georgia and carry the Georgia Grown label. His marketing approach is to appeal to the local residents who will become repeat customers through good, fresh food and great customer service. The travel-
ers that come through are then "cream on the top." Christian said he hopes to incorporate other local
products into his menus as more sustainable foods become available to him. He is committed to empowering the local economy, moving forward in his business endeavors and leading the way in the use of technology and marketing. "Agriculture is the number one economic generator in Georgia, and we should embrace that and be proud of where our state is heading," Christian said. He urged consumers to support local farms and restaurants, as that in turn makes their own local economies stronger. If you are close to any of his restaurants, stop in for a bite. Market Bulletin Advertising Guidelines
Only subscribers with a current subscription number are allowed to advertise in the Market Bulletin. Advertisers are limited to one ad per issue per subscriber number. Out-ofstate subscribers are only allowed to publish ads in the Out-of-State Wanted category.
All advertisements published in the Market Bulletin must relate to farming, agriculture or be a part of these industries. All items submitted for sale through the Market Bulletin must meet at least one of the following criteria:
1. Must be produced by advertisers on their farming operation
2. Must be made by the advertisers from materials on their farming operations
3. Must be owned and used by advertisers on their farming operations for at least 90 days prior to offering for sale.
Businesses, corporations, dealerships, real estate agents and other commercial enterprises are not allowed to advertise in the Market Bulletin. These are enterprises that produce products intended for mass market; handle larger than normal quantities of product for distribution; are supported by business advertisements; listed under business directories in phone books; hold business licenses or other regulatory licenses, permits or registrations.
Items for sale or service must conform to all laws and regulations covering their sale and movements. Note that some categories have certain requirements, such as Coggins tests or USDA Organic certification documentation, in order to be printed. GUEST COLUMN: Thatch is the enemy of home lawns

Thatch is a layer of
living and dead roots,
crowns and lower shoots
that often develops in
lawns. It can weaken
and even destroy a
lawn if not prevented or

removed. Excessive growth as
well as conditions unfavorable to the micro-
organisms responsible for the decomposition
of decaying plant parts aid in thatch develop-
ment. Rapid and excessive growth is likely to
produce heavy thatch because plant material
is being produced more rapidly than it can be
decomposed.
Thatch buildup varies from lawn to lawn.
Some lawns never develop a thatch layer,
while others become thatch-bound within a
few years of being established.
The best lawn grasses are those that
constantly reproduce new plants in order to
renew the lawn. As old plants age and die,
they decompose into fine, textured humus
that becomes a part of the surface soil. Once
thatch starts to form, conditions develop that
may favor even more thatch. Grass clippings from mowing do not
contribute to thatch. However, once a thatch layer has developed, clippings further speed its formation.
Accumulated thatch harbors diseasecausing fungi and insects. It also prolongs high humidity, which favors disease, causes shallow root development and slows movement of air, water and nutrients into the soil. These factors contribute to the early death of grass plants.
Thatch development may go unnoticed in early stages. Lawns with a thick thatch layer may appear healthy in the spring and then suddenly die in large patches during summer heat and drought. As thatch builds up, the roots of new grass plants grow within the thatch layer rather than in the soil. When the lawn is exposed to hot, dry summer weather, the plants are unable to survive.
Zoysia grass and bermudagrass lawns usually develop thatch layers rapidly. They seldom die suddenly because these warmseason grasses are more tolerant of heat and drought.
Severe thatch usually leads to thin, diseased turf. Very thick layers of thatch may cause uneven surfaces that are difficult to
mow. Thatch may develop over several years before noticeable damage occurs.
University of Georgia Extension recommends following these good cultural practices, starting when the lawn is new, to prevent or retard thatch from forming:
u Fertilize moderately and regularly to maintain vigor without excessive growth.
u Cut grass regularly at the recommended height to maintain vigor and to avoid shock. No more than one-third of the leaf tissue should be removed with each mowing.
u Remove excessive clippings, especially during periods of rapid growth. Clippings may be left to decompose if mowing occurs at regular intervals. Remove clippings that accumulate on the surface. Nutrients are recycled to turf as clippings that filter into the turf canopy decompose.
u Collect and remove clippings once a thatch layer begins developing to avoid further buildup.
u Irrigate every seven days, or as needed in dry periods, to encourage deep rooting.
u Power rake as needed to keep thatch below a half-inch thick. For fescue, early fall is preferred; for summer grasses, like
Zoysia grass and bermudagrass, rake midsummer. u Aerate the soil to lessen soil compaction and improve penetration of water, oxygen and fertilizer. (Aeration is the process of mechanically poking thousands of holes in the soil.) Power aerators that remove soil cores 2- to 3-inches deep are very effective and can be rented from hardware or tool rental stores. Leave soil cores on the surface to dry and crumble before mowing. Mow the dried soil cores to redistribute the soil microbes that decompose soil and thatch and aid in reducing thatch. u Top-dress every one or two years with one-fourth of an inch of weed-free manure or soil. Use a material that is similar in texture to the existing soil in order to encourage decay of thatch. u Avoid nonselective use of pesticides that hurt earthworms. Earthworms naturally reduce thatch as they collect it from the surface and mix it deeper into the soil.

Gaillardia: Boldness you can't ignore
Gaillardia is not for the timid. If you can't escape from the pastel prison, leave the bright and bold gaillardia to those of us who don't mind a flower that screams, "Look at me!"
Patterned red-and-yellow flowers account for three of gaillardia's fitting common names of "Indian blanket," "blanketflower" and "firewheel." I look at them and it is easy to picture fireworks and Native American weavings.
Gaillardias can be annuals, biennials or perennials. You can grow them from seed (available in catalogs or at garden centers) or purchase plants at nurseries. Perhaps the most commonly available gaillardia is Gaillardia x grandiflora, a short-lived perennial resulting from a cross between the perennial Gaillardia aristata and the annual Gaillardia pulchella. It inherited its perennial habit from one parent and its long flowering period from the other. There are numerous varieties available differing in plant size, flower color and form. All are easy to grow and hard to ignore.
Gaillardias love sun and can withstand lots of heat. You may see wild gaillardias growing just past the dunes and on beachfront properties. This is an indication of what they like: good air circulation, lots of sun and welldrained soil. They cannot tolerate wet soils or heavy clay. Use restraint with the hosepipe and keep the fertilizer away. A poor, sandy soil is what they like best. We have heard of them doing well in clay soil provided they are kept dry, such as being grown in a sunny spot under the eaves of a building.
Encourage gaillardias to bloom over a longer period by deadheading them (nipping off the flowers as they fade to keep them from going to seed.) However, we like to let some seeds form so the plants can spread themselves around. Goldfinches will come to eat some of the seeds, too.

ers. This is a good option if you cannot amend your soil to suit their needs. Some of the dwarf varieties are especially suited to containers.
A few good companion flowers to plant with gaillardia include butterflyweed, gaura, thrift (Phlox subulata), evening primrose, purple coneflower, sandpaper verbena (Verbena rigida), sedum, yucca, hesperaloe, button eryngo (Eryngium yuccifolium), achillea and Russian sage. Because it thrives in the same conditions as lavender, thyme, rosemary and santolina, consider using gaillardia to brighten no, not just brighten to set your herb garden on fire.

If you know anything at all about timber harvesting, then you know that the photo on our front page of May 13, 2015, showed young logger Trevor Crosby aboard his KNUCKLE BOOM LOADER, not his skidder, as reported. Now had I known that thing was called a KNUCKLE BOOM LOADER I would have said so early and often because that's a much more imaginative name than "skidder," in my humble opinion.
I appreciate the readers who cared enough about my future with the Georgia Department of Agriculture to alert me to the error of my ways, but not a one so much as I appreciate Marion Trowell. You see, Ms. Trowell emailed Commissioner Gary W. Black asking him to explain to me the difference between a skidder (which drags logs to the loading site) and a loader (which loads the logs onto trucks at the loading site).
Well, when that email landed on my desk I thought it was time to kiss goodbye my brief but inglorious career with the department. I did stop kicking myself, however, when I read what Ms. Trowell had to say next.
"I know this because I am a 58-yearold retired female truck driver that has seen my share of logging equipment," she wrote.
That piqued my interest and brought a blush of embarrassment to my cheeks. When I wrote about the dearth of young workers signing on to be loggers these days, I did so in masculine terms quite deliberately and with much forethought. Why, I thought, would a woman want to do such work? I know better than that.
Now Ms. Trowell didn't write to chastise me for the loader mistake or for the pronouns; she set me straight on both
counts in the gentle way only a lady can. She grew up on a farm driving tractors, bulldozers, excavators and even a twostory tobacco harvester (that's her in the picture here, looking stylish in her saddleoxford shoes).
"Grandpa Trowell always said, `If you are going to eat at my house you are going to work'," she recalled. And when it came time to provide for her own family, Ms. Trowell did what she knew; she drove a truck.
"The men did not want me out there but it took care of my children and that's why I did it," she said.
I am looking forward to hearing more about Ms. Trowell's adventures as a woman working in a man's world, and I will never again make the mistake of assuming that a few conversations with some experts makes me smart, too.
I will also learn not to put a "g" on the end of Fannin County. As another astute reader explained: "There is no Fanning County in Georgia, only Fannin." That was, of course, after she warmly thanked us for the wonderful rice pudding recipes contributed at the request of another FANNIN COUNTY reader.
Oh well. As my hero, Scarlett O'Hara, always said: Tomorrow is another day.

Terri Clark to perform at GAC Harvest Celebration
Country music singer Terri Clark will headline the Georgia Agribusiness Council's 40th Annual Harvest Celebration, set for November 20, at the Cobb Galleria Center in Atlanta. GAC's Harvest Celebration provides an opportunity for leaders and contributors from every commodity group and service sector to gather in a festive salute to the agribusiness industry.
The evening's activities include a silent auction and a unique Field of Dreams reception that precede dinner and musical entertainment. All proceeds support the Council's work objectives in state and federal legislative monitoring, agricultural education, media outreach initiatives and coalition building within the agricultural community.

ABAC graduates its largest class to-date
More students than at any point in the 107-year history of Abraham Baldwin Agricultural College completed their requirements for graduation in the annual spring commencement ceremony in Tifton in May.
ABAC President David Bridges said a record-breaking 409 students completed the requirements for graduation at the end of the spring term. More than 300 of them participated in the graduation ceremony.
A total of 117 graduates received bachelor's degrees, shattering the previous high of 67. The Stafford School of Business also set a record by awarding 24 bachelor's degrees in business and economic development.

Extension hosts backyard chicken workshops for metro-Atlantans
UGA Extension in Forsyth County is launching a series of intensive summer workshops for those who raise or who would like to raise backyard chickens. The classes will be held from 7 p.m. to 9 p.m. on June 4, 11, 18 and 25 at the Coal Mountain Park Community Building off of Setting Down Road in Cumming. Pre-registration is required and each class costs $5.
"These classes will cover a number of topics that beginning and experienced backyard and small-scale poultry keepers have asked for," said Heather Kolich, agricultural and natural resources Extension agent in Forsyth County.
University of Georgia poultry scientists or veterinarians from the Georgia Poultry Laboratory Network will teach the class, which will cover information on establishing a new flock, increasing egg productivity, preventing and spotting common chicken illnesses, how and where to process meat chickens and more.

Ethanol production reaches an all-time high
In 2014, U.S. fuel ethanol production reached 14.3 billion gallons of ethanol fuel, the highest level ever. The growth in U.S. fuel ethanol production has outpaced growth in corn consumed as feedstock; as the industry has grown, it has become more efficient, using fewer bushels of corn to produce a gallon of ethanol.If ethanol plant yields per bushel of corn in 2014 had remained at 1997 levels (when ethanol made up just 1 percent of the total U.S. motor gasoline supply), the ethanol industry would have needed to grind an additional 343 million bushels, or 7 percent more corn, to produce the same volume of fuel. To supply this incremental quantity of corn without withdrawing bushels from other uses would have required 2.2 million additional acres of corn to be cultivated, an area roughly equivalent to half the land area of New Jersey.Several factors contributed to the yield increases from a bushel of corn. Increased scale has allowed producers to incorporate better process technology, such as finer grinding of corn to increase starch conversion and improved temperature control of fermentation to optimize yeast productivity. The growth of the corn ethanol industry also enabled the development of better enzymes and yeast strains for improved output per bushel of corn.This growth in ethanol production has been made possible by a rise in demand for ethanol to increase octane levels as MTBE (methyl tert-butyl ether, a gasoline additive) has been phased out of gasoline, and to meet Renewable Fuel Standard targets enacted in 2005 and expanded by subsequent legislation in 2007. RFS requirements effectively placed a floor under ethanol demand. Recently, ethanol's volumetric share of total U.S. motor gasoline supply has been just below 10 percent, reaching 9.8 percent in 2014.

Oliver Farm is putting Georgia pecan oil on the international culinary map

Whoever said there's nothing new under the sun never faced the prospect of spending $400 per day on fuel to keep a cotton picker running. That was the reality that propelled Clay Oliver to begin researching alternative fuel sources for his farm machinery.
"My initial thought was to make my own fuel," he said, but his research showed that the expense of doing so would far outweigh the savings.
Food-grade oils, however, were another story. In late 2012 Oliver purchased a coldpress and processed the seeds from a crop of sunflower seeds he grew specially for the cause to produce his first batch of food-grade sunflower oil.

In the past two years, Oliver has expanded his selection of fruit and nut oils to include pumpkin, benne, peanut and the explosively
popular pecan oil made from Georgia's signature crop.
"Georgia is one of the first producers of pecan oil thanks to Clay Oliver and his pioneer spirit to press nut and
seed oils," said Holly Chute, executive chef for the Georgia Department of Agriculture's Georgia Grown program.
Beginning with the receipt of the Good Food Award in January, 2015 has turned out to be a pivotal year in Oliver's new endeavor.
Largely a one-man show until now, the demand for Oliver Farm oils and nut flours in general and pecan oil in particular has prompted Oliver's wife, Valerie, to give up her 16-year teaching career to help him produce, package and deliver their products to some 60 retailers. They're preparing to expand their sales to Farmers Markets

Riding the wave of popularity foodies are lavishing on artisanal foods, Oliver hit liquid gold with his pecan oil, a relative newcomer in the cooking oil category that is particularly appealing to the healthy-eating crowd. Pecans are already certified by the American Heart Association as a Heart-Healthy food. Pecan oil, according to producers and chefs, is even healthier than olive oil, with a saturated fat content of just seven percent compared to 14 percent in olive oil.
"Being a nut oil, it is high in antioxidants and a very healthy fat," Chute said.
Because it is cold-pressed, Oliver Farm's pecan oil retains its golden color and the distinct nutty flavor of Georgia pecans, Chute said.
With a very high smoke point of 470 degrees, pecan oil can be used for frying and also sauting, braising and even baking.
"I love to sear fish and chicken in it then finish in the oven," Chute said. "It is also wonderful for salad dressings and substituted for shortening in hoe cakes or cornbread."
Chute is such a believer in Oliver Farm Pecan Oil, she took it on an official Georgia Grown junket to New York City where it is now sold in select stores and on a personal trip to France, where she presented it to French chefs who have little exposure to pecans ordinarily.
Oliver Farm is a Georgia Centennial Farm located near Pitts in Wilcox County. It was purchased in 1903 by Daniel Henderson Watson, and Oliver and his brother are the fifth generation to own and operate the place.
"I take great pride in that," Oliver said. "Through the hard times and things that happen on a farm, my family managed to hold on to it."
With a growing appreciation for his coldpressed artisanal oils and the burgeoning following the uber-healthy pecan oil is gaining a hundred more years of farming success don't seem impossible to achieve.
"So far we've just continued to grow," Oliver said, sounding at times as bewildered as he is proud of the farm's success. "Starting from zero, hopefully you continue to grow. You can't go backwards."

Safety: Be mindful of expiration dates on food packaging

with cold food items and pack the remaining quarter with ice or ice packs. Consider a separate cooler for raw meat, poultry and fish products to prevent cross contamination. Transport coolers inside the car (not the trunk) and once outside, keep them in the shade with the lid closed tight. Toss an inexpensive fridge thermometer in between your edibles to be sure the temperature stays below 41F.
Don't leave food out at room temperature for very long. In temperatures of 90F or higher, keep foods out for only about an hour. If it's cooler outside, 80F or less, you can keep foods out for about two hours. This includes everything from cold cuts to burgers, potato salad to sliced apples, or any other prepared foods. After this time window, bacteria can start multiplying in your food. Make it simple and when food is set out, set an alarm on someone's cell phone to remind you when to put food away.
When it comes to ready-to-eat foods, one additional food safety step is to check the expiration dates. The term "expiration date" is synonymous for pull date, best-by or best-before date, use-by or sell-by date. This manufacturer or store guideline is the last date the product can be sold through retail or wholesale distribution.
GDA Food Safety Director Natalie Adan explained: "Here in Georgia there are certain foods that are required to have an expiration date, according to our food safety regulations. Those include milk, eggs, ready-to-eat foods and pre-packaged sandwiches, in-
fant formula, fresh shellfish like clams and oysters, and any other food that requires time and temperature controls to keep the product safe."
Outside this list, nearly all food products have an expiration date on the product packaging. It is important to remember that dates on dry, shelf-stable products (like potato chips or cookies) are only a "guideline" for freshness and quality.
"When shelf-stable products reach their expiration date, it becomes an issue of food quality, not food safety, and the food does not necessarily need to be thrown away," Adan said. "If the food was stored properly and appears visually wholesome, it can still be consumed after the expiration date with little to no threat of food safety concerns."
Black recommended that consumers alert a store manager upon finding expired foods while shopping. If the food is shelf-stable, no regulatory action is necessary. However, if a consumer sees expired foods repeatedly on their grocery shelves, or if the problem becomes one of food safety, Black asked that they notify the Georgia Department of Agriculture.
